Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

For Breakfast on this cold Sunday Morning I had a toasted Healthy Life Whole Grain English Muffin. I then got out the Egg Beater’s Egg Whites and Scrambled a 1/2 cup of it, 1/2 equals 2 Eggs. Next I fried some al fresco Uncured Chicken Bacon and I also used a slice of Sargento Ultra Thin Swiss Cheese. Put it all together and I had one delicious Breakfast Sandwich! Also had my morning cup of Bigelow Decaf Green Tea. The al fresco Uncured Chicken Bacon I used is some of the best Bacon I’ve come across in a while. It fries up so crisp and has an excellent taste! As I said its cold, 15 degrees and a wind chill of 10 degrees. It was mostly sunny but only got up to 25 degrees. Did a load of laundry after Breakfast. Then after Lunch I cleaned the house, vacuum and dusted. Not much else going on so I kicked back and watched some College Basketball. So for Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

Nothing like a easily made Comfort Food Dinner! Creamy Potato Soup w/ Grilled Cheese Sandwich. I’m using one of my favorite Soups, Bear Creek Creamy Potato Soup Mix. I really love using all the Bear Creek Products! So delicious and easy to prepare.

To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare and makes one delicious Potato Soup.

To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert a Jello Sugarfree Dark Chocolate Pudding topped with Cool Whip Free.

Bear Creek Creamy Potato Soup Mix

A favorite original Bear Creek® soup. Very creamy and delicious with a delicate blend of parsley, herbs and spices to give it a little kick.

Yields about 8 one-cup servings.

Try adding crumbled bacon, sour cream and shredded cheddar cheese for variety.
While they simmer on the stove, you can smell the hearty goodness of Bear Creek® soups. They’re quick and easy to make and come in 15 delicious varieties. These soups have a homemade taste that will satisfy every appetite.

Today’s Menu: Bacon and Cheese Turkey Burger w/ Baked Fries

For Breakfast this Monday morning I prepared a Potato and Ham Skillet. I prepared a bag of the Simply Potatoes Steakhouse Seasoned Diced Potatoes. Midway through the cooking time I added a 1/2 bag of Kroger Brand Diced Ham. Also had a cup of Bigelow Decaf Green Tea. It started out another morning of below zero at minus 4 degrees. We had high of 25 degrees and cloudy all day. I took advantage of this heat wave and I took Mom up to Kroger so she could get what she needed and then afterward I went to Meijer for a few things. Felt good to get out, I think I had a touch of Cabin Fever! Not much else going on today. For Dinner tonight its a Bacon and Cheese Turkey Burger w/ Baked Fries.

I had the Honeysuckle White Lightly Seasoned Turkey Pattie in the freezer so I grabbed one and let it thaw overnight in the fridge. They are 1/4 lb. patties (4 to a package) and 170 calories per burger. For the Bacon I’m using the Kroger Simple Truth Turkey Bacon. It fries or bakes up real easy and has excellent taste. I fried the Bacon and set it aside until I needed it.

Then to prepare the Turkey Burger, I’m using a medium size skillet that I sprayed with Pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium. When the skillet was ready I added the Turkey Burger. I fried it about 6 minutes per side. After flipping the Burger I topped it with a slice of Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. I served the Burger on a Healthy Life Whole Grain Hamburger Bun. Topped the Turkey Burger with some Heinz 57 Sauce and the Turkey Bacon. The Burger fried up great and the toppings all worked well together.

For a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Bacon and Cheese Turkey Burger w/ Baked Fries

For Breakfast this morning it was a toasted Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugarless Blackberry Jam. Along with my morning cup of Bigelow Decaf Green Tea. Another gorgeous pre Fall day out there, sunny and a high of 75 degrees! Went to Kroger for Mom for a few things she needed. After Lunch went over to see Dad. I’ll be glad when he gets home. I have to lift a wheelchair in and out of my car trunk and it’s taking a toll on my back and leg. Sure wish I could do more but sometimes I’m limited having just the one leg. Anyway back home for Dinner tonight its a Bacon and Cheese Turkey Burger w/ Baked Fries.

Today’s Menu: Bacon and Cheese Turkey Burger w/ Baked Fries

For Breakfast this morning it was Eggs and Bacon with Toast. I fried up one Egg Sunnyside Up, fried up some SayersBrook Wil Boar Uncured Bacon, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and made a cup of Bigelow Decaf Green Tea. I thought I was out of the Wild Boar Bacon but I found a package in the freezer so I let it thaw overnight in the fridge. I love the Wild Boar Bacon, if you never tried it you should!

Outside today it’s 88 degrees and humid. Got the cart out after Breakfast and got some yard work done before it got too hot out. After Lunch went to Meijer to see if the Garden Center had any of the Fall Mum plants in yet. Which they didn’t, it’s still a bit early to have any in. Did a few things around the house and then kicked back for a couple of hours and got caught up on some shows I recorded. For my Dinner tonight its a Bacon and Cheese Turkey Burger w/ Baked Fries.

