Great Pumpkin Cake
This fun and festive cake that looks like a pumpkin is the perfect treat for a Halloween party!

Recipe Ingredients:

1 (2-layer size) package cake mix – any flavor
1 (8-ounce) package PHILADELPHIA Cream Cheese, softened
1/4 cup butter, softened
4 cups powdered sugar
Few drops each: green, red and yellow food colorings
1 COMET cup (flat-bottom ice cream cone)

Cooking Directions:

Prepare and bake cake mix in a (12-cup) fluted tube pan as directed on package. Cool 10 minutes in pan. Remove from pan to wire rack; cool completely.
Beat cream cheese and butter in small bowl with electric mixer on medium speed until creamy. Gradually add sugar, beating until light and fluffy after each addition. Remove 1/2 cup of the frosting; place in small bowl. Add green food coloring; stir until well blended. Spread half of the green frosting onto outside of ice cream cone; set aside. Set remaining green frosting aside for later use.
Add red and yellow food colorings to remaining white frosting to tint it orange. Place cake, rounded-side up, on serving plate. Spread with orange frosting to resemble pumpkin. Invert ice cream cone in hole in top of cake for the “pumpkin’s stem”. Pipe the reserved green frosting in vertical lines down side of cake.*
Makes 24 servings.

*How To Pipe Frosting: Turn a resealable plastic bag into a handy piping bag for professional-looking decorated cakes. Simply spoon the frosting into the bag and seal the bag. Cut off a tiny piece from one of the bottom corners of the bag. Twist the bag at the top and holding the bag with one hand, guide the tip with the other. When you’re done, the whole bag goes right into the garbage for easy cleanup!

* For a Crowd: Serve this festive cake at your next Halloween party! Double all ingredients. Prepare batter as directed; pour half of the batter into each of two fluted tube pans. Bake and cool as directed. Trim cake tops to flatten; reserve trimmings for snacking or another use. Place one cake, rounded-side down, on serving plate. Spread with thin layer of frosting. Top with remaining cake, rounded-side up, to resemble a large pumpkin. Frost and decorate as directed. Makes 48 servings.

Halloween Poke Cake

What You Need
1 pkg. (2-layer size) white cake mix
1 cup boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor GelatinKraft 2
1/2 cup cold water

1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1/2 tsp. yellow food coloring
1/4 tsp. red food coloring
3 Tbsp. Halloween sprinkles

Make It
1 – Prepare cake batter and bake in 13×9-inch pan as directed on package. Cool cake in pan 15 min. Pierce cake with large fork at 1/2-inch intervals.
2 – Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water; pour over cake. Refrigerate 3 hours.
3 – Tint COOL WHIP with food colorings; spread onto cake. Refrigerate 1 hour. Decorate with sprinkles just before serving.

How to Thaw COOL WHIP
* Place unopened 8-oz. tub of whipped topping in refrigerator for 4 hours. Do not thaw in microwave.

* Prepare using COOL WHIP LITE Whipped Topping.
Substitute
* If orange food coloring is available, use that instead of the yellow and red food colorings. Add enough drops of food coloring until frosting is of desired shade.

Today’s Menu: Seasoned Haddock w/ Mac and Cheese

 
For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Haddock w Mac and Cheese 004Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar. Also had my morning cup of Bigelow Decaf Green Tea. In the 40’s this morning and a high in the 70’s with no humidity! After Breakfast I took Mom and Dad to Dad’s doctor appointment, just a checkup. Back home I was all caught up on the chores so I got the cart out and did a little yard work and then rode around the neighborhood and enjoyed the beautiful day. For Dinner tonight it’s a Seasoned Haddock w/ Mac and Cheese.

I had purchased the Haddock from our local Kroger and had 3 bags of it in the freezer. So I grabbed a bag and let it thaw in the fridge overnight. I had already rinsed the fillet and cut it into smaller pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For dessert later a bowl of Dole Sliced Peaches.

