Mediterranean Sandwiches
Looking to add some Mediterranean flavor to your lunchtime routine? These satisfying sandwiches feature juicy chicken tenders paired with fresh tomato, cucumber, onion, and

herbs for a combination that’s sure to put some pep in your sack lunch!

Ingredients
Nonstick cooking spray
1 1/4 pounds chicken tenders, cut crosswise in half
1 large tomato, cut into bite-size pieces
1/2 small cucumber, halved lengthwise, seeded and sliced
1/2 cup sweet onion slices (about 1 small)
2 tablespoons cider vinegar
1 tablespoon olive or canola oil
3 teaspoons minced fresh oregano leaves or 1/2 teaspoon dried oregano
2 teaspoons minced fresh mint leaves or 1/4 teaspoon dried mint
1/4 teaspoon salt
6 (6-inch) whole-wheat pita bread rounds, cut in half crosswise
12 lettuce leaves (optional)

Directions
Yield: 6 servings
Serving size: 2 filled pita halves

1. Spray large nonstick skillet with cooking spray; heat over medium heat. Add chicken; cook and stir 7 to 10, minutes or until browned and cooked through. Let stand 5 to 10 minutes to cool slightly.

2. Combine chicken, tomato, cucumber, and onion in medium bowl. Add vinegar, oil, oregano, mint, and salt; toss to coat.

3. Place 1 lettuce leaf in each pita bread half, if desired. Divide chicken mixture evenly among pita bread halves.

Ingredients

1 – (16-ounce) package JENNIE-O® Turkey Burger Blends
1/2 – cup mayonnaise
1/4 – cup ketchup
2 – tablespoons sweet pickle relish
1 – teaspoon Worcestershire sauce
4 – large lettuce leaves
4 – slices tomato
1 – large yellow onion, thinly sliced and caramelized

Directions

1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

2) In small bowl, combine mayonnaise, ketchup, sweet pickle relish and Worcestershire sauce.

3) On lettuce leaves top with tomato, turkey burger, caramelized onion and burger sauce.

Open Faced Chili Mango Turkey Burger
Cut the carbs, not the flavor on burger night with a delicious Open Faced Chili Mango Turkey Burger. This recipe features a homemade chili mango guacamole on a turkey burger served in a lettuce wrap.

Total Time – 40 Minutes
Serving Size – Makes 4 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Turkey Burger Patties

4 – lettuce leaves

4 – tomato slices

sliced red onion

cilantro

Chili Mango Guacamole

2 – avocados, mashed

1 – mango, diced

1 – Roma tomato, diced

1/4 – cup chopped cilantro

2 – tablespoons minced red onion

1 – hot chili pepper, minced

1 – clove garlic, minced

2 – tablespoons lemon juice

1 – tablespoon olive oil

salt and pepper, to taste

Directions

1) Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat. Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.

2) In medium bowl, combine all ingredients and mix well. Refrigerate until ready to use.

3) Fill lettuce leaves with turkey burger, tomato, red onion, cilantro, and Chili Mango Guacamole.

Turkey Butter Burger Sliders
These easy ground turkey sliders will butter up the gathering! They’re delicious little cheeseburgers with a rich, buttery flavor. Serve Turkey Butter Burger Sliders for the biggest bite-sized taste.

Total Time – 1 Hour
Serving Size – 12 Servings

Ingredients
4 – tablespoons butter, divided
3 – large onions, thinly sliced
½ – cup water
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
6 – slices American cheese, quartered
12 – soft slider buns, split and toasted
12 – lettuce leaves

Directions
1) In large skillet, melt 1 tablespoon butter over medium heat; add onions.

2) Cook 10 minutes or until onions are golden brown. Add water. Cover.

3) Cook 10 minutes or until onions are very soft, stirring occasionally.

4) Divide ground turkey into 12 equal balls. Press 1 teaspoon butter into each ball. Shape into patties.

5) Place in large skillet over medium-high heat. Cook 8 minutes covered, turning twice and internal temperature reaches 165°F. as measured by meat thermometer. Always cook to well-done.

6) Top each patty with two cheese pieces.

7) Place lettuce on bottom halves of buns. Top with onion mixture and patties; replace bun tops.

1/2 – teaspoon lemon zest

DIRECTIONS
1.) Prepare turkey according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer.