Today’s Menu: Bacon and Cheese Turkey Burger w/ Baked Fries

Happy Father’s Day to my Dad and all of the Dads out there! To start our Sunday morning off I prepared a Skillet Potatoes and Ham for Breakfast for everyone. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Just love this Skillet Breakfast! Outside it’s a rainy and humid Fater’s Day out there! A bit cooler at 83 degrees but heavy rains at times. After Breakfast I did a couple of loads of laundry and that was about it for the day. Caught up on some shows I had recorded. For Father’s day I went to Outback Steakhouse for Mom and Dad and brought back Dinner for them.

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I got the leaf blower out and cleaned up around the deck and driveway areas. It’s another beautiful day out here, 82 degrees and mostly sunny! Headed out to Meijer, they had some items on sale I needed. Dad did good his first day back home. So for Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

Time to satisfy that Buffalo Burger craving! I used the Wild Idea Buffalo Buffalo Burgers. I always have a couple of packages of them in the freezer so I grabbed one of the patties and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, on medium heat, in Extra Light Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. After I flipped it, I topped it with a slice of Kraft Sharp Cheddar Cheese and then served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Lean and delicious, love these Buffalo Burgers!

Then for a side I baked some Alexia Organic Yukon Select Fries. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Wild Idea Buffalo 1/3-Lb Buffalo Burgers

Bacon and Cheese Bison Burger w/ Baked Fries

Today’s Menu: Bacon and Cheese Bison Burger w/ Baked Fries

For Breakfast I tried a new Breakfast Sausage, al fresco Country Style Chicken Sausage Breakfast Patties. It’s a precooked Chicken Sausage Patty, it’s already seasoned also. I heated it up in a small skillet for a total of 6 minutes a side. Heated up quick and seasoned perfect. I served it on a Healthy Life Whole Grain English Muffin that I toasted. The Sausages are only 80 calories and 1 carb, I’ll have to keep these in stock! Also had my morning cup of Bigelow Decaf Green Tea. Well the rains have finally let up. We’ve had close to 2 inches of rain here the past 2 days. A cool morning out, 39 degrees this morning. After Breakfast i went up to the local Kroger and bought Mom a Mother’s Day Card and Roses for Mother’s Day. Back home did some laundry and cleaned the oven and cleaned the fridge out. After Lunch went over to see Dad for a while. He seems to be doing better so we’ll wait and see. For Dinner tonight a Bacon and Cheese Bison Burger w/ Baked Fries.

It just felt like a Bison Burger type of day! And a Bacon and Cheese Bison Burger sounded even better! I normally use Wild Idea Buffalo Patties for my Burgers but I’m trying a new one this time from SayersBrook Bison Ranch, 3 oz Bison Patties. I’ve tried a lot of the other SayersBrook items and all were great so I thought I would give their Bison Patties a try. So I’m using the SayersBrook Bison Patties, for the Bacon I’m using SayersBrook Wild Boar Uncured Bacon, Kraft Deli Sharp Cheddar, and Healthy Life Whole Grain Hamburger Bun.

I first prepared the Wild Boar Uncured Bacon. The slices were not as long as most Bacon Slices, perfect size to use on Burgers. It fried up as normal Bacon and tasted great! Wild Boar Bacon has a richer taste and is leaner than Pork. As usual when preparing Bacon, you have to use Bacon Math to calculate how many slices you need to prepare. If you need to use 3 slices you should fry at 5 slices, 3 to use and 2 to munch on while you’re preparing Dinner. Bacon Math!

Next I preheated the oven to 425 degrees to bake my fries and on to the Burger. I prepared it as I do the Wild Idea Buffalo Burger.I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, on medium heat, in Extra Light Virgin Olive Oil about 3 1/2 minutes per side. All Buffalo gets done rather quickly due to it’s so lean. After I flipped it, I topped it with a slice of Kraft Sharp Cheddar Cheese. I then topped it with Wild Boar Bacon and then served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. The Burger was excellent! It fried up great and its a very tasty Bison Burger.

The oven was preheated and I baked the Alexia Organic Yukon Select Fries. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn. We really enjoy the Skinny Pop – Pop Corn!

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Then I prepared some Simply Potatoes Shredded Hash Browns along with frying up a couple of Jennie – O Turkey Breakfast Sausage Links. Also had a cup of Bigelow Decaf Green Tea. Had a brief morning passing shower but it went through quickly. Got the leaf blower out and cleaned up around the deck and driveway areas. After Lunch headed over to see Dad for a while. For Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

Time to satisfy that Buffalo Burger craving! And like most of the time I used the Wild Idea Buffalo Buffalo Burger. I always have a couple of packages of them in the freezer so I grabbed one of the patties and let it thaw overnight in the fridge.

For dessert later a bowl of Smart Pop – Pop Corn and a Diet Peach Snapple.