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. So I wanted to get everything done today. I pick the cake up tomorrow at 11:00. So I spent most of the day getting stuff done around the house. I did get the cart out for about an hour this afternoon, around the neighborhood and lake. For dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

Restless night dealing with those dreaded Phantom Pains. Oh how I wish they would comSeasoned Haddock w Mac and Cheese 008e up with a cure for these, they are so painful! Anyway for Breakfast I toasted a Healthy Life Whole Grain English Muffin and topped it with a Poached Egg. I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast finished up some housework and cleaned a bit outside. After Lunch I laid down for afternoon nap, needed to catch up on some sleep since I had very little overnight. The Phantom Pains finally eased up around noon. I didn’t get to go see dad today but he’s actually doing a lot better! They have him out of the wheelchair and he’s using a walker now. Hopefully he’ll be home before long. For Dinner tonight it’s a Seasoned Haddock w/ Mac and Cheese.

It was a cup of Bigelow Decaf Green Tea and a toasted Healthy Life Whole Grain English Muffin for Breakfast this morning. After Breakfast I had to move all items under the Kitchen and 2 bathroom sinks. Then cleared off the kitchen counters. The Pest Control came this afternoon and started our treatment of Carpenter Ants. Several neighbors also were being treated today. We’ve had a slight problem with them since Duke Energy plowed down the woods behind us. So after the sprayed I had to move everything back, fun day! Glad to get it done though. Got the leaf blower out and cleaned the deck and driveway of leaves and such. So for dinner tonight it’s Seasoned Haddock w/ Mac and Cheese.

Today’s Menu: Halibut Enchiladas

Cloudy and rain all day, high in the 60’s though. Good day to stay in and get some house cleaning out of the way, and a couple of loads of laundry. Glad I had that to do because there’s not much else going on. For dinner tonight a new recipe and another Enchilada, Halibut Enchiladas.

I found this recipe on a Kraft Daily Recipe email I receive daily. Just another one that sounded too good not to try, Halibut Enchiladas. Why a Fish Enchiladas you ask, just for the Halibut! That was bad, sorry. Anyway to make this dish I’ll be needing; Halibut Fillets, Sargento Reduced Fat 4 Cheese Mexican Shredded Cheese, Daisy Reduced Sour Cream, Kraft Mayo w/ Olive Oil (Reduced Fat), Chopped Red Onions, Sliced Black and Green Olives, Chopped Green Chiles, Old El Paso Reduced Sodium Taco Seasoning Mix, Mission Flour Tortillas (6 inch), Old El Paso Enchilada Sauce (1-2 10 oz. Cans), and Shredded Lettuce. A big blend of goodness!

 

To prepare them; I preheated the oven to 350ºF. Placed the Halibut in single layer in shallow baking dish. Baked for 25 minutes, until the Fish flaked easily with a fork. Flaked the fish and placed it in a medium bowl. Stirred in 1 cup Halibut Enchiladas 005Cheese, Sour Cream, Mayo, Red Onions, Black and Green Olives, green Chilies and Taco Seasoning mix. Then spooned down the centers of Tortillas; roll up. Pour half the Enchilada Sauce onto bottom of 13×9-inch pan. Top with Enchiladas, seam-sides down. Cover with remaining Sauce and Cheese. Baked 25 to 35 min., until heated through. Top with Lettuce, Olives, and Cheese. My first Halibut Enchiladas and definitely not my last! I love Fish but I wasn’t real sure on how it would do as an Enchilada, but the Halibut works out perfect! I’ve left the original Kraft Recipe along with its link at the bottom of the post. Got me another Keeper Recipe! For dessert later a Jello Sugar Free Dark Cheery Jello.

 

 

 
Halibut Enchiladas

what you need

1-1/2 lb. halibut fillets
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese, dividedKraft 2
1/2 cup BREAKSTONE’S or KNUDSEN Sour Cream
1/2 cup MIRACLE WHIP Dressing
1/2 cup chopped onions
1 can (2.25 oz.) sliced black olives, drained, divided
1 can (4 oz.) chopped green chiles, drained
1 pkg. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix
12 flour tortillas (6 inch)
1 can (19 oz.) enchilada sauce, divided
1 cup shredded lettuce
1 tomato, chopped make it

HEAT oven to 350ºF.

