This week’s second Jennie – O Recipe is a Fiesta Turkey Breakfast Bowls. This one is made using JENNIE-O® Lean Turkey Breakfast Sausage Links (one of my favorites), Red Bell Peppers, Yellow Onion, Extra Virgin Olive Oil, Egg Substitute, Salsa, Cilantro Sprigs, and served in Whole Wheat Flour Tortillas Bowls. Fiesta Turkey Breakfast Bowls
With edible tortilla bowls, turkey sausage and scrambled eggs, these easy-to-make breakfast bowls are a tasty way to get the day going. Under 300 calories per serving!

INGREDIENTS
6 (7-inch) whole wheat flour tortillas
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
1 medium red bell pepper, chopped
1 small sweet yellow onion, coarsely chopped
1 tablespoon extra virgin olive oil
1½ cups egg substitute or 6 eggs
½ cup salsa
6 fresh cilantro sprigs

DIRECTIONS
1) Heat oven to 375°F. Lightly spray custard cups with cooking spray. Gently place tortillas into cups, overlapping edges as necessary to fit. Bake tortillas 12 to 15 minutes or until lightly brown.
2) Cook the turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Remove turkey from skillet and cut each link into three pieces. Set aside.
3) In same skillet, sauté bell pepper and onion in oil 5 minutes or until slightly softened. Reduce heat and add egg substitute to pepper and onion mixture. Cook and stir over medium heat 5 minutes or until soft scrambled. Spoon egg mixture into prepared tortillas. Top with turkey sausage pieces. Serve with salsa and garnish with cilantro.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

 

To start my day off I prepared a Jimmy Dean Scramble Cup – Crumbled Turkey Sausage, Shredded Cheddar Cheese, Egg Whites. Also had my morning cup of Bigelow Decaf Green Tea to get this morning started. Rain and thunderstorms passing by most of the day, high of 77 degrees. Got the leaf blower and cleaned off the driveway and then swept the shed out. After Lunch I had to trim the vines along the driveway, these grow way too fast! For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

 

 

 

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

 

 

So I got out a couple of small skillets and got the toaster ready. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no Oil I started to fry the Jennie – O Turkey Sausage Links. The skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns, I fried my Sunnyside Up Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Bird’s Nest Breakfast Cups
Crispy hash browns, eggs and sausage all in one easy brunch recipe.

INGREDIENTS
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
1 (20-ounce) package refrigerated shredded hash brown potatoes
½ cup milk
2 eggs or ½ cup egg substitute
1 cup shredded Cheddar cheese
1 cup shredded Swiss cheese

DIRECTIONS
1) Heat oven to 425°F. Cook sausage links as specified on package. Always cook to well done, 165°F as measured by a meat thermometer. Chop sausage links into small pieces.
2) Mist 12 muffin cups with cooking spray. Divide potatoes evenly among muffin cups. Bake 25 to 30 minutes or until crisp and golden brown. Reduce oven temperature to 350°F.
3) In bowl, beat together milk and eggs. Stir in chopped sausage and cheeses. Pour mixture into each muffin cup. Bake 18 to 20 minutes or until egg is set. Cool 5 minutes before removing from muffin cups.
* Always cook to an internal temperature of 165°F.

Turkey Sausage and Sassy Scrambled Eggs
Spice up your breakfast or brunch with this carb-conscious Mexican recipe. Fluffy scrambled eggs mixed with fresh green onion and bell peppers pairs perfectly with savory lean turkey sausage.

INGREDIENTS
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
2 tablespoons butter
2½ cups egg substitute or 10 eggs
½ cup diced red bell pepper
½ cup diced green onions
¾ teaspoon hot pepper sauce
½ cup shredded Cheddar cheese
DIRECTIONS
1) Cook turkey sausage links as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Meanwhile, in large skillet over medium-high heat melt butter. In medium bowl, beat together eggs, bell pepper, green onions and hot pepper sauce. Pour into skillet. Cook 3 minutes or until eggs are set; stirring occasionally.
3) Sprinkle with cheese and stir to combine. Serve with sausages

