Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Texas Toast

 

 

For Breakfast this morning I prepared a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Also had my morning cup of Bigelow Decaf Green Tea. 58 degrees and partly cloudy out today. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Cloudy with passing showers, high around 57 degrees. Not a lot to do today which is fine since it was one of those long nights again, had to deal with Phantom Pains! So a lot of rest today. Don’t know why these have been so often lately! For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast.

 

 

 

 

Spaghetti and Meatballs tonight, we love Spaghetti and Meatballs! And you can make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using my favorite, Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs. But this all the Meatballs I have left of them. And no one carries them any longer in this area. So I’ll have to find something new.

 

 

 

 

 

Anyway I’ll be cooking them in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for about 7 minutes and then reduced the heat to low until I was ready to use them.

 

 

 

 

 

I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked my New York Bakery Light Texas Toast.

 

 

 

 

To serve I used a bowl and made a bed with Spaghetti. added a little Morton’s Lite Salt and Kraft Reduced Fat Grated Parmesan Cheese. I then topped with Sauce and Meatballs. Wow these Turkey Meatballs are so good, don’t understand why no one carries them any longer. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Mostly cloudy and 38 degrees out today with snow and freezing rain moving in over night. Hurry up Spring Time!! After my Tea I headed out to Meijer. Then on the way home stopped and got gas and picked up Breakfast for Mom at McDonald’s. Back home I did a load of laundry and then cleaned the house. For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast. Spaghetti and Meatballs really sounded perfect for Dinner tonight!

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Texas Toast

 

For Breakfast this morning I made a Breakfast Sandwich I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Also had that morning cup of Bigelow Decaf Green Tea. One chilly morning out there today at 13 degrees, but at least it’s not snowing. The sun came out for a short time and a high of 30 degrees. I had to measure a few of the windows for measurements for new window shades. I had a shade crack in my bedroom so I’m just going to replace a few of them. Also did a load of laundry. For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast. Spaghetti and Meatballs really sounded good for Dinner tonight!

This week’s Diabetic Dish of the Week is – HOLIDAY APPETIZER MEATBALLS. Easily made and ready for your freezer. Made using Lean Ground Pork. Serve with choice of dipping sauces; Toasted Onion Dip, Ginger-Orange Dip, and Barbecue-Cranberry Dip. 200 calories and 1 carb per serving (7 meatballs). HOLIDAY APPETIZER MEATBALLS
These meatballs are convenient to have on hand, in the freezer. Serve for snacks with dipping sauces. They’re great for making grinder sandwiches, too. Serve one or more of these dips with the meatballs: Toasted Onion Dip, Ginger-Orange Dip and Barbecue-Cranberry Dip.

Yield: Yield: 7 dozen meatballs.
Serving size: 7 meatballs.

Ingredients

2 pounds lean ground pork
1 cup ice water
1/4 cup soy sauce
1/4 teaspoon freshly ground black pepper

Directions

1 – Heat oven to 375 degrees F.
2 – With hands or wooden spoon mix pork, water, soy sauce and pepper thoroughly in large bowl.
3 – Shape into 3/4-inch balls (mixture will be fairly soft and balls will not be perfect).
4 – Arrange closely together in single layer on ungreased shallow baking pan, like a jelly-roll pan.
5 – Bake for 20-30 minutes.
6 – Remove from pan, and serve immediately with a dipping sauce, like your favorite salad dressings or choose from the suggestions below.
7 – Use toothpicks to skewer meatballs to dip. Or remove from pan, cool, cover and freeze or refrigerate. Serve cold or reheated.

I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked my New York Bakery Light Texas Toast.

 

 

 

 

To serve I used a bowl and made a bed with Spaghetti. added a little Morton’s Lite Salt and Kraft Reduced Fat Grated Parmesan Cheese. I then topped with Sauce and Meatballs. Wow this was so good, I’m very glad Kroger started stocking the Honeysuckle White Meatballs again. For Dessert later a Weight Watchers Peanut Butter Caramel Ice Cream Candy Bar. Good little Bar, 80 calories and 7 net carbs.
