I had a toasted Healthy Life Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter, along with my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Walgreen to pick a up a prescription for Mom and then went to Kroger for a few items. It rained a quick shower while I was out. Hopefully it will clear up and the sun comes out because in this area it’s an Unofficial Holiday, It’s the Reds Opening Day! It’s the only day of the year where you can miss work and skip school and it’s excused. It all starts this morning with the Findlay Market Opening Day Parade. A tradition to kick-off the Baseball Season since 1920! Then the Reds Game that starts at 4:00 this afternoon. Did some light house work and then watched some Baseball this afternoon, Play Ball! For dinner tonight I prepared a Buffalo Cheeseburger and Baked Crinkle Fries.

Celebrated Reds Opening Day with a Buffalo Cheeseburger! For my Buffalo Burger I used what else but my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burger. I had it in the freezer so I laid it in the fridge overnight to thaw. I Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Virgin Olive Oil, about 3 1/2 minutes per side, and done! I topped it with a slice of Kraft Sharp Cheddar Cheese after I flipped the Burger. Served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious.

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Just had a cup of Bigelow Decaf Green Tea for Breakfast. It’s been one busy day. My Dad had to be rushed to the hospital last night, he has a collapsed left lung. They inserted a tube under his left rib cage which will inflate the lung back up. I couldn’t stay at the hospital very long due to my back problems so I left and then had to go pick Mom up around 11:00 last night, she can’t drive at night. Besides that her car is still in the shop, they had some problems tracing down what was causing the problems. They called later today and they had repaired it, nothing major thankfully! As for Dad he’s doing a lot better, but sore! He’ll be in the hospital a few days. Before I went to bed I laid a Wild Idea Buffalo in the fridge to thaw overnight, dinner tonight is a Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Crinkle Fries.

 

 

I wanted something easy and quick to prepare, with my back hurting and all the running around I had to do today it was the easier the better for tonight! I started by slicing up some Portabella Mushrooms. Then grabbed a small Buffalo Cheese Burger w Baked Fries 001skillet;. sprayed it with Pam Cooking Spray, a 1/2 tablespoon of Extra Virgin Olive Oil, and teaspoon of Blue Bonnet Light Butter. Heated the pan on medium and added my sliced Mushrooms. Heated for about 4 minutes, removed from heat and set aside. For my Buffalo Burger I used what else but my Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burger. I had it in the freezer so I laid it in the fridge overnight to thaw. I topped it with a slice of Kraft Sharp Cheddar Cheese and the Sauteed Mushrooms, served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious.

I had a Simple Truth Breakfast Sandwich for Breakfast. I had my morning workout and it was off to Jungle Jim’s International Market. They had some great sale items and I wanted to get there early, when using the electric mobility carts you have to go early to get one. They had Boar’s Head Meats and Cheese on sale, love Boar’s Head! They also had Snapple, Pork Chops, and Seafood on sale. You could spend hours in this store (http://www.junglejims.com/) and still not see everything! We had a lot of heavy rain overnight, some local flooding. For the day sunny and windy and high of 50 degrees early but the temperature dropped throughout the day. For dinner tonight i prepared a Cheddar Turkey Burger w/ Baked Fries.

I used the Jennie – O – 1/3 lb. Turkey Burgers. Jennie – O had sent me the free box as part of the Switch Club in which I was invited to join by Jennie – O. I had the box in the freezer. They come frozen, to grill or fry from frozen. I pan fried these using Extra Virgin Olive Oil and seasoned with McCormick Grinder Sea Salt and Black Peppercorn. In a preheated, medium heat, large skillet I cooked the Burger for about 8 minutes per side, 165 degrees internal Burger temperature. And what a Burger! Meaty, juicy, and flavorful. First time I’ve tried the 1/3 lb. Ground Turkey Burger and will keep them in stock from here out! Another excellent Jennie – O Turkey Product. I served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped the Turkey Burger with a slice of Kraft Sharp Cheddar.

