Turkey Bacon Cheese Balls
This indulgent little appetizer features cream cheese, Cheddar cheese, and crowd-pleasing bacon all rolled up into one amazing bite. One of our many appetizers that’s ready in just 35 minutes.

INGREDIENTS
8 slices JENNIE-O® Turkey Bacon
12 ounces cream cheese, softened
1 cup shredded sharp Cheddar cheese
¼ cup chopped fresh chives, divided
1 teaspoon smoked paprika
½ teaspoon garlic salt
¼ teaspoon freshly ground pepper
1 cup finely chopped toasted pecans
serve with crackers, if desired

DIRECTIONS
1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Finely chop; set aside.

2) In medium bowl, stir together cream cheese, Cheddar cheese, bacon and chives until smooth. Stir in paprika, garlic salt and pepper.

3) Shape into 1-inch balls. Refrigerate 15 minutes

4) In small bowl, combine pecans and remaining 1 tablespoon chives.

5) Roll balls in pecan mixture, pressing to coat. Refrigerate until ready to serve.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

 

 

For Breakfast this morning I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, Fried 2 Johnsonville Turkey Breakfast Sausage Links, prepared a Sunnyside Up Egg, and a cup of Bigelow Decaf Green Tea. After some warmer temps it’s back down to 23 degrees this morning. Had a high of 35 degrees and cloudy out. After Breakfast I headed to McDonald’s and picked up Breakfast for Mom and Dad. Then headed back out to the local Kroger and stopped by the bank before heading home. They finally broke ground for the new Kroger about 2 miles up the road. The Kroger around here is an older and small Kroger and the new one is going to be one of their Super Stores. It should be nice when they get it built. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

 

I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

 

For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Non Stick Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side. After flipping the Burger I added a slice of Kraft Deluxe Sharp Cheddar Cheese, with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Just love a good Buffalo Burger!

 

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Stuffed Rio Grande Turkey Popper
You’ve never seen anything like this before: it’s a giant burger stuffed with jalapeños, crisp bacon and melted cheese that serves six. Perfect for a party or as a creative weeknight dinner.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
½ cup quick cooking oats
¼ cup egg substitute or 1 egg
1 teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
1 tablespoon dried onion
½ teaspoon garlic powder
⅛ teaspoon salt
1 (4-ounce) can sliced jalapeño peppers, drained
½ cup shredded Monterey jack cheese
4 slices JENNIE-O® Turkey Bacon, cooked and cut into ¼- pieces
2 teaspoons olive oil
sour cream and salsa, if desired

DIRECTIONS
1) In bowl, combine ground turkey, oats, egg, chili powder, cumin, cayenne pepper, onion, garlic powder and salt. Divide turkey mixture in half. On 2 (11 x 11-inch) pieces wax paper or parchment paper, shape each half into an 8-inch round patty.
2) Arrange half jalapeño peppers in a spoke pattern over one formed patty. Top with cheese and bacon leaving a ½-inch border around the outside edges. Lay remaining sliced jalapeño peppers in spoke pattern over cheese. Carefully place remaining patty on top of pepper slices. Remove waxed paper. Press turkey layers together around edges to seal.
3) In large skillet over medium heat, add oil and large patty. Cover. Cook 35 minutes, turning 2 or 3 times and until internal temperature reaches 165°F as measured by a meat thermometer. Always cook to well-done.
4) Cut burger into 6 pie-shaped wedges. Serve with sour cream and salsa, if desired.
* Always cook to an internal temperature of 165°F.

Monte Cristo Turkey Breakfast Sandwich
The Monte Christo is the undisputed king of sweet/savory breakfast sandwiches. This take on the classic French recipe makes for a delightful morning with a sweet cranberry cream cheese spread.

INGREDIENTS
CRANBERRY SPREAD
⅓ cup jellied cranberry sauce
3 tablespoons orange juice
1 tablespoon cream cheese
BATTER
½ cup skim milk
½ cup liquid eggs
¼ cup water
½ teaspoon vanilla extract
1 cup flour
2 teaspoons ground cinnamon
2 teaspoons sugar
1 teaspoon baking powder
SANDWICHES
8 slices crusty bread
1 cup liquid eggs, scrambled
8 slices JENNIE-O® Turkey Bacon, cooked according to package directions
8 slices JENNIE-O® sliced All Natural Oven Browned Turkey Breast, from the service deli
powdered sugar, if desired

