Today’s Menu: Crab Cake Slider w/ Baked Fries
For Breakfast this morning I had an Egg Sunnyside up, 2 Johnsonville Turkey Breakfast Sausage Links, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Thunderstorms and 73 degrees out today, we’ve had so much rain of late! After Breakfast I did a couple of loads of laundry. Then after Lunch I cleaned the house, dusted and ran the vacuum. So for dinner tonight it’s Crab Cake Slider w/ Baked Fries.
I’m using Kroger Private Selection Maryland Style Crab Cakes, my favorite! They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce is perfect together! If you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!
Then I also Baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Diet Mango Tea Snapple to drink.

Started my morning off I had a Poached Egg, toasted a slice of Aunt Millie’s Light Whole Grain Bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Love a good Breakfast! After Breakfast I took Mom’s car up to be washed and went to my cousin’s house to pick up a couple of items she picked up for us at the store. Back home did a few things around the house then later took my car up to have it washed and then to Meijer to pick up a grocery order. So for dinner tonight it’s Crab Cake Slider w/ Baked Fries.

For Breakfast on this Sunday Morning I Poached an Egg and served it on a Healthy Life Whole Grain English Muffin. Also had that Morning Cup of Bigelow Decaf Green Tea. Mom went on to Church and I stayed home keeping an eye on Dad. Did some light house cleaning, swept the wooden deck off outside, and did a load of laundry for Mom. After Lunch went over to a friend of mine to catch up, hadn’t seen him in a while. Sunny and 50 degrees outside today. Mom already has flowers coming up in the front. I’ll be glad to see the Spring here! So for dinner tonight it’s Crab Cake Slider w/ Baked Fries.

I had already preheated the oven, so as the griddle was heating I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

After Breakfast I went to the local Kroger up the road, needed a few items. Stopped by the ATM and got gas before heading back. Rain early then mostly cloudy and 53 degrees out. A friend of mine called and asked if I could pick them up at the Dayton Airport, picked them up at 2:30 this afternoon. Back home not a lot going on. Blackened Mahi Mahi Sandwich w/ Baked Potato

Today’s Menu: Blackened Mahi Mahi Sandwich w/ Baked Potato
I had a toasted Healthy Life Whole Grain English Muffin topped with Smucker’s Sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea for Breakfast. After Breakfast I headed out to Meijer and stopped at Kroger to pick up a few items for Mom. I wanted to get things done early before the heat and humidity set in for the day. I don’t mind the high temperatures but can’t stand the high humidity. Back home did some cleaning, vacuum and dusting. For Dinner tonight I prepared a Blackened Mahi Mahi Sandwich w/ Baked Potato.
Some good friends of mine called yesterday and said to come over and pick up some fish they had caught at the Florida Gulf. They gave me some beautiful fillets of Grouper and Mahi Mahi. So I couldn’t wait to try one, and went with the Mahi Mahi. To prepare it I rinsed the fillet off in cold water and patted it dry with paper towel. I then seasoned them it with a bit of Sea Salt. Then I melted 1 tablespoon of Blue Bonnet Lite Butter and rolled the fillet in the Butter. I then added the Zatarain’s Blackening Seasoning, coating both sides of the fillet.
I prepared it in a preheated Cast Iron Skillet that I sprayed with Pam Cooking Spray. When the pan was fully heated, on medium heat, I added the Mahi Mahi. At this point turn on your Stove Overhead Exhaust Fan on, because it will start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready! Cast Iron Skillets are perfect to use for any cooking but especially when you Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This is one delicious Mahi Mahi fillet! The fresh taste of the Mahi Mahi, so meaty, along with the Blackening Season are a perfect combo. Love Fish, Love Seafood! I served it on an Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I topped it with some Louisiana Remoulade Sauce and Lettuce.
For a side I prepared a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley, topped it with I Can’t Believe It’s Not Butter. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
Zatarain’s Blackened Seasoning
This spicy seasoning blend is rubbed on the outside of fish (or chicken, steak or other meats) for blackening. Also great as a seasoning rub for the grill or broiler.
Ingredients:
SALT, PAPRIKA, CAYENNE PEPPER, BLACK PEPPER, WHITE PEPPER, CHILI POWDER, MONOSODIUM GLUTAMATE, ONION, GARLIC, SPICES.

For breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and I reheated a slice of the Cubed Steak leftover from last night’s dinner. Made a great Breakfast Sandwich! Cold and overcast out today, just an overall dreary day. My back is still giving me problems but it is slowly getting better. Stayed busy today cleaning. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce is perfect together! If you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!
Then I also Baked some Fingerling Potatoes. I actually found some other than Jungle Jim’s Market, found them finally at the Kroger up the road from us! They come in a small bag, Melissa’s Fingerling Potato Medley. It’s a variety of 4-5 different Potatoes including Fingerling Potatoes, which I love using! To prepare them I started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Love those Potatoes! Perfect side dish for any dinner. Later for dessert I had a Healthy Life dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Crab Cake Slider w/ Baked Fries
Another picture perfect day outside again! No humidity, sunny, and a high of 82 degrees. After Breakfast I got the cart out for a morning ride, such a beautiful morning out. Something I’ve noticed the last few days are a lot of Geese in their “V” formation flying South and there’s a few trees in the neighborhood that the leaves are already turning. Signs of an early Fall perhaps? Did a couple of loads of laundry for Mom and tidy up around the house while that was going on. Back on the cart enjoying the day after that. For dinner tonight its a Crab Cake Slider w/ Baked Fries.
I’m using Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes.
