Today’s Menu: Stuffed Clams and Tossed Salad

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns and an al fresco Country Style Chicken Sausage Patty. I also toasted a slice of healthy Life Whole Grain Bread that I lightly buttered with I Can’t Believe It’s Not Butter and had my morning cup of Bigelow Decaf Green Tea. It’s another hot and humid day out there, 92 degrees and humid! After Breakfast I headed up to Kroger and hit the Salad Bar and made a Salad for part of my Dinner tonight. Then stopped by McDonald’s and picked up Breakfast for Mom and Dad. I was caught up on all the cleaning, did finish up a load of laundry for Mom. Did a few things around the house then did some cleaning of the computer. Deleted some old files, ran all the scans, and cleaned the computer desk off. For Dinner tonight its seafood and a Salad. I prepared Stuffed Clams and A Tossed Salad.

 

For the Stuffed Clams; I purchased these at Seafood Department at Kroger. They are Matlaw Stuffed Clams (Brand) that they have in the Seafood Case. We have these every so often now,we love them! For my Stuffed Clams I preheated the oven on 425 degrees. Lined a small baking sheet with foil and placed the Clams on it. I sprinkled some Sea Salt on them and a drizzle of Lemon Juice. When the oven was ready I baked the Clams until heated through, about 25 minutes. Meaty and seasoned just right and the Louisiana Remoulade Sauce is perfect to dip it in. Plus they are only $1 per Clam.

 

 

I went to Kroger earlier today and made my Salad from the Salad Bar. Used Lettuce, Chopped Hard Boiled Egg, Mushrooms, and Chick Peas. I added the Sargento Shredded Mozzarella Cheese, Crumbled Turkey Bacon, and Kraft Fat Free Classic Catalina Dressing here at home. I also reheated a slice of the French Bread leftover from last night. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Baked Ham, Salami, and Provolone Mini Sub w/ Baked Fries

 

 

 

For Breakfast this morning I prepared 2 Jennie – O Turkey Breakfast Sausage Links, 1 Egg Sunnyside Up, and 2 slices of toasted Healthy Life Whole Grain Bread (Lightly Buttered). Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I did a load of laundry for Mom and cleaned up around the house. Whole lot of rain yesterday and today, a heavier today. Rain a bit too much for me to load the wheelchair and then get it out to go see Dad. Hopefully later this week it will clear up. For Dinner tonight I prepared Baked Ham, Salami, and Provolone Mini Sub w/ Baked Fries.

 

 

 

To make the sandwich I’ll need; Kroger 100% Whole Wheat Hoagie Rolls, Boar’s Head Sweet Sliced Ham, Private Selection Hard Salami, Sargento Ultra Thin Provolone Cheese, Kraft Lite Italian Dressing, Kraft Reduced Fat Mayo w/ Olive Oil, and Extra Virgin Olive Oil (for brushing the tops of the buns while baking).

 

 

 

I used Boar’s Head Sweet Sliced Ham. I had purchased the Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium, the Ham is 60 calories per serving. Then I also used Private Selection Hard Salami, 110 calories per serving. For the Cheese I used Sargento Ultra Thin Provolone Cheese which is only 40 calories per slice. To make the Sub I put a slathering of the Kraft Mayo on the bottom half of the Bun. Then layered the Ham, the Salami, Provolone Cheese, Kraft Lite Italian Dressing, and topped with the top half of the Bun. To help the bun brown a bit I brushed the top of Bun with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Ham Subs, along with the added Salami! I prepared one for Mom when she got home later.

 

Then for a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Weight Watcher’s.

Today’s Menu: Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, Provolone, Baked Hoagie w/ Baked Crinkle Fries

 
I picked up some Glier’s Turkey Goetta at Kroger yesterday. I hadn’t had Goetta in a while and was really looking forward to having some! So for Breakfast this morning I sliced off a couple of patties for the Goetta and I prepared some Simply Potatoes Shredded Hash Browns and toasted a slice of Healthy Life Whole Grain Bread. As always the Goetta was incredible! It fries up so good and the Turkey Goetta I use has fewer calories and carbs than the regular Goetta. Love this stuff!

