Sweet Thai Turkey Breast Wrap
Making a good rap takes lyrical skill. But to make a good wrap, all you need is Sweet Thai Turkey Breast and 15 minutes!

INGREDIENTS
1 tablespoon mayonnaise
1 flour tortilla
2 ounces JENNIE-O® Sweet Thai Chili Turkey Breast, thinly sliced
2 slices Provolone cheese
1 lettuce leaf, torn
3 thinly sliced cucumber ribbons (using a vegetable peeler)
3 thin tomato slices

DIRECTIONS
1) Spread mayonnaise on tortilla.
2) Layer with turkey, cheese, lettuce, cucumber and tomato.
3) Roll and cut in half.

Pork tenderloin sandwich (large)

The pork tenderloin sandwich contains a breaded and fried cutlet similar to the Wiener Schnitzel and is popular in the Midwest region of the United States, especially in the state of Indiana. The sandwich can first be traced back to the Nick’s Kitchen restaurant in Huntington, Indiana (near Fort Wayne).

The primary differences between a Pork Tenderloin sandwich and a Wiener Schnitzel are that the Pork Tenderloin sandwich is made exclusively using pork loin and it is deep fried instead of pan fried. The Pork Tenderloin sandwich is also usually served on a bun. There is a grilled variant of the Pork Tenderloin that omits the breading and grills the tenderloin instead of deep frying it.

A Pork Tenderloin sandwich is traditionally prepared from a thinly sliced piece of pork tenderloin, hammered thin with a meat mallet. The meat is then dipped in flour, eggs and breadcrumbs or crushed saltine crackers before being deep fried in oil. After cooking, the prepared Pork Tenderloin is then served on a hamburger bun, with the meat overlapping the bun considerably. The sandwich can be served with condiments such as mustard, lettuce, onions, pickles, and mayonnaise.

The sandwich is usually served with a side of french fries, though onion rings are often provided instead.

The primary variant of the prepared pork tenderloin is a grilled prepared pork tenderloin. This is a healthier variation as the pork is grilled instead of fried. The meat is seasoned or marinated and then placed on a grill. After cooking, the meat is placed on a hamburger bun and topped with condiments.

Club sandwich

A club sandwich, also called a clubhouse sandwich, is a sandwich of bread (occasionally toasted), sliced cooked poultry, or fried bacon, lettuce, tomato, and mayonnaise. It is often cut into quarters or halves and held together by cocktail sticks. Modern versions frequently have two layers which are separated by an additional slice of bread.

The club sandwich may have originated at the Union Club of New York City. The earliest known reference to the sandwich, an article that appeared in The Evening World on November 18, 1889, is also an early recipe; “Have you tried a Union Club sandwich yet? Two toasted pieces of Graham bread, with a layer of turkey or chicken and ham between them, served warm.”Several other early references also credit the chef of the Union Club with creating the sandwich.

Other sources, however, find the origin of the club sandwich to be up for debate. Another theory is that the club sandwich was invented in an exclusive Saratoga Springs, New York, gambling club in the late 19th century.

The sandwich is known to have appeared on U.S. restaurant menus as far back as 1899. The earliest reference to the sandwich in published fiction is from Conversations of a Chorus Girl, a 1903 book by Ray Cardell. Historically, club sandwiches featured slices of chicken, but with time, turkey has become increasingly common.

As with a BLT, toasted white bread is standard, along with iceberg lettuce, bacon, and tomatoes. The sandwich is traditionally dressed with mayonnaise. Variations, however, on the traditional club sandwich abound. Some vary the protein, for example, a “breakfast club” that includes eggs or a “roast beef club.” Others include ham (instead of, or in addition to bacon) and/or cheese slices. Vegetarian club sandwiches often include hummus, avocado or spinach, as well as substitute the real bacon with a vegetarian alternative. Mustard and sometimes honey mustard are common condiments. Upscale variations include, for example, the oyster club, the salmon club, and Dungeness crab melt.

The sandwich is commonly served with an accompaniment of either coleslaw, or potato salad, and often garnished with a pickle. The coleslaw or potato salad is often reduced to a “garnish” portion, when the primary accompaniment is an order of french fries or potato chips. Due to high fat and carb content from the bread, bacon and dressing, club sandwiches have sometimes been criticized as unhealthy. In 2000, Burger King came under fire for its chicken club, which contained 700 calories, 44 grams of fat (nine of them saturated), and 1,300 milligrams of sodium, as well as the trans fat from the fryer shortening.

