Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 

 
For Breakfast this morning I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love these skillet Meals! Also had the morning cup of Bigelow Decaf Green Tea. It was house cleaning day today, vacuumed and dusted. I wanted everything looking good because I think they will be releasing Dad from rehab! He’s made great progress the past week and has regained a lot of his strength. Looking forward to his return. Tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

 

Rainy day outside today. Had a high of 62 degrees along with a couple of passing Thunderstorms. A good day to stay in and make some Chili!! I’m making my 3 Bean Turkey Chili for Dinner tonight! I prepared the Turkey and mixed the Beans last night. So this morning I already had the Crock Pot set up and ready along having the Turkey and Beans ready also. So its my 3 Bean Turkey Chili and I made some Johnny Cakes. For Dessert later a bowl of Del Monte No Sugar Added Diced Mangos. Below is the ingredients and cooking directions for the 3 Bean Turkey Chili and the Johnny Cakes.

 

 

To make this I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

 

 

 

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

I prepared the Beans and Ground Turkey last night. I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours. The full recipe and list of ingredients is at the end of the post.

 

Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

 

 

 

 

To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Peach Snapple to go with my Dinner.I forgot, did I tell you how much I love this Chili!

Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

 

 

 

Johnny Cakes (My way)

Ingredients:

Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk
2 cups Martha White Self Rising Enriched White Corn Meal Mix

Directions:

Just mix all your ingredients in a large bowl.
Spray your Pam on a Flat Griddle or large Skillet and preheat on medium low, I use the Flat Griddle.
When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. Serve while warm and enjoy!

Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 
For Breakfast this morning I Scrambled some Egg Beater’s Egg Whites seasoning it with Lite Salt, Ground Black Pepper, and a dash of Ortega Smoky Chipotle Taco Sauce. I like using the Smoky Chipotle whenever I can, nice heat and a lot of flavor. Then I heated up a few slices of Boar’s Head Sweet Sliced Ham and toasted a Healthy Life Whole Grain English Muffin. Loaded the Egg Whites, Ham, and a slice of Sargento Reduced Calorie Swiss Cheese on to the English Muffin and I had a delicious Breakfast Sandwich to start this day! Also had the morning cup of Bigelow Decaf Green Tea. It was house cleaning day today, vacuumed and dusted. After Lunch went over to the rehab center to spend some time with Dad. He seems to be getting stronger and he’s working hard in therapy. Just don’t know if he’ll be strong enough to return home, sure hope so. Tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

 
It’s been a long time since I’ve felt a wind as cold as yesterday’s was, stayed in the teens all day! It was windy all day 3 Bean Turkey Chili w Johnny Cakes 006and the wind was so cold it would take your breath away! Not as windy today and a high in the 40’s. But these cold days make me want to have Chili, nothing better than Chili! And I’m ready for some Chili! You can use Jennie – O Extra Lean Ground Turkey Breast or Wild Idea Ground Buffalo. Either version turns out great! I had 2 containers left in the freezer that I sat in the fridge overnight to thaw. So its my 3 Bean Turkey Chili and I made some Johnny Cakes. For Dessert later a bowl of Dole Sliced Peaches. Below I’ve left a post that has the ingredients and full recipe for both the 3 Bean Turkey Chili and Johnny Cakes. Enjoy!

The Jennie – O Ground Turkey combined with all those Beans and spices is a perfect match. Johnnycake—also called jonnycake, johnny cake, journey cake, shawnee cake, or johnny bread—is a cornmeal flatbread. An early American staple food, it is prepared on the Atlantic coast from Newfoundland to Jamaica. The food originates from the native inhabitants of North America. It is often eaten in the West Indies, Dominican Republic, Saint Croix, Bahamas, Colombia, and Bermuda as well as in the United States.

The modern johnnycake is found in the cuisine of New England, and often claimed as originating in Rhode Island. A modern johnnycake is fried cornmeal gruel, which is made from yellow or white cornmeal mixed with salt and hot water or milk, and sometimes sweetened. In the Southern United States, the word used is hoecake.

 
The earliest attestation of the term “johnny cake” is from 1739 (in South Carolina); the spelling “journey cake” is only attested from 1775 (on the Gulf coast), but may be the earlier form.

The word is likely based on the word “Jonakin,” recorded in New England in 1765, itself derived from the word “jannock,” recorded in Northern England in the sixteenth century. According to Edward Ellis Morris, the term was the name given “…by the [American] negroes to a cake made of Indian corn (maize).”

 

 

Another suggested derivation is that it comes from Shawnee cake although some writers disagree.

