Greek Turkey Pasta Salad
Here’s a pasta salad recipe that combines your love of Mediterranean flavors, slow-cooked turkey and easy-to-follow recipes. This Greek Turkey Pasta Salad is full of fresh veggies and under 500 calories per serving!

Total Time 3 Hours
Serving Size 6 Servings

Ingredients
1 (2 to 2 0.5-pound) package JENNIE-O® OVEN READY™ Boneless Skinless Turkey Breast

4 cups cooked and cooled bow tie pasta

6 ounces fresh mozzarella, cubed

2 cups cherry tomatoes, halved

¼ cup chopped fresh basil leaves

½ cup Greek salad dressing

Directions
1) Preheat oven to 375°F. Remove frozen turkey from white outer package only. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.

2) Cut three ½” slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.

3) Roast turkey until a meat thermometer reaches 165°F. Cooking time is approximately 3 hours. During final 1 hour, check internal temperature by inserting thermometer into thickest part of breast. Remove from oven when internal temperature reaches 165°F.

4) Chop turkey. Refrigerate half of turkey for another use. Place remaining half in large bowl.

5) Add pasta, mozzarella, tomatoes, basil and dressing. Toss to combine.

Make-Ahead Mashed Sweet Potatoes
Make-Ahead Mashed Sweet Potatoes are a classic holiday side that can be prepared up to two days prior to your holiday meal. Six servings of sweet potatoes, mashed and baked with cinnamon, nutmeg, vanilla and maple syrup.

Total Time – 2 Hours
Serving Size – 6 Servings

Ingredients
3 – pounds sweet potato
2 – tablespoons butter
1/3 – cup sugar
1/4 – cup maple syrup
1/2 – teaspoon cinnamon
1/4 – teaspoon nutmeg
1 – teaspoon kosher salt
1 – teaspoon vanilla extract

Directions
1) Heat oven to 400°F.
2) Place sweet potatoes on baking sheet.
3) Bake 55 minutes or until tender.
4) Let stand 5 minutes; scoop pulp into large bowl.
5) Mash with potato masher or process through a ricer until smooth.
6) Stir butter, sugar, maple syrup, cinnamon, nutmeg, salt and vanilla into sweet potatoes.
7) Place in lightly greased, 2-quart baking dish.
8) Bake 30 minutes or until bubbly.
9) Bake and mash these potatoes up to two-days prior to Thanksgiving.)
10) Then, day-of, simply stir in seasonings and bake for 30 minutes or until bubbly.

Turkey Hash Browns
Brace yourself this isn’t your average hash brown. Turkey Hash Brown are made with onions, potatoes, turkey and gravy for a hearty breakfast recipe you’ll fall in love with. The best part? Turkey Hash Browns are big in flavor and totally kid-friendly.

Ingredients
2 tablespoons canola oil

3 cups cubed potatoes

½ cup diced onion

salt and freshly ground pepper, if desired

3 cups cubed JENNIE-O® OVEN READY™ leftover Turkey

⅓ cup thinly sliced green onions

2 to 3 tablespoons chopped fresh parsley

1 cup leftover turkey gravy, warmed

 

Directions
1) In large skillet, heat oil over medium heat. Add potatoes, onion, salt and pepper, if desired.

2) Cook 10 to 12 minutes or until potatoes are browned and cooked.

3) Add turkey. Cook 3 to 4 minutes or until hot.

4) Stir in green onions and parsley. Serve drizzled with hot gravy.
