Grilled Peaches With Spicy Cream Cheese Topping
Make the most of the early summer harvest with this delightful dessert prepared on the grill. With the classic flavor combination of peaches and almonds, this is sure to be a family favorite!
Ingredients
1/2 cup (4 ounces) light cream cheese, softened
1 tablespoon honey
1/4 teaspoon ground red pepper
2 cups thawed frozen fat-free whipped topping
6 peaches, halved and pits removed
1/4 cup slivered almonds, toasted*
Fresh mint leaves (optional)
Directions
Yield: 6 servings
1 – Prepare grill for direct cooking over medium-high heat. Spray grid with nonstick cooking spray.
2 – Gently stir cream cheese in medium bowl until smooth. Whisk in honey and ground red pepper until well blended. Fold in whipped topping. Cover and refrigerate until ready to use.
3 – Place peaches, cut sides down, on prepared grill. Grill, covered, 2–3 minutes. Turn over; grill 2–3 minutes or until peaches begin to soften. Remove to plate; let stand to cool slightly.
4 – Arrange 2 peach halves, cut sides up, on 6 serving plates. Top evenly with spicy cream cheese topping and almonds. Garnish with mint.
*Note. To toast almonds, spread in single layer in heavy skillet. Cook and stir over medium heat 1–2 minutes or until nuts are lightly browned, stirring frequently.

Crab Curry Dip
Try this reduced fat crab dip with a delicious curry twist.
Recipe Ingredients:
1 (8-ounce) package light cream cheese (Neufchâtel), softened
1/2 cup NESTLÉ® CARNATION® Evaporated Fat Free Milk
3/4 cup (4-ounces) fresh, cooked OR chopped imitation crabmeat
2 tablespoons thinly sliced green onion
2 tablespoons finely chopped red bell pepper
1/2 teaspoon curry powder
1/4 teaspoon garlic salt
Assorted cut fresh vegetables
Cooking Directions:
1 – Beat cream cheese and evaporated milk in small mixer bowl until creamy.
2 – Stir in crabmeat, green onion, bell pepper, curry powder and garlic salt.
3 – Cover; refrigerate for 30 minutes. Serve with vegetables.
Makes 8 servings (1/4 cup each).

Goat Cheese Crostinis with Sweet Onion Jam
These crostinis are an elegant appetizer for your next dinner party!
Ingredients
1 tablespoon olive oil
2 medium yellow onions, thinly sliced
3/4 cup dry red wine
1/4 cup water
2 tablespoons packed brown sugar
1 tablespoon balsamic vinegar
1 teaspoon salt
1/4 teaspoon black pepper
2 ounces soft goat cheese
2 ounces light cream cheese, softened
1 teaspoon chopped fresh thyme, plus additional for garnish
1 loaf (16 ounces) French bread, cut into 24 slices (about 1 inch thick), lightly toasted
Directions
Yield: 24 crostinis
Serving size: 2 crostinis
1 – Heat oil in large skillet over medium heat. Add onions; cook and stir 10 minutes. Add wine, water, brown sugar, balsamic, salt, and pepper; bring to a simmer. Reduce heat to low; cook, uncovered, 15 to 20 minutes or until all liquid is absorbed. (If mixture appears dry, stir in a few tablespoons of additional water.) Cool 30 minutes or cover and refrigerate until ready to use.
2 – Meanwhile, stir goat cheese, cream cheese, and 1 teaspoon thyme in small bowl until well blended.
3 – Spread 1/2 teaspoon goat cheese mixture on each slice of bread. Top with 1 teaspoon onion jam. Garnish with additional thyme.