According to the Oxford English Dictionary, the term hoecake first occurs in 1745, and the term is used by American writers such as Joel Barlow and Washington Irving. The origin of the name is the method of preparation: they were cooked on a type of iron pan called a hoe. There is conflicting evidence regarding the common belief that they were cooked on the blades of gardening hoes.
Native Americans were using ground corn for cooking long before European explorers arrived in the New World. The johnnycake originates with the native inhabitants of Northern America; the Algonquians of the Atlantic seaboard are credited with teaching Europeans how to make the food.

Southern Native American culture (Cherokee, Chickasaw, Choctaw, Creek) is the cornerstone of Southern cuisine. From this culture came one of the main staples of the Southern diet: corn (maize). Corn was used to make all kinds of dishes from the familiar cornbread and grits to liquors such as whiskey and moonshine, which were important trade items. Cornbread was popular during the American Civil War because it was very cheap and could be made in many different sizes and forms. It could be fashioned into high-rising, fluffy loaves or simply fried for a fast meal.

To a far greater degree than anyone realizes, several of the most important food dishes that the Southeastern Indians live on today is the “soul food” eaten by both black and white Southerners. Hominy, for example, is still eaten … Sofkee live on as grits … cornbread is used by Southern cooks … Indian fritters … variously known as “hoe cake”, … or “Johnny cake.” … Indian boiled cornbread is present in Southern cuisine as “corn meal dumplings”, … and as “hush puppies”, … Southerners cook their beans and field peas by boiling them, as did the Indians … like the Indians they cure their meat and smoke it over hickory coals.

 
Johnnycakes are an unleavened cornbread made of cornmeal (but see the Australian version below), salt, and water. Early cooks set thick corn dough on a wooden board or barrel stave, which they leaned on a piece of wood or a rock in front of an open fire to bake. Hoecake was traditionally cooked on a hoe: “Hoe-Cake: A cake of Indian meal, baked before the fire. In the interior parts of the country, where kitchen utensils do not abound, they are baked on a hoe; hence the name.”

In the American south during the 18th century versions were made with rice or hominy flour and perhaps cassava. A 1905 cookbook includes a recipe for “Alabama Johnny Cake” made with rice and ‘meal’.

The difference between johnnycake and hoecake originally lay in the method of preparation, though today both are often cooked on a griddle or in a skillet. Some recipes call for baking johnnycakes in an oven, similar to corn pones, which are still baked in the oven as they were traditionally.

Johnnycakes may also be made using leavening, with or without other ingredients more commonly associated with American pancakes, such as eggs or solid fats like butter. Like pancakes, they are often served with maple syrup, honey, or other sweet toppings.

According to the manuscript of America Eats, a WPA guide to American food culture in the beginning decades of the twentieth century, Rhode Island “jonny cakes” were made in the 1930s as follows:

In preparation, [white corn] meal may or may not be scalded with hot water or hot milk in accordance to preference. After mixing meal with water or milk it is dropped on a smoking hot spider pan set atop a stove into cakes about 3″x3″x1/2″ in size. The secret of cooking johnny cakes is to watch them closely and keep them supplied with enough sausage or bacon fat so they will become crisp, and not burn. Cook slowly for half an hour, turn occasionally, and when done serve with plenty of butter.

Sort of a cool morning to be May 15th, 39 degrees with a cool breeze blowing. To start my day off I had a scrambled eggs (2 medium size eggs) and a couple of toasted slices of Healthy Life Whole Grain Bread topped with I Can’t 3 Bean Turkey Chili w Johnny Cakes 006Believe It’s Not Butter. After Duke Energy cleared the woods out behind us we’ve had a problem with Carpenter Ants, as has our neighbors. We haven’t had a big problem with them but enough to be annoying. So tomorrow several of us have a Pest Control coming to end those problems. So today it was cleaning the house day. Vacuum and dusted and had to pull everything out from the sinks in 2 bathrooms and the kitchen so they can spray. So most of my day was spent cleaning so I didn’t make it over to see Dad, probably wont make it over till Tuesday. He’s doing about the same, hope he can recover well enough to make it back home. For dinner tonight it’s Chili for a Chilly Day! I prepared 3 Bean Turkey Chili w/ Johnny Cakes.

