Beautiful Autumn Day out today! Went to Meijer this morning to pick up some Jennie – O Turkey Products; Ground Breakfast Sausage,Extra Lean Ground Turkey Breast, Italian Sweet Sausages, and Breakfast Links. While there I watched the most extreme Couponer I have ever seen, she was amazing! She had a good size binder, notebook type, and on front of the binder a printout of each store aisle and the major products in that aisle. Then pockets in the binder that contained coupons for items in that aisle. I talked to her for a bit and said the biggest savings she had been just over $200! She said it took a lot of time but had a nice pay off! Quite impressive. On to Dinner. Tonight one of my favorites, Turkey and Black Bean Tacos.

 

 
I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 
For my other toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. Love these Tacos! For dessert later a Jello Sugarless Chocolate Pudding topped with Cool Whip Free.

Rainy day around here today. We needed some rain though it was getting a little dry around here. Not much going on, just bummed around doing odds and ends till football started up in the afternoon. For dinner I prepared Black Bean and Turkey Tacos.

 

 

I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

Another perfect day outside, hope our streak continues! Moving sort of slow earlier today, stayed up late watching the Cincinnati Reds and Cardinals play a 16 inning ball game last night. Managed to go to the store and picked up a few items to make a Cheesecake for dessert tonight. For dinner it’s one of my favorites, Black Bean and Turkey Tacos.

 

 

I used the leftover Jennie – O Extra Lean Ground Turkey Breast from last night when I made a Turkey Burger. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. I love pairing the Black Beans with Ground Turkey. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later Cheesecake. A perfect day outside, sunny and 78 degrees! Took a ride to a local Park and did some reading and crossword puzzles while relaxing in one of the Picnic Shelters. Finally was able to get the grill going again, for how long who knows, and grilled some Smoked Turkey Sausages. For dinner; Grilled Smoked Turkey Sausage w/ Whole Grain Penne Rigate Pasta, Low Carb Pasta Sauce, and Baked Cheese Toast.

 

 

I was finally able to grt the gas grill going again, trying to hold out until next Spring to buy a new one. Cleaned and got it fired up for the Smoked Turkey Sausages. I used Butterball Hardwood Smoked Turkey Sausages. My favorite Smoked Turkey Sausages, very lean and always cooks up perfectly. They are 100 calories and 4 carbs. Before grilling them I brushed some Extra Virgin Olive Oil on them and then grilled them for about 10 minutes while turning them several times. Oh the aroma as they were grilling, my next door neighbor got a whiff and had to come over and see what it was! Golden brown, juicy and full of flavor, I love these!

 

 

After grilling the Turkey Sausages I sliced them into smaller pieces. I then started preparing my Pasta. I used Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta. I’ve been using Whole Grain Pasta for quite some time now. I switched over from regular pasta back when I was first diagnosed with Diabetes 2. When my Pasta was done I drained it and put it back in the pan and added the sliced grilled Turkey Sausage and Bella Vita Low Carb Pasta Sauce. Heated util the Sauce just started to bubble and removed from the heat and served. I topped with a bit of Parsley and grated fresh Asiago Cheese. I also made some Baked Cheese Bread. I used Healthy Life Whole Grain Bread, a small amount of I Can’t Believe It’s Not Butter, Kraft Shredded Parmesan Cheese, and Sargento reduced Fat Shredded Mozzarella Cheese. Just butter the bread, sprinkle with the Parm Cheese, and top with the Mozzarella Cheese. Lay the slices on a baking sheet and bake at 400 degrees for about 10 minutes or until the cheese has started to melt. A very good and hearty meal! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Top Sirloin & Sauteed Mushrooms w/ Sliced New Potatoes, Sugar Snap Peas, and Whole Grain Bread

 

 
It was 70 degrees and sunny yesterday and it started out at 55 this morning and it’s been falling temperatures all day. Parents are both down with the flu so I’ve been busy all day. For dinner I couldn’t wait to break out those Top Sirloin Steaks from Costco I purchased yesterday. I believe Costco has some of the most tender and flavorful Steaks and Chops around! The first Steak I got out was huge! I cut into thirds and each Steak was more than enough for one person.

 

 

I seasoned it with Sea Salt and Ground Black Pepper and then pan fried it in Extra Virgin Olive Oil. I would have loved to grill these but the weather prevented that, blowing rain and even a little bit of sleet. The Steaks were so thick I had to fry them longer than normal to get these at medium rare. I flipped them over a couple of times and then even had to lay them on their sides for 2 or 3 minutes. They came out great! Tender, moist and just flat out delicious. It would be hard to find a better steak than Costco’s.

For side dishes I had Walmart Marketside Sugar Snap Peas, a can of Del Monte Sliced New Potatoes, and Healthy Life Whole Grain Bread. For dessert later a Jello Sugarless Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Sweet Asian Chili Flavored Chicken Wings w/ Oven-Roasted Fingerling Potato Fries

I picked up some more of the Tyson Sweet Asian Chili Flavored Chicken Wings. Their a breeze to prepare; just bake at 450 degrees for 38 minutes and you have Wings! I love the Sweet Asian Seasonings on these. A nice mild heat with a bit of Chili taste, fantastic with Litehouse Light Bleu Cheese dressing/Dip.

Along with the Wings I made some Oven-Roasted Fingerling Potato Fries. I seasoned them all with McCormick Spices; Grinder Sea Salt, Grinder Black Peppercorn, Garlic Powder, and Chili Powder. I baked them at 450 degrees for 26 minutes. Like the Wings these are full of flavor! The seasonings blend just right for the fries. When you first take them out of the oven sprinkle them with Crumbled Bleu Cheese. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Crumbled Bleu Cheese

Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half. This will allow the fingerlings to cook faster and also gives them a nice crisp.