 

After Breakfast I did some cleaning outside. Got the leaf blower out and cleaned around our deck and around the Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 016driveway area. After that I had to make a minor repair to the wooden deck that leads into the shed, had a couple of boards that loosened up. Then it was inside cleaning; vacuumed and dusted. After lunch I took the car up to be washed and inside cleaned. Went on over from there to go see Dad at the rehab center. He finally comes home after being there and the hospital for over 2 months. Just hope he can remain home, he’s still so weak. Another hot and humid day out there again. For dinner tonight a Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, and Provolone, Baked Hoagie w/ Baked Crinkle Fries.

 

 

Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 001

I was at Kroger yesterday afternoon and loaded up on some Boar’s Head cold cuts from the Deli. And put 2 of those to use tonight for Dinner. I prepared a Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, Swiss, Baked Hoagie w/ Baked Potato Puffs. To make the Hoagie I’ll be using; Boar’s Head Smokemaster Beechwood Smoked Black Forest Ham, Boar’s Head Bold Blackened Oven Roasted Turkey Breast, Sargento Ultra Thin Provolone Cheese, Kraft Zesty Lite Italian Dressing, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sub Buns.

 
To prepare it I preheated the oven on 400 degrees. I grabbed a small baking sheet. Lined it with foil and lightly sprayed with Pam Cooking Spray. I then took one of the Sub Buns, then using the bottom haf Bun I spread the Kraft Mayo on the top half of it. I then layered my Black Forest Ham, Blackened Oven Roasted Turkey Breast, Provolone, Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 009_cropand covered it all with the Italian Dressing. Added just a bit of the Kraft Mayo to the bottom of the top Bun and topped the sandwich with Bun. With my oven preheated I laid the Sub on the Baking sheet. I lightly sprayed the top of the Sub with Pam Cooking Spray, that helps it brown a bit. Slid the sheet in the oven and baked until the Cheese was melting and the Sub Bun was slightly toasted. What a Sub! The Boar’s Head Meats both were delicious, as always, and the Mayo and Provolone Cheese were perfect toppings. But that Kraft Zesty Lite Italian Dressing just bursts the Sub with flavor! That was the first time I had tried the Kroger Bakery Sub Buns, excellent Bun but a little higher in calories than I normally have.

Then for a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

You could tell it was going to be an uncomfortable day outside by 7:00 this morning, it was already 71 degrees and muggy out. They say we have a lot of rain moving in later, wait and see I guess. For Breakfast this morning I prepared 2 Jennie Turkey Sausages, 1 Egg Sunnyside Up, and 2 slices of toasted Healthy Life Whole Grain Bread (Lightly Buttered). Also had my morning cup of Bigelow Decaf Green Tea. Finished up some laundry for Mom and cleaned up around the house. After Lunch I headed to the Rehab Center to see Dad and also to a Birthday Party for my Aunt who is also over there. Back home and for Dinner tonight I prepared Baked Ham, Salami, and Swiss Mini Sub w/ Baked Crinkle Fries.

Turkey Enchiladas

I’ve got a recipe here that I haven’t tried but plan on doing so. To prepare it you’ll be using Jennie – O Turkey Breast Cutlets. Auntie “M” passed this along to me and it sounded so good I had to pass it along!

 

 
Turkey Enchiladas

 

Recipe Ingredients:

1 package Jennie – O Turkey Breast Cutlets, cut into 1-inch pieces
1 tablespoon Extra Virgin Olive Oil
1 cup Daisy reduced Fat Sour Cream
1 cup Kraft Fat Free or Lite Ranch Dressing
10 (8-inch) Ole Low Carb Tortillas
1 cup (8 ounce) Sargento Shredded Reduced Fat Monterey Jack cheese
2 cups your favorite Salsa
2 medium Tomatoes, seeded and diced
2 Green Onions, chopped (optional)
Wholly Guacamole (Optional)

 

 

Cooking Directions:

* Preheat oven to 375°F.
* Heat oil in a large nonstick skillet over medium-high heat.
* Cook turkey, stirring constantly until no longer pink. Follow Package Cooking Instructions
* In a small bowl, mix sour cream and ranch dressing.
* In a medium bowl, combine 1 cup sour cream mixture and turkey.
* Divide turkey mixture, cheese and salsa evenly over tortillas.
* Roll up and place seam-side down in a greased 9 x 11-inch baking pan.
* Bake, uncovered, for 25 to 30 minutes.
* Top with guacamole, tomato, green onion and any remaining salsa and/or sour cream mixture.

Makes 5 servings.