For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 
3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast3 Bean Turkey Chili w Johnny Cakes 001
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

 

 

 
Johnny Cakes (My way)

Ingredients:

Pam w/ Olive Oil Non – Stick Spray3 Bean Turkey Chili w Johnny Cakes 004
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk
2 cups Martha White Self Rising Enriched White Corn Meal Mix

Directions:

Just mix all your ingredients in a large bowl.
Spray your Pam on a Flat Griddle or large Skillet and preheat on medium low, I use the Flat Griddle.
When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. Serve while warm and enjoy!

Today’s Menu: Leftovers – 3 Bean Turkey Chili w/ Johnny Cakes

For Breakfast this morning I had; scrambled some Egg Beater’s Egg Whites, 2 Jennie – O Turkey Breakfast Sausage Links, toasted 2 slices of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. That’s a good way to start the day! Partly sunny day out, high in the 70’s. After lunch I went to the hospital to see my friend who had brain surgery, he’s doing a little better. Back home finished up some laundry for Mom and that was about it for the day. For dinner tonight it’s leftovers. I reheated the leftover 3 Bean Turkey Chili.

 
I had another meal in mind but I wasn’t going to let this Chili be wasted. So I put the leftovers in a small sauce pan and reheated on medium heat until heated through. Love this Chili, just as good the second time around! I’ve left the original post from a day ago, which includes the ingredients and directions to make the 3 Bean Turkey Chili w/ Johnny Cakes. Later!

 
It’s been a while since I made the Turkey version of my 3 Bean Chili. Most of the time I use the Wild Idea Buffalo, either version you can’t go wrong! It’s loaded with nothing but good things. I use Jennie – O Extra Lean Ground Turkey Breast. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Red Beans), 1 Can (16 oz.) Bush’s Chili Beans 3 Bean Turkey Chili w Johnny Cakes 001( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Black Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).

 
To prepare it I start by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground 3 Bean Turkey Chili w Johnny Cakes 005Turkey and all the seasonings and Tomato Paste, stirring often. When the Turkey has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then sit back and enjoy the aroma that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those spices is a perfect match. Served it topped with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes. (Recipe Below)

 

 

 

To prepare Johnny Cakes all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your 3 Bean Turkey Chili w Johnny Cakes 004ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Chili and Shredded Cheese. And now it’s Comfort Food Heaven! Chili and Cornbread are meant to be together! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Ingredients

5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I really enjoy this for Breakfast. Did some laundry for Mom while she was out running a couple of errands. Not a lot going on today so I got the cart out this afternoon and rode around the neighborhood and down by the lake. Mostly sunny and high near 70 degrees. Took a little siesta in the late afternoon. For dinner I got the Crock Pot out to make some 3 Bean Turkey Chili. Love using that Crock Pot, as they say “Set it and forget it”.

 
It’s been a while since I made the Turkey version of my 3 Bean Chili. Most of the time I use the Wild Idea Buffalo, either version you can’t go wrong! It’s loaded with nothing but good things. Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Black Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. To prepare it I start by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the seasonings and Tomato Paste, stirring often. When the Turkey has browned I add from the skillet to the plastic liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then sit back and enjoy the aroma that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those spices is a perfect match. Served it topped with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes. (Recipe Below)

Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Chili and Shredded Cheese. And now it’s Comfort Food Heaven! Chili and Cornbread are meant to be together! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Comfort food Heaven for dinner tonight, 3 Bean Turkey Chili w/ Johnny Cakes! I took my last container of 3 Bean Turkey Chili out of the freezer and let it thaw. * Note to self MAKE MORE CHILI! * Then for dinner all I had to was put the Chili in a small sauce pan and heat it up. As it was being heated I added 4 good shakes of Frank’s Red Hot Sauce.

As the Chili was heating I made some Johnny Cakes. It’s been way too long since I made any of these. To prepare these all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Virgin Olive Oil, 1 3/4 cups Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Griddle or large Skillet and preheat on medium low, I use the Flat Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Turkey Chili. As I said before Comfort Food Heaven! The Chili is a perfect pairing with Cornbread no matter how you prepare it. At the bottom of the post I left a little history on the “Johnny Cakes”. There are various ways to fix Johnny Cakes, I make mine using Martha White Corn Meal Mix. For dessert much later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Johnnycakes – Pouring a batter similar to that of skillet-fried cornbread, but slightly thinner, into hot grease atop a griddle or a skillet produces a pancake-like bread called a johnnycake. This type of cornbread is prevalent in New England, particularly in Rhode Island, and also in the American Midwest and the American South. It is reminiscent of the term hoecake, used in the American South for fried cornbread pancakes, which may date back to stories about some people on the frontier making cornbread patties on the blade of a hoe.

1/4 cup Extra Virgin Olive Oil
