Turkey and Stuffing Roll-Ups
When cooking with holiday leftovers, sometimes you need a little variety. These bite-sized roll-ups let you enjoy the best of Thanksgiving Dinner in one delicious bite at under 500 calories per serving, you won’t need a nap afterwards!

INGREDIENTS
2 cups dried cubed bread
½ cup chopped onions
½ cup chopped celery
2 cloves garlic, minced
1 teaspoon poultry seasoning
¼ teaspoon freshly ground pepper
2 tablespoons butter, melted
1 cup low-sodium chicken broth
8 slices JENNIE-O® Tender Browned Turkey Breast, from the service deli
2 cups turkey gravy, warmed

DIRECTIONS
1) Heat oven to 350°F. Grease 8-inch square baking pan; set aside. In large bowl, combine bread cubes, onion, celery, garlic, poultry seasoning, pepper and butter. Add broth and mix to moisten. Add to baking dish. Bake 30 to 40 minutes or until top is browned and crunchy.
2) Add stuffing to slices of turkey. Roll up turkey; secure with toothpicks. Top with warm gravy.

Made using JENNIE-O® Tender Browned Turkey Breast along with Wholly Guacamole Dip, Low Fat Cheddar Cheese, Tomatoes, Pickles, Red Onion, Banana Peppers, and served on Whole Wheat Bagel. Spicy Turkey Bagel
Kick your sandwich up a notch. This TLT (turkey, lettuce, tomato) is covered in spicy bell peppers, fresh onion and guacamole.

INGREDIENTS
2 whole wheat bagels, split
2 (1-ounce) packages WHOLLY GUACAMOLE® dip
2 slices low-fat Cheddar cheese
4 slices tomato
4 pickle slices
4 ounces sliced JENNIE-O® Tender Browned Turkey Breast
2 red onion slices, separated into rings
2 tablespoons sliced banana peppers

DIRECTIONS
1) Spread cut sides of bagels with guacamole.
2) Top bottom half of bagel with cheese, tomato, pickle, turkey, onion and peppers.
3) Replace bagel top.

Turkey, Pesto and Sun-Dried Tomato Pastries
Savory pastries are a great way to snack. Bake up these tasty, flaky cups of turkey, egg and pesto in just under 60 minutes that’s just 100 calories per serving!

INGREDIENTS
1 (17.3-ounce) package frozen puff pastry, thawed
⅔ cup finely chopped JENNIE-O® Tender Browned Turkey Breast
⅓ cup sun-dried tomatoes in oil, drained and chopped
2 tablespoons basil pesto
¾ cup egg substitute or 3 eggs
⅔ cup milk
⅓ cup finely grated fresh Parmesan cheese

DIRECTIONS
1) Grease mini-muffin pans (32 cups). Heat oven to 375°F.
2) Roll out half the pastry on lightly flour surface to 12-inch square. Using 3-inch round cutter, cut 16 pastry rounds. Press into prepared pans. Repeat with remaining pastry.
3) Divide turkey and tomato between pastry.
4) Whisk pesto, eggs and milk in a liquid measure. Carefully pour mixture into each pastry cup.
5) Sprinkle with cheese. Bake 25 minutes or until golden brown. Let stand 5 minutes before removing to a wire rack. Serve warm.

INGREDIENTS
½ cup thinly sliced red bell pepper
½ cup thinly sliced yellow bell pepper
6 green onions, sliced
1 tablespoon olive oil
4 slices sourdough bread, toasted
3 tablespoons herbed cream cheese
½ pound thinly sliced JENNIE-O® Tender Browned Turkey Breast, from the service deli

DIRECTIONS
1) In skillet, saute pepper strips and green onions in olive oil. Spread bread with herbed cream cheese. Top with turkey. Arrange vegetable mixture on turkey.

Summer Turkey Pitas

INGREDIENTS

1 cup oil
⅓ cup red wine vinegar
2 tablespoons mustard
2 tablespoons sugar
½ teaspoon pepper
½ teaspoon dried tarragon leaves
¼ teaspoon red pepper flakes
12 ounces JENNIE-O® Tender Browned Turkey Breast, thick sliced from the service deli
2 pita pocket bread, halved and split
1 tomato, sliced
4 tablespoons fat-free ranch dressing

DIRECTIONS

1) In large bowl, whisk oil, vinegar, mustard, sugar, pepper, tarragon and red pepper flakes. Cube turkey; add to mixture. Cover and marinate overnight. Drain turkey from marinade; discard marinade.
2) Broil turkey 5 to 6 inches from heat source 10 minutes or until turkey is heated. Fill pita pocket with turkey and tomato.
3) Drizzle ranch dressing over turkey.

Turkey & Broccoli Calzone

 

Turkey & Broccoli Calzone

Ingredients
2 (12-ounce) packages pizza dough
12 ounces JENNIE-O® Tender Browned Turkey Breast, from the service deli
6 slices American cheese
2 cups frozen broccoli florets, thawed and drained
¼ cup egg substitute or 1 egg
Directions
Make pizza dough as specified on the package. Divide each dough into thirds. Roll into balls. Cover and let stand 5 minutes. Roll each dough ball into 4-inch rounds.

Place 2 ounces turkey on one round. Top with cheese slice. Add ⅓ cup broccoli. Fold dough over to enclose filling. Press edges together with fork. Repeat with remaining dough, turkey, cheese and broccoli. Place on baking sheet.

Brush pastries with egg. Bake 25 to 30 minutes or until golden brown.
