Beets With Horseradish Cream
Beets are widely considered to be a superfood, full of antioxidants, fiber, folate, potassium and vitamin C. Perfect for Passover, this simple side is low in carbohydrate and a good source of nutrients.

4 medium beets (about 2 inches in diameter)
1/3 cup low-fat sour cream
1 1/4 teaspoons prepared horseradish
1/4 teaspoon salt
Pinch black pepper
Cilantro (optional)

Yield: 4 servings
Serving size: 1 cup

1. Trim beets, leaving root and 1 inch of stem. Scrub beets; place in large saucepan; cover with water. Cover; bring to a boil, reduce heat and boil 45 minutes, or until tender.

2. Combine sour cream, horseradish, salt and pepper in small bowl.

3. Remove beets from heat; drain. When cooled; peel and cut into wedges. Transfer to plates and top with Horseradish Cream. Garnish with cilantro, if desired.

Firecracker Deviled Eggs
Gage the fiery heat of these Southwestern-style deviled eggs to your personal preference by choosing to use mild, medium or hot salsa.

Recipe Ingredients:
6 large hard-boiled eggs*
1/3 cup mild, medium or hot salsa
3 tablespoons low-fat sour cream
3 tablespoons green onions, minced
1 tablespoon black olives, chopped
1 teaspoon lemon juice

Optional Garnishes: Chopped or sliced green onions, red pepper strips, sliced ripe olives, and/or chopped fresh cilantro or parsley

Cooking Directions:
1 – Cut eggs in half lengthwise. Remove yolks and set whites aside.
2 – In small bowl, mash yolks with fork. Stir in remaining ingredients until well blended. Refill whites, using 1 heaping tablespoon yolk mixture for each egg half.
3 – Chill to blend flavors.
4 – Garnish as desired.
Makes 12 deviled egg halves.

*Place eggs in single layer in sauce pan. Add water to cover eggs at least 1-inch. Cover and bring to boiling. Turn off heat. Let eggs stand, covered, 15 minutes for large eggs. Immediately drain and run cold water over eggs until completely cooled.
