Making Meatballs………….

Making Meatballs, Pop them in the oven for 15-20 minutes then broil them for another 5-10 minutes to make sure they get that deliciously crispy crust like pan frying gives them. Baking them gives the meatballs a little more flavor without additional oil since you are searing the outside under the broiler in your oven.

PASTA ALLA CARRETTIERA WITH ITALIAN BUFFALO MEATBALLS
This dish is named after the people who drove food and wine carts in Italy. It is a slightly spicy red sauce, with garlic and basil, and is typically served over a thicker style of pasta. My favorite rendition of this dish also had hints of parsley and mint, which made for lingering, memorable flavors. After a little research, and substituting a few of the more difficult to find ingredients with like alternatives, I thought I might be able to come close to duplicating it. The only thing missing was Wild Idea’s artisan, Italian Buffalo Sausage, and I knew just where to go for that. This simple dish is packed with flavor and very easy to prepare. The perfect solution, for a stress free, delicious dinner! (Serves 4)

Ingredients:
1 – 1 lb. Italian Buffalo Sausage
3 – tablespoons olive oil
3 – cloves garlic, about 1 tablespoon
½ – teaspoon chili flake, or pepperoncino (dried Italian chili pepper)
½ – cup basil, finely chopped
2 – tablespoons parsley, finely chopped
1 – tablespoon mint, finely chopped
1 – 28 ounce can whole *San Marzano Tomatoes, flash processed, *they’re the best
1 – teaspoon salt
2 – teaspoons sugar
1 – lemon, juiced, about ¼ cup
1 – cup freshly grated, Parmigiano Reggiano, or Porcini cheese
1 – 12 ounce box of Casarecce pasta, Pici pasta, or thick Spaghetti, cooked el dente, reserve 1 cup pasta water

Preparation:
1) Divide Wild Idea Italian Buffalo sausage into 24 pieces and roll into meatballs. Pour one of the tablespoons of olive oil on a baking sheet and roll the meatballs in the oil. Cover and set-aside until you are ready to broil.
2) In a saucepan over medium heat, heat the remaining tablespoons of olive oil. Add the garlic, and toss or stir regularly, until tender, about 3 minutes.
3) Add the basil, parsley, and half of the mint to the pan. Sauté and stir for 1 minute.
4) Add the tomatoes, salt, sugar and lemon juice and stir to incorporate. Bring to a gentle boil, cook for 5 minutes and then add the remaining mint. *Sauce can be made ahead and reheated.
5) During step 4, or right before serving, place the prepped bison meatballs on the second rack from the top of a preheated broiler, and broil the meat balls for about 5 minutes or until nicely browned.
6) Simultaneously bring the reserved pasta water to a boil. Add the prepared pasta, and toss to reheat.
7) Drain pasta, transfer to a bowl and add ½ cup of the grated cheese. Toss to incorporate.
8) Place desired amounts of pasta on to plates and cover with ¾ cup or desired amount of sauce. Serve with the hot Italian Bison meatballs and garnish with remaining grated cheese and additional fresh herbs. Delizioso!

What meats to use for Meatballs……………………..

While you can make meatballs out of any ground meat, fattier meats like beef, lamb, and pork will yield more tender meatballs. If you use leaner meats like chicken or turkey, be careful not to overcook them or they can become tough. For great flavor, use a blend of different kinds of ground meats.

These delicious Meatballs are made using 95% Lean Ground Beef, Bread Crumbs, Egg, Onion, Garlic, Salt, Pepper, Hot Pepper Sauce, Butter, Homey Blue Cheese Dressing, and Celery Sticks. SPICY BUFFALO-STYLE MEATBALLS
Ingredients

1 pound 95% lean ground beef
1/2 cup soft bread crumbs
1 egg, slightly beaten
2 tablespoons chopped onion
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
2 to 3 tablespoons hot pepper sauce
2 tablespoons butter, melted
1 tablespoon honey
Blue cheese dressing
Celery sticks

Directions

1 – Preheat oven to 350F. Combine ground beef, bread crumbs, egg, onion, garlic, salt and pepper in large bowl, mixing lightly but thoroughly.
2 – Shape beef mixture into 32 1-inch meatballs; place on rack in broiler pan. Bake in 350F oven 18 to 20 minutes.
3 – Meanwhile, combine hot pepper sauce, butter and honey in large bowl; mix well. Add meatballs; stir to coat.
4 – Serve with dressing and celery sticks, as desired. Makes 32 appetizer servings.
* Cook’s Tip: Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160F. Color is not a reliable indicator of ground beef done-ness.

