Chile Rellenos Casserole

INGREDIENTSchile-rellenos-casserole

6 Anaheim green chilies
6 ounces JENNIE-O® Lean Hot Italian Turkey Sausage
1 cup shredded sharp Cheddar cheese
2 eggs or ½ cup egg substitute
¾ cup milk
⅔ cup flour
½ teaspoon salt
1 (10-ounce) can diced tomatoes and green chilies
2 tablespoons chopped fresh cilantro
1 teaspoon minced garlic
½ teaspoon dried oregano leaves
¼ teaspoon coarsely ground pepper
chopped fresh cilantro
sour cream

 
DIRECTIONS

1) Heat oven to 400°F. Line baking sheet with foil. Place chilies on baking sheet. Broil 6 inches from heat source 10 minutes or until chilies are blackened and blistered, turning frequently. Place blackened chilies in bowl and seal with plastic wrap. Let stand 15 minutes. Remove outer skin.
2) Cook turkey sausage links as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Cut into bite size pieces.
3) Cut slit in each chili lengthwise down one side. Fill each chili with sausage and cheese. Place cut-side-down in greased 8x8x2-inch baking dish.
4) In large bowl, beat together eggs, milk, flour and salt. Pour egg mixture over chilies. Bake 25 to 30 minutes or until golden brown.
5) In small saucepan, combine diced tomatoes and green chilies, cilantro, garlic, oregano and pepper. Bring to a boil. Cook 5 minutes, stirring occasionally. Spoon sauce over chilies. Serve with chopped fresh cilantro and sour cream.
* Always cook to an internal temperature of 165°F.

New Orleans Turkey Jambalaya Kabob

Ingredients
2 tablespoons olive oil, dividedNew Orleans Turkey Jambalaya Kabob
3 tablespoons Cajun seasoning
2 zucchini, cut into ¾-inch thick slices
1 red bell pepper, cut into 1-inch pieces
1 onion, cut into wedges
1 (19-ounce) JENNIE-O® Lean Hot Italian Turkey Sausage, cubed
VEGGIE RICE
1 cup diced onion
1 cup diced celery
2 cups cooked rice
1 tomato, chopped
1 cup low-sodium chicken broth
1 teaspoon chopped fresh thyme
Directions
1 – In medium bowl, combine 1 tablespoon oil and seasoning. Add zucchini, bell pepper and onion; stir to coat and set aside.

2 – Grill turkey sausage as specified on the package. Always cook until well done, 165°F as measured by meat thermometer. Cube sausage.

3 – Thread zucchini, bell pepper, onion and turkey onto skewers. Cook skewers on grill 15 to 20 minutes or until vegetables are tender.

4 – To make veggie rice, in skillet, heat 1 tablespoon oil over medium-high heat. Add onion and celery. Cook 5 minutes or until onion is softened. Add rice, tomato, chicken broth and thyme. Stir until rice is hot. Serve with kabobs.

Spaghetti with Hot Italian Turkey Sausage

Savory, spicy Italian turkey sausage atop noodles with a delectable sauce made with sautéed onion, minced garlic and grated Romano cheese. A tasty, classic Italian dinner that’s only 350 calories per serving.

Ingredients
1 tablespoon olive oilSpaghetti with Hot Italian Turkey Sausage
1 cup chopped onion
4 cloves garlic, minced
2 (28-ounce) cans Italian-style plum tomatoes, undrained and coarsely chopped
1 (6-ounce) can tomato paste
1½ teaspoons dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon sugar
1 (19-ounce) package JENNIE-O® Lean Hot Italian Turkey Sausage
12 ounces spaghetti, cooked and drained
¼ cup grated Romano cheese, if desired

 
Directions
STEP 1: Heat oil in a large saucepan over medium-high heat. Cook onion for five minutes, stirring occasionally. Add Jennie O Make the Switchgarlic and cook for two minutes. Add tomatoes, tomato paste, basil, oregano, sugar. Bring to a simmer. Simmer, uncovered, 25 to 35 minutes or until sauce is desired consistency.

STEP 2: While sauce is simmering, cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

STEP 3: Cut sausage into ½-inch slices and add to sauce. Serve over spaghetti noodles and sprinkle with cheese, if desired.

1 (8-ounce) container cottage cheese
8 ounces Cheddar cheese, cubed
1 medium onion, diced
1 (11-ounce) can sliced jalapeño peppers, drained
1 (1-pound) package processed cheese, cubed
3 cloves garlic, minced
crackers or corn chips, if desired
Directions
1 – Cook ground turkey and sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer; drain. Transfer to slow cooker.