DIRECTIONS
1) To make cranberry spread, in small bowl, combine cranberry sauce, orange juice and cream cheese; set aside.
2) To make batter, in medium bowl, whisk together milk, ½ cup liquid eggs, water and vanilla.
3) In medium bowl, combine flour, cinnamon, sugar and baking powder. Make well in center. Add milk mixture; mix to smooth batter.
4) To make sandwiches, heat flat griddle. Dip each bread slice in batter. Cook on griddle 2 to 3 minutes per side or until golden.
5) Spread half the bread slices with cranberry mixture. Top with scrambled eggs, bacon and turkey. Top with remaining battered bread slices. Cook in heated Panini press or two-sided grill for 2 to 3 minutes or until golden. Cut sandwich in half. Secure with toothpicks. Arrange on plate. Sprinkle with powdered sugar, if desired. Always cook to well-done, 165°F as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Then I also had my morning cup of Bigelow Decaf Green Tea. Sunny and 50 degrees outside today. Didn’t do a whole lot today. Didn’t get much sleep last night, dealing with Phantom Pains all night and through most of the morning. So I did what I needed to do around the house after Breakfast and after Lunch I caught up on some sleep for the rest of the day. When Phantom Pains were as painful as these were it takes all the energy out of me. A lot of rest is what I needed, feel a lot better. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

 

To start my morning off I had Steak and Egg. I had another of the SayersBrook 4 oz. Bison Filet Mignon. I had it in the freezer, I laid it in the fridge overnight to thaw. I fried it like last time. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. And like last time it came out a perfect medium rare! It was so tender and juicy. That was my last one, I’m going to have to order more of these! Then I also fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also, as usual, my morning cup of Bigelow Decaf Green Tea.

 

Rain, wind, storms and 60 degrees out. But a cold front came rolling in later in day causing the high winds and heavy rain. Only a high of 36 tomorrow. It was house cleaning today, vacuum and dusted. Had everything done after Lunch and settled in to watch some College Football the rest of the day. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Smoked Turkey Sandwich with Apple Slaw
Bring the orchard to your kitchen! Tarragon-apple slaw and apple cider marinade turn fruit from a side into an entrée. When you can do this with Honeycrisps, those turnovers are gonna have to wait!

INGREDIENTS

2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon garlic salt
1 tablespoon white sugar
2 teaspoons fresh ground black pepper
1 teaspoon ground cayenne pepper
½ cup apple cider
½ cup barbeque sauce
2-pounds JENNIE-O® All Natural Turkey Breast
2 red-skinned apples, cored and cut into julienne strips (honeycrisp works well)
¼ cup torn fresh tarragon
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
16 slices JENNIE-O® Turkey Bacon
8 each Brioche buns, sliced
fresh arugula
½ cup honey mustard, if desired

DIRECTIONS

1 – In large bowl, mix rub ingredients: brown sugar, paprika, garlic salt, sugar, black pepper, cayenne pepper, apple cider and barbeque sauce. Coat turkey breast evenly with rub. Cover with plastic wrap and let marinate in refrigerator, 8 hours to overnight. Preheat smoker to 300°F. Smoke until well-done, 165°F as measured by a meat thermometer.
2 – To make slaw: In medium bowl combine apple strips, tarragon, lemon juice and olive oil.
3 – Preheat a skillet and spray with non-stick cooking spray. Add bacon slices and cook until desired crispness. Always cook until well-done, 165°F as measured by a meat thermometer.
4 – To assemble sandwiches, on bun bottom place turkey bacon, shredded turkey breast, apple slaw mixture and arulgula. Drizzle with honey mustard, if desired. Add bun top.
* Always cook to an internal temperature of 165°F.

That was my last one, I’m going to have to order more of these! Then I also fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also, as usual, my morning cup of Bigelow Decaf Green Tea.

 

Rain and 73 degrees out. Mom went to Church and I stayed home keeping an eye on Dad. After Breakfast I did a couple of loads of laundry for Mom. Then I started cleaning the house, ran the vacuum and dusted. Caught up on everything so I stretched out and watched a few shows I had recorded. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

 

 

I can only go so long without having a Wild Idea Buffalo Burger! I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon it just adds to the goodness!

 

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Jello Sugar Free Chocolate Pudding.

Classic Turkey Sandwich
It’s called the classic turkey sandwich because it’s the most-popular—and for good reason. Piled high with lettuce, tomato, lean turkey bacon, and herb roasted turkey breast, this recipe is under 300 calories per serving.

INGREDIENTS

2 slices JENNIE-O® Turkey Bacon
2 slices wheat bread
1 lettuce leaf
2 slices JENNIE-O® Herb Roasted Turkey Breast, from the service deli
2 to 3 slices tomato

DIRECTIONS

1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) Top one slice of bread with lettuce, turkey, bacon and tomato. Add remaining bread.
* Always cook to an internal temperature of 165°F.
