Club Sandwich

A club sandwich, also called a clubhouse sandwich, is a sandwich of bread (occasionally toasted), sliced cooked poultry, or fried bacon, lettuce, tomato, and mayonnaise. It is often cut into quarters or halves and held together by cocktail sticks. Modern versions frequently have two layers which are separated by an additional slice of bread.

The club sandwich may have originated at the Union Club of New York City. The earliest known reference to the sandwich, an article that appeared in The Evening World on November 18, 1889, is also an early recipe; “Have you tried a Union Club sandwich yet? Two toasted pieces of Graham bread, with a layer of turkey or chicken and ham between them, served warm. Several other early references also credit the chef of the Union Club with creating the sandwich.

Other sources, however, find the origin of the club sandwich to be up for debate. Another theory is that the club sandwich was invented in an exclusive Saratoga Springs, New York, gambling club in the late 19th century.

The sandwich is known to have appeared on U.S. restaurant menus as far back as 1899. The earliest reference to the sandwich in published fiction is from Conversations of a Chorus Girl, a 1903 book by Ray Cardell. Historically, club sandwiches featured slices of chicken, but with time, turkey has become increasingly common.

As with a BLT, toasted white bread is standard, along with iceberg lettuce, bacon, and tomatoes. The sandwich is traditionally dressed with mayonnaise. Variations, however, on the traditional club sandwich abound. Some vary the protein, for example, a “breakfast club” that includes eggs or a “roast beef club.” Others include ham (instead of, or in addition to bacon) and/or cheese slices. Vegetarian club sandwiches often include hummus, avocado or spinach, as well as substitute the real bacon with a vegetarian alternative. Mustard and sometimes honey mustard are common condiments. Upscale variations include, for example, the oyster club, the salmon club, and Dungeness crab melt.

The sandwich is commonly served with an accompaniment of either coleslaw, or potato salad, and often garnished with a pickle. The coleslaw or potato salad is often reduced to a “garnish” portion, when the primary accompaniment is an order of french fries or potato chips. Due to high fat and carb content from the bread, bacon and dressing, club sandwiches have sometimes been criticized as unhealthy. In 2000, Burger King came under fire for its chicken club, which contained 700 calories, 44 grams of fat (nine of them saturated), and 1,300 milligrams of sodium, as well as the trans fat from the fryer shortening.

Tuna sandwich

A tuna sandwich, also known as a tuna fish sandwich, is a sandwich made from canned tuna—usually made into a tuna salad by adding mayonnaise, and sometimes other ingredients such as celery or onion—as well as other common fruits and vegetables used to flavor sandwiches. Common variations include the tuna boat (served on a bun or roll) and the tuna melt (served with melted cheese). The more general term of tuna sandwich may also refer to cuisine utilizing filet of raw or cooked tuna, rather than canned tuna.

In the United States, 52% of canned tuna is used for sandwiches. The tuna sandwich has been called “the mainstay of almost everyone’s American childhood.

A tuna fish sandwich is usually made with canned tuna mixed with mayonnaise and other additions, such as chopped celery, pickles or pickle relish, hard-boiled eggs, onion, cucumber, sweetcorn, and/or black olives. Other recipes may use olive oil, Miracle Whip, salad cream, mustard, or yogurt, instead of or in addition to mayonnaise. The sandwich may be topped with lettuce, tomato, cucumbers, bean sprouts, or avocado in any combination.

 

* A tuna melt has melted cheese on top of the tuna or on a tomato slice and is served on toasted bread.
* A tuna boat is a tuna fish sandwich served in a hot dog bun or long-split bread roll.

Tuna is a relatively high protein food and it is very high in omega-3 fatty acids. A sandwich made from 100 grams of tuna and two slices of toasted white bread has approximately 287 calories, 96 of which are from fat (10.5 grams fat). It also has 20 grams of protein and 27 grams of carbohydrates.

A larger, commercially prepared tuna fish sandwich has more calories than noted above, based on its serving size. A 6-inch Subway tuna sub of 238 grams has 480 calories, 210 of those from fat, 600 milligrams of sodium, and 20 grams of protein.

Leftover Turkey Banh Mi
Total Time – 1 hour
Serving Size Makes – 2 Servings

Ingredients
1/4 – cup apple cider vinegar

1/4 – cup apple juice

1 – tablespoon water

1 – tablespoon honey

1/2 – cup julienne carrots

1/2 – cup julienne daikon radish

1/4 – cup mayonnaise

1 – tablespoon chili garlic sauce

2 – demi baguettes

2 – cups leftover JENNIE-O® Turkey slices

16 – slices cucumber

8 – slices jalapeño peppers

8 – cilantro sprigs

 

Directions
1.) In small saucepan over high heat, combine vinegar, apple juice, water and honey; bring to boil. Remove from heat; let cool.

