Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

 

To start my morning off I had Steak and Egg. I had another of the SayersBrook 4 oz. Bison Filet Mignon. I had it in the freezer, I laid it in the fridge overnight to thaw. I fried it like last time. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. And like last time it came out a perfect medium rare! It was so tender and juicy. That was my last one, I’m going to have to order more of these! Then I also fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also, as usual, my morning cup of Bigelow Decaf Green Tea.

 

Rain, wind, storms and 60 degrees out. But a cold front came rolling in later in day causing the high winds and heavy rain. Only a high of 36 tomorrow. It was house cleaning today, vacuum and dusted. Had everything done after Lunch and settled in to watch some College Football the rest of the day. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

 

 

 

I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon it just adds to the goodness!

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

INGREDIENTS

1 (16-ounce) carton fat-free sour cream
1 (1-ounce) packet ranch dressing mix
1 cup shredded Cheddar cheese
celery, carrots, crackers or chips, if desired

DIRECTIONS

1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) In bowl, mix sour cream, dressing mix, crumbled bacon and cheese. Refrigerate 1 hour. Serve with celery, carrots, crackers or chips, if desired.

Smoked Turkey Sandwich with Apple Slaw
Bring the orchard to your kitchen! Tarragon-apple slaw and apple cider marinade turn fruit from a side into an entrée. When you can do this with Honeycrisps, those turnovers are gonna have to wait!

INGREDIENTS

2 tablespoons brown sugar
2 tablespoons ground paprika
1 tablespoon garlic salt
1 tablespoon white sugar
2 teaspoons fresh ground black pepper
1 teaspoon ground cayenne pepper
½ cup apple cider
½ cup barbeque sauce
2-pounds JENNIE-O® All Natural Turkey Breast
2 red-skinned apples, cored and cut into julienne strips (honeycrisp works well)
¼ cup torn fresh tarragon
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
16 slices JENNIE-O® Turkey Bacon
8 each Brioche buns, sliced
fresh arugula
½ cup honey mustard, if desired

DIRECTIONS

1 – In large bowl, mix rub ingredients: brown sugar, paprika, garlic salt, sugar, black pepper, cayenne pepper, apple cider and barbeque sauce. Coat turkey breast evenly with rub. Cover with plastic wrap and let marinate in refrigerator, 8 hours to overnight. Preheat smoker to 300°F. Smoke until well-done, 165°F as measured by a meat thermometer.
2 – To make slaw: In medium bowl combine apple strips, tarragon, lemon juice and olive oil.
3 – Preheat a skillet and spray with non-stick cooking spray. Add bacon slices and cook until desired crispness. Always cook until well-done, 165°F as measured by a meat thermometer.
4 – To assemble sandwiches, on bun bottom place turkey bacon, shredded turkey breast, apple slaw mixture and arulgula. Drizzle with honey mustard, if desired. Add bun top.
* Always cook to an internal temperature of 165°F.

Rain and 73 degrees out. Mom went to Church and I stayed home keeping an eye on Dad. After Breakfast I did a couple of loads of laundry for Mom. Then I started cleaning the house, ran the vacuum and dusted. Caught up on everything so I stretched out and watched a few shows I had recorded. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Then I also had my morning cup of Bigelow Decaf Green Tea. Partly sunny, 85 degrees and humid out today. Parts of the area got rain showers. My hearing is finally back in both ears. Sure glad, I’ve always had excellent hearing. I got the leaf blower out and cleaned off the deck and driveway areas. Trees are turning colors and leaves are falling around here. We had to have Dad at the doctor’s at 1:30 this afternoon for a checkup. For Dinner tonight I satisfy my Buffalo Burger craving. I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries. Turkey Breakfast Pizza

Brunch doesn’t get as much respect as other meals. But that stops today. With flaky crust, bell peppers and crispy turkey bacon, they’ll remember this meal all week.

INGREDIENTS

1 (13.8-ounce) can refrigerated pizza dough
½ (12-ounce) package JENNIE-O® Turkey Bacon
2 tablespoons butter
2 tablespoons flour
1¼ cups milk
½ cup shredded Cheddar cheese
¼ cup sliced green onions
¼ cup chopped red bell pepper

DIRECTIONS

1) Heat oven to 425°F. Spray 13×9-inch baking dish with non-stick cooking spray.
2) In prepared dish, press dough in bottom and up sides of pan. Bake 5 minutes. Remove from oven; set aside.
3) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Crumble; set aside.
4) Melt butter in saucepan over medium heat. Stir in flour until smooth. Gradually whisk in milk. Cook 5 to 10 minutes or until thickened, stirring occasionally. Remove from heat and add cheese; stir until melted. Spread cheese sauce evenly over baked crust.
5) Sprinkle with bacon, green onions and bell pepper. Bake 15 minutes or until crust is golden brown.
* Always cook to an internal temperature of 165°F.

1 teaspoon prepared horseradish
8 slices reduced-calorie whole grain bread, toasted

4 ounces thinly sliced reduced-fat Cheddar cheese
1 small red onion, thinly sliced
2 roma tomatoes, thinly sliced
4 lettuce leaves

DIRECTIONS

1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside. In small bowl, mix mayonnaise and horseradish. Spread mixture on toasted bread slices.

For Breakfast this morning I made a 2 Egg Cheese Omelet along with 2 Jennie – O Turkey Breakfast Patties, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Delicious way to start my day! Outside it’s in the mid 80’s, humid, and a showers around the area. I needed a few things from the store so I went to Meijer. As I was coming out to the car, just as I put the bags in the back seat it started pouring the rain. It came down hard for about 15 minutes, I was drenched by the time I got into the car. Back home just cleaned up around the house. For Dinner tonight I satisfy my Buffalo Burger craving. I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

 

 

I’m way over due for a Wild Idea Buffalo Burger! I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon it just adds to the goodness!

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Bacon and Cheese Buffalo Burger w/ Baked Fries

 

 

I wanted something a little different for Breakfast this morning so I went with a Breakfast Burrito for Breakfast this morning. You can prepare them so many different ingredients. For this one I used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. Eggs and Bacon are just a natural pairing and the Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable flavor, nice heat but not over powering.

 

 

 

Another hot and humid day out there! Did some cleaning outside early to avoid the heat and humidity. Not a whole lot to do today, all caught up on everything. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn and a Diet Peach Snapple to drink.
