Greek Turkey Pasta Salad
Here’s a pasta salad recipe that combines your love of Mediterranean flavors, slow-cooked turkey and easy-to-follow recipes. This Greek Turkey Pasta Salad is full of fresh veggies and under 500 calories per serving!

Total Time 3 Hours
Serving Size 6 Servings

Ingredients
1 (2 to 2 0.5-pound) package JENNIE-O® OVEN READY™ Boneless Skinless Turkey Breast

4 cups cooked and cooled bow tie pasta

6 ounces fresh mozzarella, cubed

2 cups cherry tomatoes, halved

¼ cup chopped fresh basil leaves

½ cup Greek salad dressing

Directions
1) Preheat oven to 375°F. Remove frozen turkey from white outer package only. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.

2) Cut three ½” slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.

3) Roast turkey until a meat thermometer reaches 165°F. Cooking time is approximately 3 hours. During final 1 hour, check internal temperature by inserting thermometer into thickest part of breast. Remove from oven when internal temperature reaches 165°F.

4) Chop turkey. Refrigerate half of turkey for another use. Place remaining half in large bowl.

5) Add pasta, mozzarella, tomatoes, basil and dressing. Toss to combine.

Grilled Turkey Sandwiches
These Grilled Turkey Sandwiches bring together slow-cooked turkey breast, crunchy coleslaw and melted cheese on grilled whole grain bread. It’s big on flavor, easy to prep, and kid-friendly, too!

Ingredients

1 – (2 to 2 0.5-pound) package JENNIE-O® OVEN READY™ Boneless Skinless Turkey Breast

2 – tablespoons butter

1 – tablespoon mustard

8 – slices whole grain bread

4 – American cheese slices

1 ½ – cups prepared coleslaw

Directions

1) Preheat oven to 375°F. Remove frozen turkey from white outer package only. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.

2) Cut three ½” slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.

3) Roast turkey until a meat thermometer reaches 165°F. Cooking time is approximately 3 hours. During final 1 hour, check internal temperature by inserting thermometer into thickest part of breast. Remove from oven when internal temperature reaches 165°F.

4) Slice turkey. Refrigerate half of turkey for another use.

5) In small bowl, combine butter and mustard. Spread on bread. Place 4 slices of bread in sandwich maker or Panini press.

6) Add cheese and 3 slices turkey. Place remaining bread slices, buttered side up on turkey. Close sandwich maker and cook 2 to 3 minutes or until golden brown.

7) Cut each sandwich in half to serve. Serve with coleslaw.

Turkey Fajita Pizzas
INGREDIENTS

6 (8-inch) CHI-CHI’S® soft tortillas, warmed
⅔ cup barbeque sauce
2 green bell peppers, sliced into rings
1 red onion, sliced
1 ½ cups taco cheese

CHI-CHI’S® Tortilla Chips, if desired

DIRECTIONS
1) In slow cooker, cook turkey as specified on the package. Always cook to well- done, 165°F as measured by a meat thermometer. Shred 3 cups of turkey. Refrigerate remaining turkey for another meal.
2) Heat oven to 425°F. Spray two baking sheets with cooking spray. Arrange tortillas on baking sheets. Spread with sauce. Top with bell pepper, turkey, onion and cheese. Cook 10 to 12 minutes or until tortillas are golden brown. Serve with salsa and chips, if desired.

Today’s Menu: Jennie – O OVEN READY™ Boneless Turkey Breast w/ Mashed Potatoes and Green Beans

 

 

 

 

The rains have moved back in overnight. Like we need more rain right now, it was just starting to dry out. For Breakfast this morning I prepared a Egg Beater’s Egg White Cheese Omelet, 2 toasted slices of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. As I said the rain had returned overnight and continued on and off throughout the day, back into the 50’s also. Did some laundry and cleaning around the house. For Dinner tonight I prepared a Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes, Green Beans, and French Bread.

 

 

I was going through our big freezer, which I rarely do, and came across a Jennie – O Oven Ready Boneless Turkey Breast. And I found our Dinner for tonight. It’s an easily prepared way to have a moist and fantastic tasting Turkey! Comes in Jennie O turkey Breast Oven Ready Bag, that you bake at 375 degrees for about 2 hours until it reads 165 degrees with meat thermometer.

 

 

 

 

 

 

The Turkey comes out moist, juicy and delicious, with an excellent flavor! This came out as one of the Turkey Breasts we’ve had. It’s just the right size (2-3 lbs.), with enough leftover for some great Turkey Sandwiches the next day or so.

 

 

 

 

For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Then I also heated up a can of Del Monte Cut Green Beans – Reduced Sodium. I also baked a loaf of Pillsbury French Bread. So it was a Thanksgiving Dinner come real early here tonight! After Dinner me and Mom made a big plate of this for Dad and took it over to him at the rehab unit. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

COOKING INSTRUCTIONS

SLOW COOKER:

Place cooking bag with frozen turkey in the bottom of the slow cooker. Add one cup water to the crock pot. Cut three 1/2 inch slits in top of fool-proof cooking bag. Cook for approximately 3-1/2 hours with the slow cooker in high setting or 5 on low setting.
CONSUMER OVEN:

Preheat oven to 375°F. Remove frozen turkey from white outer package. Do not remove turkey from cooking bag. Place in a roasting pan with at least 2″ high sides.
NOTE:

Do not increase oven temperature. Cooking bag may melt at higher temperatures. Cut three 1/2 inch slits in top of cooking bag. Place pan in oven, allowing room for bag to expand without touching the oven racks or walls. Roast the turkey until a meat thermometer reaches 165°F.
NOTE:

Meat temperature increases rapidly during last hour of cooking. Let turkey rest 10 minutes, cut open top of oven bag. Be cautious of hot steam and juices. Heat gravy as directed on pouch.

