If you’ve ever burned popcorn in your microwave, you know that it stinks, and the smell likes to permeate the entire household. Make it smell fresh again by stuffing the microwave with crumpled newspaper for a few hours (but don’t turn on the microwave!). Remove the paper, and boil water and baking soda in a glass bowl for five minutes, and the smell should be gone

Today’s Menu: Smoked Cheddar Buffalo Burger w/ Side Salad and Velveeta Shells and Cheese

Not much at all going on around here today. The weather started out bad with freezing rain but it warmed up to about 40 degrees but cloudy. For dinner tonight I prepared another of those delicious Wild Idea Buffalo 1/4 lb. Burgers. So for dinner tonight I prepared a Smoked Cheddar Buffalo Burger w/ Side Salad and Velveeta Shells and Cheese.

I seasoned it with Sea Salt and Ground Black Pepper and pan frying it in a tablespoon of Canola Oil. I fried it about 3 – 3 1/2 minutes per side. Served it on a Aunt Millie’s Light Bun and topped with a slice of Borden Smoked Cheddar. As always these Burgers just drip of delicious! I’ll be ordering more of these real soon from Wild Idea Buffalo.
For sides I prepared a single serving of Del Monte Cut Green Beans and I also microwaved a single serving of Velveeta/Kraft Shells & Cheese (made with 2% milk). And along with that a made a small Side Salad consisting of Ice Berg Lettuce, sliced Baby Bella Mushrooms, a sliced Radish, and Kraft Light Creamy French Dressing. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Dole Chef Ready Diced Mango and Pineapple.

My plan was to hit the market after breakfast but the weather delayed that up for me. It snowed only about 1″ but the wind was so bad that it was freezing it on the roads as soon as it the road. So needless to say we some of the World’s worst drivers in Ohio and if it snows or heavy rain you drive at your own risk! So I waited until the afternoon when the roads cleared up a bit and it was safer for a guy with one leg walking from the parking lot to the store. I went to Walmart and was lucky to find a spot to park and grab an electric cart go shop in. We are due for a larger snow along with some bitter cold weather over the weekend so as usual when snow is mentioned in our forecast everyone panics and hits the grocery store to stock up! This area here in Ohio is so funny to watch people panic just at the mention of SNOW!! Well anyway it me a while but I finally got back from shopping and just wasn’t in the mood to put a lot of effort into cooking tonight so it was leftovers to the rescue! So for dinner I warmed up the leftover Zatarain’s New Orleans Style Pasta Dinner Shrimp Scampi from last night’s dinner. It was just as good the second time around, thank goodness for leftovers! For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip free.

All You Need Is: 2 cups water; 3 tbsp margarine, 1 pound of chicken, sausage or shrimp. Range Top: 1. Brown 1 lb precut (diced) chicken, sausage or shrimp (When shrimp is used, reduce water by 1/4 cup and add the shrimp after the first 5 minutes of cooking. Zatarain’s Scampi Pasta Dinner Mix tastes great even when prepared without meat or seafood.) in a two-quart saucepan. 2. Stir in 2 cups cold water, 3 tbsp butter or margarine, and Zatarain’s Scampi Pasta Dinner Mix. Blend Thoroughly. Bring to a boil. 3. Stir, reduce heat, cover and simmer for 15 minutes. Stir occasionally. 4. Remove from heat and let stand 5 minutes. Sauce will thicken as it stands. Stir before serving. Microwave: 1. In a two-quart microwave-safe bowl, cook 1 lb precut (diced) chicken, sausage or shrimp (When shrimp is used, reduce water by 1/4 cup and add the shrimp after the first 5 minutes of cooking. Zatarain’s Scampi Pasta Dinner Mix tastes great even when prepared without meat or seafood.) 3-5 minutes on High or until cooked. 2. Stir in 2 cups water, 3 tbsp butter or margarine and Zatarain’s Scampi Pasta Dinner Mix. Blend thoroughly. 3. Microwave uncovered on High for 15 to 17 minutes. Stir occasionally. 4. Let stand for 5 minutes. Sauce will thicken as it stands. Stir before serving. Caution: Cook time may vary depending on the power of the microwave oven.

To steam fish fillets in the microwave, place them in a shallow microwavable dish (a glass pie plate is ideal) with the thinner parts overlapping at the center of the dish. Sprinkle with lemon juice or herbs if you like, season with salt and pepper, then cover the dish with plastic wrap (making sure it doesn’t touch the fish) and cook for 3 minutes per pound. If your microwave doesn’t have a turntable, rotate the dish about halfway through the cooking time.

Today’s Menu: Fried Lake Perch w/ Green Beans, Shells & Cheese, and Whole Grain Bread


While at Meijer the other day I picked up some beautiful Lake Perch Fillets. I seasoned the fillets with McCormick Grinder Sea Salt and Black Peppercorn. I then rolled the fillets in a Whole Grain Flour/Italian Bread Crumb mix. The fillets were not very big or thick so I fried them about 3 minutes per side in Extra Virgin Olive Oil.

For sides I had Del Monte Green Beans, Velveeta/Kraft 2% Shells and Cheese, and Healthy Life Whole Grain Bread. The Velveeta Shells and Cheese come in a microwavable single serving cup and contain 180 calories and 31 carbs. Really a great tasting and cheesy Mac & Cheese, especially for microwave Mac. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.