3.) Toss in olive oil. I used about 2 tablespoons, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet.

5.) Cook in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done. Sprinkle with Crumbled Bleu Cheese when done.

Today’s Menu: Herb Crusted Pork Tenderloin w/ Sliced Carrots, Portabella Marsala Pasta, and Multi Grain Demi- Baguette.

 

 
Early morning shopping at Meijer. They had pork Roasts on special so I’m going with Herb Crusted Pork Tenderloin. I preheated the oven to 475 degrees F. I placed the pork loin on a rack in a roasting pan. I then combined Sea Salt, Extra Virgin Olive Oil, Minced Garlic, Thyme, Rosemary, and Basil in a small bowl. Then with my fingers, massaged the mixture onto the pork loin, covering all of the meat and fat. I roasted the pork for 30 minutes, make sure you have your stove overhead fan running as it start to smoke somewhat after about 20 minutes. I then reduced the heat to 425 degrees F and roasted it for an additional 30 minutes, normally you continue roasting up to an hour but this was smaller roast. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests. Then be ready to slice one delicious and juicy Pork Tenderloin! The Herb Mix makes a perfect crust for the roast.

For sides I prepared Sliced Carrots and Portabella Marsala Pasta, Meijer Bakery Multi Grain Demi- Baguette. I just boiled the Carrot Chips and it was the first time I tried The Healthy Choice 100% Natural Portabella Marsala Pasta. Easy to fix; microwave for 5 1/2 minutes and you have a great side dish. It’s a Nine-grain mafalda pasta topped with slices of rich crimini mushrooms tossed with a savory marsala wine sauce and topped with rich fontina cheese, and totaling 250 calories. i had a 1/2 serving of this which was plenty. I’ll be using this again it was delicious. I left product info and web link at the end of the post. For dessert later a Jello Sugar Free Dark Cherry Jello, 10 calories!

 

Herb Crusted Pork Tenderloin

Ingredients
1 (4-pound) boneless pork loin, with fat left on

Ready for the oven

1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves
1 teaspoon dried basil or 2 teaspoons fresh basil leaves
1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary
Directions
Preheat oven to 475 degrees F.

Place the pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat.

Roast the pork for 30 minutes, then reduce the heat to 425 degrees F and roast for an additional hour. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests.

Today’s Menu: Sweet Asian Chili Flavored Chicken Wings w/ Julienne Fries

 

Tried a new Tyson Wing for dinner tonight, Sweet Asian Chili Flavored Chicken Wings. Like the others easy to prepare; just bake at 450 degrees for 38 minutes and you have Wings! These Wings were fantastic! The Sweet Asian Chili seasoning was perfect and made a nice glaze on the Wings. I had a side of Litehouse Gorgonzola Dressing and Dip to dip the Wings in. For a side I had Alexia Julienne Fries again. Really like these low calorie and carbs and baked in 25 minutes. For dessert later a Jello Sugarless Chocolate Pudding.

 

Sweet Asian Chili Flavored Chicken Wings (3 lb. bag)
Tyson® Individually Frozen Sweet Asian Chili 1st and 2nd joint Wings are perfect for game time or a fun family meal. These oven-bake wings pair perfectly with easy-to-prepare dip recipes on the back of the bag! Contains up to 22% seasoning solution.

CONVENTIONAL OVEN
1 Preheat oven to 450°F.
2. Line a rimmed baking sheet with foil and spray with non-stick spray.
3. Place frozen chicken wing sections on pan in a single layer.
4. Cook on upper rack for 35 – 38 minutes or until juices run clear when thickest part of the chicken is pierced and temperature on instant read thermometer reaches 180°F. For crisper wings: Cook wing sections on a non-stick sprayed baking rack over a foil-lined rimmed baking sheet.

Today’s Menu: Fried Panko Crusted Cod w/ Diced Rutabagas, Green Beans, and Whole Grain Bread

It had been a while since I had any Cod so while at Kroger the other day came across some nice looking fillets and I purchased 2 of them. I rinsed the fillets off and rolled them in Flour then dipping them into Egg Beater’s, shaking off the excess. Then rolling them in a Panko Bread Crumbs, Onion Powder, Lemon Pepper, Garlic Powder, and Paprika mix until covered on both sides of the fillets. I then lightly fried them about 4 minutes per side in Extra Virgin Olive Oil. Golden brown and delicious! There’s going to be some tasty leftovers for lunch tomorrow!

For sides another first time one for me, Rutabagas. I had never tried them and found a can of Margaret Holmes Diced Rutabagas. The taste of the Rutabaga is similar to a Potato and the color of a Sweet Potato. I boiled them and seasoned them with Sea Salt, Black Pepper, and added I Can’t Believe It’s Not Butter which I added after it was done. I left the link and description at the end of the post for the Rutabagas. I’ve been purchasing a lot of Margaret Holmes products at our local Walmart lately. I really enjoy all the products I’ve tried. Fresh and easy to fix and wide variety! I also had a side of Green Beans and Healthy Life Whole Grain Bread. For dessert/snack later a new item I’m trying Dean’s Heat ‘n Eat Chunky Bean Dip along with Tostito’s Whole Grain Scoops.

Chicken ‘n’ Noodles

Today’s Menu: Chicken ‘n’ Noodles

Tried another Margaret Holmes Product for dinner tonight. I went with the Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout.

Well this will be another Margaret Holmes product that I’ll be buying more of! The noodles and seasoning was perfect and the sauce was unbelievable, a really fantastic flavor. A real hearty and delicious meal. I left the info and web site link at the bottom of the post. I also had Healthy Life Whole Grain Bread. For dessert/snack later Tostito‘s Whole Grain Scoops with Kroger Organic Black Bean and Corn Salsa.
