Diabetic Grocery shopping……………….

Look for foods that say they’re whole grain, whole wheat, and high fiber. Truck to stick to snack items that have fewer than 8 grams of sugar per serving. You know you need to limit sugary foods when you have diabetes, but that doesn’t mean you can’t indulge your sweet tooth from time to time.

Cutting down on calories and fat……………

Choose only lean cuts of meat, skinless poultry, and fish and then sauté, bake, broil, or grill instead of frying. Trim away any visible fat from meat before cooking. Also pay attention to portion sizes. Measure your portions when cooking and in servings to avoid eating more than the serving size.

Tomato-Corn Pie
Tomatoes and corn have a natural affinity for one another: the slight acidity of tomatoes balances the sweetness of the corn. Here they partner in a delicious quiche-like pie. The dough is very forgiving and bakes up into a sturdy shell that’s great for just about any savory pie or tart. Perfect for a summer brunch or try it with a tossed salad for a light supper…..

Spinach Salad with Steak & Blueberries
Combine steak, walnuts, blueberries and feta cheese in this simple salad and you have yourself a healthy and satisfying supper. Serve with grilled baguette and a glass of rosé…..

Chicken & White Bean Salad
Zucchini and celery give this chicken-and-bean salad a nice crunch. We like serving it over a bed of slightly bitter escarole and radicchio, but any type of salad greens will work. Recipe by Nancy Baggett for EatingWell…..

* Limit red meat. Have no more than 4 ounces, three times a week.
* Buy extra lean ground beef or use ground turkey or chicken.

Penne alla Primavera
Penne tossed with spring vegetables, such as carrots, morel mushrooms, asparagus, peas and fava beans, along with loads of fresh herbs is a perfect example of Mario Batali’s rustic approach to great-tasting Italian food. When both fava beans and morel mushrooms are in season, by all means use them in this recipe. But if you can’t find either of those, substitute what looks best. Basic cremini mushrooms will work and frozen lima beans are a good option…..

Grilled Shrimp with Melon & Pineapple Salsa
