Today’s Menu: Roast Beef and Sharp Cheddar Sandwich w/ Chips

 

 

Just had a cup of Bigelow Decaf Green Tea for Breakfast. Then about 8:00 I took Mom over to the hospital and we checked in on Dad and then on to Jungle Jim’s International Grocery. This store is one of a kind! You could spend all day in there looking at everything. I noticed in the Meat Department they had a special going on for their Ground Kangaroo. Then in the Seafood Department they had Blue Crab in! Passed on getting some for now, maybe next week. I ended up getting several things including something for Dinner tonight. Back at home I got the 4 wheel cart out and got a little yard work done. Looks as though I’m going to have to have our wooden deck painted. There goes $400 or more. We have a huge deck that wraps around 1/2 the house. Lot of money, but it has to be done. For Dinner tonight my favorite Boar’s Head Meat, the Rare Roast Beef. Tonight its a Roast Beef and Sharp Cheddar Sandwich w/ Chips.

 

 

While at Jungle Jim’s earlier today, of course I had to hit that incredible Deli Department! They carry any Boar’s Head Meat, Cheese, or Sauces that Boar’s Head makes! And as always I picked up some of my favorite Lunch Meat, Boar’s Head Rare Roast Beef. Besides all Boar’s Head Products in the Deli they have a large selection of other Cold Cuts, a huge selection of any Cheese you could want, Pickles, and an Olive Bar that is unmatched. I also picked up some Anti Pasta Salad.

 

 

 

 

So now about this Sandwich – I’ll be using the Boar’s Head Roast Beef, a slice of Kraft Sharp Cheddar, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Healthy Life Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffles Reduced Fat Potato Chips. And to drink a 7.5 Mini Can of Coke Zero, love these little Mini Cans. For Dessert later a Jello Sugar Free Dar Chocolate Pudding.

Today’s Menu: Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, Provolone, Baked Hoagie w/ Baked Crinkle Fries

 
I picked up some Glier’s Turkey Goetta at Kroger yesterday. I hadn’t had Goetta in a while and was really looking forward to having some! So for Breakfast this morning I sliced off a couple of patties for the Goetta and I prepared some Simply Potatoes Shredded Hash Browns and toasted a slice of Healthy Life Whole Grain Bread. As always the Goetta was incredible! It fries up so good and the Turkey Goetta I use has fewer calories and carbs than the regular Goetta. Love this stuff!

 

After Breakfast I did some cleaning outside. Got the leaf blower out and cleaned around our deck and around the Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 016driveway area. After that I had to make a minor repair to the wooden deck that leads into the shed, had a couple of boards that loosened up. Then it was inside cleaning; vacuumed and dusted. After lunch I took the car up to be washed and inside cleaned. Went on over from there to go see Dad at the rehab center. He finally comes home after being there and the hospital for over 2 months. Just hope he can remain home, he’s still so weak. Another hot and humid day out there again. For dinner tonight a Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, and Provolone, Baked Hoagie w/ Baked Crinkle Fries.

 

 

Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 001

I was at Kroger yesterday afternoon and loaded up on some Boar’s Head cold cuts from the Deli. And put 2 of those to use tonight for Dinner. I prepared a Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, Swiss, Baked Hoagie w/ Baked Potato Puffs. To make the Hoagie I’ll be using; Boar’s Head Smokemaster Beechwood Smoked Black Forest Ham, Boar’s Head Bold Blackened Oven Roasted Turkey Breast, Sargento Ultra Thin Provolone Cheese, Kraft Zesty Lite Italian Dressing, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sub Buns.

 
To prepare it I preheated the oven on 400 degrees. I grabbed a small baking sheet. Lined it with foil and lightly sprayed with Pam Cooking Spray. I then took one of the Sub Buns, then using the bottom haf Bun I spread the Kraft Mayo on the top half of it. I then layered my Black Forest Ham, Blackened Oven Roasted Turkey Breast, Provolone, Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 009_cropand covered it all with the Italian Dressing. Added just a bit of the Kraft Mayo to the bottom of the top Bun and topped the sandwich with Bun. With my oven preheated I laid the Sub on the Baking sheet. I lightly sprayed the top of the Sub with Pam Cooking Spray, that helps it brown a bit. Slid the sheet in the oven and baked until the Cheese was melting and the Sub Bun was slightly toasted. What a Sub! The Boar’s Head Meats both were delicious, as always, and the Mayo and Provolone Cheese were perfect toppings. But that Kraft Zesty Lite Italian Dressing just bursts the Sub with flavor! That was the first time I had tried the Kroger Bakery Sub Buns, excellent Bun but a little higher in calories than I normally have.

