Hello everyone! I started my day off with a toasted Healthy Life Whole Grain English Muffin and a couple of slices Smithfield Anytime Sliced Ham. If you’re a Ham lover, like myself, you’ll love the Smithfield Anytime Sliced Ham! Helped Mom with a few chores around the house. Then headed outdoors and got the leaf blower out and cleaned around the wooden deck and driveway.In the early afternoon went for my 6 month checkup at the oncologist. Everything looked good he said. I’m very sad to learn though my Oncologist that I was with since 1979 to when he retired 2 years ago had passed away. Rest in Peace my Friend. Back home did a few things around the house. It was another beautiful day out, 82 and sunny! Then for dinner tonight I prepared a Walnut Crusted Salmon w/ Brown and Wild Rice and Asparagus.

The Walnut-Crusted Salmon recipe comes from an issue of Taste of Home Magazine. I came across it a while back, and now it’s my favorite Salmon recipe! I had purchased the Wild Caught Atlantic Salmon from Kroger yesterday.

 

 

 

 

 
I rinsed the fillet off in cold water and patted it dry with a paper towel. To prepare the Salmon I needed; Dijon mustard, honey, whole wheat bread (torn into pieces), finely chopped walnuts, canola oil, and dried thyme. Then I preheated the oven to 400°. Placed the Salmon on a baking sheet that was coated with cooking spray. Then mixed Walnut Crusted Salmon w Brown and Wild Rice and Asparagus 004the mustard and honey together and brushed it over the salmon. Placed the bread in a food processor and pulsed until coarse crumbs formed, transferred to a small bowl. Stirred in the walnuts, oil and thyme and pressed it onto the salmon. Baked 12 minutes until the topping was lightly browned and the fish just begins to flake easily with a fork. I’ve left the original recipe along with the web link at the bottom of the post. If you’re a Salmon lover you have to try this recipe! The sweetness of the Honey and sharpness of the Dijon Mustard are perfect together. I love regular Baked Salmon but with the combo of all the ingredients it just makes the Salmon pop with flavor and a fantastic Crust.

 
For one side dish I microwaved some Uncle Ben’s Ready Whole Grain Medley Brown and Wild Rice. It comes in a microwavable Pouch. Just heat for 90 seconds and serve! Rice comes out perfect, steaming hot and fluffy.
Then I also prepared Roasted Asparagus. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus 2Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. One delicious dinner tonight! For dessert later a Jello Sugar Free Double Chocolate Pudding.

 

 

Walnut-Crusted Salmon

Ingredients:

4 salmon fillets (4 ounces each)walnut-crusted-salmon-002
4 teaspoons Dijon mustard
4 teaspoons honey
2 slices whole wheat bread, torn into pieces
3 tablespoons finely chopped walnuts
2 teaspoons canola oil
1/2 teaspoon dried thyme

Directions:

Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon.
Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. Yield: 4 servings.

Had a light Breakfast of a Healthy Life Whole Grain English Muffin topped with Smucker’s Sugarless Blackberry Jam. After that I needed a few items from the store so I headed up to Kroger, wanted to go before the rains moved back in. Back home did a couple of loads of laundry for Mom and tided up around the house. Not much going on after that. The rain started about noon and continued the rest of the day. It’s a cool, gloomy, foggy, and rainy Saturday. For dinner tonight Breakfast! I prepared Sausage and Cheddar Grits with Fried Egg and Wheat Toast.

Came across the idea in the latest issue of Cooking Light. The original recipe and web link is at the end of the post. The original recipe makes 4 servings, I just made 1 serving. To make the dish I’ll need; Sea Salt and Pepper, 1 packet of Kroger Brand Instant Butter Flavor Grits, 1 serving Jennie – O Turkey Ground Breakfast Sausage, Sargento Reduced Fat Cheddar Cheese, 1 Medium Egg.

 

 
To prepare the dish starting with the Grits; Just followed the easy instructions. Emptied the contents of 1 package of the Grits into a bowl. Then added a 1/2 cup of boiling water. Stir and served. Can’t get much easier that! The Grits were 100 calories, 1 fat gram, and 20 net carbs.

On to preparing the Turkey Sausage. I used Jennie – O Turkey Ground Breakfast Sausage instead of Pork Sausage, cutting the calories, fat, and carbs. I used a medium size skillet that I sprayed with Pam Cooking Spray and heated on Medium Heat. When the skillet was heated I added 1 serving of the Ground Turkey Breakfast Sausage. Stirred it occasionally with a wooden spoon (to crumble any large pieces) until fully cooked, about 14 minutes. Removed the Sausage from pan with a slotted spoon and set aside. Left what little accumulated fat in pan. While I had the pan hot and sausage out I also made 3 Turkey Sausage Patties for my Breakfast tomorrow, just reheat and serve in the morning. Then took the Grits, still in the sauce pan, and stirred in the Cheese and cooked Turkey Sausage.