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

I made a Breakfast sandwich to start my Sunday Morning off. I toasted a Thomas Light 100% Multi Grain English Muffin. Then I lightly fried 4 slices of (thin sliced) Boar’s Head Sweet Slice Ham. As the Ham was cooking I scrambled some Egg Beater’s Egg Whites and topped the Egg Whites with Sargento Off the Block Shredded Mozzarella. Piled all that on to the toasted English Muffin and I had one delicious Breakfast Sandwich! Outside today it was partly sunny and 28 degrees. After I ate I went to McDonald’s and picked up Breakfast for Mom. After ward she went to Church. I did a few things around the house and then I laid back down for the afternoon. I had a very bad Sinus Headache. So not much going on. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

Spicy Turkey Breakfast Skillet
Some mornings need a serious kick-start. This breakfast skillet recipe is just the thing — chopped chipotle peppers, jalapeño jack cheese and lean turkey sausage. Under 300 calories per serving!

INGREDIENTS
2 teaspoons canola oil
½ cup diced onion
½ cup diced red bell pepper
½ cup diced green bell pepper
2 cups southern-style hash browns
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
2 chipotle chilies in adobo sauce, finely chopped
2 cups baby spinach leaves
1 cup shredded jalapeño jack cheese
1 tablespoon lime juice
1 avocado, diced
cilantro leaves

DIRECTIONS
1) In large skillet, heat oil over medium-high heat. Add onion and peppers. Cook 5 minutes or until softened, stirring occasionally; set aside.
2) In same pan, cook hash browns over medium-high heat 10 to 15 minutes or until golden brown, stirring occasionally. Return pepper mixture to skillet.
3) Cook links as specified on the package. Always cook to well-done,165°F. as measured by a meat thermometer. Cut sausage into 1-inch lengths. Add to skillet.
4) Add chipotle chilies and spinach. Stir to combine. Sprinkle with cheese. Stir to combine. Remove from heat. Drizzle lime juice over avocado. Pile avocado in center of skillet. Scatter with cilantro leaves.
* Always cook to an internal temperature of 165°F.

Turkey Taco Cups
Impress a brunch crowd with these cute, flavorful mini-breakfast cups. Baked with eggs, Cheddar and lean turkey sausage, this recipe is under 300 calories per serving!

INGREDIENTS
3 corn tortillas
olive oil cooking spray
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links, casing removed, sliced
½ cup tomato salsa
2¼ cups egg whites or egg substitute
¼ cup shredded low-fat Cheddar cheese
¼ cup sliced ripe olives
2 tablespoons chopped fresh cilantro
salsa, if desired

DIRECTIONS
1) Heat oven to 400°F. Stack corn tortillas and cut into quarters. Cut quarters in half 8 wedges for each tortilla (and a total of 24 wedges). Spray muffin cups with cooking spray.
2) Cook and crumble turkey sausage links as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
3) To assemble: Place one tortilla wedge in each muffin cup, with the widest side at the bottom of the cup. Place a second tortilla wedge on the opposite side of the muffin cup so that the wide edges will be overlapping in the bottom of the cup, by about ½-inch. The tortilla wedge points will extend outside of the cup, about ½-inch straight up. Repeat with remaining. Place about 1½ tablespoon sausage (from one whole link) in each muffin cup, on top of the tortilla wedges. Place a tablespoon of salsa on top of the sausage.
4) Measure 3 tablespoons of egg white (or egg substitute) into each muffin cup. Bake 10 minutes or until eggs are just set. They will be slightly puffed. Carefully remove “muffins” from pan and place two on each serving plate. Sprinkle each “muffin” with cheese. Top each muffin with few olive slices and sprinkle with cilantro. Serve with extra salsa, if desired.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with some Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green. It’s another beautiful morning out there, 60 degrees and sunny. For the day it was 78 degrees and sunny for the day. After Breakfast I got the cart out, along with hedge clippers and leaf blower. Yard work today. Trimmed the bushes around the side and back. Also had to trim the vines along the driveway, the vines grow way too fast! Everything done I took a ride around the neighborhood and enjoyed the day. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

Simply Potatoes Hash Browns

So I got out a couple of small skillets and got the toaster fired up. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no oil I started to fry the Jennie – O Turkey Sausage Links and the skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns I fried my Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. To drink I had a glass of Kroger Brand CarbMaster Chocolate Milk, I love this stuff! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and diet Peach Snapple to drink.