Then for a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup

 

Potato and Ham Skillet
For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. You can serve this topped with a fried Egg, diced Onions, or Shredded Cheese. I topped mine this morning with Sargento Reduced Fat Shredded Colby – Jack Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea.

 

 

Baked Ham and Swiss Mini Sub w Creamy Tomato Soup 006
Cleaned the kitchen after Breakfast, did the morning work out, and then took Mom’s car up to the Car Wash and had it cleaned for her. Back home tidied up around the house. Had lunch and I headed out for a while. It’s a beautiful day out, sunny and around 50 degrees! Got out in the car and went for a drive out to my old neighborhood, Ross Ohio. It had been a while since I had been out there so I took advantage of this beautiful day and went out to the old homestead. Ross isn’t a very big place but as all small towns it’s gradually getting bigger. Back in the day when I was growing up there it was farming community. We had a Dairy Queen, an Ival’s Pizza, The Castle Bar/Diner, an IGA Market, and a small Deli Carry-Out. And that was it now there’s quite a few more places to eat and more on the way as more housing are being built and less farm land. Anyway back home and tonight I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.

 

 

Baked Ham and Swiss Mini Sub w Creamy Tomato Soup 003
To make the Sub I’ll need; Boar’s Head Maple Glazed Honey Coat Ham, Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s Deli Style Whole Grain Mini Sub Buns.

 

 
I used Boar’s Head Maple Glazed Honey Coat Ham. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium, the Ham is 60 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Ham and Swiss Subs!

Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a few years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Winter has kicked in big time here in West Chester! I went out to get the paper this morning and it was freezing. The morning news said it was 9 degrees with a wind chill ranging from -5 to -10 degrees, and that was our high as it going to continue to drop throughout the day. Not a good day to be working outdoors. Cleaned house today and that was about it. For dinner tonight Toasted Ham and Cheese w/ Roasted Fingerling Potatoes.

 

 

 

Grilled Ham and Cheese just sounded good for dinner tonight! I used my new favorite Ham, Boar’s Head Smoked Honey Coated Ham. I started using this a few weeks ago and have been hooked on it ever since! With the Ham I used Boar’s Head Colby Longhorn Cheese, Kroger Private Selection Sweet Hot Stone Ground Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Klosterman Wheat Bread.

 

I started by toasting the Bread. As that was toasting I added my Ham to a small skillet and heated up the Ham, on medium high heat, for about 5 minutes. Grabbed the Toast from the toaster I spread the Mayo on the bottom slice of Bread, the Ham, Longhorn Cheese, and the Stone Ground Mustard on the top slice of Bread. And I now have one delicious Sandwich! The Boar’s Head Ham can’t be beat, as all their products, and I think I could have the Kroger Private Selection Sweet Hot Stone Ground Mustard on any meat and make it taste even better.

I also had baked some Roasted Fingerling Potatoes. I cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Crumbled Bleu Cheese to top the Potatoes with. Using a large cookie sheet I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. For dessert later a new one, Breyer’s Carb Smart Vanilla Bean Ice Cream in a Waffle Bowl topped with Smucker’s Sugar Free Hot Fudge Chocolate Topping. Came across the Keebler Waffle Bowls at Kroger the other day. They’re Waffle Cones shaped into a bowl, you can eat the bowl as your eating the Ice Cream.

 

 

 

 

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Crumbled Bleu Cheese

Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half. This will allow the fingerlings to cook faster and also gives them a nice crisp.

3.) Toss in olive oil. I used about 1 tablespoons, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet.

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done. Sprinkle with Crumbled Bleu Cheese when done.