Rolled out to grab the morning papers and it wasn’t quite as cold as it has been, in the low 20’s. For breakfast I prepared a packet of my favorite gravy, Pioneer White Peppered Gravy. Along with 2 slices of toasted Healthy Life Whole Grain Bread and my morning cup of Bigelow Decaf Green Tea. Had a high in the 40’s today with plenty of sunshine. Finally starting to melt our snow on the ground that’s been sticking around. Straightened up the pantry and cleaned the fridge today. Ran a couple of errands for Mom and stopped by the bank before heading back home. For dinner tonight I prepared Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss.

I used Boar’s Head Maple Glazed Honey Coat Ham, Hellmann’s Light Mayonnaise, Kraft Sharp Cheddar Cheese, and Aunt Millie’s Whole Grain Bread. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium. To make the sandwich I buttered one side of both slices of bread with I Can’t Believe It’s Not Butter and then on the unbuttered sides layered the Ham, a bit of Hellmann’s Light Mayonnaise, and then the Cheese. I then grilled the sandwich in a preheated pan that I had sprayed with Pam Cooking Spray. Grilling both sides until golden brown. I love a Grilled Cheese Sandwich, but the added Ham makes it even better! A Classic Comfort Food Sandwich.

I also used my favorite Potato Soup, Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits. Love this Soup, it’s nice and thick with some big chunks of Potato with just the right amount of Cheddar and Bacon Bits. Plus it can’t be much easier to prepare, just open the can and heat it up in a small sauce pan. Love the taste and it’s only 190 calories and 19 net carbs. A good meal for a Cold Winter’s Day! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Started my morning off with a Scrambled Egg (Medium Size), 2 Jennie – O Turkey Breakfast Sausage Links, a toasted slice of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Nothing like a delicious and healthy Breakfast to jump start the day! Mother Nature reminded us today it is indeed Winter! Snow overnight into the day. It was 28 degrees at 7:00 this morning and it went down from there. At 4:00 this afternoon it was down to 12 degrees with a wind chill around 0. So it was staying inside for the day for me, wheelchairs and snow don’t mix! So I did a load of laundry and repaired a few things around the house, nothing major. For dinner tonight it’s my favorite Burger and new Fry recipe. I prepared a Buffalo Cheese Burger w/ Baked Garlic Parmesan Potato Wedges.

Then for a side I had Baked Garlic Parmesan Potato Wedges. I saw this recipe on Facebook. It looked and sounded great so I thought I would give it a try. I”ll need the following; 3 large Russet Potatoes (sliced into wedges), 4 Tbsp. Extra Virgin Olive Oil, 1/2 cup Kraft Reduced Fat Grated Parmesan Cheese, McCormick Grinder Sea Salt and Peppercorn Medley to taste, 2 tsp McCormick Italian Seasoning, 2 tsp Garlic Powder, and 2 tsp Hungarian Paprika. With these spices you know these Potato Wedges pop with flavor!

Started by preheating the oven on 400˚F. To prepare them Place Potato Wedges in a large bowl. Drizzle the Olive Oil and toss to coat. Sprinkle Wedges with shredded Cheese and toss again. Then in a small bowl, mix Salt, Pepper, Italian Seasoning, Garlic Powder, and Paprika. Sprinkle seasoning onto Potato Wedges and toss to coat. Place potato wedges on a baking sheet with skin-sides-down. Bake for 40 minutes at 400˚F until potatoes are fork-tender and golden. Love this recipe, of course I love all Potato Recipes! The Olive Oil browned the Wedges up perfectly and all the Spices give then a fantastic flavor. Keeper Recipe Alert! Served them with a side Hunt’s Ketchup. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

 

 

 

 

Baked Garlic Parmesan Potato Wedges

Here’s what you need:
3 large russet potatoes, sliced into wedgesBuffalo Cheese Burger w Baked Garlic Parmesan Potato Wedges 001
4 Tbsp. olive oil
1/2 cup Parmesan
Salt and Pepper to taste
2 tsp Italian seasoning
2 tsp garlic powder
2 tsp paprika

Instructions:
1. Place potato wedges in a large bowl. Drizzle olive oil and toss to coat. Sprinkle potato wedges with shredded cheese and toss again.

2. In a small bowl, mix salt, Italian seasoning, garlic powder, and paprika. Sprinkle seasoning onto potato wedges and toss to coat.

3. Place potato wedges on a baking sheet with skin-sides-down. Bake for 40 minutes at 400˚F / 200˚C until potatoes are fork-tender and golden.