* Cook’s Tip: 1 package (about 18 ounces) frozen fully-cooked beef meatballs can be substituted for ground beef, bread crumbs, egg, onion, garlic, salt and pepper. Cook meatballs according to package directions. Continue as directed in step 3.

Recipe Yield: Makes 32 appetizer servings.

Today’s Menu: Chef Boyardee Spaghetti and Meatballs and Texas Toast Light

 

 

 

For Breakfast I toasted a Thomas Light English Muffin that I spread with Smucker’s Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Sunny and 79 degrees out. After Breakfast I took Mom over to Meijer, she needed a few things. Back home I got the cart out of the shed and helped my neighbor clean out his shed. He has a heart condition and can not lift anything over 10 lbs. Took most of the day, it was a mess! For Dinner tonight. Chef Boyardee Spaghetti and Meatballs and Texas Toast Light.

 

I’m sticking with Chef Boyardee again tonight. Last night I had the Lasagna and tonight its the Spaghetti and Meatballs. First time trying this one from the Chef. To prepare it pour the pasta into saucepan.Heat it over medium heat until hot, stirring occasionally. Ready to serve! Excellent Meatballs and Sauce. Makes an excellent and quick Spaghetti Dinner!

 

I also baked a slice of New York Bakery Light Texas Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free. Stay Safe Everyone!

SWEDISH MEATBALLS
Recently my good friend asked for Swedish Meatballs for his birthday and although I’m half Scandinavian, I don’t believe I’ve ever made them before. They were a hit with the birthday guests, so I thought you might enjoy them too. Serve as an appetizer or as entree and accompany with mashed potatoes, pickled cucumbers, and current jelly.

Ingredients: (makes 40 meatballs)
2 – 1-pound Wild Idea Premium Ground Buffalo
1 – onion, finely minced (I chop and then pulse process in food processor)
1 – cup panko crumbs
2 – teaspoons salt
1 – teaspoon allspice
1 – teaspoon cardamom
1 – teaspoon black pepper
2 – eggs, beaten
½ – cup milk
½ – cup butter melted or ¼ cup olive oil
Current or Lingonberry Preserves
Gravy recipe below.

Preparation:

Preheat oven to 500°.
Crumble the Ground Buffalo into a large bowl along with the onions and panko crumbs.
In another bowl mix the spices, eggs, and milk together and pour over the other ingredients.
Using your hands (food gloves work well for this) mix together until well incorporated. Divide mixture into 40 pieces and roll into firm balls.
Place meatballs on a baking sheet, allowing a little space between them.
Roll or brush the meatballs in melted butter or olive oil.
Place in a hot oven and bake for 5 minutes or until they are nicely browned. *They will cook a bit more when heated in the gravy.
Remove from oven and gently loosen from the pan and transfer to your gravy pan. Toss gently spooning the gravy over the meatballs. Allow the meatballs to heat through over medium high, for about 5 minutes.
Reduce heat to lowest temperature and serve straight from the pan or transfer to a holding pan or crockpot. For a true Swedish flare, accompany with preserves & pickled cucumbers.

Quick Brown Gravy
I make the gravy on the thin side, so the meatballs will have just a light glazing of the sauce. Add more flour if you prefer a thicker sauce.

Ingredients:
¼ – cup butter
1 to 2 – tablespoons flour
2 – cups buffalo or organic beef broth
½ – cup heavy cream
1 – teaspoon black pepper, or more to taste
season to taste with salt
*optional: A splash of dry sherry

Preparation:

In a skillet over medium high heat, melt the butter and whisk in the flour stirring constantly.
Whisk in the buffalo stock and bring to a boil.
Whisk in the cream, and continue to stir until sauce comes to a boil. Reduce the heat to low and allow the sauce to thicken a bit, about 5 minutes – stirring occassionally. *You can remove from heat until needed or refrigerate and reheat when needed.
Add the meatballs and increase heat to medium high to get all good and hot, about 5 minutes.
