Went out to get the morning papers and it’s a tad cold out there, about 18 degrees! Not very hungry this morning, just had a toasted Healthy Life English Muffin topped with Smucker’s Sugarless Blackberry Jam. Went to the bank for Mom and back home. Did house cleaning today and that was about it. For dinner tonight I prepared Cilantro and Lime Seasoned Shrimp w/ Thin Spaghetti and Baked Italian Loaf Bread.

To start I preheated the oven to 350 degrees.When ready I used a small baking sheet pan, lined it with foil, sprayed it with Pam Cooking Spray, and laid a loaf of Pillsbury Italian Loaf Bread on it. Baked it 17 minutes, removed it from the oven, sat the loaf on a plate and set aside until ready to use.

While at Costco yesterday I picked up a package of Cilantro and Lime Seasoned Shrimp, which I’ll be using for tonight’s dinner. The Shrimp was about medium size, some smaller, just the right size for Thin Spaghetti! So as my bread was baking I then started my Shrimp and Spaghetti. To prepare the Shrimp I took a medium size skillet and sprayed it with Pam Cooking Spray, preheated it on medium heat. I then added a tablespoon of Extra Virgin Olive Oil to the pan. Added the Shrimp and cooked the a total of 4 minutes, 2 minutes per side. Removed the skillet from the heat and set aside.

As my Shrimp was cooking I heated a large sauce pan that I half way filled with water and added a teaspoon of Sea Salt. As the water came to a rolling boil I added the Thin Spaghetti. Cooked for 8 minutes and drained the water and put the Spaghetti in serving bowl. I then seasoned it with Sea salt and McCormick’s Italian Seasoning, tossed to season the whole bowl. To serve; made a bed of the Spaghetti in a bowl. Topped it with Shrimp and a sprinkle of fresh Shaved Parmesan Cheese. Love the dish!! I’ll have to hit Costco again to buy some more of the Shrimp, seasoned jut right with the Cilantro and Lime. I served this with a slice of Italian Loaf Bread and had a Diet Peach Snapple to drink. for dessert later tonight I’m having a Del Monte No Sugar Added Peach Chunks Cup.

Ingredients: Durum Whole Wheat Flour & Semolina Blend, Wheat Fiber, Niacin, Iron (Ferrous Sulfate), Thiamin Mononitrate, Riboflavin, Folic Acid.
1. Bring 4 quarts water To a rapid boil. 2. add pasta And stir; return To rapid boil. 3. cook uncovered, stirring occasionally, for 6 To 8 minutes. 4. drain well.

Our coldest morning in a while, with the wind chill around 18 degrees! Ohhh bring back that beautiful Autumn Weather. Not much going on around the house today. Caught up on some house work, ran a couple of scans on the computer, and an afternoon of NFL Football. For dinner tonight it’s French Pizza Bread.

I had prepared French Pizza Bread earlier for Mom and Dad for lunch. I took a bite of one of them and my Dinner Menu changed, it was delicious! To prepare it I’ll need the Loaf of French Bread, Ragu Pizza Sauce, Hormel Turkey Pepperoni, Sliced Mushrooms, McCormick Italian Seasoning, Extra Virgin Olive Oil, Sargento Reduced Fat Shredded Mozzarella Cheese.

Preheated the oven to 400 degrees. To start I sliced the French Bread in half, then cut the halves in half, and then sliced those halves in half length wise. I then lightly brushed the pieces with Extra Virgin Olive Oil across the tops. Spread them out on a foil lined cookie sheet and put them in the oven for 4 minutes. Removed from the oven and topped them with the Ragu Pizza Sauce, Italian Seasoning, Hormel Turkey Pepperoni, Sliced Mushrooms, Cheese, and seasoned agin with the Italian Seasoning. Put them back in the oven until the Cheese was melting and it was heated through. Then enjoy! Everything comes together to make this one delicious Pizza Bread. I especially like the seasoning of the McCormick Italian Seasoning, gives a fantastic flavor. For dessert later tonight a SO Delicious Coconut Vanilla Mini Ice Cream Sandwich.

It’s been another Beautiful day in the neighborhood outside again. A tad warmer though, we hit 80 degrees today. Went to Meijer for Mom this morning and back home. Didn’t do a lot today, not feeling up to par today. For dinner tonight I prepared a Turkey Meatball Mini Sub.



I used Honeysuckle White Fresh Italian Style Turkey Meatballs. I usually try to use Jennie – O Turkey Products but as far as I know none of the local stores carry the Meatballs. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. The Meatballs are good size, always fresh, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. For my Pasta Sauce I used LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve ever had.



For my Hoagie Bun I used Kroger Brand 100% Whole Wheat Hoagie Rolls. For my Cheese I used Boar’s Head Lower Sodium Provolone Cheese, first time I tried this and love it! Has a really fantastic Creamy Flavor to it. Loaded the Hoagie Roll up with the Meatballs and Sauce, topped it with a slice of Provolone Cheese and baked it at 400 degrees until the the Roll was toasted and Cheese melted. These Hoagies are too good! For dessert later a Healthy Choice Dark Fudge Frozen Greek Yogurt.