I then grabbed a couple of slices of Klosterman Wheat Bread and toasted them. Topped both slices with I Can’t Believe It’s Not Butter.

 

 

Returned the frying pan with fat to medium-high heat. Cracked the Egg into frying pan. Cooked until the white was set but yolk are still runny, about 3 minutes. Spooned the grits mixture into a bowl and topped with the egg.

Served it with the Buttered Toast. One delicious Breakfast/Dinner! The Sausage and Cheese Grits were incredible and topped with the Runny Sunnyside Up Egg just added to the flavor. Saved calories, fat, and carbs by using; Jennie – O Ground Turkey Breakfast Sausage, Sargento Reduced Fat Shredded Cheddar Cheese, Medium Size Egg over a Large Size Egg, and using Wheat Toast over White Bread Toast, and using I Can’t Believed It’s Not Butter over Butter without sacrificing any flavor.

Sausage and Cheddar Grits with Fried Eggs

Yield: 4 Servings
Ingredients

Salt and pepper
1/2 cup stone-ground grits (white or yellow)
8 ounces bulk pork breakfast sausage (7 to 8 links)
3 ounces sharp Cheddar, coarsely shredded (3/4 cup packed)
4 large eggs

Preparation

In a medium-size saucepan over high heat, bring 2 1/2 cups water to a boil. Add salt, reduce heat to medium and slowly whisk in grits. Cook, uncovered, stirring frequently, until grits are tender and thickened, about 20 minutes.
Using a sharp paring knife, cut off ends of sausage casings. Squeeze out sausage meat and discard casings. Cook sausage in a medium-size frying pan over medium-high heat, stirring occasionally with a wooden spoon (to crumble large pieces) until fully cooked, about 5 minutes. Remove sausage from pan with a slotted spoon and set aside. Leave accumulated fat in pan.
Remove grits from heat and stir in cheese and cooked sausage.
Return frying pan with fat to medium-high heat. Carefully crack eggs into frying pan one at a time. Cook until whites are set but yolks are still runny, about 3 minutes. (For firmer yolks, flip eggs and cook for 1 minute longer.) Spoon grits mixture onto individual plates and top each serving with an egg. Serve immediately.

Somewhat hotter and more humidity outside today. Partly Cloudy and a passing shower on and off all day. Had Breakfast and my morning workout, then finished up on some house cleaning. I wanted to get the car washed but weather not letting me today. I took a drive over to neighboring Fairfield to find out where my eye exam is located for Monday morning, checking for Glaucoma. Hope this turns out to be a false alarm, I’m dealing with enough I think. For dinner tonight it was a Breakfast menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Wheat Toast.

 
Nothing like a hearty, healthy, and delicious Breakfast. So I prepared an Egg Sunnyside Up, seasoned with Sea Salt Breakfast for Dinner w Eggs, Hash Browns, Turkey Sausage, and Wh 001and Ground Black Pepper and pan fried in Canola Oil. I then prepared a couple of Jennie – O Turkey Breakfast Sausage Links. Just as delicious as Pork Sausage but healthier. While the Sausage Links were cooking in another skillet I prepared some Hashbrowns. I used Simply Potatoes Hash Browns. The last item for my Breakfast Dinner was what else but Toast! I toasted up a couple of slices of Klosterman Wheat Bread. Since I’ve started using Pita Bread so often my full loaf of Bread had been going stale on me before using it all. So I started using Klosterman Bread because you can purchase it in 1/2 loaves! Plus it’s a better tasting and fresher Bread than most other Wheat Breads. So I toasted 2 slices and buttered them with I Can’t Believe It’s Not Butter. I also had a cold glass of 2% White Milk. Breakfast for Dinner is a good thing! For a dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Triple Decker Sandwich – Ham, Turkey Pastrami, Turkey Bacon, Swiss Cheese, Boston Bib Lettuce.

It’s the lazy, hazy, days of Summer, In May! Don’t mind the heat but the humidity, I can’t stand! We have another one of those days out again. After Breakfast I went to the local Meijer, they had a lot of good 2 Day Savings going on, 5% off every item was one of them! After Lunch I got the cart out for a bit and grabbed a weed puller and went around the yard and flower beds and got rid of some weeds, lot of Dandelions this year. For dinner tonight a Triple Decker Sandwich and a 1/2 of a Baked Potato.

