Today’s Menu: Chef Boyardee Chili Mac w/ Baked Crescent Rolls

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Rolled out to get the papers this morning and the cars and grass areas had snow on them, not a lot but slightly covered. For the day it was 38 degrees, partly cloudy and very windy that took the wind chill to around 33 degrees. Not such a great day for Opening Day here for the Cincinnati Reds. This was the only day that Mom and Dad would let me stay home from school back when I was in Elementary School. They knew how Baseball crazy I was! Opening Day around this area is like a National Holiday. So I had another bad day with my sinuses and sinus headache. If the weather would just stay warm or cold I would be fine but as long as our weather flips back and forth between the 2 my sinuses will continue to be bad. I wanted a hot meal and something easy to prepare. So I settled on Chef Boyardee Chili Mac w/ Baked Crescent Rolls.

 

First time I’ve had this in many of a year. As all Chef Boyardee products it’s easy to prepare and delicious! The Chili Mac is as it describes, Macaroni with Beef in Chili Gravy. To prepare it just empty the contents into saucepan. Heat over medium heat until warm, stirring occasionally. Ready to serve! Plenty of Macaroni along with plenty of Beef. And that Chili Gravy is so good, seasoned just right. There’s 270 calories and 23 net carbs per serving.

 

I also baked a small roll of Pillsbury Crescent Rolls. I just love these, they go great with any meal. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Smoky Pasta and Bean Soup
Warm up with this hearty soup. Serve with crusty rolls and a simple green salad.

Recipe Ingredients:
6 slices bacon, diced
1 small onion, finely chopped
1 rib celery, finely chopped
1 medium carrot, peeled and grated
2 cloves garlic, minced
1/8 teaspoon crushed hot red pepper flakes
2 cups canned crushed tomatoes
2 1/2 cups drained canned white beans
6 cups chicken broth
3/4 cup macaroni or other small pasta shape
Freshly grated Parmesan cheese (optional)

Cooking Directions:
1 – In a large deep skillet, sauté bacon until some fat is rendered; add onion, celery, carrot, garlic and red pepper to skillet and sauté until vegetables are softened, about 10 minutes.
2 – Stir in tomatoes, cook and stir occasionally for 10 more minutes.
3 – Stir in beans; add broth and bring to a gentle boil. Add macaroni (or other small pasta) and continue cooking until pasta is tender, but still firm, about 15 minutes.
4 – Serve immediately with Parmesan cheese if desired; or cover, refrigerate and reheat gently to serving temperature.
Makes 8 servings.

Turkey Mac and Cheese
Looking for a comfort food recipe that’s kid-friendly (and adult-friendly, too)? Then try this quick dinner recipe tonight, with real homemade cheese sauce and turkey franks.

INGREDIENTS
2 cups uncooked macaroni
1 (12-ounce) package JENNIE-O® Turkey Franks, cut into ½-inch pieces
2 tablespoons butter
2 tablespoons flour
2 cups milk
1½ cups shredded fat-free Cheddar cheese

DIRECTIONS
1) Cook macaroni as specified on the package or until al dente; drain.
2) Heat skillet over medium heat. Add turkey franks. Cook 5 minutes or until browned, stirring occasionally; remove from pan. In same pan over medium heat, melt butter. Add flour; stir 1 minute.
3) Gradually whisk in milk. Whisk to remove any lumps. Cook 5 minutes or until thickened, stirring occasionally. Add cheese. Stir until cheese is melted. Add macaroni and turkey franks; stir to combine.

Jennie – O Recipe of the Week – Easy Turkey Samosas

This week’s Jennie – O Recipe of the Week is – Easy Turkey Samosas. I wasn’t sure exactly what a Samosa was so I found it on wiki which said; A samosa is a fried or baked dish with a savory filling, such as spiced potatoes, onions, peas, lentils, macaroni, noodles or minced meat. Pine nuts can also be added. There you have it! This one is made using JENNIE-O® Lean Ground Turkey, several Spices and Eggroll Wrappers. Easy Turkey Samosas

Samosas, made popular in Southeast Asia, are hitting restaurants across the U.S. and we’re not surprised. This recipe features a savory filling wrapped and fried crispy. Try them as an appetizer or entrée tonight!

INGREDIENTSeasy-turkey-samosas

1 tablespoon olive oil
1 (1-pound) package JENNIE-O® Lean Ground Turkey
½ cup finely chopped onion
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground chili powder
½ teaspoon kosher salt
½ cup chopped fresh cilantro leaves
12 eggroll wrappers
vegetable oil for frying
DIRECTIONS

1) In large skillet add oil. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add onions, cumin, coriander, chili powder, and salt. Stir in cilantro leaves and cool completely.
3) Brush edges of wrapper with water. Place 3 tablespoons of turkey mixture in center of eggroll wrapper. Fold top corners over filling creating a triangle at the top. Fold point of triangle down and fold bottom corners over top of triangle to seal.
4) Heat oil to 325°F in large deep sided skillet or Dutch oven. Place samosas in hot oil, in small batches and cook 2 to 3 minutes or until lightly browned.
* Always cook to an internal temperature of 165°F.
