Strawberry Spinach Salad with Buttermilk Dressingstrawberry-spinach-salad-with-buttermilk-dressing

Creamy buttermilk dressing pairs well with juicy strawberries and crisp spinach.

INGREDIENTS

2 cups sliced strawberries, divided
4 ounces cream cheese, cut into small cubes and divided
⅓ cup buttermilk
6 cups fresh spinach
1 small red onion, cut into thin rings

 
DIRECTIONS

1) In blender container, combine ¾ cup strawberries, cream cheese and buttermilk; process until smooth.
2) In large salad bowl, toss together spinach, onion and remaining 1¼ cups strawberries. Serve with dressing.

Cranberry Goat Cheese Crostini

Looking for an easy Holiday appetizer recipe? This delicious crostini takes less than 15 minutes to make.

INGREDIENTScranberry-goat-cheese-crostini

½ (8-ounce) package cream cheese, softened
1 (4-ounce) package goat cheese, softened
¼ teaspoon freshly ground pepper
1 (14-ounce) can whole berry cranberry sauce
¼ cup chopped fresh basil leaves
1 package deli crostini
garnish with small fresh basil leaves

 
DIRECTIONS

1) In small bowl, combine cream cheese, goat cheese and pepper until smooth.
2) In another small bowl, stir together cranberry sauce and basil.
3) Spread about 1 tablespoon cream cheese mixture on crostini. Top with cranberry mixture. Garnish with basil leaves, if desired. Serve immediately.

Passing along another perfect side dish for your upcoming Thanksgiving Table, Butternut Squash and Sweet Potato Casserole. This combines mashed sweet potatoes and buttery spiced squash! Butternut Squash and Sweet Potato Casserole

This casserole features mashed sweet potatoes and buttery spiced squash with a sweet streusel crumble on top. While this dish takes some time in the oven, the actual hands-on prep time is very minimal.

 

 

INGREDIENTSbutternut-squash-sweet-potato-casserole

1 small butternut squash
¼ cup butter, softened
1 egg, lightly beaten
½ teaspoon cinnamon
¼ teaspoon ground nutmeg
½ cup firmly packed light brown sugar
1 (23-ounce) container HORMEL® mashed sweet potatoes
STREUSEL TOPPING

½ cup cold butter, cut into small cubes

¾ cup firmly packed brown sugar
½ cup all-purpose flour
1 cup coarsely chopped pecans
DIRECTIONS

Heat oven to 350°F.
Cut butternut squash in half and scoop out seeds. Place on baking sheet, cut sides down and bake 1 hour or until tender. Let stand 10 minutes; scoop out flesh. Mash with potato masher until smooth. Stir in butter, egg, cinnamon, nutmeg, brown sugar and sweet potatoes. Transfer mixture to lightly greased 11-x 7-inch baking dish.
In medium bowl, combine butter, brown sugar, flour and pecans. Using pastry cutter, cut butter into mixture until coarse crumbs appear. Sprinkle mixture evenly over sweet potato mixture.
Bake 40 minutes.

About 1:00 this afternoon I was by the front window and FedEx Truck pulled up in front of the house. The delivery guy started towards the house as I went outside and I seen on the box that familiar Jennie – O Logo! Took the box in and opened it up and found a Jennie – O All Natural Turkey Breast Tenderloin and a Jennie – O Sun Dried Tomato Turkey Breast.

To prepare the Jennie – O Natural Turkey Breast Tenderloin:
TO BAKE; Preheat oven to 350°F. Place tenderloins in a shallow baking pan. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 60-70 minutes. Remove from heat, cover and let rest 5-10 minutes before slicing.

Banana Chocolate Chip Muffins

Rich, indulgent muffins to top off your Easter brunch.Banana Chocolate Chip Muffins

Ingredients
1½ cups flour
⅓ cup sugar
1½ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
½ cup butter, melted
1 cup sour cream
1 egg, beaten
1 teaspoon vanilla
1 cup chopped banana
¾ cup chocolate chips
Directions
Heat oven to 400°F. Line 12 muffin cups with paper liners.

In bowl, stir together flour, sugar, baking powder, baking soda and salt.

In bowl, whisk together melted butter, sour cream, egg and vanilla. Stir butter mixture, chopped banana and chocolate chips into flour mixture just until combined. Divide batter among muffin cups.

Bake 20 minutes or until light golden brown.

Butternut Squash and Apple Soup

Ingredients
2 tablespoons olive oilButternut Squash & Apple Soup
1 yellow onion, chopped
2 celery ribs, chopped
4 cups cubed butternut squash
1 Granny Smith apple, peeled and chopped
6 cups vegetable broth
2 teaspoons chopped fresh thyme leaves
½ teaspoon kosher salt
¼ teaspoon freshly ground pepper

 
Directions
In large Dutch oven over medium-high, heat oil. Sauté onion and celery 7 minutes or until translucent. Stir in butternut squash and apple and cook 5 minutes. Add broth, thyme, salt and pepper. Bring to a boil; reduce heat to medium-low.

