Lentil Burgers
This vegetarian burger is low in calories but high in flavor! A dill and cucumber sauce tops a hearty lentil- and mushroom-based patty.

Ingredients
1 can (about 14 ounces) fat-free reduced-sodium chicken broth
1 cup dried lentils, sorted and rinsed
1 small carrot, grated
1/4 cup coarsely chopped mushrooms
1 egg
1/4 cup plain dry bread crumbs
3 tablespoons finely chopped onion
2 to 4 cloves garlic, minced
1 teaspoon dried thyme
Nonstick cooking spray
1/4 cup plain fat-free yogurt
1/4 cup chopped seeded cucumber
1/2 teaspoon dried mint
1/4 teaspoon dried dill weed
1/4 teaspoon black pepper
1/8 teaspoon salt
Dash hot pepper sauce (optional)
Kaiser rolls

Directions
Yield: 4 servings
Serving size: 1 Lentil Burger with about 1 tablespoon sauce (without roll)

1. Bring chicken broth to a boil in medium saucepan over high heat. Stir in lentils; reduce heat to low. Simmer, covered, about 30 minutes or until lentils are tender and liquid is absorbed. Cool to room temperature.

2. Place lentils, carrot and mushrooms in food processor or blender; process until finely chopped but not smooth. (Some whole lentils should still be visible.) Stir in egg, bread crumbs, onion, garlic and thyme. Refrigerate, covered, 2 to 3 hours.

3. Shape lentil mixture into four (1/2-inch-thick) patties. Spray large skillet with cooking spray; heat over medium heat. Cook patties over medium-low heat about 10 minutes or until browned on both sides.

4. Meanwhile, for sauce, combine yogurt, cucumber, mint, dill, black pepper, salt and hot pepper sauce, if desired, in small bowl. Serve sauce over burgers.

Zesty Barbeque Turkey Sandwiches
Lean turkey simmered in a delicious homemade barbeque sauce make these messy-but-delicious turkey sandwiches a flavorful addition to your weeknight dinner line up.

NGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, cut into ½ x 2 ½-inch strips
1 tablespoon olive oil
½ cup chopped onion
1 (15-ounce) can tomato sauce
¼ cup cider vinegar
2 tablespoons packed brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
4 toasted Kaiser rolls or whole grain buns, split

DIRECTIONS
1) Spray a skillet with nonstick cooking spray or add 1 to 2 teaspoons oil. Heat skillet over medium-high heat.

2) Place tenderloins in hot skillet. Brown on both sides. Add ⅓ cup liquid. Reduce heat to medium-low. Cook, covered, 35 to 40 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Remove from skillet; set aside.

3) In skillet, heat oil. Add onion and cook until tender. Stir in tomato sauce, vinegar, brown sugar, Worcestershire sauce and mustard. Reduce heat to low and simmer 15 minutes, stirring occasionally.

4) Place cooked turkey into sauce and simmer until heated through. Serve on Kaiser rolls.
* Always cook to an internal temperature of 165°F.

Mexican Turkey Burgers
Chock full of fresh veggies, this fun Mexican twist on a classic burger recipe is done in under 30 minutes! Creamy avocado, fresh cilantro and spicy jalapeños will have your taste buds begging for more.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
4 Kaiser rolls or hamburger buns, split and toasted, if desired
4 red leaf or romaine lettuce leaves
2 slices Monterey Jack cheese with jalapeño peppers, halved
1 ripe avocado, pitted, peeled and sliced
⅓ cup thick-and-chunky salsa
2 tablespoons chopped fresh cilantro or green onions

DIRECTIONS
1) In small bowl, combine avocado, salsa and cilantro; set aside.
2) Cook the patties as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Place lettuce on bottom of rolls; top with patties, cheese and avocado mixture. Cover with roll tops.
*Always cook to an internal temperature of 165°F.

Pulled turkey sandwiches can’t get more savory than this! It’s made with shredded and slow roasted dark turkey in a rich, tangy barbeque sauce and topped with crisp coleslaw. When it comes to flavor, this game day recipe pulls all the stops!

INGREDIENTS
1 pound shredded JENNIE-O® Slow Roasted Dark Turkey
1 cup low-sodium barbeque sauce
4 Kaiser rolls, split
1 cup prepared coleslaw

DIRECTIONS
1) In saucepan, combine turkey and barbeque sauce; heat thoroughly.
2) Spoon turkey mixture on roll bottoms. Top with coleslaw. Cover with roll tops.
