Turkey Mac and Cheese
Looking for a comfort food recipe that’s kid-friendly (and adult-friendly, too)? Then try this quick dinner recipe tonight, with real homemade cheese sauce and turkey franks.

INGREDIENTS
2 cups uncooked macaroni
1 (12-ounce) package JENNIE-O® Turkey Franks, cut into ½-inch pieces
2 tablespoons butter
2 tablespoons flour
2 cups milk
1½ cups shredded fat-free Cheddar cheese

DIRECTIONS
1) Cook macaroni as specified on the package or until al dente; drain.
2) Heat skillet over medium heat. Add turkey franks. Cook 5 minutes or until browned, stirring occasionally; remove from pan. In same pan over medium heat, melt butter. Add flour; stir 1 minute.
3) Gradually whisk in milk. Whisk to remove any lumps. Cook 5 minutes or until thickened, stirring occasionally. Add cheese. Stir until cheese is melted. Add macaroni and turkey franks; stir to combine.

This week’s Jennie – O Recipe of the Week is – Easy Turkey Samosas. I wasn’t sure exactly what a Samosa was so I found it on wiki which said; A samosa is a fried or baked dish with a savory filling, such as spiced potatoes, onions, peas, lentils, macaroni, noodles or minced meat. Pine nuts can also be added. There you have it! This one is made using JENNIE-O® Lean Ground Turkey, several Spices and Eggroll Wrappers. Easy Turkey Samosas

Samosas, made popular in Southeast Asia, are hitting restaurants across the U.S. and we’re not surprised. This recipe features a savory filling wrapped and fried crispy. Try them as an appetizer or entrée tonight!

INGREDIENTSeasy-turkey-samosas

1 tablespoon olive oil
1 (1-pound) package JENNIE-O® Lean Ground Turkey
½ cup finely chopped onion
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground chili powder
½ teaspoon kosher salt
½ cup chopped fresh cilantro leaves
12 eggroll wrappers
vegetable oil for frying
DIRECTIONS

1) In large skillet add oil. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add onions, cumin, coriander, chili powder, and salt. Stir in cilantro leaves and cool completely.
3) Brush edges of wrapper with water. Place 3 tablespoons of turkey mixture in center of eggroll wrapper. Fold top corners over filling creating a triangle at the top. Fold point of triangle down and fold bottom corners over top of triangle to seal.
4) Heat oil to 325°F in large deep sided skillet or Dutch oven. Place samosas in hot oil, in small batches and cook 2 to 3 minutes or until lightly browned.
* Always cook to an internal temperature of 165°F.

Chili Mac with TurkeyChili Mac with Turkey

Ingredients
5 ounces whole grain macaroni
1 (16-ounce) package JENNIE-O® Lean Ground Turkey Roll
5 tablespoons pinto beans, drained and rinsed
1 (12-ounce) can diced tomatoes
1 (6-ounce) can tomato paste
1 tablespoon taco seasoning
2½ ounces shredded Cheddar cheese
DirectionsJennie O Make the Switch
1 -Heat oven to 350°F.

2 – Cook macaroni until al dente. Rinse and drain.

3 – Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add macaroni, pinto beans, tomatoes, tomato paste and seasoning. Stir to combine. Add mixture to 9 x 9-inch baking dish and sprinkle with cheese.

4 – Bake 30 minutes or until cheese is melted and mixture is hot.
* Always cook to an internal temperature of 165°F.

Green Mac and Cheese
Mac and cheese without the cheese? Introduce some edamame and nutritional yeast, and you won’t notice the difference.

PBS3

Ingredients
9 ounces (250 grams) dry macaroni
4.5 ounces (about 3/4 cup) shelled edamame with membranes removed
3/4 cup unsweetened soy milk
2 tablespoons nutritional yeast
1/4 teaspoon salt (to taste)

 

Directions
1 – Boil the macaroni according to the package directions in salted water.
2 – Put the peeled edamame, milk, nutritional yeast and salt in a blender or food processor and puree until smooth.
3 – When the pasta is done, drain it and stir in the green “cheese” sauce.
