Today’s Menu: Chicken Tenders and Baked Fries
For Breakfast this morning I prepared a Poached Egg and served it on a Thomas Light English Muffin. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with a cup of Bigelow Decaf Green Tea. 47 degrees and cloudy out all day. After Breakfast I did a load of laundry. Then outside I got the cart and did a few things around the yard and then grabbed the leaf blower and cleaned off the driveway and deck. No much else going on. For Dinner tonight I prepared Chicken Tenders and Baked Fries.
I came across a package of Simple Truth Chicken Tenderloins (Tenders) and I sat them in the fridge overnight to thaw. To prepare them I’ll need McCormick Grinders of Sea Salt and Peppercorn Medley, LiteHouse Poultry Herb Blend, Garlic Salt, Flour, Pam Cooking Spray, and Extra Light Olive Oil.
I Seasoned and Floured the Tenders and set then aside. I grabbed a large skillet and sprayed it with the Pam Spray and heated the skillet on medium heat. As the skillet heated I added 2 tablespoons of Extra Light Olive Oil. When the skillet was heated I added the Tenders, I cooked them in 2 batches so not to over crowd the skillet. I cooked them for about 5 minutes and flipped them over to continue cooking them another 4 minutes. I checked the Tenders with a meat thermometer and I had the correct reading of 165 degrees F. Removed the first batch on to a paper towel lined plate and cooked the next batch.
They came out excellent! Good Seasoning and the Flour gave it a good crust. Served these with sides of LiteHouse Lite Blue Cheese and Hidden Valley Ranch Buffalo Dressing.
To go with the Chicken Tenders I baked some Ore Ida Crinkle Cut Fries. Served those with some Hunt’s Ketchup. For Dessert/Snack later a Diet Raspberry Snapple. First time trying the Diet Raspberry Snapple and really enjoyed it!

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Wow, what a beautiful day out there today! Sunny and 71 degrees but a possible record cold morning with snow flurries by in the morning! Yes indeed, that Ohio Weather! It’s no wonder everyone has Sinus and Allergy problems in Southwest Ohio! Hopefully they’ll miss that forecast. After Lunch I got the cart out and did a little yard work. Then later took the cart for a spin around the neighborhood, enjoying that sunshine! For Dinner tonight I prepared Chicken Tenders and Baked Fries.
I had no clue on what to prepare for Dinner tonight so I hit the freezer. I came across a package of Simple Truth Chicken Tenderloins (Tenders). So I sat them out to thaw this morning. Today’s Menu: Leftovers – Shrimp w/ Pasta Roni – Parmesan Cheese
For Breakfast it was a toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had the morning cup of Bigelow Decaf Green Tea. It was cleaning day around the house today, inside and outside. I did the outside early to avoid the heat and humidity. Then inside it was dusting and the vacuum. Everything done and kicked back the rest of the afternoon. For Dinner tonight it was leftovers! I reheated the leftover Shrimp w/ Pasta Roni – Parmesan Cheese from last night.
I love the Pasta Roni – Parmesan Cheese. I top it with Chicken and now Shrimp. So for Dinner tonight it was the leftover Shrimp w/ Pasta Roni – Parmesan Cheese. No way these leftovers were going to waste! For Dessert later a Jello Sugar Free Dark Chocolate Mousse. I left the post from last night’s Dinner which has all the details of the Shrimp w/ Pasta Roni – Parmesan Cheese. Later!
For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love the Shrimp and Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat I cooked the Shrimp. I seasoned them with Old Bay Seasoning. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.
I’ve prepared this a few times now but with Chicken. So tonight I’m changing it up and using Shrimp. Rice – A – Roni, Pasta Roni is an Angel Hair Pasta in a Parmesan Sauce with other natural flavors. It comes with the Pasta and Parm Sauce and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! More than enough leftover for my Dinner tomorrow night!
Pasta Roni – Parmesan Cheese

Today’s Menu: Chicken w/ Pasta Roni – Parmesan Cheese
For Breakfast this morning I toasted a couple of slices of Healthy Life Whole Grain Bread and lightly buttered it with I Can’t Believe It’s Not Butter. Along with the morning cup of Bigelow Decaf Green Tea. Still raining here, and hard from time to time. It’s been raining so much the past few days we have local flooding in the area, nothing like what’s going on in Louisiana though. Did some cleaning around the house and stained some base board wood trim I had replaced a while back. Then did a little cleaning on the computer, deleting old files and running the virus scan. For dinner tonight I prepared Chicken w/ Pasta Roni – Parmesan Cheese.
For the Chicken part of the dish I used Perdue Perfect Portions Chicken Breasts (2 of them). I had them in the freezer so I let them thaw overnight in the fridge. I love the Perdue Perfect Portions Chicken Breasts. Always taste fresh and nice size. Good for recipes like tonight’s or to serve by their self. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium skillet that was sprayed with Pam Cooking Spray and a tablespoon of Extra Virgin Olive Oil. Fried them on medium high heat for about 10 minutes, flipping it over 3 times. Removed from the heat and set aside. Before serving them with the Pasta I sliced the Chicken Breasts up.

SKILLET: Preheat lightly oiled pan to medium-high. Brown chicken 1 minute per side. Reduce heat to medium-low.