Started my day off with a couple of Jennie- O Turkey Breakfast Sausage Links, an Egg Beater’s Egg White Scrambled Egg (topped with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese), and a Healthy Life Whole Grain English Muffin. Also my morning cup of Bigelow Decaf Green Tea. A very good start to the day! We have another gloomy and rainy day out there again, in the 50’s though. Rain outside and it was clean the house today on the inside. Dusted, vacuumed, and cleaned the oven today, For dinner tonight, broke out the comfort food to drive those rainy day blues away! I prepared a Grilled Ham and Cheese w/ Baked Crinkle Fries.

Cold morning out, in the 20’s. Had to skip Breakfast this morning, had to fast for the finger surgery at 10:30. Had to check in at 9:30. The Prep took longer than the surgery! Everything went great, drained it and had 4 stitches. I’ll miss the doctor, he’s retiring in 2016. Just took the rest of the day easy keeping my hand elevated. For dinner tonight it’s my favorite Burger. I prepared a Buffalo Cheese Burger w/ Baked Fries.

After Breakfast headed to Kroger to pick up a few items for myself and Mom. Ran into a High School classmate that works up there, always good to touch base with old friends. Did a little house cleaning and cleaned the fridge today. Another perfect Fall Day out agin, sunny and 70’s. We’ve had a beautiful Fall so far. Got the cart out for a while enjoying the day. For dinner tonight it’s my favorite Burger. I prepared a Buffalo Cheese Burger w/ Baked Fries.

As usual when I’m having a Burger it’s a Buffalo Burger, a Wild Idea Buffalo 1/3 lb. Buffalo Burger. I had it in the freezer so I let thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Extra Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Kraft Sharp Cheddar Cheese and served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun.

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Whew, we got one muggy day out there today! Started off with a light Breakfast and my morning workout. Kitchen cleaning today; cleaned the stove and oven, pulled everything out of the fridge and cleaned it also. Then later in the afternoon ran errand for Mom and came back and worked at the computer, deleted a few unused programs and ran scans and such. For dinner tonight it’s Turkey Burger. I prepared a Jennie – O 1/3 lb.Turkey Burger w/ Baked Potato.

 
I finally got around to breaking out the box of Jennie – O – 1/3 lb. Turkey Burgers. Jennie – O had sent me the free box as part of the Switch Club in which I was invited to join by Jennie – O. I had the box in the freezer and it’s time to break these Burgers out! They come frozen, to grill or fry from frozen. I pan fried these using Extra Virgin Olive Oil and seasoned with McCormick Grinder Sea Salt and Black Peppercorn. In a preheated, medium heat, large skillet I cooked the Burger for about 8 minutes per side, 165 degrees internal Burger temperature. And what a Burger! Meaty, juicy, and flavorful. First time I’ve tried the 1/3 lb. Ground Turkey Burger and will keep them in stock from here out! Another excellent Jennie – O Turkey Product.

For a side I had a Baked Potato, actually a 1/2 of a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. The McCormick Grinder Peppercorn Medley is a new one I came across at Meijer. The Medley consists of Black Peppercorns, Coriander, Pink Peppercorns, White Peppercorns, All Spice, and Green Peppercorns. Then I topped the Potato with I Can’t Believe It’s Not Butter. For dessert later a bowl of Del Monte No Sugar Added Sliced Peaches.

After a few days of sunshine and 70 degree weather, it cooled down today to in the 60’s and cloudy all day. Had a light Breakfast, Healthy Life Whole Grain English Muffin topped with some Smucker’s Sugar Free Blackberry Jam. Went to Kroger after Breakfast and picked up a few items and stopped by my bank before coming back home. Got everything put away and did a few things around the house. For dinner tonight it’s a Turkey Bacon and Sharp Cheddar Cheese Buffalo Burger w/ Steak Fries

 

 

 

One delicious Buffalo Burger combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Virgin Olive Oil, about 3 minutes per side, and done! I topped it with the Turkey Bacon and a slice of Kraft Sharp Cheddar Cheese, served it on a Kroger Lite Hamburger Wheat Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon kicks up one more notch! For a side I baked some Ore Ida Steak Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a slice of Pillsbury Nut Quick Bread.
