Did you know that the best time to shop for meat is in the morning? That is usually when the butcher marks down meat that is close to its sell by date. If you won’t cook it tonight, freeze it for later. Save, Save, Save!

Shop on Tuesdays……………

Try to never buy meat from the supermarket on Monday mornings. It’s likely that those packages for sale were not sold over the weekend, and most shipments of fresh meat arrive on Monday afternoon or on Tuesdays.

Use the tongs………….

Always use tongs when turning meat on the grill. When a fork pierces the meat, it releases some of the juices, making it dry out more quickly.

Using a skewer on the grill………….

When using foods with different cooking times (such as shrimp and beef), don’t combine them on the same skewer. Instead, make skewers of just shrimp or just beef, start cooking the beef first, and then combine them on a serving platter.

Preheat your grill…..

Give your grill enough time to preheat for optimum results. For a good sear, preheat your grill for at least 10-15 minutes. Keep in mind the weather can impact those times.

Estimated resting times……………..
* 5-10 minutes for steaks and chops
* 20 minutes for roasts and whole birds
* 30 minutes for mammoth roast or turkey

Why let meat rest before slicing………

* The juices get redistributed and reabsorbed. Your meat will be jucier.
* The fibers relax. Your meat will be more tender.
* The meat finishes cooking.

No over crowding…………….

Whether you’re baking or pan frying, it’s important to avoid crowding the pan. Similarly to when vegetables or proteins are cooked while moist, when they’re crammed into a pan they’ll steam instead of brown, which is never good.

Know the safe temperatures…………..

Use a grill thermometer to ensure your food reaches ideal cook temperatures for best taste and avoiding foodborne illnesses. Here are the minimum internal temperatures for safe food consumption, according to the USDA:

Beef, Pork, Veal and Lamb: 145 °F

Poultry: 165 °F

Fish and Shellfish: 145 °F
