Today’s Menu: Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese

 

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. We had a high of 38 degrees and cloudy out today. Not a thing to do today which is a good thing, I had the Phantom Pains all night again. They started last night around 11:00 and didn’t ease up until almost noon today! So as usual when these last this long, it’s a day of rest. So for Dinner tonight I prepared Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese.

 

I had a small package of Salmon Bites or Pieces in the freezer that I had purchased from Meijer. It was a small package of just odd and end pieces of Salmon they had leftover and they packaged them up. I laid the package of Salmon in the fridge overnight to thaw. To make the Salmon I’ll need; the Salmon Pieces, Extra Light Olive Oil, McCormick Grinder Sea Salt, and Zatarain’s Creole Seasoning.

 

To prepare it; I first preheated the oven to 400 degrees. Next I got a small baking pan and sprayed it with Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. I seasoned the Salmon Fillet with 1/2 tablespoon of the Extra Light Olive Oil, Grinder Sea Salt and Creole Seasoning. I put the Fillet in the pan; skin side down. Baked it for 13 minutes; until done and fork flaky. The Salmon came out perfect! Done just right with excellent seasoning.

 

To go with my Salmon I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Peach Snapple to drink.

Today’s Menu: Breaded Catfish Strips w/ Mac and Cheese

 

 

For Breakfast this morning I Poached an Egg and served it on a toasted Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea for Breakfast. 87 degrees, humid, with rain showers out today. After Breakfast I took Mom to Meijer, she wanted to buy some books. That’s Mom’s favorite thing to do at night, read books. Stopped at McDonald’s and picked up Breakfast for her. Back home did a load of laundry and did a few things around the house. For Dinner tonight its Breaded Catfish Strips w/ Mac and Cheese.

 

I’m having the remaining Louisiana Crawfish Company Breaded Catfish Strips that I ordered from the Louisiana Crawfish Company. These were a bit Spicy for Mom’s taste so I had the remainder for Dinner. Mom made herself a small Meatloaf for her Dinner.

 

The Catfish Strips come Seasoned and Breaded. All I do is prepare it!. I grabbed a large skillet, sprayed it with Pam Non Stick Spray and added 2 tablespoons of Extra Light Olive Oil. Heated the skillet on medium heat. With the skillet heated I added the Catfish Strips.

 

I fried the Catfish 9 minutes, flipping the strips over after 4 minutes. I cooked the Strips in 2 batches so not to overcrowd the skillet. When done I laid the Strips on a paper towel lined plate. The paper towel well absorb any extra Oil. The Catfish Strips are delicious! Seasoned just right with excellent Breading. The Breading does have a Cajun kick to it but nothing overpowering. We’ll purchase more of these after we run out from the Louisiana Crawfish Company.

 

To go with the Catfish Strips I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 77 degrees with rain showers all day. Really tired this morning I had the Phantom Pains most of the night again! They finally stopped around 6:00 this morning but the damage was done. Bad headache this morning and very tired. I did a load of laundry and then it was back to bed to catch up on some sleep! For Dinner tonight its Breaded Catfish Strips w/ Mac and Cheese.

 

I’m trying another new product for Dinner tonight, Breaded Catfish Strips. These are from the Louisiana Crawfish Company. I ordered these Breaded Catfish Strips along with some Breaded Crawfish Tails and Breaded Gator Bites. So between these and the Omaha Steak Products I’ve purchased we have some great variety of foods to chose from!

Today’s Menu: Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 81 degrees and mostly sunny out today. After Tea I had to go back to Meijer for a few items for Mom and to grab a few items I forgot to get there the other day. Back home got the cart out and did a little yard work. For Dinner tonight I prepared Creole Seasoned Baked Salmon Pieces w/ Mac and Cheese.

I had no clue on Dinner tonight! Then while at Meijer I came across of Salmon Bites or Pieces. It was a small package of just odd and end pieces of Salmon they had leftover and they packaged them up. They looked good so I grabbed a package.To make the Salmon I’ll need; the Salmon Pieces, Extra Light Olive Oil, McCormick Grinder Sea Salt, and Zatarain’s Creole Seasoning.

