The day started off with a light freezing rain. A lot of accidents early this morning and a lot roads were shutdown. By 10:00 this morning it was 35 degrees and everything melted. Turned to a decent day, mostly sunny and about 50 degrees. Puttered around the house doing a few things and then an afternoon of College Football. For dinner tonight Breakfast! I prepared a Buffalo Sirloin Steak w/ Eggs, Hash Browns, and Wheat Toast.

 
A good Breakfast for Dinner tonight sounded like a winner, and it was! I’ve been having a light Breakfast lately, so I’ve been wanting a full and healthy Breakfast. So tonight for dinner that’s what I had, Buffalo Sirloin Steak w/ Eggs, Hash Browns, and Wheat Toast.

 
I used a Wild idea Buffalo 5 oz. Petite Sirloin, the finest cuts of Buffalo around! I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. Heated up a small skillet on medium heat, adding 1 tablespoon of Extra Virgin Olive Oil as it was heating up. I then pan fried the Buffalo Sirloin, fried it about 4 minutes per side. It came out a perfect medium rare, nice char on the outside and a little pink in the middle. As I’ve said before Wild Idea Buffalo is most delicious tasting Buffalo Steak there is, bar none! I switched from using Beef to Buffalo several years ago. For me Beef doesn’t come close to Buffalo, not to mention it’s healthier than Beef also.

To go with my Steak I prepared one Egg Sunny Side Up, a serving of Simply Potatoes Hash Browns, and 2 slices of Toasted Klosterman Wheat Bread (Buttered with I Can’t Believe It’s Not Butter). Now this is a Breakfast! The Wild Idea Buffalo Steak ties everything together. Sometimes Breakfast is makes a mighty fine Dinner! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Cool morning, about 43 degrees. Had an early morning doctors appointment. My 4 month checkup of Sugar, Cholesterol, and such. Came back home for breakfast then ran a couple of errands for myself and Mom. Hoveround called this afternoon to confirm I’ll be getting a new Hoveround Mobility Chair Thursday. For dinner tonight I prepared a Buffalo Terres Major Steak w/ Smashed Potatoes and Cut Green Beans.

 

 
I prepared one of my favorite cut of Steak, the Wild Idea Buffalo Terris Major Steak. It’s come on of my favorite cuts of Buffalo because it just always so tender and a taste and flavor that’s hard to beat. I had the Steak in the freezer so I let it thaw overnight in the fridge. To prepare it I started by brushing it lightly with Extra Virgin Olive Oil and seasoning it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in a Cast Iron Skillet in canola Oil. Cooked it over medium heat about 4 minutes per side. It came out medium rare and juicy! I just love the incredible sweet and wild flavor of the Wild Idea Buffalo Meats. I love any Bison or Buffalo but Wild Idea Buffalo but this is my favorite. Topped it with some Sautéed Mushrooms.

 

 
For one side I prepared some Smashed Potatoes using Baby Gold Potatoes. To prepare them I cut each Potato in half. Then after putting them in a bowl I added a tablespoon of Extra Virgin Olive Oil and then McCormick Grinder Sea Salt and Black Peppercorn, Dill, and Parsley. Mixed until all were coated. I then boiled them for 30 minutes. Then put them in a serving bowl and with a fork smashed them up. Added I Can’t Believe It’s Not Butter and 2 slices of crumbled Turkey Bacon and continued to smash and mix and serve. Then I heated up a small can of Del Monte Cut Green Beans. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

A little hotter and more humid outside, ugh! Went this morning and picked my car up, $178.00. But it beats a new car payment, still runs good at 145,00 miles. My Dad is doing better, they have up out of the wheelchair and walking with the use of a walker. Hope the improvement continues and he can make it home. September 4th is his Birthday, he’ll be 93! Mom ate dinner with Dad at the rehab center so I cooked for one tonight. I prepared a Bison Sirloin & Sauteed Mushrooms w/ Mashed Potatoes and Cut Green Beans.

 

 

 
I used a Great Range Bison Sirloin, sold here locally at Kroger. I seasoned it with McCormick Grinder Sea salt and Black Peppercorn and pan fried it in Canola Oil, about 4 minutes per side to a beautiful medium rare with a nice char on the outside and a little pink and moist and tender inside, love that Bison! Served with a side of Sauteed Whole Mushrooms.

 

 

 
For another side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Then I also heated up a small can of Del Monte Cut Green Beans. For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.

Hey everyone! Started my day off with a Simply Potatoes Hash Browns/Turkey Spam (Cubed)/ Sargento Reduced Fat Shredded Sharp Cheddar Cheese Hash. I just love using Turkey Spam for any meal! Caught up on some laundry and household chores and the spent the rest of the afternoon visiting Dad at the rehab center. Very muggy out today, about 85 degrees. For dinner tonight it’s a Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries.

