Grilled Turkey and Vegetable Kabobs
It’s time to make “kabob night” a weekly grilling tradition. This recipe features mushrooms, zucchini, bell peppers and turkey tenderloins drizzled with a marmalade glaze.

INGREDIENTS
1 large ear of corn, cleaned and cut into 1-inch pieces
8 medium whole mushrooms
1 red bell pepper, cut into 1-inch cubes
1 zucchini, cut into thick slices
2 teaspoons olive oil
½ teaspoon salt
½ (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into ¾ to 1-inch pieces
⅓ cup orange marmalade
1 tablespoon mustard
1 teaspoon fresh rosemary leaves, chopped

DIRECTIONS
1) Heat grill to medium heat. In medium microwave-safe bowl, combine corn pieces and enough water to cover. Cover with plastic wrap. Microwave on HIGH (100%) 2 to 2½ minutes or until slightly tender; drain water.
2) In medium bowl, combine corn, mushrooms, red pepper and zucchini. Drizzle with oil and salt; toss to coat.
3) On kabob skewers, alternately thread turkey tenderloin pieces and vegetables. In small bowl, combine orange marmalade, mustard and rosemary; mix well. Set aside.
4) Grill kabobs 8 to 10 minutes, turning occasionally. Cook the turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer and vegetables are tender. Brush kabobs with marmalade glaze. Grill 1 to 2 minutes longer; turning once.
* Always cook to an internal temperature of 165°F

Turkey Mac and Cheese
Looking for a comfort food recipe that’s kid-friendly (and adult-friendly, too)? Then try this quick dinner recipe tonight, with real homemade cheese sauce and turkey franks.

INGREDIENTS
2 cups uncooked macaroni
1 (12-ounce) package JENNIE-O® Turkey Franks, cut into ½-inch pieces
2 tablespoons butter
2 tablespoons flour
2 cups milk
1½ cups shredded fat-free Cheddar cheese

DIRECTIONS
1) Cook macaroni as specified on the package or until al dente; drain.
2) Heat skillet over medium heat. Add turkey franks. Cook 5 minutes or until browned, stirring occasionally; remove from pan. In same pan over medium heat, melt butter. Add flour; stir 1 minute.
3) Gradually whisk in milk. Whisk to remove any lumps. Cook 5 minutes or until thickened, stirring occasionally. Add cheese. Stir until cheese is melted. Add macaroni and turkey franks; stir to combine.

Grilled Turkey Burger Supreme
When you’re in the mood for a great burger, nothing else will do. This recipe features pre-seasoned, pre-formed turkey burger patties, making your job easier than ever.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Seasoned Turkey Burger Patties
4 slices Provolone cheese
4 onion or bakery style hamburger buns, split and toasted or grilled, if desired
4 romaine lettuce leaves
4 slices tomato
4 slices red onion

DIRECTIONS
1) Prepare grill. Grill burgers as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Place cheese over patties during last minute of cooking.
2) On bun bottoms, layer lettuce leaves, grilled patties, tomato and onion; add bun top. Serve with condiments, if desired.
* Always cook to an internal temperature of 165°F.

Asian Noodle Turkey Salad
Chock full of crispy veggies, this lean twist on a classic Asian recipe makes for a memorable dinner that’s also less than 500 calories per serving. Made with snow peas, garlic and fresh ginger.

INGREDIENTS
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
¼ cup plus 2½ tablespoons low-sodium soy sauce, divided
2 teaspoons finely chopped garlic
2 tablespoons peanut butter
3 tablespoons vegetable oil
2 tablespoons seasoned rice vinegar
2 teaspoons dark sesame oil
½ teaspoon finely grated ginger
½ teaspoon crushed red pepper flakes
8 ounces vermicelli or thin spaghetti, broken in half
½ cup julienne-cut carrots
1 red bell pepper, cut into short, thin strips
1½ cups fresh snow pea pods, cut lengthwise into thin strips
½ cup chopped and roasted peanuts
½ cup diagonally sliced green onions

DIRECTIONS
1) Cut tenderloins into strips and place in plastic bag. Add 2½ tablespoons soy sauce and garlic; close bag securely, turning to coat. Refrigerate 30 minutes or up to 4 hours. Prepare grill.
2) In large bowl, whisk together peanut butter and vegetable oil. Whisk in remaining ¼ cup soy sauce, vinegar, sesame oil, ginger and red pepper flakes. Cook vermicelli according to package directions.
3) Combine carrots and bell pepper in microwave safe dish. Cover and cook on HIGH (100%) 1 minute. Add snow peas; cover and continue cooking 1 minute or until crisp-tender.
4) Drain tenderloins. Grill tenderloins as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Transfer to carving board; cut each tenderloin lengthwise in half and then cut crosswise into ¼-inch thick slices. Add turkey to noodle mixture. Add peanuts and green onion to noodle mixture and toss.
* Always cook to an internal temperature of 165°F.

Mango Turkey Taco Salad
Here’s taco salad recipe has you making your own edible bowls! Plus, fresh salsa featuring mango, cilantro and lime. Ready in under 30 minutes, this is Mexican done right!

INGREDIENTS
4 (8-inch) whole wheat tortillas
1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
1 cup chopped fresh mango
¾ cup chopped red bell peppers
3 tablespoons finely chopped green onions
3 tablespoons finely chopped fresh cilantro
1 teaspoon lime juice
2 cups fresh spinach leaves

DIRECTIONS
1) Heat oven to 425°F. Invert 4 10-ounce custard cups onto 15 x 10 x 1-inch baking pan. Mist outside of cups and one side of each tortilla with olive oil cooking spray. Place tortillas, oiled side up, over cups. Bake 4 to 6 minutes or until lightly browned.
2) Cook turkey as specified on the package. Always to well-done, 165°F as measured by a meat thermometer. Set aside.
3) To make salsa in medium bowl, combine mango, red bell pepper, green onion, cilantro and lime juice. Place taco shells on serving plates. Divide spinach leaves evenly into shells. Top with turkey and salsa.
* Always cook to an internal temperature of 165°F.

