Habanero Apricot Spaghetti Squash
Lighten up your pasta without going light on taste. This veggie-packed dish boasts a deliciously sweet heat thanks to all-natural JENNIE-O® Habanero Apricot Seasoned Turkey Sausage.

INGREDIENTS
1 (3-pound) spaghetti squash
½ cup water
2 tablespoons olive oil
1 (19.5-ounce) package JENNIE-O® Habanero Apricot Seasoned Turkey Sausage
1 medium onion, sliced
1 (8-ounce) package white mushrooms, sliced
1 (24-ounce) jar marinara sauce
½ teaspoon kosher salt, if desired
freshly grated Parmesan cheese, if desired
chopped fresh basil leaves, if desired

DIRECTIONS
1) Heat oven to 350°F.
2) Cut squash in half lengthwise. Scrape out and discard seeds and membranes. Place cut sides down in large baking dish, add water and bake 50 minutes or until tender. Turn cut sides up and let stand 10 minutes. Shred flesh with fork.
3) Meanwhile, in large skillet, heat oil over medium heat. Add turkey, mushrooms and onions and cook 10 minutes or until turkey is cooked through. Always cook sausage links to well-done, 165°F as measured by a meat thermometer and cut into 1-inch pieces. Add marinara sauce and salt and simmer 10 minutes.
4) Spoon squash onto serving plates and top with turkey mixture. Garnish, with cheese and basil, if desired.
* Always cook to an internal temperature of 165°F.

Crispy Mascarpone Rigatoni
Large breaded and fried rigatoni pasta is stuffed with a savory mascarpone filling and served with marinara sauce topped with shaved provolone.

Recipe Ingredients:
1/2 cup (4 ounces) Wisconsin Crave Brothers Mascarpone
1 1/2 cup (12 ounces) Wisconsin Ricotta Cheese
1 cup (about 3 ounces) Wisconsin Romano Cheese, finely grated
2 tablespoons fresh mint leaves, finely chopped
1/2 teaspoon cocoa powder
3 large eggs
2 tablespoons water
1 pound large rigatoni pasta, cooked al dente
2 cups fine bread crumbs
Olive oil for frying
2 cups marinara sauce (homemade or purchased)
Fresh basil leaves, finely chopped
1/2 pound Wisconsin Provolone Cheese, shaved

Cooking Directions:
1 – In medium mixing bowl, whisk together the mascarpone, ricotta, Romano, mint and cocoa. Refrigerate for one hour.
2 – Preheat oven to 400ºF (205ºC).
3 – In medium bowl, beat eggs and water together. Dip rigatoni in egg mixture and roll in bread crumbs; being sure to coat ends well.
4 – Pour 1/4 inch olive oil in bottom of large sauté pan. Heat oil over medium heat. Fry rigatoni until crisp on each side, about 1 minute. Remove and drain on paper towels.
5 – Pipe refrigerated cheese filling into fried rigatoni and place in baking pan; bake for 5 minutes.
6 – Meanwhile, heat marinara sauce. Place a dollop of sauce on small plate and place 5 stuffed rigatoni on top at various angles. Garnish with fresh basil. Sprinkle with shaved Provolone cheese.

Mulberry Street Turkey Burger
Here’s a quick burger recipe that lets you recreate the big flavors of Little Italy for a simple weeknight dinner. Enjoy lean turkey patties topped with marinara and freshly grated Parmesan.

INGREDIENTS
1 tablespoon oil
½ cup finely chopped onion
2 garlic cloves, minced
1 (14-ounce) can diced tomatoes, undrained
1 teaspoon dried oregano leaves
2 tablespoons tomato paste
2 tablespoons chopped fresh basil
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
4 reduced-calorie hamburger buns, split and toasted
4 tablespoons freshly grated Parmesan cheese

DIRECTIONS
1) Heat oil in pan over medium-high heat. Add onion and garlic. Cook, stirring occasionally, 5 minutes or until onion is softened. Add tomatoes with juice, oregano and tomato paste. Bring to a boil. Reduce to medium-low. Simmer, uncovered, stirring occasionally, 10 minutes or until thickened. Stir in basil.
2) Cook patties as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
3) On bun bottoms, layer patties, tomato mixture and cheese. Add bun top.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Banquet Homestyle Bakes – Pasta and Meatballs in Marinara Sauce w/ Baked French Bread

 

 

 