 
I had something else planned but a good ole Triple Decker just sounded too good! For the Meat I used Boar’s Head Triple Decker Sandwich  Ham Turkey Pastrami 002Honey Smoked Ham, Jennie – O Turkey Pastrami, and Jennie – O Turkey Bacon. Using these Meats I save a lot of Calories and Carbs using Boar’s Head and Jennie – O Turkey Products. For additional toppings I used Kraft Reduced Fat Mayo w/ Olive Oil, Sweet Hot Stone Ground Mustard, Boston Bib Lettuce, Sargento Ultra Thin Swiss, and Klosterman Wheat Bread. To build this “Bad Boy of Sandwiches”; I first toasted my Bread (3 slices). Got the first slice and layered it the Kraft Mayo, then a layer of the Boar’s Head Ham, a slice of Swiss, and topped it with the second slice of Bread. On top of that the Boston Bib Lettuce, two pieces of Turkey Bacon, then I layered the Turkey Pastrami, spread the Stone Ground Mustard, a slice of Swiss Cheese, and the last slice of Bread. Now this is a Sandwich! This hit the spot, fresh, delicious, and not to filling. I also had a side of Ruffles Baked Cheddar and Sour Cream Chips and an ice-cold Diet Dr. Pepper that I had in the freezer for about 10 minutes! For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Chicken and Pasta
Wow we went from beautiful Spring Days to hazy and humid Summer Days. Another hazy and humid day here in Chicken and Pasta 010Southwest Ohio. We even had the air-conditioner on all night. Beats the cold, snow, and ice though! Good Breakfast to start the day; a Poached Egg, on a Healthy Life Whole Grain English Muffin, a side of Jennie – O Turkey Breakfast Sausage Links, and a hot cup of Bigelow Decaf Green Tea! I use the Egg Poacher my Mom has had since I was still crawling around on all fours! Once you see steam coming out of it just boil for 3 minutes and you have a perfect Poached Egg. Not much going on outside due to the humidity and a very high pollen count. I was outside for a bit and sneezed for next 3 hours, it’s bad out! For dinner tonight another easy to prepare but delicious meal. I prepared Chicken and Pasta with a slice of Klosterman Wheat Bread.

For the Chicken part of the dish I used Perdue Perfect Portions Chicken Breasts (2 of them). I had them in the freezer so I let them thaw overnight in the fridge. To prepare; removed them from the package and seasoned them with Sea Salt and Mrs. Dash Roasted Garlic Table Blends Seasoning. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium skillet, sprayed with Pam Cooking Spray and a tablespoon of Canola Oil. Fried them on medium high heat for about 10 minutes, flipping it over 3 times. Removed from the heat and set aside.

 

For the Past Part of the Meal; I had bought a little something that caught my eye the other day while at Kroger, a bagChicken and Pasta 002 of Kroger Brand Chicken Pasta and Sauce. Which is a Fettuccine Pasta in a Chicken Flavor Sauce. It comes in a 4.3 sealed bag. Easy to prepare; Bring 2 cups of water and 1 tablespoon Blue Bonnet Light to a boil in a medium size sauce pan. Stir in the contents of the package. Continue boiling over medium heat, stirring often, 7 minutes or until the noodles are tender. Remove the pan from heat and let cool for 2-3 minutes; the sauce thickens as it sits. To serve; Made a bed of the Pasta in a plate, topped it with a sprinkle of Kraft Reduced fat Parmesan Cheese, and then topped it with a Chicken Breast. I’ll have to buy another package of the Pasta! Really good; the sauce was great and well seasoned and I love Pasta especially Fettuccine. Made a really delicious dish. I also had a slice of Klosterman Wheat Bread topped with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice dark Fudge Swirl Frozen Greek Yogurt.

Place frozen breast tenderloins on foil-lined baking sheet and cook 25-30 minutes, to an internal temperature of 170ºF.

It’s been a little humid out there today, hazy and 80 degrees. Cleaned house today for Mom and laundry. We have been invaded with June Bugs, at least that what we always called them. More this year than I’ve seen in a long time. They gather at night around porch lights and they don’t live very long. I have to sweep the drive every day, they’re everywhere! Ran some virus scans and installed a new program on the computer in the afternoon. For dinner tonight my favorite type of meal, One Pot Meal! I prepared a Banquet Homestyle Bakes Pizza Pasta w/ Wheat Bread.