I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers.Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 1/2 minutes per side, and done! I topped it with a fresh slice of Borden Extra Sharp Cheddar and Sauteed Mushrooms, served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Hard to beat these Wild Idea Buffalo Burgers, just sooo delicious!

 

 
Then for a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

A little under the weather today, upset stomach nothing major. Fairly nice day out, a good breeze which got rid of the humidity. But not much going on, took sort of easy today. For dinner tonight my favorite Steaks. I prepared a 5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Steakhouse Seasoned Diced Potatoes and Green Beans.

 

 

 
I used my favorite Buffalo, the Wild Idea Buffalo 5 oz. Petite Top Sirloin Steak. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it, in Canola Oil. Fried it about 4 minutes per side, to a beautiful medium rare. Nice crust on the outside and moist and juicy on the inside. The taste of Wild Buffalo Steaks are just incredible! The meat has a sweet taste to it and cooks up so easy. Just when I think I’ve had the best Steak ever, I prepare the next one and it’s even better! I topped it with some Sauteed Baby Bella Mushrooms.

 

 

 
For one side dish I prepared some of Simply Potatoes Steakhouse Seasoned Diced Potatoes. Just love using the Simply Potatoes Products, always fresh and always and delicious Potato Dish. Then I reheated some Green Beans my Mom had prepared for her and my Dad last night for their dinner. Also had a slice of Healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Weight Watcher’s Chocolate Brownie.

We’re caught in a rainy and humid weather pattern, rainy and humid out again. Goetteafest is going on in neighboring Newport, Kentucky this weekend. So to celebrate that here at home I started my day off with a Crumbled Goetta and Egg on Whole Grain English Muffin, and a delicious way to start! Not much going on today, just bummed around the house doing a few things. For dinner tonight I prepared a Seasoned Haddock w/ Smashed Red Potatoes and Sliced Carrots.

 

 

 
I picked up a fillet of Haddock at Kroger yesterday. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix is a perfect combo.

For one side I prepared some Smashed Red Potatoes. To prepare, I took 3 small to medium size Red Potatoes and boiled them until they were fork tender. When they were done I placed them on a cookie sheet and, using a drinking glass, I smashed them just enough that they opened up a bit. I then seasoned them with McCormick Grinder Sea Salt and Black Peppercorn, I Can’t Believe It’s Not Butter, Parsley, and rosemary. Then baked them, in a preheated oven at 425 degrees, for about 10 minutes. Piping hot and delicious! Then I also heated up a small can of Sliced Carrots. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

It’s been pouring the rain since last night. Already Flood Warnings out for different areas around here. Not quite as humid out though. Just did some work on the computer, scans and deleting some old files and such. For dinner something a bit different, a Chili Spud and Grilled Cheese. A hearty but easily prepared meal.

 

 

 
For my Chili Spud I used a medium size Russet Potato with toppings and seasoning of; McCormick Grinder Sea Salt and Black Peppercorn, Dried Parsley, Chives, Hormel Turkey Chili with Beans, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I started by adding the Chili to a small sauce pan and heating on medium until it was completely heated. To prepare the Potato, I gave it a good wash and scrub and poked about a dozen holes in it all around the Potato. Then I microwaved it for 3 minutes and 15 seconds. With the Potato done I split it in the middle and seasoned it withe McCormick Grinder Sea Salt and Black Peppercorn. Topped it with Turkey Chili, sprinkled it with the Parsley and Chives, and topped it all with the Shredded Cheese! Now this one Awesome Potato!

 

 

 
Then for my Grilled Cheese I used Klosterman Wheat Bread and Sargento Ultra Thin Sharp Cheddar. I added a couple of pats of I Can’t Believe It’s Not Butter to a flat grill pan. As that melted took two slices of Klosterman Bread, added my Cheese between the slices and grilled it on the pan. Flipped over once and frying until both sides were golden brown and the Cheese was melted.Grilled Cheese is still and always will be one of the Classic Comfort Foods! Chili Spud and Grilled Cheese, very good dinner! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Today’s Menu: Grilled Pork Chops w/ Roasted Asparagus and Roasted Herb Potatoes

Wow what a gorgeous day to start off the early Memorial Day Weekend! Sunny, not a cloud in the sky, and a high of 70 degrees. A perfect day! Went to Kroger for a few items for myself and my Mom and back home. Did a little price comparison update between Kroger and Walmart, more on the results later. Took the cart out for a while and went down to the lake. For dinner tonight it was Grilled Pork Chops w/ Roasted Asparagus and Roasted Herb Potatoes.