For Breakfast I prepared a packet of Quaker Oats Butter Instant Grits along with a al fresco Apple Maple Chicken Sausage Breakfast Pattie and toasted a slice of Healthy Life Whole Grain Bread (lightly buttered with I Can’t Believe It’s Not Butter). Also, as always, my morning cup of Bigelow Decaf Green Tea. Outside another nice day, 86 degrees, mostly sunny, but a bit more humid. A high school friend that I’m still in contact with came over and helped me change the batteries in my Hoveround. Afterwards we went over to a new Wings and Rings that opened up for a late lunch. First time I had a Chicken Wing from Wings and Rings in 10 years or more, they were good! Back home did some cleaning outside got the leaf blower out and cleaned the deck and driveway areas. For Dinner tonight tried a new dish, I prepared a Banquet Homestyle Bakes – Pasta and Meatballs in Marinara Sauce w/ Baked French Bread.

 

 

I love these Banquet Homestyle Bakes and for Dinner tonight I’m trying the Banquet Homestyle Bakes – Pasta and Meatballs in Marinara Sauce. I’ve tried a couple of the Banquet Homestyle Bakes and both are family favorites, and now we have a third favorite, Pasta and Meatballs in Marinara Sauce. As it says, it’s a Complete Meal Kit. I added 1 1/4 cups of Water, a little Sea Salt for taste, 1 small can of Pennsylvania Dutchman Mushrooms Stems and Pieces (drained), Kraft Reduced Fat Grated Parmesan Cheese, and Sargento Shredded Mozzarella. To prepare it is very easy.

 

Ready for the oven…

To prepare it you can bake it in the oven or cook it in a skillet on the stove top. I’m baking mine. Start by preheating the oven to 425 degrees F. Stir together both cans of sauce, Mushrooms, and 1 1/4 cups water in 8″ x 8″ baking dish. Stir in the pasta until well coated. Cover with foil and bake for 50 minutes, until pasta is tender. Before you cover it with foil I always lightly spray the underside of the foil with Pam Cooking Spray, that way the Sauce won’t stick to it. When done carefully uncover. Let stand 5 minutes; sauce will thicken. When ready top it with the Grated Parm and Shredded Mozzarella and serve!

 

 

….and done!

Came out hot and delicious. Again nothing fancy, just a good and hearty Dinner. The Pasta and Meatballs are delicious and the added Mushrooms and Mozzarella top it off just right. As always the sauce is so good, I think the Banquet sauces that come in their Dinners is some of the best. I also baked a loaf of Pillsbury French Bread. For Dessert later a Dole No sugar Added Diced Peaches Cup.

Eggplant Rollatini

Eggplant rolls, filled with a savory mixture of three Italian cheeses and capers, and baked in marinara sauce.

Recipe Ingredients:

1 large eggplant
4 tablespoons extra virgin olive oil
Salt and ground black pepper to taste
About 1 cup all-purpose flour
1 (12-ounce) container ricotta cheese
4 ounces mozzarella cheese cut into 1/2-inch cubes
2 tablespoons freshly grated Parmesan cheese
1/4 cup fresh basil chopped
1 tablespoon capers
1 (16-ounce) jar marinara sauce

Cooking Directions:

1 – Cut eggplant lengthwise in slices. Salt lightly and allow to sit for about 30 minutes. Rinse slices and pat dry with paper towel.
2 – Preheat oven to 350°F (175°C).
3 – Heat olive oil in a non-stick skillet. Season eggplant and dip in flour. Sauté till golden brown and drain on paper towels.
4 – In a bowl, mix together the ricotta, mozzarella, basil and capers. Season with salt and pepper. Place several tablespoons of filling on one end of the eggplant slices then roll up and secure with wooden picks.
5 – In a lightly greased casserole dish, spread about 1/4 cup of the marinara sauce. Place rollatini in dish and cover with remaining sauce. Bake for about 40 minutes.
Makes 4 servings.

DIRECTIONS

1) Heat oil in skillet over medium heat. Add bell pepper and garlic. Cook 3 minutes stirring occasionally. Crumble sausage into skillet; discard casings. Cook 12 to 14 minutes or until well-done, 165°F as measured by a meat thermometer; stirring frequently.
2) Add marinara sauce and basil; simmer uncovered 5 to 7 minutes or until thickened. Spoon mixture onto bottom of rolls and cover with roll top.
* Always cook to an internal temperature of 165°F.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
8 ounces marinara sauce
2 ounces shredded Cheddar cheese
16 tater tots
DIRECTIONS

Heat oven to 425°F.
1) Cook ground turkey as specified on package. Always cook turkey to well-done, 165°F as measured by a meat thermometer. Stir in marinara sauce.
2) In 8 x 8-inch baking dish, add turkey. Sprinkle with cheese. Arrange tater tots on top. Bake 20 to 30 minutes or until tater tots are brown.