 
Nothing like a quick, easy and delicious comfort food like the Banquet Homestyle Bakes Pizza Pasta.But here’s banquet-pizza-pasta-001another product I love and it’s getting harder and harder to find, I can only find it online now! Anyway it’s got two of my favorites in it pasta and pizza! The box contains 1 can of Pizza Sauce w/ Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it. The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal.

Today’s Menu Breakfast – Sunnyside Up Egg, Hash Browns, Turkey Sausage Breakfast Patties, and Wheat Toast.

Started my day off with an Egg White, Canadian Bacon, and English Muffin Breakfast Sandwich! Used Egg Beater’s Egg Whites. Finished up laundry for my Mom and then outside into a beautiful Spring Day. Got the cart out and did a few things around the house then rode down to the neighborhood lake for a while. Beautiful day out, sunny and high near 70 degrees! For dinner tonight a real comfort food Breakfast! I prepared; a Sunnyside Up Egg, Hash Browns, Turkey Sausage Breakfast Patties, and Wheat Toast.

It’s Breakfast Prime Time Tonight! In one small skillet I prepared Egg Sunnyside Up, seasoned with Sea Salt and Ground Black Pepper and pan fried using Extra Virgin Olive Oil. I then prepared a couple of Jennie – O Turkey Breakfast Sausage Patties in a second small skillet. Just as delicious as Pork Sausage but healthier, try the Jennie – O Turkey and you’ll never go back! While the Sausage Patties were cooking in another skillet I prepared some Hashbrowns that I topped with a bit of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I used Simply Potatoes Hash Browns, the only brand other than Bob Evans that I use for Hash Browns. I like Simply Potatoes Hashbrowns over Bob Evans because they have fewer calories and seem to fry up better. The last item for my Breakfast Dinner was what else but Toast! I toasted up a couple of slices of Klosterman Wheat Bread. So I toasted 2 slices and buttered them with I Can’t Believe It’s Not Butter. I also had a cold glass of 2% White Milk. A Breakfast proudly served for any meal! Breakfast Food items might be the most filling and hardy foods of any other, for some reason. Nothing like a good Breakfast anytime, any meal! For dessert later tonight a Jello Sugar Free Double Chocolate Pudding.

Woke up this morning starving! So I started my day off with some Jennie – O Turkey Breakfast Sausage Links, Breakfast2Simply Potatoes Hash Browns, a slice of Buttered Klosterman Wheat Bread, and a cup of fresh brewed Bigelow Decaf Green Tea. Today’s Menu: Grilled Cheese and Baked Fries

 

We got lucky the early morning freezing rain went way North of us. Got to love this Ohio Weather though. It goes from; 18 degrees, to in the 50’s, rain, dropping back to 25, snow, and forecast of 1 degree. All in a span of 36 hours. Went to Kroger for Mom and picked up a few items and a Prescription for Dad and back home. Did some laundry and a few things around the house. For dinner tonight an easy prepared comfort food dinner! I prepared Grilled Cheese and Baked Fries.

 

A light comfort food sounded good, real easy to prepare and delicious too! I used 2 slices of Grilled Cheese and Fries 007Kraft Deli Deluxe Sharp Cheddar. I normally use Sargento Ultra Thin Sharp Cheddar but I wanted a little thicker Cheese for my Sandwich. Then for my Bread I used Klosterman Wheat Bread, 70 calories and 13 net carbs for 2 slices. Then to prepare it I got out the Flat Griddle Pan, heated it up on medium heat and coated it with a pat of I Can’t Believe It’s Not Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Nothing like a good and toasty Grilled Cheese!

 
Then for a side for my Grilled Cheese I baked some Ore Ida Steak Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Another cold morning with a breeze making it feel that much colder! Well another year and another Birthday, and another Birthday Cancer Free! A friend of mine called last night and said as old as we’re getting it’s time to stop celebrating. I said not me, back in 2001-2003 I was Stage 4 Melanoma and now I’m Cancer Free so every passing year and Birthday is a Celebration! For dinner tonight I prepared a Buffalo Burger Pattie Melt w/ Potato Pancakes.

 

 

 

I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 minutes per side, and done. As my Burger was getting done I toasted 2 slices of Klosterman Wheat Bread. I served my Buffalo Burger on the Toasted Wheat Bread and topped it with a slice of Cracker Barrel Extra Sharp Cheddar and just a dab of Kraft Reduced Mayo w/ Olive Oil. One delicious Sandwich! Anytime when I can use Buffalo I do it and it always turns out delicious!

 

 

Haddock Potato Pancakes 001

For a side I made some (Manischewitz) potato Pancakes. I always use Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.
