Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

 

 

For Breakfast this morning I made a 2 Egg Cheese Omelet along with 2 Jennie – O Turkey Breakfast Patties, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Delicious way to start my day! Outside it’s in the mid 80’s, humid, and a showers around the area. I needed a few things from the store so I went to Meijer. As I was coming out to the car, just as I put the bags in the back seat it started pouring the rain. It came down hard for about 15 minutes, I was drenched by the time I got into the car. Back home just cleaned up around the house. For Dinner tonight I satisfy my Buffalo Burger craving. I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

 

I’m way over due for a Wild Idea Buffalo Burger! I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon it just adds to the goodness!

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

 

I wanted something a little different for Breakfast this morning so I went with a Breakfast Burrito for Breakfast this morning. You can prepare them so many different ingredients. For this one I used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. Eggs and Bacon are just a natural pairing and the Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable flavor, nice heat but not over powering.

 

 

 

Another hot and humid day out there! Did some cleaning outside early to avoid the heat and humidity. Not a whole lot to do today, all caught up on everything. Did some work on the computer, ran the scans, deleted some old files and such. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

 

 

I hadn’t had a Wild Idea Buffalo Burger in a while now! I just love these Bad Boys of Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! Today’s Menu: Fish Fillet Sandwich w/ Baked Fries

 
For Breakfast on this chilly Saturday Morning I Prepared a Cheese Omelet, made with Egg Beater’s Egg Whites and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I then toasted a couple of slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had the every morning cup of Bigelow Decaf Green Tea. Cold out this morning, 32 degrees and light frost. The afternoon it got up into the 60,s and sunny. As it warmed up outside I got the leaf blower out and cleaned the deck and around the driveway. After Lunch I went over to spend the afternoon with Dad. He wasn’t having a very good day. He was having a lot of trouble breathing today. He’s been having more bad days than good lately, just keep praying for his recovery. Back home I did a load of laundry for Mom. For Dinner tonight, it’s a Dinner by the oven tonight! I prepared a Fish Fillet Sandwich w/ Baked Fries.

 

I picked up a bag of the Gorton’s Smart and Crunchy Breaded Fish Fillets at Meijer a while back and had them in the freezer. You bake them from frozen so I didn’t have to thaw them out. To prepare them I preheated the oven on 400 degrees. Then took a small baking pan and sprayed it with Pam Cooking Spray. Laid the Fish Fillets flat in the pan and baked for 24 minutes, I flipped them over after 15 minutes. The Fillets came out perfect! The Breading gave them a nice crunch and they had excellent flavor. They are 190 calories and 25 net carbs per serving which is 2 Fillets. Another great Seafood Product from Gorton’s, and another good one to have in the freezer! Served it a Healthy Life Whole Grain Hamburger Bun along with a slice of Kraft Sharp Cheddar Cheese.

 

For a side I baked up some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Roast Beef and Sharp Cheddar Sandwich w/ Chips

 

 

Just had a cup of Bigelow Decaf Green Tea for Breakfast. Then about 8:00 I took Mom over to the hospital and we checked in on Dad and then on to Jungle Jim’s International Grocery. This store is one of a kind! You could spend all day in there looking at everything. I noticed in the Meat Department they had a special going on for their Ground Kangaroo. Then in the Seafood Department they had Blue Crab in! Passed on getting some for now, maybe next week. I ended up getting several things including something for Dinner tonight. Back at home I got the 4 wheel cart out and got a little yard work done. Looks as though I’m going to have to have our wooden deck painted. There goes $400 or more. We have a huge deck that wraps around 1/2 the house. Lot of money, but it has to be done. For Dinner tonight my favorite Boar’s Head Meat, the Rare Roast Beef. Tonight its a Roast Beef and Sharp Cheddar Sandwich w/ Chips.

 

 

While at Jungle Jim’s earlier today, of course I had to hit that incredible Deli Department! They carry any Boar’s Head Meat, Cheese, or Sauces that Boar’s Head makes! And as always I picked up some of my favorite Lunch Meat, Boar’s Head Rare Roast Beef. Besides all Boar’s Head Products in the Deli they have a large selection of other Cold Cuts, a huge selection of any Cheese you could want, Pickles, and an Olive Bar that is unmatched. I also picked up some Anti Pasta Salad.

 

 

 

 

So now about this Sandwich – I’ll be using the Boar’s Head Roast Beef, a slice of Kraft Sharp Cheddar, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Healthy Life Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffles Reduced Fat Potato Chips. And to drink a 7.5 Mini Can of Coke Zero, love these little Mini Cans. For Dessert later a Jello Sugar Free Dar Chocolate Pudding.

