Today’s Menu: Baked Buffalo Chicken Breast Sandwich w/ Baked Potato

 

 
It’s been a cloudy and rainy day today but at least it’s warm out! For dinner I prepared one of my favorite Chicken dishes; Baked Buffalo Chicken Breast Sandwich w/ Baked Potato. I love finishing the Chicken off in the oven and the flavor and heat of the Kroger Wing Sauce along with the Litehouse Light Bleu Cheese Dressing. If you want about 5 minutes before your Chicken is done you can add a slice of Swiss or Provolone Cheese to it and let it melt over the Chicken Breast.

 

To prepare my Chicken I needed 3 (4 ounce) Boneless Skinless Chicken Breasts, 6 Tablespoons favorite Wing Sauce (I used Kroger WingBaked Buffalo Chicken 003 Sauce), and 1/2 Cup Litehouse Lite Bleu Cheese Dressing/Dip, and Aunt Millie’s Light Whole Grain Buns . To start I Preheated the oven to 400°F. Then Sprayed large non-stick skillet and 8×8″ baking dish with Pam cooking spray. Added the chicken to skillet & cooked 4-5 minutes each side until browned. Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I served it on an Aunt Millie’s Light Whole Grain Bun and topped it with some Litehouse Light Bleu Cheese Dressing. I made 3 Chicken Breasts 2 for dinner for myself and Mom and 1 for lunch tomorrow.

 

To go with the Baked Buffalo Chicken Breasts I had a Baked Potato seasoned with Sea Salt and Ground Black Pepper and topped with I Can’t Believe It’s Not Butter and a dab of Daisy Reduced Fat Sour Cream. For dessert/snack later some slices of Kraft 2% Sharp Cheddar along with Ritz Whole Grain Crackers.

 

 

 

Baked Buffalo Chicken Breasts

Ingredients
3 (4 ounce) Boneless Skinless Chicken Breasts
Sea Salt and Black Pepper, to taste
4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce)
Swiss or provolone Cheese (Optional)
1/2 Cup Lighthouse Lite Bleu Cheese Dressing/Dip
Aunt Millie’s Light Whole Grain Buns
Directions
* Preheat oven to 400°F.
* Spray large non-stick skillet and 8×8″ baking dish with cooking spray.
*Season Chicken and add chicken to skillet & cook 4-5 minutes each side until browned. Place chicken in dish and…
* Pour Wing Sauce over chicken and bake (uncovered) 25 minutes.
* If you add a slice of Swiss or Provolone Cheese, top the Chicken with a slice about 5 minutes before the Chicken is done.
* Serve with Bleu Cheese Dressing and Serve on Aunt Millie’s Light Whole Grain Bun.

Come on Spring time give us a break! It was sunny all day but a very cold wind. If the forecast is correct we are supposed to set a record low temperature for in the morning. Come on Summer Breeze! For dinner I prepared one of my favorites anymore; Baked Buffalo Chicken Breast Sandwich w/ Baked Potato.

To prepare my Chicken I needed 2 (4 ounce) Boneless Skinless Chicken Breasts, 6 Tablespoons favorite Wing Sauce (I used Kroger WingBaked Buffalo Chicken Sandwich 004 Sauce), and 1/2 Cup Litehouse Lite Bleu Cheese Dressing/Dip, and Aunt Millie’s Light Whole Grain Buns . Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I served it on an Aunt Millie’s Light Whole Grain Bun and topped it with some Litehouse Light Bleu Chesse Dressing. I made 2 Chicken Breasts 1 for dinner and 1 for lunch tomorrow.

To go with the Baked Buffalo Chicken Breasts I had a Baked Potato topped with Newman’s Own pineapple Salsa. I love this Newman’s Own Salsas. They have 3 or 4 varieties and their all fantastic. This Pineapple Salsa goes great over Baked Potatoes, Pork Chops, and Fish. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Baked Buffalo Chicken Breast Sandwich w/ Baked Crinkle Fries

 

 

 
What better way to heat up a cooold and windy day than some Baked Buffalo Chicken Breast! I love this recipe for Chicken Breasts. TheBaked buffalo chicken sandwich 004 Kroger Wing Sauce gives it fantastic flavor with nice heat, not over powering but you know there’s Wing Sauce on it! For dinner I prepared Baked Buffalo Chicken Breast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: Buffalo Sirloin and Buffalo Shrimp w/ Baked Potato

 

 

 

 

Heavy, heavy rains since early last night, they even have posted a flood alert for the area. This weather is amazing through the Ohio Buffalo shrimp bison sirloin 003Valley here! Cold and snowy to 60 degrees and sunny to rain and flooding in a matter of days. I wasn’t real sure on what to have for dinner so I dug into the freezer and found a Great Range Buffalo Sirloin Steak. So I had that and some unprepared Shrimp I had leftover from the other nights dinner to go with the Buffalo Sirloin.

 

 

So for my dinner tonight I prepared a Buffalo Sirloin along with Buffalo Shrimp and a Baked Potato. To prepare the Buffalo Sirloin I seasoned it with McCormick Grinder Steakhouse Seasoning. I pan fried it in Canola Oil about 4 minutes per side, to medium rare.

 
To prepare the Shrimp In a resealable plastic bag, I combined flour, Creole-style seasoning, garlic powder, ground cayenne pepper, onion powder, and ground black pepper. Seal the bag and shake a few times to combine the ingredients well. Rinse the Shrimp under cold water and place them in the plastic bag with the flour mixture. Seal the bag and shake to coat all of the shrimp well with the flour mixture. Then just fry the Shrimp on medium heat about 2 minutes per side. When done I put them in a large bowl that I had added Kroger Medium Wing Sauce to and shook until well covered with the Sauce. I love Shrimp any and all ways you can fix them! Love the heat on these. Served them with a side of Litehouse Bleu Cheese Dressing to dip them in. I also had a Baked Potato that I topped with Sea Salt and Ground Pepper along with I Can’t Believe It’s Not Butter. For dessert later tonight a Healthy Choice Chocolate Swirl Frozen Yogurt.

I made the Baked Buffalo Chicken Breast a while back and served just as the Chicken Breast with sides and it was so good I thought it Baked Buffalo Chicken Sandwich 005would be just as good as a sandwich. For dinner I prepared Baked Buffalo Chicken Breast Sandwich w/ Baked Crinkle Fries.
To prepare my Chicken I needed 2 (4 ounce) Boneless Skinless Chicken Breasts, 4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce), and 1/2 Cup Litehouse Lite Bleu Cheese Dressing/Dip, and Aunt Millie’s Light Whole Grain Buns . To start I Preheated the oven to 400°F. Then Sprayed large non-stick skillet and 8×8″ baking dish with Pam cooking spray. Added the chicken to skillet & cooked 4-5 minutes each side until browned. Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I just love that Kroger Wing Sauce. It gives you a nice heat that doesn’t overpower the food’s flavors. I served it on an Aunt Millie’s Light Whole Grain Bun and topped it with some Litehouse Bleu Chesse Dressing. look no further for a Buffalo Chicken recipe!
I also made a side of Baked Ore Ida Crinkle Cut Fries with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Vanilla/Chocolate Swirl Frozen Yogurt Cup.