Made another thing I haven’t had for Breakfast in quite a while, Waffles. I used the leftover batter from the Pancakes from yesterday, got my Waffle Griddle out and made Waffles. Then along with the Waffle I had some Jimmy Dean Applewood Smoked Chicken Sausage. If you’ve never given these a try you need to, delicious! For dinner tonight, a Cold Cut Baked Mini Sub w/ Baked Fries

 

 

 

Baked Cold Cut Trio Mini Sub 008

I used Kroger Private Selection Smoked Off the Bone Sliced Ham, Boar’s Head Honey Smoked Turkey Breast, and Kahn’s Deluxe Bologna for my Baked Mini Sub. I had picked the Turkey up while at Jungle Jim’s Market yesterday. Then I used a Meijer Wheat Mini Sub Bun. Layered the Meats on the Bun and topped it with some Kraft Reduced Fat Mayo w/ Olive Oil and Sweet Hot Stone Ground Mustard and a thin slice of Sargento Ultra Thin Swiss Cheese. I brushed some Extra Virgin Olive Oil on the top bun, which makes it brown up better. I baked it in a shallow baking pan at 400 degrees until the Cheese started to melt and the Meats were heated. I love using these Meijer Wheat Mini Sub Buns, their just the right size and they toast up fantastic! I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

I had to go back to my Family Doctor Today. My allergies or sinus was driving me crazy, wrote me a prescription. Later had the car washed and the inside swept out. Another hot and humid day out again, not much of an appetite in this weather. For dinner I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.

 

 

 
I used Kroger Brand Private Selection Off- the Bone Smoked Ham. One of my favorite packaged sliced Hams. It has a really great taste to it and only 70 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Tuna Melt with Horseradish Mayonnaise w/ Baked Fries

Today’s Menu: Tuna Melt with Horseradish Mayonnaise w/ Baked Fries

 

 

 
Another day, another day of additional snow!! Only 1″ overnight but it just keeps adding up. I heard this morning on the morning news that we’ve set a new record for the most snow. This area just isn’t used to this snow for this long of a period of time. It’s been quite a Winter. For dinner tonight something new, a Tuna Melt with Horseradish Mayonnaise w/ Baked Fries.

Came across a form of this recipe from a Food Network Magazine a while back and also I’ve seen several others online. I love Tuna, Melts, and Cheese so I thought I would give it a try. I used 2 – 5 ounce cans of Chicken of the Sea Chunk Light Tuna in Water (Drained), 3 tablespoons Kraft Light Mayonnaise, 1/4 cup finely chopped celery, 2 tablespoons finely chopped fresh parsley, 1 teaspoon Paprika, 2 teaspoons apple cider vinegar, and Sea Salt and Ground Black Pepper (to taste) for the Tuna. Then for the Horseradish Mayonnaise I needed 1 tablespoon prepared horseradish, 4 tablespoons Kraft Light Mayonnaise, and 1 tablespoon French’s Spicy Brown Mustard. I also need Meijer Bakery Whole Wheat Mini Sub Buns and slices of Muenster Cheese.

To prepare it I preheated the oven to 475 degrees F. Combined 4 tablespoons mayonnaise, the tuna, celery, parsley, paprika, and vinegar in a large bowl and mixed well. Seasoned with salt and pepper. Combined 4 tablespoons of mayonnaise along with the mustard and prepared horseradish in a small bowl; spread on the bread slices and arrange on a baking sheet. Mound the tuna mixture on top and pat it into an even layer. Topping each with 1 cheese slice. Baked until the cheese melts, 5 to 7 minutes. It turned out incredible! The Tuna mix had great flavor along with the melted Muenster Cheese and Crusty Bun. A keeper recipe for sure! You can serve it open face, which I did or top it with the other half of the bun.

 

 
I also had baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served with Hunt’s Ketchup. For dessert my Mom had baked an Apple Pie that she made with Splenda. The pie just melts in your mouth!

A beautiful and sunny day out but, A cold breeze and a high of 18 degrees. Tomorrow it’s supposed to hit 40 degrees, another one day heat wave! Then again they’re saying more snow Friday morning and then again Saturday night and Sunday morning, be glad when this pattern of snow and cold stops. Then there are signs of Spring is on its way, some of the Major League Pitchers and Catchers have reported to Spring Training! Ran an errand for my Mom and that was about it. For dinner tonight, Ham and Turkey Breast Baked Mini Sub w/ Creamy Tomato Soup.

