Today’s Menu: Pork, Potato and Bean Stew w/ Corn Bread

I tried a new recipe for dinner tonight, Pork, Potato and Bean Stew w/ Corn Bread. A really hearty and simple recipe. Using Cannelini Beans, Spicy Chili Beans, New Potatoes, and Pulled Smoked Pork. It all comes together to make a tasty and different stew. The Smoked Pork along with the Beans and Potatoes make a natural and delicious mix. I used Montgomry Inn Smoked Pork Barbecue for the meat and a 1/2 Cup JB’s Fat Boy Haugwaush Barbecue Sauce for that extra kick. I left the recipe at the end of the post.

I also made a small  Cast Iron Skillet of Corn Bread using Martha White White Corn Meal. First Corn Bread I’ve made in a while and it’s just as good as it always was! What better side for a hearty stew than Corn Bread. For dessert later another new item. This one from Blue Bunny, Blue Bunny Naturally Frozen Yogurt Chocolate/Vanilla Swirl. It’s 110 calories and 19 carbs. I’ll leave a separate post on this and how it tasted tomorrow, it looks delicious!

Pork, Potato and Bean Stew

INGREDIENTS:
1 Can Joan of Arc Spicy Chili Beans
1 Can White Cannellini Beans
5 Quartered Small New Potatoes
2 Cups Shredded Smoked Pork, I used Montgomry Inn Shredded Smoked Pork
1/3 Cup Water
1/2 Cup Barbecue Sauce, I used JB’s Fat Boy  Barbecue Sauce
Frank’s Red Hot Sauce, if desired

DIRECTIONS:
*Wash and quarter New Potatoes. Season and boil Potatoes until they are fork tender. Remove from heat.
*Spray Large Sauce Pan with cooking spray. In Sauce Pan, mix Potatoes and all other ingredients except hot sauce.
* Cover; cook on Medium heat until all is heated throughout. Serve with Red Hot Sauce on the side.

Today’s Menu: Crock Pot BBQ Baby Back Ribs w/ Kicked Up Chili Beans and White Shoepeg Corn

Had some more of the Crock Pot BBQ Baby Back Ribs! I went to Kroger early this morning and purchased 2 lbs. of Pork Baby Back Ribs and had the Meat Department cut the racks into Riblets for me, they looked beautiful! While I had the crock pot warming up on high I seasoned the Riblets with JB’s Fat Boy Premium Rub. I then brushed a half a bottle of JB’s Fat Boy Haugwaush Bar B Cue Sauce. I cooked the ribs for 8 hours on low in the crock pot. After 5 hours I applied the other half of Haugwaush to the Ribs.  About midway through the aroma of those ribs were all through the house, just like last time! The ribs came out perfect! Tender fall off the bone delicious. No knife needed as the bones could be removed by just pulling on them. i think I’ve found my favorite way to fix ribs!

For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. Along with the Beans we had PictSweet White Shoepeg Corn. Dessert later perhaps a slice of Pillsbury Nut Quick Bread.

Kicked Up Chili Beans

Ingredients:

1 Can Spicy Chili Beans, Brand your choice. I use Joan of Arc
3 Pieces Crumbled Turkey Bacon. You can use Turkey or Turkey Bacon Crumbles
4 Shakes Frank’s Red Hot Sauce
1/2 Cup Jack Daniel’s Honey Smokehouse BBQ Sauce
1/2 Tablespoon Splenda Brown Sugar
1 Teaspoon Ground Mustard

Directions:

Empty can of Beans into a medium sauce pan
Add Turkey Crumbles, Brown Sugar, Ground Mustard, Frank’s Red Hot Sauce, Honey BBQ Sauce, stir and mix.
Heat until desired temperature, and serve

Today’s Menu: Hot Dogs w/ Kicked Up Chili Beans

 

With the big feast day coming up tomorrow I wanted something easy to fix and not to heavy. I went with Ball Park Smoked White Turkey Franks, love these dogs! Great tasting and only 45 calories and 5 carbs per Frank. Served them on Healthy Life Whole Grain Buns and topped with French’s Mustard. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. I left the recipe at the end of the post. For dessert/snack later? What ever sounds good later!

