Fresh Turkey Spring Rolls
Here’s a recipe that’ll put a spring in your step. Chock full of fresh veggies, cellophane noodles and ground turkey, this is Fresh Turkey Spring Roll recipe is ready in under 30 minutes.

Total Time 30 Minutes
Serving Size 8 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Ground Turkey Roll

2 – ounces cellophane noodles

8 – spring roll wrappers

3 – tablespoons chopped mint leaves

3 – tablespoons chopped cilantro

3 – tablespoons chopped basil

2 – green onions, sliced

⅔ cup grated carrot

sweet chili sauces, if desired

Directions
1) Spray skillet with nonstick cooking spray. Preheat skillet over medium heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

2) Place cellophane noodles in medium heat proof bowl and cover with boiling water. Let stand 10 minutes, drain and cut into 2-inch lengths.

3) Place hot water in large pie plate. Dip spring roll wrapper into the water one at a time, let stand until softened; about 1 minute. Remove to clean dry work surface and lay flat. In a row across center, place ¼ cup turkey, a handful of noodles, sprinkle of mint leaves, cilantro, basil, green onion and carrot leaving 2-inches on either side uncovered. Fold uncovered sides inward, then tightly roll wrapper.

4) Repeat with remaining ingredients. Serve with sweet chili sauce, if desired.

Sweet and Spicy Thai Pork Loin

Recipe Ingredients:
2 pounds pork loin, cut into 1-inch cubes, trimmed
1 yellow onion, chopped
1 red bell pepper, chopped
1 cup long, thin beans, or string beans, cut into 1-inch lengths
1 cup sweet Thai chile sauce, (like May Ploy or Thai Kitchen)
1/2 cup chicken broth, reduced-sodium
1/2 teaspoon salt
1/4 cup water
1 tablespoon fresh basil leaves, torn
1 tablespoon fresh mint leaves, torn
1 tablespoon fresh cilantro leaves, torn
Hot cooked Asian noodles or Jasmine rice for accompaniment

Cooking Directions:
1 – Combine all ingredients, except fresh herbs, in a crock pot and cook at LOW for 4 to 5 hours, or on HIGH for 2 to 2 1/2 hours.
2 – Just before serving, add fresh herbs and check seasoning.
3 – Transfer pork and sauce to a serving bowl.
4 – Serve over rice or Asian noodles.
Makes 8 servings.

Lemon Mini Tarts
Craving something sweet? With fewer than 10 simple ingredients and less than 20 minutes of preparation time, you can have these delicious homemade mini tarts ready for dessert tonight.

Ingredients
1/2 cup powdered sugar
2 egg yolks
3 tablespoons butter, melted
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon peel
1 tablespoon granulated sugar
24 mini frozen phyllo shells*
Mint leaves (optional)
Raspberries (optional)

Directions
Yield: 12 servings
Serving size: 2 tarts

1 – Heat oven to 350°F. Whisk powdered sugar, egg yolks, butter, lemon juice, lemon peel, and granulated sugar in small bowl until well blended.

2 – Spoon 1 teaspoon filling into each frozen phyllo shell. Bake about 13 to 15 minutes or until centers are set.

3 – Garnish each tart with 1 mint leaf and 1 raspberry, if desired.

*Note. Frozen phyllo shells can be found in the freezer section by the other frozen hors d’oeuvres.

Sweet Honey Chili Glazed Carrots
A colorful, flavor-packed twist on a classic side dish! These are no ordinary carrots. This recipe features honey, chili sauce and red pepper flakes to turn up the heat! Top with some fresh mint to balance out the spice and make it look real nice.

INGREDIENTS
2 tablespoons honey
1 tablespoon olive oil
1 tablespoon sweet chili sauce
1½ tablespoons soy sauce
½ teaspoon crushed red pepper flakes
2 pounds assorted baby carrots, cleaned and trimmed
¼ cup chopped fresh mint leaves

DIRECTIONS
1) Heat oven to 400°F.
2) In small bowl combine honey, oil, sweet chili sauce, soy sauce and red pepper flakes. Reserve 2 tablespoons honey mixture.
3) In large bowl, toss carrots and with remaining honey mixture. Spread carrots in single layer on 2 jelly-roll pans.
4) Bake 30 minutes. Toss with reserved honey mixture and mint.

Turkey Kabobs
Grilled turkey tenderloin and veggies

INGREDIENTS

¾ cup Greek yogurt
1 cup chopped fresh basil leaves
1 cup chopped fresh mint leaves
3 tablespoons olive oil
1 teaspoon salt
½ teaspoon freshly ground pepper
2 cloves garlic, coarsely chopped
½ (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into 1½ to 2-inch pieces
1 cup cherry tomatoes
6 shallots, cut in half

 
DIRECTIONS

1) Process yogurt, basil, mint, olive oil, salt, pepper and garlic in food processor or blender, until smooth. Pour yogurt mixture over turkey pieces and stir to combine. Cover and refrigerate 1 hour or overnight. Remove turkey from marinade, discarding excess marinade.
2) Thread turkey, tomatoes, and shallots onto metal skewers. Prepare grill for medium heat. Cook skewers on grill, 12 to 15 minutes turning skewers a quarter turn every 3 minutes. Always cook turkey until well done, 165°F as measured by meat thermometer.
* Always cook to an internal temperature of 165°F.
