Minestrone is a thick, Italian soup with a chicken broth base with a lot of room for variety. This comes from the PBS website. http://www.pbs.org/food/recipes/

 

Minestrone

Ingredients
2 teaspoons olive oil
2 carrots halved lengthwise and thinly sliced crosswisePBS3
1 red bell pepper (ribs and seeds removed) cut into 1/2-inch pieces
8 ounces green beans stem ends trimmed, cut into 2-inch lengths
3 garlic cloves thinly sliced
1/3 cup couscous
1 can (14.5 ounces) reduced-sodium chicken broth
2 tablespoons tomato paste
1 can (15.5 ounces) navy beans drained and rinsed
Coarse salt
Flat-leaf parsley leaves (optional)
Shaved Parmesan cheese for garnish (optional)

 
Directions
1 – In a 3-quart microwave-safe dish, place oil, carrots, bell pepper, green beans, and garlic; stir to coat. Cover and microwave on high for 5 minutes.
2 – Add couscous, broth, tomato paste, navy beans, 1 cup water, and 1/2 teaspoon coarse salt. Cover; microwave on high until vegetables and couscous are tender, 5 minutes. If desired, stir in parsley, and garnish with cheese.
* Tips/Techniques
This hearty and colorful soup is perfect on a chilly night.

Quick Fall Minestrone

 

It says Fall but it’ll taste just as good in these cold Winter months! Passed along to me by Adam, which says the original recipe came

Yield: 8 servings (serving size: 1 1/2 cups soup and 1 tablespoon cheese)

Ingredients:

1 tablespoon extra virgin olive oil
1 cup chopped onion
2 garlic cloves, minced
6 cups vegetable broth, low sodium
2 1/2 cups (3/4-inch) cubed peeled butternut squash
2 1/2 cups (3/4-inch) cubed peeled baking potato
1 cup okra, sliced
1/2 cup diced carrot
1 teaspoon dried oregano
1/2 teaspoon freshly ground black pepper
1/4 teaspoon sea salt
4 cups chopped kale
1 1/2 cups whole wheat egg noodles, raw
1 (16-ounce) can pinto beans, drained and rinsed
1/2 cup (2 ounces) grated fresh Parmesan cheese
Preparation:

Heat the oil in a large Dutch oven over medium-high heat. Add onion and garlic; sauté 2 1/2 minutes or until tender. Add broth and the next 7 ingredients (broth through salt); bring to a boil. Reduce heat, and simmer 3 minutes. Add kale, egg noodles, and beans; cook 5 minutes or until noodles are done and vegetables are tender. Sprinkle with cheese.