Another beautiful Fall day out! Only a high in the low 60’s but plenty of sunshine. Glad Dad is back home, he’s had a few problems but nothing major. Did a couple of loads of laundry for Mom and then I hit the easy chair with remote in hand for an afternoon of College Football! For dinner tonight it’s Leftovers. I heated up last night’s Skillet Chicken Lasagna.

 

 

 

Last night I prepared a new recipe, courtesy of Ree Drummond, Skillet Chicken Lasagna. And it turned out to be one incredibly delicious dish! Well last night’s dinner turns into tonight’s Leftover Meal. Chicken and Bow Tie Pasta are great together anytime, but made even better with Marinara Sauce, Onions, Garlic, Seasoning, Ricotta, Mozzarella, and Parmesan Cheese. All this turns into one Comfort Food Special! So there was no way I was going to let these Leftovers go to waste. I took the leftovers and emptied them into a small sauce pan and heated them up on low until heated throughout. The outcome; the Leftovers are just as good the original meal from last night! If you’re looking for a new favorite meal for the family, look no further. I’ve left last night’s post below that contains the prep of the meal and the original recipe and link.

 
I saw this recipe on the latest episode of Pioneer Woman and couldn’t wait to give it a try! Pasta, Chicken, and Skillet Chicken Lasagna and Baked French Bread 001Cheese, what’s not to like? To make the dish I’ll need the following; 12 ounces Bow Tie Pasta, 2 tablespoons Extra Virgin Olive Oil, 2 boneless and skinless Simple Truth Chicken Breasts (sliced or diced), 1 tablespoon McCormick Grinder Italian Seasoning, McCormick Grinder Sea Salt, 1 medium Red Onion (diced), 2 Cloves Garlic (minced), 1 cup Swanson Low-Sodium Chicken Broth, 1 jar marinara Sauce (14 to 16 ounces), 1/2 teaspoon Red Pepper Flakes, 1 cup Sargento Reduced Fat Shredded Mozzarella Cheese (plus more if needed), 1/2 cup Low Fat Ricotta Cheese (plus more if needed), fresh chopped Basil or Cilantro, and 1/4 cup Kraft Reduced Fat Grated Parmesan (plus more if needed and for serving). I used some reduced fat ingredients to cut the fat, carb and calorie count. The original recipe along with the web link is at the bottom of the post.

 

Skillet Chicken Lasagna and Baked French Bread 002
To prepare the dish I started by cooking the pasta according to the package instructions; drained and set aside. Heat the oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning and some sea salt. Add the chicken to the skillet and cook until golden brown, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.

 
Add the onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add the broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2 to 3 minutes to let the broth reduce. Add the marinara sauce and red pepper flakes, bring to a simmer and simmer for 10 minutes. Turn off the heat and add the drained pasta, mozzarella, ricotta, Parmesan and basil. Add the cooked chicken on top. Toss to combine, then add more of the mozzarella, ricotta, Parmesan or basil until the sauce is just how you like it. Serve with a sprinkling of Shaved Parmesan Cheese and fresh chopped Basil on top.

Skillet Chicken Lasagna

Ingredients

12 ounces bow tie pasta
2 tablespoons olive oil
2 boneless, skinless chicken breasts, sliced or diced
1 tablespoon Italian seasoning or herbes de Provence
Salt
1 medium onion, diced
2 cloves garlic, minced
1 cup low-sodium chicken broth
1 jar good-quality marinara sauce (14 to 16 ounces)
1 teaspoon red pepper flakes
1 cup grated mozzarella cheese, plus more if needed
1/2 cup whole milk ricotta cheese, plus more if needed
1/4 cup grated Parmesan, plus more if needed and for serving

 

Directions

12 fresh basil leaves, cut into chiffonade or chopped, plus more if needed and for serving

Well Dad is finally back home! He’s been in the hospital and rehab for about 3 weeks. He is very happy to be back home! Now to keep him healthy. I had the house all cleaned before Mom brought him home. After cleaning I went to Kroger for Mom for a few items and stopped at the bank before returning. A little cooler out today with a passing shower or two. For dinner tonight a new recipe, Skillet Chicken Lasagna.