I used Kroger Private Selection Smoked Off the Bone Sliced Ham and Boar’s Head Honey Smoked Turkey Breast for my Baked Mini Sub. I had picked the Turkey up while at Jungle Jim’s Market yesterday with this Sandwich in mind. Then I used a Meijer Wheat Mini Sub Bun. Layered the Meats on the Bun and topped it with some Kraft Reduced Fat Mayo w/ Olive Oil and a thin slice of Murray’s Muenster Cheese. I brushed some Extra Virgin Olive Oil on the top bun, which makes it brown up better. I baked it in a shallow baking pan at 400 degrees until the Cheese started to melt and the Meats were heated. I love using these Meijer Wheat Mini Sub Buns, their just the right size and they toast up fantastic! I heated a can of Amy’s Low Fat Cream of Tomato Soup. Amy’s Organic Soups used to be hard to find, at least in this area, and now Kroger, Meijer, and Walmart all sell it. A Baked Sub with Tomato Soup for a cold Winter’s Day! For dessert later a Healthy Choice Vanilla Swirl Frozen Yogurt.

Break out the shorts and sunscreen it was in the 40’s today! Went and got the car washed which was covered with dirt and salt. From there I went to the post office and Walmart to pick up a few things. It was one of those days, trying to figure out what to have for dinner. Nothing really sounded good so when it’s one of those days you always go with Chili or Soup. I went with Soup, I prepared a Baked Ham and Muenster Cheese sandwich w/ Chunky Soup – Baked Potato with Cheddar & Bacon Bits.

 

 
To make the Sandwich I used Kroger Private Selection Off the Bone Smokehouse Sliced Ham, Murray’s Muenster Cheese (Sliced thin), and Meijer Bakery Wheat Mini Sub Buns. To prepare, started by spreading some Kraft Reduced Fat Mayo w/ Olive Oil on the inside bottoms of the Sub Buns, then layered my Ham, and then the Cheese. Heated up the oven on 375 degrees and put the Sub in a small baking pan and heated until warmed throughout the Sandwich and Cheese started to melt. Makes one delicious Ham and Cheese Sub!

 For my Soup I used Campbell’s Chunky Soup Baked Potato with Cheddar & Bacon Bits. I love a thick Soup, the thicker the better! And this one hits the mark, thick and loaded with Chunky Potatoes. For dessert later tonight a Healthy Choice Chocolate Swirl Frozen Yogurt.

Ingredients

Water, Chicken Stock, Potatoes, Baked Potatoes, Cream, Vegetable Oil, Modified Food Starch, Cheddar Cheese, Pasteurized Process Cheddar Cheese.

Directions

Do not add water. Stove: Pour soup into medium saucepan. Heat slowly until hot, stirring occasionally. Microwave: Pour soup into medium microwave-safe bowl or 2 individual microwave-safe bowls. Cover; microwave on high for 3 1/2 minutes or until hot, stirring once during heating. Careful, keep covered 1 minute. Stir before serving. Promptly refrigerate any unused portion in separate container. Recommend use by date on can end. Store unopened can at room temperature.

Today’s Menu: Ground Pork Pesto Burger w/  Baked Crinkle Fries

I love these Ground Pork Burgers the taste is fantastic, the pesto mixed in with the Pork is a perfect match! I had made up several of these and froze them. So after thawing I fried the Burger in Extra Virgin Olive Oil about 4 minutes per side. It came out moist and juicy bursting with flavor. I topped it with Sauteed Mushrooms, reduced Kraft Mayo, a teaspoon of Basil Pesto Sauce, and a slice of Smoked Gouda Cheese and served it on a Healthy Life Whole Grain Bun. I left the recipe at the end of the post.  As a side I had Baked Ore Ida Crinkle Fries. I also had a bottle of the new Snapple Drink, Half and Half Iced Tea & Lemonade Diet Snapple. Plus it’s only 10 calories and 0 carbs! For dessert later a slice of Pillsbury Nut Quick Bread.

Ground Pork Burgers
(Makes 4 Burgers)
Ingredients:

1 LB. Ground Pork (I used a 93/7 Blend)
1/4 Cup Basil Pesto (You can add more or less to taste)
1/4 cup Italian Style Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
4 Slices of Smoked Gouda Cheese, Optional
Lettuce, sliced Tomato optional

Instructions:

* In a mixing bowl add your bread crumbs, pesto, and ground pork. Mix together and form into 4 Burgers
* Spray a large skillet and heat on medium heat and add 1/2 tablespoon Extra Virgin Olive Oil
* Fry the Burgers to your liking, I fried these for about 4 minutes per side.
* Serve on a Bun of your choice (I used Healthy Life Whole Grain Buns). Add Reduced or Lite Mayo and Slice of Smoked Gouda Cheese.