To prepare it; I first preheated the oven to 400 degrees. Next I got a small baking pan and sprayed it with Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. I had also bought a jar of Desert Pepper Peach Mango Salsa to put on the Salmon. Excellent Salsa!

For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Dr. Pepper to drink. And they finally have the Diet Dr. Pepper back in stock, small 12 oz. Today’s Menu: Fried Oysters w/ Long Grain and Wild Rice and Baked Multi Grain Loaf Bread

 

 

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Sausage Links, and had a cup of Bigelow Decaf Green Tea. That’s the way to start the day! Sunny and 38 degrees outside today. After Breakfast I went to Kroger for Mom and then stopped by McDonald’s and picked up Breakfast for her. I had picked up a bottle of Spray Invisible Fence the other day at Meijer. They say the odor will drive dogs away from your yard. Myself and a couple of neighbors yard’s are being used by other people dog’s as their personal dump centers! They are supposed to be picking up after their dogs but someone is too lazy to do it. So I bought enough spray for 3 of yards. I got the cart out of the shed and went around and sprayed our yards. Hope it works!! For Dinner tonight I prepared Fried Oysters w/ Long Grain and Wild Rice and Baked Multi Grain Loaf Bread.

 

As usual I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained Oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

 

 

 

Next, heat the Extra Light Olive Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each Oyster carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some McCormick’s Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. These are so delicious, golden brown and with an incredible fresh flavor.

 

 

To go with my Oysters I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love that Rice! Then I also baked a loaf of La Baguetterie Multi-Grain Oval Bread. For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

 

Pan-Fried Oysters Recipe:
Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce.

Makes 2 servings.

Today’s Menu: Baked Fish Sticks / Mac and Cheese

 

 

For Breakfast this morning I prepared an Egg White Ham and Cheese Omelet. I used Egg Beater’s Egg Whites, Meijer Diced Ham, Sargento Off the Block Sharp Cheddar Cheese, and Ortega Smoky Chipotle Taco Sauce. Love these Omelets! I also toasted a slice of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Cloudy but had a high of 59 degrees, a litle light rain. I got my test results back from last week. My Diabetes 2 was well under control and all blood work including my liver were all normal. Not much to do today so I got the cart out of the shed and did a little yard work and took off for a ride around the neighborhood. I won’t have many more days where I can get the cart so I wanted to get it out and enjoy the day. For Dinner tonight I prepared Baked Fish Sticks / Mac and Cheese.

 

I wanted something light and easy to prepare and nothing easier than Baked Fish Sticks / Mac and Cheese. For the Fish Sticks I bought a box of Kroger Crunchy Fish Sticks. First time using these but Mom had bought a box a while back and I tried them then. So i heated the oven on 400° degrees. Grabbed a small baking pan and sprayed with Pam Non Stick Spray. Lined my Fish Sticks up in the pan and baked. I baked them for 15 minutes and done!

 

 

 

 

They baked up to a golden brown and were excellent! They make a perfect light Dinner. Nice crispness and the breading was well seasoned. They were 180 calories and 20 carbs per serving (5 Fish Sticks). Good one to have in the freezer. Served with a side of Tarter Sauce.

 

 

 

 

 

 

For the Mac Cheese I’m using Kraft Whole Grain Macaroni and Cheese. It comes in a 1 serving microwavable cup. To prepare it I removed lid and removed the Cheese Sauce packet from the cup. Added water to the cups fill line and stirred. Microwaved uncovered, on high for 3 1/2 minutes. Do not drain the excess water. Stir in the Cheese Sauce Mix and it was ready. I love the Kraft Mac and Cheese they always comes out perfect. Well Fish Sticks and the Mac and Cheese couldn’t have been any easier to prepare. One by oven and the other microwaved! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Mini Pretzels with a Sprite Zero to drink.