2.) Combine cooled vinegar mixture with carrots and daikon radish. Cover and chill 1 hour or overnight.

3.) In small bowl, combine mayonnaise and chili sauce. Split each baguette in half almost all the way through. Spread cut sides with mayonnaise mixture.

4.) Place 1 cup turkey, 4 slices cucumber and 4 slices jalapeño pepper inside each baguette. Drain liquid from carrot mixture. Add to baguettes and top with cilantro.

How can I make my coleslaw better, kick it up a bit…………………

Simply whisk together the mayo, a little sugar, cider vinegar, salt and pepper, chopped onions, parsley, and some celery salt. Add part of the slaw dressing to the coleslaw mix and give it a good toss. Add more dressing as needed after tasting the creamy coleslaw.

Banh-Mi Style Turkey Tacos
Can’t decide between Vietnamese and Mexican? These turkey tacos are are here to save the day — fresh radish, shredded carrots and jalapeño, served in a warm tortilla. Under 300 calories per serving, too!

INGREDIENTS
¼ cup sugar
¼ cup rice vinegar
1 tablespoon fish sauce
¼ cup jalapeno, thinly sliced
¼ cup radish, thinly sliced
⅓ cucumber, thinly sliced
½ cup shredded carrots
⅓ cup fat-free mayonnaise
8 soft taco-size (6-inch) flour tortillas
2 cups shredded JENNIE-O® Slow Roasted Dark Turkey
lime wedges, if desired

DIRECTIONS
1) In small saucepan, over medium heat, combine sugar, vinegar and fish sauce. Stir until sugar is dissolved. Simmer, without stirring, 3 minutes. Remove from heat; let cool.
2) In medium bowl, toss cooled vinegar mixture with jalapenos, radish, cucumber and carrots; set aside.
3) Spread mayonnaise on each tortilla. Add turkey. Top with vegetable mixture. Serve with lime wedges, if desired.

Saltimbocca Turkey Burger
This tasty Italian burger recipe takes a lean turkey patty and dresses it up in garlic and lemon juice, tops it with veggies and prosciutto and still keeps it under 300 calories per serving. Classy!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
⅓ cup fat-free mayonnaise
2 cloves garlic, minced
1 tablespoon lemon juice
4 ciabatta rolls, split and toasted
1 cup baby spinach leaves
2 ounces thinly sliced prosciutto
½ cup roasted red pepper strips, drained

DIRECTIONS
1) Cook turkey patties as specified on package. Always cook to well done, 165°F as measured by a meat thermometer.
2) In small bowl, whisk together mayonnaise, garlic and lemon juice. Spread on both cut sides of each roll.
3) Place turkey patties on bottom halves of rolls.
4) Top with baby spinach, prosciutto and red pepper. Cover with roll tops.
* Always cook to an internal temperature of 165°F.

New Mexico Green Chili Turkey Burger
Jack up the flavor of your next meal with a juicy pepper jack turkey burger! Topped with green chilies in a honey lime sauce, this New Mexico style recipe will never get old. Give these burgers a try tonight!

INGREDIENTS
12 green chilies
2 teaspoons honey
2 teaspoons lime juice
⅓ cup mayonnaise
2 tablespoons ketchup
1 teaspoon chili powder
1 (32-ounce) package JENNIE-O® ⅓ pound Seasoned Turkey Burgers – Raised Without Antibiotics
6 brioche buns, split and toasted
6 lettuce leaves
12 tomato slices
6 red onion slices

DIRECTIONS
1) Prepare grill for medium heat. Cook chilies on greased grill 7 to 9 minutes, turning occasionally. Remove from heat. Let stand 10 minutes. In medium bowl, combine honey and juice. Chop chilies; add to honey mixture. Stir to combine.
2) In small bowl, combine mayonnaise, ketchup and chili powder; set aside in refrigerator.
3) Cook patties according to package directions. Always cook until well done, 165°F as measured by meat thermometer.
4) Spread mayonnaise mixture onto top and bottom of each bun. Top bottom halves with lettuce, patties, tomato, onion and green chili mixture. Cover with bun top.
* Always cook to an internal temperature of 165°F.
