Grilling Kabobs…………………………
Soaking your Skewers – While 30 minutes is the minimum, it’s best to plan ahead and soak your bamboo skewers overnight in water. It takes a long time for the skewers to soak up the water, but well-soaked skewers, which are slow to give up their moisture, will last longer on the grill without burning up.
To cook, prepare your grill for medium-high heat. Brush skewers with oil and season with Sichuan Salt (or your preferred spice blend), then grill, turning often, until lightly charred and cooked to your liking. Most cuts will be done in about 5–7 minutes.

Before sauteing meats, sprinkle a tiny amount of sugar on the surface. The sugar will react with the juices and then caramelize, causing a deeper browning as well as an improved flavor.

* Remove the skin before cooking chicken and turkey.

It’s Grilling Season……
To reduce the amount of browning or blackening of meat, only apply barbecue or other tomato-based sauces containing sugars during the last 10 or so minutes of grilling.

Whenever barbecuing, use tongs to turn the meat. A fork should never be used. For it will lunch holes in the flesh and allow the natural juices to escape and loose flavor and become chewy.

Save on calories and fat by trimming all visible fat from meat and poultry. Also, remove the skin from poultry as this is where a great deal of the fat and calories is harbored. Perform both of these steps before cooking.
