Asian Cabbage Turkey Salad
Leave boring salads behind and try this Asian Cabbage Turkey Salad instead! A mix of popular Asian flavors and turkey make-up this flavorful recipe.

Total Time – 1 Hour
Serving Size – 5 Servings

Ingredients

½ – cup HOUSE OF TSANG® Bangkok peanut sauce

2 – tablespoons lime juice

2 – cups coleslaw salad mix

½ – cup thinly sliced green onions

2 – small red chilies, sliced

2 – cups cubed cooked JENNIE-O® OVEN READY™ Turkey

¼ – cup chopped roasted peanuts

½ – cup crispy noodles

* lime wedges, if desired

Directions

1) In large bowl, combine peanut sauce and lime juice.

2) Add coleslaw mix, green onions, chilies and turkey; toss to combine. Sprinkle with peanuts and noodles. Serve with lime wedges, if desired.

Quick Turkey and Spinach Curry

Craving curry? With spinach, chickpeas, lean turkey, fresh mint and mango chutney, this East Indian weeknight dinner should do the trick and ready in under 30 minutes!

INGREDIENTS
2 tablespoons curry powder
1 (14.5-ounce) can diced tomatoes, undrained
2 cups packed baby spinach leaves
1 (15-ounce) can garbanzo beans, rinsed and drained
2 cups cubed leftover JENNIE-O® OVEN READY™ Turkey
¼ cup chopped fresh mint
4 tortillas, warmed
¼ cup mango chutney
⅓ cup plain non-fat yogurt

DIRECTIONS
1) In large skillet, heat curry powder 1 minute or until fragrant. Stir in tomatoes. Simmer 5 minutes or until thickened, stirring occasionally.
2) Add spinach, garbanzo beans, turkey and mint. Cook 2 to 3 minutes until spinach is wilted and turkey is hot.
3) Spread one side of each tortilla with chutney. Top with turkey mixture and yogurt.
* Always cook to an internal temperature of 165°F.

1 (15-ounce) can navy or great northern beans, rinsed and drained
2 cups frozen corn kernels, thawed

1 teaspoon sugar
¼ cup chopped fresh cilantro

Who knew quick, kid-friendly homemade pizza recipes were this simple? Well, we did. And we’re sharing! Lean turkey, green peppers and a flaky biscuit crust make for a tasty weeknight dinner solution!

INGREDIENTS
1 (16.3-ounce) can refrigerated biscuits
1 cup pizza sauce
2 cups shredded low-sodium mozzarella cheese, divided
2 cups chopped leftover JENNIE-O® OVEN READY™ Turkey
1 cup sliced green bell pepper

DIRECTIONS
1) Heat oven to 375°F. Spray two or three baking sheets with cooking spray.
2) Press biscuits into 6-inch rounds; place on baking sheets.
3) Top biscuits with pizza sauce, 1 cup cheese, turkey, bell pepper and remaining 1 cup cheese. Bake 10 to 15 minutes or until bottoms are golden brown and cheese is bubbly.

Three Cheese Turkey Pasta Bake

When two cheeses just aren’t enough, give this casserole a try. Cheddar, mozzarella and parmesan baked with rigatoni and lean turkey. Chock full of veggies and under 500 calories per serving!

INGREDIENTS
3 cups rigatoni pasta
1 tablespoon olive oil
1½ cups chopped onion
3 cups sliced mushrooms
4 garlic cloves, minced
1 (24-ounce) can diced tomatoes, undrained
½ cup sun-dried tomato pesto
2 cups chopped leftover JENNIE-O® OVEN READY™ Turkey
1 (14-ounce) can artichoke hearts, drained and coarsely chopped
½ cup shredded mozzarella cheese
½ cup white shredded Cheddar cheese
½ cup freshly grated Parmesan cheese
1 cup coarse dry breadcrumbs

DIRECTIONS
1) Spray large casserole with cooking spray; set aside. Heat oven to 375°F. In large pot, cook pasta as specified on the package. Return to same pot.
2) While pasta is cooking, in large skillet, heat oil over medium-high heat. Add onion, mushrooms and garlic. Cook 5 minutes or until onion is softened, stirring occasionally.
3) Add tomatoes and pesto. Cook, uncovered, 15 minutes or until sauce is thickened, stirring occasionally. Add turkey and artichokes. Add turkey mixture to pasta. Stir until combined. Spoon into prepared casserole dish. In small bowl, combine cheeses and breadcrumbs. Sprinkle over pasta. Bake, uncovered, 30 to 40 minutes or until cheese is golden brown.
* Always cook to an internal temperature of 165°F.

This salad recipe is full of fresh flavor. Tangy green chilies, cilantro and avocado mingle with sunflower seeds, golden raisins and lean turkey. Under 500 calories per serving!

INGREDIENTS
SALAD
4 cups cooked jasmine rice
½ cup thinly sliced green onions
2 cups chopped leftover JENNIE-O® OVEN READY™ Turkey
1 cup sliced celery
½ cup sunflower seed kernels, toasted
½ cup golden raisins
2 avocados, peeled and diced

GREEN CHILI DRESSING
⅓ cup cilantro leaves
¼ cup canned green chilies
2 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon honey

DIRECTIONS
1) In large bowl, combine rice, onions, turkey, celery, sunflower seeds, raisins and avocados. Set aside.
2) To make the dressing, process cilantro, chilies, garlic, oil, vinegar and honey in a food processor or blender until smooth. Drizzle over salad.
*Always cook to an internal temperature of 165°F.

This Lentil Turkey Soups is a delicious way to cook with leftover holiday turkey. Simmered with garlic, onions, rutabaga, lentils and rosemary, it’s a dinner for under 500 calories per serving.

INGREDIENTSlentil-turkey-soup

1 teaspoon olive oil
2 cups chopped onion
6 garlic cloves, minced
2 cups chopped carrots
1½ cups chopped celery
1 cup chopped rutabaga
1¼ cups dried brown lentils
2 quarts low-sodium or homemade chicken or turkey broth
1 rosemary sprig
2 bay leaves
salt and freshly ground pepper, if desired
2 cups cubed leftover JENNIE-O® OVEN READY™ Turkey
2 tablespoons lemon juice

 
DIRECTIONS

1) In large pot, heat oil over medium-high heat. Add onion and garlic. Cook 5 minutes or until onion is softened, stirring occasionally.
2) Add carrot, celery, rutabaga, lentils, broth, rosemary, bay leaves and salt and pepper, if desired. Bring to boil; reduce heat to medium-low. Cook, covered, 40 minutes or until lentils and vegetables are tender, stirring occasionally.
3) Stir in turkey and lemon juice. Remove and discard rosemary and bay leaves before serving.
