Today’s Menu: Ancient Grain Mini Naan Bread Turkey Pepperoni and Turkey Sausage Pizza

 

 

Tried a new recipe for Breakfast this morning, Baked Diced Potato Breakfast Skillet. I prepare Diced Potatoes and Ham Skillet but never this way. I preheat the oven on 400 degrees. I used the Cast Iron Skillet and prepared a package of Simply Potatoes Steak House Seasoned Diced Potatoes. Cooked them for 16 minutes, flipping them over several times. Removed the Skillet from the heat. Then with the back of a spoon, made 2 indention in the potatoes and cracked an egg into each well. Baked at 400 degrees for 11 minutes until egg whites were completely set and yolks begin to thicken but are not hard. Took it out of the oven and sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Put it back in the oven and baked it 1 minute longer until the cheese was melted. It came out delicious! Mom even had it instead of her usual McDonald’s.

 

 

 

 

It’s 51 degrees and partly cloudy out today. Great weather to be late December! I seen the long range forecast and most days are in the 40’s and 50’s. Hopefully they are right. Cleaned the house this afternoon, dusted and ran the vacuumed. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Lean Turkey Sausage.

 

 

 

 

 


I had not had the Pizza that I made using Naan Bread in a while so I picked up a package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer yesterday. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

 

 

 

 


I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

 

 

 

 


The oven was heated up and I got the Naan Bread ready. I used a small baking sheet, lined it with foil, and sprayed it Pam Cooking Spray. I lined the 4 Naan Breads up on the baking sheet. I then brushed a light coat of Extra Virgin Olive oil on the top of them. I then baked then for about 2 minutes. Pulled the sheet out of the oven and let the Naan Bread cool for 5 minutes.

 

 

 

 

 


When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

 

 

 


I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. The Crust has excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. The Naan Bread is 150 calories and 21 net carbs per serving which is 1 Naan Bread. Mom really enjoyed them, so its Parent Approved! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Turkey Pepperoni and Turkey Sausage Pizza

 

 

For Breakfast this morning I Poached an Egg, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. I then served the Poached Egg on top of the English Muffin. 61 degrees and sunny today! But the rain is moving back in overnight and for the next 2 days. Certain parts of Cincinnati and Northern Kentucky are flooded from the Ohio River. I live North of Cincinnati and we’ve had a lot of rain but not a whole lot of flooding. So after Breakfast I went Menard’s and Home Depot to price some outdoor yard items, getting ready for Spring! For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Lean Turkey Sausage.

 

I had picked up a package of Stonefire Mini Naan Ancient Grain Bread at Meijer and the package in the freezer along with the Jennie – O Sausage Roll. I laid them in the fridge overnight to thaw. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausages, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

Today’s Menu: Sliced Sweet Italian Turkey Sausage and Whole Grain Rotini

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Today is my Mom’s 90th Birthday! So, So lucky to have my Mom around all this time! After Breakfast I went to Kroger to pick up a Birthday Cake and Flowers for her and stopped by McDonald’s to pick up Breakfast for her and Dad. Not a bad day out, sunny and a high of 40 degrees. Swept of the driveway and wooden deck outside. After Lunch did some house cleaning and a load of laundry. For Dinner tonight I prepared Sliced Sweet Italian Turkey Sausage and Whole Grain Rotini.

 


For the Sausage I’m using a favorite of mine, Jennie – O Turkey Sweet Italian Sausages. I love these about anyway I can prepare them. And tonight I’ll be slicing them up and using them with Pasta.

 

 

 

 

 

To prepare the Sausage I took a large skillet, sprayed it with Pam Non Stick Cooking Spray, added a 1/2 tablespoon of Extra Light Olive Oil, and preheated the skillet on medium heat. I kept the Sausage Links whole to keep all the juices in, I’ll slice them after they have been cooked. With the skillet heated I added 3 of the Sausages and covered the pan with the lid. I cooked them for 16 minutes, turning them frequently. After 16 minutes I checked one of the Sausages with a meat thermometer and it was at 164 degrees. Always be sure Turkey is at 165 degrees before eating. I let the Sausages cool for 3 minutes and sliced them into bite size pieces and set them aside until I was ready to add them to the Pasta, which I had already started to boil.

 


For the Rotini Pasta I’m using my favorite, Ronzoni Healthy Harvest Whole Grain Rotini. Easy to prepare; I used a large sauce pan and added 1 1/2 quarts of water and Salt and brought it to a rapid boil. Added the Pasta and brought it back to a boil. Cooked uncovered for 10 minutes, stirring often. Drained the Pasta and added it to a large bowl.

 

 

 

 

Seasoned it with 2 teaspoons of Extra Light Olive Oil, some McCormick Grinder Italian Seasoning, Kraft Grated Reduced Fat Parmesan Cheese, and topped it with LaRosa Sauce. Added the sliced Jennie – O Sweet Italian Sausages and stirred until well mixed. Served it in a bowl and topped it with a sprinkle of the Parm Cheese and some Sargento Shredded Mozzarella Cheese. I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Sweet Italian Turkey Sausage

 

 

For Breakfast this morning I Poached an Egg, fried a few slices of Boar’s Head Sweet Slice Ham, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. Good start to a rainy Thursday morning! It started raining overnight and a few showers this morning. Cloudy and 51 degrees for a high. Stayed in most of the day and got some things done around the house. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Sweet Italian Turkey Sausage.

 

 

I picked up a package of Stonefire Mini Naan Ancient Grain Bread at Meijer earlier in the week. And I’m using them to make some Mini Pizzas. For my toppings I’m using Hormel Turkey Pepperoni, Jennie – O Sweet Italian Turkey Sausages, Mushrooms, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

 

 

 

 

 

Preheated the oven on 400 degrees. Next I grabbed a medium size skillet, sprayed it with Pam Cooking Spray, added a 1/2 tablespoon of Extra Light Olive Oil, and heated it on medium heat. As the skillet was heating I got 2 Jennie – O Sweet Italian Sausages and cut the end off each Sausage . Then squeezed the Sausage Meat out of the casing and formed that into small chunks. With the skillet heated I fried the Sausage pieces. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

The oven was heated up and I got the Naan Bread ready. I used a small baking sheet, lined it with foil, and sprayed it Pam Cooking Spray. I lined the 4 Naan Breads up on the baking sheet.