Today’s Menu: Turkey Joes w/ Blue Cheese and Kicked Up Spicy Chili Beans

Hot, Healthy, and some great leftovers! I used Jennie – O Extra Lean Ground Turkey. While browning the Turkey I seasoned it with McCormick Ground Smoked Cunin, Ground Thyme, McCormick Grinder Sea Salt and Black Peppercorn. Served on a Healthy Life Whole Grain Sandwich Bun topped with Murray’s Mayfield Crumbled Blue Cheese. The full recipe follows at the end of the post. As a side I had Kicked Up Spicy Chili Beans, this recipe also follows at the end of the post, and a 1/2 serving of some Bob Evans Glazed Apples that I had left over. For my Beans I used Joan of Arc Spicy Chili Beans. The good part there’s plenty left for some great leftovers! For dessert/snack later a bag of Jolly Time Mini Bag of Pop Corn.

Sloppy Turkey Joes

Ingredients
Ground Smoked Cunin, Sea Salt, Pepper to taste
1 pkg. McCormick Sloppy Joe Seasoning Mix
1 lb. Lean Ground Turkey
1 can (6 oz.) Tomato Paste *
1¼ cups Water
Crumbled Bleu Cheese for topping
Healthy Life Whole Grain Sandwich Buns

Directions:

Brown Turkey in large skillet on medium-high heat, seasoning to taste. Drain fat.
STIR in Seasoning Mix, tomato paste and water.
BRING to boil. Reduce heat and simmer 10 minutes, stirring occasionally.
Serve on buns top Turkey with Crumbled Bleu Cheese.

* Substitution: Use 1 can (15 oz.) tomato sauce in place of tomato paste and water.

Ingredients:

1 Can Spicy Chili Beans, Brand your choice. I use Joan of Arc
3 Pieces Crumbled Turkey Bacon. You can use Turkey or Pork Bacon Crumbles

Today’s Menu: Montgomery Inn Pulled Pork BBQ Sandwich w/ Chili Beans

I warmed some of the Montgomery Inn Pulled Pork BBQ for dinner tonight. The BBQ is some of the best you can buy. The Pork is tender and tasty an d the Sauce is fantastic. A big plus for me is the 110 calories and a low 8 carbs! Very easy to fix. Just unthaw and heat in a medium size pan, stirring often. Served it on a Healthy Life Sandwich Whole Grain Bun. I had a side of Joan of Arc Spicy Chili Beans that I had added Crumbled Turkey Bacon, 5 dashes of Frank’s Hot Sauce, 1/3 cup Jack Daniel’s Honey BBQ Sauce, and 1/2 Tablespoon of Splenda Brown Sugar. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Today’s Menu: Grilled BBQ Chicken Breast w/ Chili Beans and Boiled Sliced New Potatoes

A little one day break in the weather so I fired the grill up, still hot but less humid today. I purchased three beautiful Chicken Breasts earlier this morning and I knew I had to get the grill going! While at Kroger I got a bottle of JB’s Fat Boy Sticky Stuff Poultry BBQ Sauce. You have to try JB’S Fat Boy BBQ Sauces and Rub these are just too good!

Anyway I lightly Salt and Peppered the breasts and started grilling them. i turned them 3 times and basted them each time I flipped them over. You can’t beat the taste of any meat when you grill it. Grill marks and a little bit of a char, can’t beat it! With the Chicken I had sides of some Kicked Up Chili Beans and Boiled Sliced New Potatoes. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, and a few dashes of Frank’s Red Hot Sauce. The Potatoes were leftover from yesterday so I just warmed them up and they were ready. For dessert/snack later tonight I’m going to have Chips in Rice Chips with some Kroger Brand Organic Black Bean and Corn Salsa.

Today’s Menu: Ground Chicken Burger w/ Kicked Up Chili Beans

I had a Ground Chicken Burger with a side of Kicked Up Chili Beans for dinner tonight. The lighter the better in this heat wave your having. I used Tyson Extra Lean Ground Chicken. I added a tablespoon of Italian Style Bread Crumbs to the burger. With lean Chicken it’s tough sometimes keeping it together to form a burger so the bread crumbs really help. I seasoned it with Sea Salt, Ground Black Pepper, and Ground Smoked Cumin. Fried it in Extra Virgin Olive Oil about 4 minutes per side. Served on an Healthy Life Whole Grain Bun and topped with Lettuce, a slice of Monterrey/Jack Cheese and a dab of Jack Daniel’s Smoked Honey BBQ Sauce. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, and a few dashes of Frank’s Red Hot Sauce. Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with fresh Red Raspberries.