Fired the grill up for part of the meal. I had bought a package of Kroger Center Cut Pork Chops while at Kroger earlier, beautiful looking Chops! I seasoned the Chops with McCormick Grinder Sea Salt and Black Peppercorn, after seasoning I sprayed a light coat of Pam Cooking Spray on both sides of the Chops. I always do this when grilling to help the Meat not to stick on the grill grate. I grilled the Chops till a thermometer read 150 degrees, grilled about 4 1/2 minutes per side. I flipped them one time and after flipping them I brushed on some JB’s Haug Waush BBQ Sauce on them. JB’s is my favorite BBQ Sauce, it’s a flavorful and a nice thick sauce with several different kinds. The Chops came out moist and full of flavor!

 

 

 

Roasted Red Potatoes
Then for sides it was 2 of my favorites, Fresh Roasted Asparagus and Roasted Herb Red Potatoes. For the Red Potatoes, preheat oven to 400 degrees, I needed 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon minced fresh or Dried Rosemary, 1 tablespoon Dried Thyme, Rubbed Sage, and 1/2 teaspoon Sea Salt, and 1/4 teaspoon Ground Black Pepper. I start by heating up a Cast Iron Skillet on medium heat and as that’s heating up quartered the Red Potatoes. Combined all ingredients in a large bowl and added the Potatoes. Toss to coat Potatoes and add them to the Skillet. Fry them about 4-5 minutes and transfer the Skillet to the preheated oven. That’s why I love using Cast Iron Skillets, from the stove to the oven. I skillet and easy clean up! Bake them for 20 minutes or until their fork tender.

 

 

 
With your oven already at 400 degrees you can make the Roasted Asparagus also. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. Chops, Red Potatoes, and Asparagus, What is not to like! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Another cool and rainy morning, about 43 degrees this morning. Finally cleared up and the sun came out in the late afternoon though. Went to the bank, mailed a few letters, and stopped by Kroger to pick up a few items for my Mom and myself. For dinner tonight it’s a Surf and Turf and Baked Potato!

 

 

 

The Surf part is Crab Cakes. I used Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are real good to be frozen! They’re  just the right size, about 3.5 ounces each, and full of flavor. Served it with some Louisiana Remoulade Dressing for dipping. I’ll be keeping a box or two of these in the freezer.

 

 

 
Then for the Turf part I prepared a Wild idea Buffalo 5 oz. Buffalo Top Sirloin. My favorite meat, Buffalo! I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Extra Virgin Olive Oil about 4 minutes per side, medium rare. Absolutely love these Steaks! I also a Baked Potato that i seasoned with the McCormick Grinder Sea salt and Black Peppercorn and topped with i Can’t Believe It’s Not Butter. For dessert/snack later a 100 Calorie Mini bag of Jolly Time Pop Corn.

Today’s Menu: Grilled Buffalo Terris Major Steak w/ Mushrooms, Baked Potato, and Green Beans

 

 

 

Grilled Buffalo Terris Major Steak 003

A chilly start to a Spring Day here today, 36 degrees early this morning! It was sunny out all day but a cool breeze blowing and in the 50’s. Went to one of my favorite grocery stores this morning, Jungle Jim’s International Market. You can spend hours in that store and still not see everything. They had some samples of Bleu Cheese that would just melt in your mouth! Love that store. For dinner tonight it was my favorite Meat, Buffalo or Bison if you prefer. I prepared a Grilled Buffalo Terris Major Steak w/ Sauteed Steak Cut Mushrooms, Baked Potato, and Green Beans.

 

 
I prepared one of my favorite cuts of Steak, the Wild Idea Buffalo Terris Major Steak. It’s come on of my favorite cuts of Buffalo because it just always so tender. I started by seasoning it with McCormick Grinder Sea Salt and Black Peppercorn then brushing it lightly with Extra Virgin Olive Oil. Fired the grill up and let it get nice and hot, and grilled! Buffalo Meat is very lean and gets done a lot quicker than other Meats. It only takes about 3 1/2 minutes of grilling per side and it’s ready. This one was no exception, it came out medium rare and juicy! I just love the incredible sweet and wild flavor of the Wild Idea Buffalo Meats. I love any Bison or Buffalo but Wild Idea Buffalo is my favorite. Topped it with some Sautéed Steak Cut Mushrooms.

 

 

 
For one side I had a Baked Potato, a Steak’s natural companion. Seasoned it with McCormick Grinder Sea Salt and Black Peppercorn, and topped with I Can’t Believe It’s Not Butter. Then I heated some leftover Canned Green Beans. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.