I saw this recipe on the latest episode of Pioneer Woman and couldn’t wait to give it a try! Pasta, Chicken, and Cheese, what’s not to like? To make the dish I’ll need the following; 12 ounces Bow Tie Pasta, 2 tablespoons Extra Virgin Olive Oil, 2 boneless and skinless Simple Truth Chicken Breasts (sliced or diced), 1 tablespoon McCormick Grinder Italian Seasoning, McCormick Grinder Sea Salt, 1 medium Red Onion (diced), 2 Cloves Garlic (minced), 1 cup Swanson Low-Sodium Chicken Broth, 1 jar marinara Sauce (14 to 16 ounces), 1/2 teaspoon Red Pepper Flakes, 1 cup Sargento Reduced Fat Shredded Mozzarella Cheese (plus more if needed), 1/2 cup Low Fat Ricotta Cheese (plus more if needed), fresh chopped Basil or Cilantro, and 1/4 cup Kraft Reduced Fat Grated Parmesan (plus more if needed and for serving). I used some reduced fat ingredients to cut the fat, carb and calorie count. The original recipe along with the web link is at the bottom of the post.

To prepare the dish I started by cooking the pasta according to the package instructions; drained and set aside. Heat the oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning and some sea salt. Add the chicken to the skillet and cook until golden brown, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.

 

 
Add the onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add the broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2 to 3 minutes to let the broth reduce. Add the marinara sauce and red pepper flakes, bring to a simmer and simmer for 10 minutes. Turn off the heat and add the drained pasta, mozzarella, ricotta, Parmesan and basil. Add the cooked chicken on top. Toss to combine, then add more of the mozzarella, ricotta, Parmesan or basil until the sauce is just how you like it. Serve with a sprinkling of Shaved Parmesan Cheese and fresh chopped Basil on top.

And what a dish! Everything just comes together to make one Italian Comfort Food Dish. The Mozzarella, Ricotta, and Parmesan Cheese gives the dish such a creaminess and rich flavor. We have another “Keeper Recipe”, courtesy of Ree Drummond (Pioneer Woman). I also baked a loaf Pillsbury Rustic French Bread. For dessert later a 100 Calorie Mini Bag of Jolly Time pop Corn.

 

 

 

 

Skillet Chicken Lasagna

Ingredients

12 ounces bow tie pasta
2 tablespoons olive oil
2 boneless, skinless chicken breasts, sliced or dicedfood
1 tablespoon Italian seasoning or herbes de Provence
Salt
1 medium onion, diced
2 cloves garlic, minced
1 cup low-sodium chicken broth
1 jar good-quality marinara sauce (14 to 16 ounces)
1 teaspoon red pepper flakes
1 cup grated mozzarella cheese, plus more if needed
1/2 cup whole milk ricotta cheese, plus more if needed
1/4 cup grated Parmesan, plus more if needed and for serving

Directions

12 fresh basil leaves, cut into chiffonade or chopped, plus more if needed and for serving

A cool but sunny and beautiful Autumn Day out again. Got the 4 wheel mobility scooter out and helped with the yard work, raking leaves. Then took it out for a spin through the neighborhood and on down to the lake area. Then some College Football for the afternoon! For dinner, Meatballs in Marinara Sauce on Bun w/ Baked Fries.

 

 
A Meatball Sandwich on a cool Autumn Day just sounded right! I used Hormel Sandwich Makers Meatballs in Marinara Sauce. I came across this at Walmart yesterday and thought I would give it a try. It comes in a plastic microwavable container. To,prepare it just puncture the plastic film and microwave for 60 seconds. Let it cool for a minute or so and it’s ready! The Meatballs were good tasting and an excellent Marinara Sauce! There’s 2 servings per package, so I have my lunch for tomorrow. I served them on a Aunt Millie’s Reduced Calorie Whole Grain Hotdog Bun. Topped it with some Sargento Reduced fat Shredded Mozzarella Cheese. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert/snack later some slices of Cracker Barrel 2% Sharp Cheddar on Ritz Whole Grain Crackers.

Microwave Instructions:
Puncture plastic film in several spots on top of tray or peel film back on tray about 1/4-inch. Place tray in microwave. Heat on HIGH for 60 seconds or until hot. Let tray stand for 1 minute, if desired. The tray and its contents are hot after microwaving. Carefully remove film by peeling it back around the tray. Stir, serve with your favorite bread and enjoy!
