Today’s Menu: Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Seasoned Pinto Beans
A day of errands today. The Bank, Post Office, Meijer, and Walmart. Got a couple of Gift Cards for the family, buying some early Christmas Gifts. The storm they were warning everyone about for 2 days barely affected our area, and it didn’t come in till about 10 pm last night. For dinner tonight; Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Seasoned Pinto Beans.
Still running low on the Wild Idea Buffalo Steaks so I used a Great Range Bison Sirloin. I seasoned it with McCormick Grinder Sea salt and Black Peppercorn. No new grill yet so I pan fried it in Canola Oil, about 4 minutes per side. Medium rare with a nice char on the outside and a little pink and moist inside, love Bison or Buffalo! Topped it with some Sauteed Baby Bella Mushrooms. Steak and Mushrooms are always the perfect pairing.
For a side I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper, topped with some I Can’t Believe It’s Not Butter. Then I also heated up a can of Margaret Holmes Seasoned Pinto Beans. First time I tried these, I picked a can up while at Walmart earlier. And as all Margaret Holmes Products they were delicious! Nicely seasoned and full of flavor. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Another very cool morning and beautiful Fall Day out again. Stopped by Jungle Jim’s Market with my parents, picked up some produce and Ocean Perch. Love that store, there’s always something going on in the store and today they cooking breakfast dishes with Ostrich Eggs! Amazing how huge those Eggs are, big enough to feed 5 people on 1 Egg (if not more). For dinner tonight I prepared Chicken ‘n’ Noodles w/ Cut Green Beans and Whole Grain Bread.
I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! It comes in a 5 serving can and contains the Noodles and Fixings, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done, removed and sliced into small pieces. Then added the Chicken back to the pan along with the can of Noodles and Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Spent the morning and early afternoon at the Findlay Market in Cincinnati. First time I’ve been down there in about 12 years or more. It’s really grown since I was there last. Any and all fruits, vegetables, meats, and baked goods. Really a neat place to visit! For dinner I prepared Chicken ‘n’ Noodles w/ Boiled Mini Carrots and Whole Grain Bread.
I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. Today’s Menu: Pan Fried Seasoned Haddock w/ Seasoned Blackeye Peas and Diced Rutabagas
We went from sunny and pleasant Spring days right into late July hot, hazy, and humid weather. Really uncomfortable out today with a lot of pollen out there. But on the plus side its above 10 degrees with no snow or ice! Broke down today and purchased a new bed frame, mattress, and box springs and none to soon as my bed was ready to go at anytime. Went with a nice firm mattress. For dinner tonight I prepared a Pan Fried Seasoned Haddock w/ Seasoned Blackeye Peas and Diced Rutabagas.
I purchased the Haddock from Kroger Seafood Dept. yesterday. To prepare it I cut the fillet into smaller pieces and used Zatarain’s Lemon Pepper Seasoning for it, one of my favorite seasonings. I pan fried it in Canola Oil about 3 1/2 minutes per side. Came out golden brown and full of flavor!
For side dishes it was all Margaret Holmes sides, except the Bread. I heated up a can of Margaret Holmes Seasoned Blackeye Peas and a can of Diced Rutabagas. I love the Blackeye Peas and the seasoning it comes in, it’s spot on! The Rutabagas I’ve had once before, something different for a side and it’s only 35 calories and 17 carbs per serving. I seasoned them with a pinch of Ground Nutmeg and a pinch of Splenda Brown Sugar. I also baked a loaf of La Brea Bakery Take and Bake Artisan Multi Grain Loaf. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

It comes in a 5 serving can and contains the Noodles and Seasoning, just add the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. A beautiful sunny but crisp Fall Day out today! So for dinner tonight I wanted something hot and hearty so I went with Margaret Holmes Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, For the Chicken I purchased a Roasted Chicken from Walmart earlier in the day and pulled all the meat off the bone. I first started the Noodles and Sauce and heated it until the Sauce was bubbling and heated throughout. I then added the Chicken that I had pulled off the bone and stirred until the chicken was mixed in and heated and served. The broth that’s with Noodles is incredible! Today’s Menu: Marinated Pork Chops w/ Asparagus Bits & Diced New Potatoes, Buttered Corn, and Whole Grain Bread
Another gorgeous day out there again around here! My parents spent the day painting the trim on our wooden deck outside and I prepared the dinner inside. I marinated some Bone – In Center Cut Pork Chops for about 3 hours in JB’s Fatboy Haugwaush Bar B Cue Sauce. I love all the different Sauces and Rubs that JB’s have. All have a fantastic flavor. After I marinated the Chops I shook off the excess Sauce and seasoned them with Sea Salt and Ground Black Pepper. I then fried them, I prefer baking them but my parents prefer frying, in Extra Virgin Olive Oil on medium heat. After turning the Chops I then added Minute Maid Apple Juice to the pan and finished frying them until they were done, Chops were at 165 degrees. Between the BBQ Sauce and the added Apple Juice the Chops come out moist and tender bursting with flavor!
I prepared 2 sides Margaret Holmes Buttered Corn and a new dish that I hadn’t prepared before Asparagus Bits & Diced New Potatoes. I took fresh Asparagus Stalks and trimmed the bottom of the stalks off and then cut the spears into 3 pieces and set them aside. I then took small New Potatoes and diced them up. I seasoned them with McCormick Grinder Sea Salt, Black Peppercorn, Dill, and Extra Virgin Olive Oil. Then I fried the diced Potatoes in a large skillet that I presprayed with Pam w/ Olive Oil on medium heat for 7 minutes, stirring them often. After about 7 minutes I added the Asparagus Bits to Potatoes and I then seasoned the pan with Garlic Salt. I stirred the pan often until the Asparagus and Potatoes were done making sure not to getting the Asparagus over done and too soft. Also right before the pan was done I added Turkey Bacon Crumbles and mixed them in. The dish was a smash! Everyone really enjoyed it, the Asparagus and Potatoes make a great pairing. We also had Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.