Cover and simmer 30 minutes or until tender. Using stick blender, puree until smooth.

Sweet Barbeque Turkey Flatbread

Ingredients
2 whole wheat flatbread or 1 (10-inch) prepared pizza crustSweet Barbeque Turkey Flatbread
⅓ cup sweet barbeque sauce
1 ½ cups shredded JENNIE-O® Slow Roasted Turkey Breast Roast, grab-n-go dinner from the service deli
¼ cup thinly sliced red onion
⅓ cup sliced green pepper
⅓ cup sliced red pepper
⅓ cup diced peaches
1 cup shredded jalapeño Jack cheese
Directions
1 – Heat oven according to pizza crust package instructions. Place pizza crust on pizza pan and spread with barbeque sauce.

2 – Add turkey, onion, peppers, peaches and cheese. Bake according to package directions or until cheese is melted and crust is hot and golden brown.

Spaghetti with Hot Italian Turkey Sausage

Savory, spicy Italian turkey sausage atop noodles with a delectable sauce made with sautéed onion, minced garlic and grated Romano cheese. A tasty, classic Italian dinner that’s only 350 calories per serving.

Ingredients
1 tablespoon olive oilSpaghetti with Hot Italian Turkey Sausage
1 cup chopped onion
4 cloves garlic, minced
2 (28-ounce) cans Italian-style plum tomatoes, undrained and coarsely chopped
1 (6-ounce) can tomato paste
1½ teaspoons dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon sugar
1 (19-ounce) package JENNIE-O® Lean Hot Italian Turkey Sausage
12 ounces spaghetti, cooked and drained
¼ cup grated Romano cheese, if desired

 
Directions
STEP 1: Heat oil in a large saucepan over medium-high heat. Cook onion for five minutes, stirring occasionally. Add Jennie O Make the Switchgarlic and cook for two minutes. Add tomatoes, tomato paste, basil, oregano, sugar. Bring to a simmer. Simmer, uncovered, 25 to 35 minutes or until sauce is desired consistency.

STEP 2: While sauce is simmering, cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

STEP 3: Cut sausage into ½-inch slices and add to sauce. Serve over spaghetti noodles and sprinkle with cheese, if desired.
* Always cook to an internal temperature of 165°F.

For this week’s Saturday’s Chili Recipe – Tailgating Turkey Burger. It’s a Jennie – O Turkey Burger topped with some delicious Hormel Chili with Beans. You could substitute the Hormel Chili with Beans with Hormel Turkey Chili with Beans, which is the can Chili I sometimes use, or use your own homemade Chili. Served on Garlic Toast and topped with the Chili, Cheddar Cheese, and Sour Cream. Chili with a spin for this week’s Saturday’s Chili. Tailgating Turkey BurgerTailgating Turkey Burger

Ingredients
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
⅓ cup finely chopped cilantro
4 cloves garlic, minced
1 teaspoon freshly ground pepper
1 teaspoon salt, if desired
6 slices garlic toast
1 (15-ounce) can HORMEL® Chili with Beans, heated according to can
¾ cup shredded Cheddar cheese
2 tablespoons fat-free sour cream
Directions
1 – In large bowl combine turkey, cilantro, garlic, pepper and salt, if desired. Mix until combined. Divide meat mixture into 6 (½-inch thick) oval (football) shaped patties. Spray non-stick skillet with cooking spray. Place patties in skillet over medium-high heat. Cover and cook 18 minutes, turning 2 to 3 times and until internal temperature reaches well-done 165°F as measured by a meat thermometer.

2 – Heat broiler. Place turkey burger on garlic toast. Top with chili and cheese. Broil 4 to 5 inches from heat source 2 to 3 minutes or until cheese is melted. Top with sour cream.
* Always cook to an internal temperature of 165°F.

ROASTED BEETS WITH GOAT CHEESE & WALNUTS
An impressive dish that requires little prep, this side may soon become a yearly holiday staple.Roasted Beets with Goat Cheese & Walnuts

INGREDIENTS
3 pounds beets, peeled, trimmed, and cut into 1½-inch wedges

2 tablespoons olive oil

1 teaspoon kosher salt

2 tablespoons honey

1 teaspoon chopped fresh rosemary leaves

½ cup goat cheese, crumbled

1 cup toasted walnuts, coarsely chopped

1 navel orange, segmented

DIRECTIONS
Heat oven to 400°F.

In large bowl, toss together beets, oil, salt, honey and rosemary leaves. Place in single layer on baking sheet. Bake 45 minutes or until beets are tender. Place on serving platter. Sprinkle with goat cheese, walnuts and orange segments.