Today’s Menu: Grilled Cheese and Baked Fries

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with some Boar’s grilled-cheese-and-baked-fries-008Head Sweet Sliced Ham and a 1/2 slice of Sargento Reduced Fat Swiss Cheese, for a Breakfast Sandwich. Also had my morning cup of Bigelow Decaf Green Tea. It’s another Spring like Winters day here, 63 degrees and partly cloudy. From what they are saying the upcoming week is going to be in the 60’s! So nice out that the flowers are already coming up around the neighborhood. After Lunch I headed over to spend some time with Dad at the rehab care center. He continues getting stronger and walking a lot better! Back home finished up some housework and took it easy the rest of the day. For Dinner tonight I prepared a Grilled Cheese and Baked Fries.

A Grilled Cheese and Baked Fries just sounded good. To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.

I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Oh, nothing like a good and toasty Grilled Cheese sometimes!

Then for a side I baked some Alexia Organic Yukon Select Fries. First time I’ve had these in a long time. Found the at Meijer and thought I would get a bag. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right! Plus they are only 120 calories and 15 net carbs. I love my Potatoes! Grilled Cheese and Baked Fries for a Sunday Dinner, not too bad! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Grilled Cheese and Baked Fries

 

 
For Breakfast this morning I prepared some Buffalo Sausage, a Scrambled Egg, 2 slices of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. While rummaging through the freezer I came across a Breakfast Scrambled Egg Buufalo Sausage 003package of Wild Idea Buffalo Ground Breakfast Sausage. Formed it into patties and fried it. I loved them, excellent seasoning! Went on-line to buy some more and they no longer make it. They have it in Buffalo Sausage Links now. Which I’ll have to try, love Wild Idea Buffalo. Outside we have another hot and humid day going on. In the 90’s and high humidity. So I spent my day inside again because of my allergies, another day of high Pollen and mold. Finished up some housework and took it easy today. For Dinner tonight I prepared a Grilled Cheese and Baked Fries.

It was Ham and Cheese Slider and Soup yesterday and tonight it’s more comfort food, Grilled Cheese and Baked Fries. When it’s hot and humid outside I like to eat light, nothing too heavy. To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.

I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Oh, nothing like a good and toasty Grilled Cheese sometimes!

Then for a side I baked some Alexia Organic Yukon Select Fries. First time I’ve had these in a long time. Found the at Meijer and thought I would get a bag. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right! Plus they are only 120 calories and 15 net carbs. I love my Potatoes! Grilled Cheese and Baked Fries for a Sunday Dinner, not too bad! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Had a peaceful night of sleep finally, had a rough night on Monday into Tuesday with Phantom Pains. I had a Breakfast Burrito for Breakfast this morning. I used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. Nothing not to like in this Burrito! Best Breakfast I’ve had in a while. Eggs and Bacon are just a natural pairing. The Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable taste, nice heat but not over powering.

So after that delicious Breakfast I did a load of laundry for Mom. I then finished up some light house keeping. After Lunch I headed out to go see Dad at the rehab center. He had a blood transfusion yesterday and he’s still sort of weak from it. He’s got ways to go before coming home. Headed back home and stopped for gas and got the car washed and vacuumed the inside. Took a quick power nap before dinner. Then for dinner tonight it’s Bacon and Cheese Buffalo Burger w/ Baked Crinkle Fries.

 

 

Love these Buffalo Burgers combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon Buffalo Cheese Burger w Baked Fries 001until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Virgin Olive Oil, about 31/2 minutes per side, after flipping the Burger I added my slice of Cheese with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon just adds to the goodness!

Started of my morning with a Simple Truth Turkey Sausage and Egg White Breakfast Sandwich. These are my favorite frozen Breakfast Sandwiches, they also have one made with Canadian Bacon. A bout 8:00 I headed to my Oncologist. I had dropped off some paper work to renew my Handicap Placards. I have to renew them every 4 years or so. After that stopped by Meijer for a few items and back home. In the 60’s again and rain and thunder storms on and off all day. Whole lot of rain lately and more for the rest of the week. After lunch went over to see Dad for the rest of the afternoon. He started therapy and he’s using a walker again. Back home and for dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 
Love these Buffalo Burgers combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Started my day off with a Chili and Cheese Omelet. I used the last of the 3 Bean Turkey Chili, Sargento Reduced Calorie Shredded Sharp Cheddar Cheese, Egg Beater’s Egg Whites, and Healthy Life Whole Grain Bread. I love making Omelets using Egg Beater’s, taste great and only 25 calories per serving! You could go 2 or 3 servings and still have less calories than Eggs. Also had my morning cup of Bigelow Decaf Green Tea. Cleaned up inside the house and outside I got the leaf blower out and cleaned the deck and driveway. It seems our house is a magnet for leaves and debris, it always ends up here it seems! For dinner tonight my favorite Burger, Wild Idea Buffalo Burger! I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.