INGREDIENTS
1 (1-pound) package JENNIE-O® All Natural* Turkey Sausage
2 tablespoons olive oil
1 pound Yukon gold potato, cubed
1 small onion, chopped
1 pound Brussels sprouts, trimmed and thinly sliced
½ red bell pepper, chopped
½ cup chicken broth
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
chopped green onion, if desired

DIRECTIONS
1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add oil and potatoes and cook 5 minutes. Stir in onion and cook 5 minutes. Add sprouts, bell pepper, chicken broth, salt and pepper and cook 3 minutes or until bell pepper is tender. Garnish with chopped green onion, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Bacon, Lettuce and Tomato Salad

INGREDIENTS
8 slices JENNIE-O® Turkey Bacon, cut into pieces
⅓ cup light mayonnaise
¼ cup milk
1 clove garlic, minced
6 cups mixed salad greens, torn into bite-size pieces
3 medium tomatoes, chopped
1 small cucumber, halved lengthwise and thinly sliced
½ cup cubed Monterey Jack or mozzarella cheese
½ cup ripe olives
1 cup croutons

DIRECTIONS
1) Cook the turkey bacon as specified on the package; drain. Always cook to well-done, 165°F as measured by a meat thermometer.
2) In bowl, whisk mayonnaise, milk and garlic to form dressing; set aside.
3) In large bowl, toss salad greens, tomato, cucumber, cheese, olives and bacon. Drizzle with dressing; toss lightly to coat. Add croutons.
* Always cook to an internal temperature of 165°F.

Spicy Turkey Roll-up
Creamy, cheesy and carb-conscious, these little roll-ups pack a spicy punch. Fresh jalapeños blend with cool cream cheese, sharp Cheddar and lean turkey breast for a gluten free snack.

INGREDIENTS
1 (8-ounce) package cream cheese, softened
½ cup finely shredded Cheddar cheese
¼ cup minced canned jalapeño
½ pound sliced JENNIE-O® DELI FAVORITES® Tender Browned Turkey Breast, from the service deli
40 toothpicks
40 small green pimento-stuffed olives, if desired

DIRECTIONS
1) In small bowl, blend cream cheese, Cheddar cheese and jalapeño. Lay turkey breast slices on clean surface and spread with cream cheese mixture, leaving about ½-inch border on one end. Roll turkey up toward the end free of cream cheese and seal. Wrap individually in plastic wrap and chill until ready to serve.
2) To serve, secure each roll-up with 5 toothpicks, marking each piece, and slice in between the picks at a slight diagonal. Garnich each piece with an olive, if desired.

Poblano Fajita Turkey Tacos
With grilled Poblano peppers, onions and fresh pico de gallo, this taco recipe will literally spice up your taco night. It’s quick and easy to make, too — ready in under 30 minutes!

INGREDIENTS
½ cup fat-free sour cream
1 chipotle pepper in adobo sauce
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 (1.25-ounce) package taco seasoning mix
½ cup water
PICO DE GALLO
1 cup chopped plum tomatoes
¼ cup white onion, chopped
3 tablespoons chopped fresh cilantro leaves
1 jalapeño, diced
2 tablespoons lime juice
salt and freshly ground pepper, if desired
10 corn or flour tortillas
4 Poblano peppers, grilled and cut into strips
2 red onions, cut into thick slices, grilled and separated into rings
1 cup queso fresco cheese, crumbled

DIRECTIONS
1) In blender, combine sour cream and chipotle pepper in adobo sauce. Blend until combined. Set aside.
2) In large skillet, cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add taco seasoning and water. Cook until water is evaporated, stirring occasionally.
3) To make the pico de gallo, combine tomatoes, onion, cilantro, jalapeño, lime juice, salt and freshly ground pepper, if desired.
4) Spread each tortilla with sour cream mixture. Fill tacos with turkey, grilled peppers, onions, pico de gallo and queso fresco cheese.
* Always cook to an internal temperature of 165°F.

Roast Pepper and Turkey Stroganoff
Who knew you could have comfort food without the guilt? This home cooked meal features a creamy garlic and wine sauce over lean turkey tenderloins and thick egg noodles—all for under 300 calories per serving!

INGREDIENTS
2 tablespoons vegetable oil, divided
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into strips
8 ounces sliced mushrooms
4 garlic cloves, minced
½ cup dry white wine
1 cup low-sodium chicken broth
¼ cup tomato paste
2 roasted red peppers, cut into strips
¼ cup chopped fresh parsley
16 ounces thick egg noodles, cooked

DIRECTIONS
1) In large skillet, heat 1 tablespoon oil over medium-high heat. Cook tenderloins as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from pan; keep warm.
2) Heat remaining oil in skillet. Add mushrooms and garlic; cook 5 minutes or until softened.
3) Add wine; simmer until reduced by half. Stir in broth, tomato paste and roasted peppers. Return all turkey to pan. Reduce heat to low and simmer 5 minutes. Cover and simmer for 10 minutes, stirring occasionally, until sauce is thickened.
4) Stir in parsley. Serve over hot cooked noodles.
* Always cook to an internal temperature of 165°F.