It’s been very humid out all day. I went out to fetch the morning paper and when I opened the door it was like opening an oven door. Not too nice today but better weather by Thursday, highs in the low 70’s! A bowl of Honey Nut Cheerios Medley Crunch Cereal to start the day. Went to Walmart and Kroger early today and back home. For dinner tonight, Panko Crusted Orange Roughy Fillet w/ Sharp Cheddar and Bacon Mac & Cheese.

 

 

 
I used the other half of the Orange Roughy for my dinner tonight, preparing it the same way as last night. To prepare the Orange Roughy Fillets rinse fillets and pat dry fillets and season with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside!

 

 

 
Then to go with my fillet I made some Kraft Homestyle Sharp Cheddar and Bacon Mac & Cheese. Love Mac and Cheese but just don’t eat too often anymore due to a higher calorie and carb count than most sides I eat anymore. But every now and then is ok, and today is one of those days. That and I’ve been wanting some for a while now! So I picked up a package of the Kraft Homestyle Sharp Cheddar and Bacon Mac & Cheese, first time I’ve tried this one from Kraft. It comes in a plastic microwavable bowl. Just add water and microwave for 4 1/2 minutes. Once heated stir in the Sharp Cheddar Cheese and Bacon Bits. You have a nice tasting bowl of Kraft Mac and Cheese! Plenty of Bacon Bits with that Kraft Cheesy flavor. If they could lower the calories and carbs I would have this a lot more often, very good! For dessert later a Jello Sugar Free Double Chocolate Pudding.

Turkey Lasagna Rolls

I came across this recipe and wanted to pass it along, it sounds delicious! I haven’t made this one yet so I have no pictures to pass along. Lasagna noodle rolls filled with seasoned spinach and ricotta cheese, and baked in an Italian meat sauce made with Jennie – O Lean Ground Turkey.

 

 

Recipe Ingredients:

Sauce:
8 ounces Jennie – O Lean Ground Turkey
1 medium Onion, chopped
2 Garlic Cloves, finely minced
1 cup sliced fresh Mushrooms
1 cup Water
1 (7.5-ounce) can Diced Tomatoes
1 (6-ounce) can Hunt’s Tomato Paste
1 1/2 teaspoons Dried Oregano, crushed
1 teaspoon Dried Basil, crushed

8 packaged Ronzoni Healthy Harvest Whole Grain Lasagna Noodles

Filling:
1 Egg – Egg Beater’s (1/4 Cup)
1 (15-ounce) Low fat Ricotta Cheese
1 (10-ounce) package frozen chopped Spinach, thawed and squeezed dry
1 cup Sargento Reduced Fat Shredded Mozzarella Cheese
3/4 cup Kraft Reduced Fat Parmesan Cheese

Topping:
1/2 cup Sargento Reduced Fat Shredded Mozzarella Cheese
1/4 cup Kraft Reduced Fat Parmesan Cheese

 

 

Cooking Directions:

For Sauce: In a large skillet cook turkey, onion and garlic until turkey is no longer pink; drain fat. Stir in mushrooms, water, undrained tomatoes, tomato paste, oregano and basil. Bring to boiling; reduce heat. Cover and simmer for 25 minutes.
Meanwhile, cook the lasagna noodles according to package directions. Drain noodles; rinse with cold water and drain again.
For Filling: In a mixing bowl, stir together the egg, ricotta cheese, spinach, 1 cup of the mozzarella cheese and 3/4 cup of the Parmesan cheese.
To assemble rolls, spread about 1/2 cup of the filling over each lasagna noodle. Roll up noodles, starting from a short end. Place lasagna rolls,seam sides down, in a 11x7x2-inch baking pan. Pour sauce over lasagna rolls. Cover pan with foil.
Bake in a preheated 375°F (190°C) oven for 25 minutes. Remove foil. Sprinkle with the 1/2 cup mozzarella cheese. Bake for 5 to 10 minutes more or until heated through. Let stand 5 minutes before serving. Sprinkle with 1/4 cup Parmesan cheese.
Makes 8 servings.
