SWEDISH MEATBALLS
Recently my good friend asked for Swedish Meatballs for his birthday and although I’m half Scandinavian, I don’t believe I’ve ever made them before. They were a hit with the birthday guests, so I thought you might enjoy them too. Serve as an appetizer or as entree and accompany with mashed potatoes, pickled cucumbers, and current jelly.

Ingredients: (makes 40 meatballs)
2 – 1-pound Wild Idea Premium Ground Buffalo
1 – onion, finely minced (I chop and then pulse process in food processor)
1 – cup panko crumbs
2 – teaspoons salt
1 – teaspoon allspice
1 – teaspoon cardamom
1 – teaspoon black pepper
2 – eggs, beaten
½ – cup milk
½ – cup butter melted or ¼ cup olive oil
Current or Lingonberry Preserves
Gravy recipe below.

Preparation:

Preheat oven to 500°.
Crumble the Ground Buffalo into a large bowl along with the onions and panko crumbs.
In another bowl mix the spices, eggs, and milk together and pour over the other ingredients.
Using your hands (food gloves work well for this) mix together until well incorporated. Divide mixture into 40 pieces and roll into firm balls.
Place meatballs on a baking sheet, allowing a little space between them.
Roll or brush the meatballs in melted butter or olive oil.
Place in a hot oven and bake for 5 minutes or until they are nicely browned. *They will cook a bit more when heated in the gravy.
Remove from oven and gently loosen from the pan and transfer to your gravy pan. Toss gently spooning the gravy over the meatballs. Allow the meatballs to heat through over medium high, for about 5 minutes.
Reduce heat to lowest temperature and serve straight from the pan or transfer to a holding pan or crockpot. For a true Swedish flare, accompany with preserves & pickled cucumbers.

Quick Brown Gravy
I make the gravy on the thin side, so the meatballs will have just a light glazing of the sauce. Add more flour if you prefer a thicker sauce.

Ingredients:
¼ – cup butter
1 to 2 – tablespoons flour
2 – cups buffalo or organic beef broth
½ – cup heavy cream
1 – teaspoon black pepper, or more to taste
season to taste with salt
*optional: A splash of dry sherry

Preparation:

In a skillet over medium high heat, melt the butter and whisk in the flour stirring constantly.
Whisk in the buffalo stock and bring to a boil.
Whisk in the cream, and continue to stir until sauce comes to a boil. Reduce the heat to low and allow the sauce to thicken a bit, about 5 minutes – stirring occassionally. *You can remove from heat until needed or refrigerate and reheat when needed.
Add the meatballs and increase heat to medium high to get all good and hot, about 5 minutes.

Homemade Meatballs…………………………….

While you can make meatballs out of any ground meat, fattier meats like beef, lamb, and pork will yield more tender meatballs. If you use leaner meats like chicken or turkey, be careful not to overcook them or they can become tough. For great flavor, use a blend of different kinds of ground meats.

When making meatballs………

If you cook your meatballs in the oven or on the stove finish cooking them in the sauce. Always finish cooking meatballs in the sauce. This will keep them moist and help the sauce coat them.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Sunny and 42 degrees outside today. I had to go to Meijer to pick up a few things for Mom and myself and picked up Breakfast for Mom at McDonald’s. Back home got the cart out of the shed and raked the back yard. We have a Mole problem in the backyards of most of the homes on our side of street. I ordered some Mole Stop off Amazon, see if that works! For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

 

 

 

It’s Spaghetti and Meatballs tonight! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs). For the Spaghetti I’ll be using Ronzoni Healthy Harvest Whole Grain Spaghetti.

 

 

 

 

I’ll be cooking the Meatballs in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Non Stick Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for 7 minutes and then reduced the heat to low until I was ready to use them.

 

 

 

 

As I said I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked the New York Bakery Light Texas Toast. For Dessert tonight a Jello Sugar Free Dark Chocolate Pudding.

So after Breakfast I went to Meijer for a few items. Stopped and got gas and picked up Breakfast for Mom at McDonald’s. Back home got the cart out of the shed and raked the back yard and the front yard again. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

 

For Breakfast this morning I made a couple of Breakfast Street Tacos. To make the Tacos I used 1 large Egg (scrambled), 2 Johnsonville Fresh Turkey Breakfast Sausage Links (crumbled), Sargeto Off the Block Shredded Sharp Cheddar Cheese, Ortega Smoky Chipotle Taco Sauce, and Mission Street Low Carb Taco Flour Tortillas. These turned out so good and the Tortillas are only 70 calories for 2 Tortillas. Excellent and delicious Breakfast. I also had a cup of Bigelow Decaf Green Tea. Had some showers overnight and cloudy and 52 degrees for the day. Got the leaf blower out of the shed and cleaned off the deck and driveway. Later repaired a shelving unit in the shed. Everything done I took a spin around the neighborhood and enjoyed the beautiful day. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Texas Toast

 

 

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast. Mostly sunny and 80 degrees out, low humidity again! I had to wear a surgical mask when outside today as the ragweed count was sky high! Got the cart, rake, and leaf blower out of the shed and got some yard work done. I raked a neighbors yard for them. They are an older couple and his wife has been in rehab and he’s been there with her most of the day. So I got that done for him. Everything done I took a spin around the neighborhood and enjoyed the beautiful day. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

Italian Meatball and Vegetable Soup
This hearty Italian meatball and vegetable soup is sure to become a favorite on the family menu.

Recipe Ingredients:
1 pound lean ground beef
1/2 cup fresh bread crumbs
1/3 cup freshly grated Parmesan cheese
1 tablespoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 teaspoon salt
6 cups beef broth
1 (28-ounce) can Italian-style tomatoes, with juice and crushed
6 carrots, thinly sliced
4 medium potatoes, peeled, diced
1 large onion, chopped
4 large garlic cloves, finely minced
2 teaspoons dried thyme
2 teaspoons dried basil
1 bay leaf
Salt and freshly ground black pepper to taste
Additional freshly grated Parmesan for accompaniment

Cooking Directions:
1 – Combine ground beef, fresh bread crumbs, grated Parmesan cheese, 1 tablespoon parsley, 1 teaspoon dried oregano and 1 teaspoon salt in large bowl and blend well. Using moistened hands, shape mixture into 1-inch diameter meatballs.
2 – Bring broth to boil in heavy large Dutch oven over high heat. Drop in meatballs and cook 5 minutes. Add tomatoes, carrots, potatoes, onions, garlic, dried thyme and basil. Reduce heat to medium. Simmer soup uncovered until meatballs and vegetables are cooked through and tender, about 40 minutes. Season with salt and pepper.
3 – Ladle soup into bowls and pass additional Parmesan.

Makes 4 to 6 servings.