Mummy Turkey Franks
SO cute you won’t want to eat them! And SO simple you may think twice about serving turkey franks in a bun. This recipe uses crescent roll dough strips to create the ultimate treat for parties or kids meals. Complete the look with mayo and ketchup dots for eyes.

INGREDIENTS
1 (8-ounce) can refrigerated crescent roll dough sheet
8 JENNIE-O® Jumbo Turkey Franks

ketchup

DIRECTIONS
1) Heat oven to 425°
2) Unroll crescent roll dough sheet onto lightly floured surface. Cut lengthwise into 8 strips. Wrap each strip around each frank, leaving an opening towards the top for the eyes. Place on parchment paper-lined baking sheet.
3) Bake 15 minutes or until golden. Use mayonnaise and ketchup to create eyes. Serve with additional ketchup, if desired.

BLT Turkey Brats
Our brats are amazing—but like most things, they only get better when wrapped in bacon. Top that goodness with lettuce and tomato and you’ve got a new summer favorite. Ready in under 30 minutes.

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Turkey Bratwurst
5 slices JENNIE-O® Turkey Bacon, if desired
5 tablespoons light or fat-free mayonnaise
5 reduced-calorie bratwurst buns, toasted
1 cup shredded lettuce
1 cup chopped tomato

DIRECTIONS
1) Wrap each turkey brat with a slice of bacon, if desired; secure bacon in place with toothpicks. Cook brats as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer and bacon is crisp.
2) Spread mayonnaise on each toasted bun. Remove toothpicks from brats and place in buns. Top each brat with lettuce and tomato.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Baked Ham and Swiss Sub w/ Baked Fries

 

 

For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. A little better day out there than yesterday, high of 32 degrees and partly sunny. After Lunch I headed up to a local rehab center to see a friend of mine’s father. He had lost part of his foot to Diabetes and was having a rough time. It was good seeing everyone, just under better circumstances next time! For Dinner tonight, a Baked Ham and Swiss Sub w/ Baked Fries

 

For my Sub I’ll need; Aunt Millie’s Deli Style Whole Grain Mini Sub Buns, Boar’s Head Sweet Sliced Ham, al fresco Uncured Chicken Bacon, 2 slices of Sargento Ultra Thin Swiss Cheese, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing.

 

 

 

 

 


I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. If you’ve never tried this Bacon you need to give it a try. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! Sit the Bacon aside until ready to use.

 

 

To make the Sub I took the bottom half of the Bun and layered it the Mayo and a slice of Swiss Cheese. Then layered it with the Ham, 2 slices of Swiss Cheese, Chicken Bacon, a drizzle of the Italian Dressing, and topped it with the top half of the Sub Bun. Last, I drizzled more of the Italian Dressing over to of it.

 

 

 

 

I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!

 

 

 

 

 


I also baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later, while watching the Super Bowl, a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Jimmy John’s – Ultimate Porker and Billy Club

Today’s Menu: Jimmy John’s – Ultimate Porker and Billy Club

 

 

For Breakfast I toasted a Healthy Life Whole Grain English Muffin (lightly buttered), Scrambled 1 Egg, and my morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to the hospital to see Dad. He’s doing okay. They have him on heavy duty water pills to try to drain the water on his lungs. He’s had so many problems for the past few years. Another hot and humid day out! Back home did some house cleaning and a few things around the house. For Dinner tonight I ordered a delivery from Jimmy John’s, Ultimate Porker Sub Sandwich.

 

 

The weather is still the same here; hazy, hot, and humid! And when it’s like this I really don’t feel like cooking a big meal so tonight I tried a Sub Sandwich from Jimmy John’s. I tried the Jimmy John’s Ultimate Porker and Mom had the Billy Club. First time trying Jimmy John’s, I had it delivered.

 

 

 

 

The Ultimate Porker is a Sub Sandwich that has Wood-Smoked Ham, Ham, and Bacon with Lettuce, and Mayo . It comes with Tomato also but I didn’t get that. Nice size Sub with plenty of Meat. The Smoked Ham and Bacon were great! Everything came together and made one delicious and filling Sub Sandwich! Plus I didn’t even have to get out in the heat to get it, I had delivered. The Sub was 298 calories and 57 carbs. A bit more carbs than I like but well worth it. We’ll be ordering again. Mom’ really enjoyed hers also she had the Billy Club. The Billy Club is a Sub Sandwich with Choice Roast Beef, Smoked Ham, Provolone Cheese, Dijon Mustard, Lettuce, Tomato, and Mayo. First Sub Sandwich in a while and it hit the spot! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.