The heavy rains have finally let up, a lot of flooding around the area. Cloudy and cool out today, in the 40’s. For breakfast this morning a fried up a package of Thin Cut Breakfast Pork Chops for everyone. Served them with Scrambled Eggs and Whole Wheat Toast. I ran a couple of errands for Mom and back home. I was all caught up on everything so there’s not a lot going on here today. For dinner tonight It was leftovers! I prepared a Turkey Panini w/ Mashed Potatoes and Italian Cut Green Beans.

Sometimes there’s nothing better than leftovers! And in this case it’s hard to beat. I had prepared a Jennie – O OVEN READY™ Boneless Turkey Breast along with some Bob Evan’s Mashed Potatoes and Allens Italian Cut Green Beans. Which will be my dinner tonight.

 

 

 

 
I took some slices of the leftover Turkey Breast, which turned out to be one the best Turkey Breasts we’ve had, and I Leftovers Turkey Panini w Mashed Potatoes and Italian Cut Green 008made a Panini Sandwich with it. So I got the Panini Press out, sprayed a very light coat of pam Spray on it. As it was heating I made my sandwich. I used Healthy Life Whole Grain Bread, 2 slices of Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo with Olive Oil, and the sliced Turkey. With the sandwich made and the press heated I added the sandwich to the press and shut the lid. I heated it for about 5 minutes until the Cheese was melted and the sandwich heated through. Yum, what a sandwich! The Jennie – O Turkey is just so flavorful and moist, add the Swiss Cheese and Mayo and it was perfect!

For the leftover Bob Evan’s Mashed Potatoes and Allens Italian Cut Green Beans, I put each into a bowl and reheated them in the microwave. The Beans took about 45 seconds and the Mashed Potatoes took about 1 minute and 15 seconds. Both came out just as good the second time around! As I said, Sometimes there’s nothing better than leftovers! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Made a Ham, Egg White, Whole Grain English muffin Breakfast Sandwich this morning to start my day off. Outside it’s another rainy, gloomy, cold windy day out. Sure would like to see the sun for an entire day. So since it’s not a good day to be out I used the time inside to give my Hoveround Mobility Chair a good cleaning. Took parts off so I could clean the entire chair. Did some light cleaning after that. For dinner tonight I prepared a Jennie – O OVEN READY™ Boneless Skinless Turkey Breast w/ Mashed Potatoes, Italian Cut Beans, and Baked French Bread.

I used the Jennie – O Oven Ready Skinless Boneless Turkey Breast that Jennie – O had sent me just before Christmas, as a member of their Switch Club. Such an easy way to have a moist and fantastic tasting Turkey, along with little clean-up! Comes in a Jennie O turkey Breast Oven Ready Bag, that you bake at 375 degrees for about 2 to 3 hour until it reads 165 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey comes out moist, juicy and delicious, with an excellent flavor! So cooking usually for just myself and my parents, it’s just the right size (2-3 lbs.). Enough leftover for some great Turkey Sandwiches!

For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then for another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

Note – Do not increase oven temperature, cooking bag may melt at higher temperatures.
Cut three 1/2 inch slits in top of FOOL PROOF. cooking bag.
Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.
Roast the turkey until a meat thermometer reaches 170°F.

Note – Meat temperature increases rapidly during last hour of cooking.
Let turkey rest 10 minutes, cut open top of oven bag.
Watch out for hot steam and juices.
Heat gravy as directed on pouch.

APPROXIMATE OVEN ROASTING TIMES IN 375°F. OVEN TEMPERATURE:
2 – 3 lbs 2-1/2 to 3 hours.

Turkey & Veggie Bake
This is a Gluten Free RecipeTurkey & Veggie Bake

Ingredients
1 (2 to 2 ½-pound) package JENNIE-O® OVEN READY™ Boneless Skinless Turkey Breast
1 ½ cups frozen vegetable mix, thawed
1 (21-ounce) tub HORMELl® COUNTRY CROCK® Loaded Mashed Potatoes, heated according to package directions
¾ cup shredded Swiss cheese
Directions
1 – In slow cooker, cook turkey as specified on the package. Always cook to well- done, 165°F as measured by a meat thermometer. Chop turkey. Place in large bowl. Heat oven to 400°F. Spray baking dish with cooking spray.

2 – Heat gravy from turkey package according to package directions. Add to turkey. Add vegetable mix. Spoon into a 9×13-inch baking dish. Spread mashed potatoes over turkey mixture. Sprinkle with cheese. Bake 20 to 25 minutes or until bubbling and golden.

Turkey Fajita PizzasTurkey Fajita Pizzas

Ingredients
1 (2 to 2 ½-pound) package JENNIE-O® OVEN READY™ Boneless Skinless Turkey Breast
6 (8-inch) CHI-CHI’S® soft tortillas, warmed
⅔ cup barbeque sauce
2 green bell peppers, sliced into rings
1 red onion, sliced
1 ½ cups taco cheese
CHI-CHI’S® Thick and Chunky Salsa, if desired
CHI-CHI’S® Tortilla Chips, if desired
Directions
In slow cooker, cook turkey as specified on the package. Always cook to well- done, 165°F as measured by a meat thermometer. Shred 3 cups of turkey. Refrigerate remaining turkey for another meal.

Heat oven to 425°F. Spray two baking sheets with cooking spray. Arrange tortillas on baking sheets. Spread with sauce. Top with bell pepper, turkey, onion and cheese. Cook 10 to 12 minutes or until tortillas are golden brown. Serve with salsa and chips, if desired.
