Turkey Bacon Burgers
These “paleo-style” Turkey Bacon Burgers are wrapped in crispy lettuce leaves instead of using buns for a gluten free grilling option! They’re topped with fresh avocado and pickled jalapenos for a satisfying flavor that’s 140 calories per serving. It’s the perfect low prep recipe for a party — or for planning ahead!

Total Time – More than 1 hour
Serving Size – 10 Servings

Ingredients

1 – (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1/2 – cup minced onion
1 – tablespoon chopped garlic
1/2 – teaspoon freshly ground black pepper
10 – lettuce leaves
10 – tomato slices
20 – sweet onion slices
avocado slices, if desired
pickled jalapeno slices, if desired
mustard, if desired

Directions

1) In large mixing bowl, combine ground turkey, onion, garlic and pepper*.

2) Form into 10 patties. Ideally, make this mixture at least 8 hours before cooking so that the turkey can marinate with the other ingredients.

3) Freeze any extra formed patties to thaw later.

4) Heat grill to medium-high heat.

5) Grill turkey burgers approximately 14 to 16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer. Layer lettuce, tomato, turkey burger and onion.

6) Top with avocado, pickled jalapeno and mustard, if desired.

7) *JENNIE-O also recommends adding 15 slices of chopped, uncooked JENNIE-O Turkey Bacon to the meat mixture. For ease of chopping, place bacon slices in freezer for 15 minutes. Chop finely while still firm.

Gochujang Lettuce Wraps
These lettuce wraps are a quick and flavorful weeknight meal made with lean ground turkey seasoned with gochujang sauce, shredded carrots and cucumbers in butter lettuce leaves.

Total Time – 30 Minutes
Serving Size – Makes 4 Servings

Ingredients
1 – tablespoon avocado oil
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
4 – cloves garlic, minced
sea salt and freshly cracked black pepper, to taste
8 – leaves butter lettuce
1 – cup shredded carrots
1 – cup thinly sliced English cucumber

Gochujang Sauce
3 – tablespoons Gochujang paste
2 – tablespoons low-sodium soy sauce
1 – tablespoon maple syrup
1/2 – teaspoon toasted sesame oil

Directions
1) In large skillet over medium high heat, heat oil. Add ground turkey to skillet. Cook, stirring occasionally, until the turkey is well-done, 165°F as measured by a meat thermometer. Stir in garlic. Cook 1 minute. Season to taste with salt and pepper. Remove pan from heat and stir in half of the Gochujang Sauce until it has evenly coated the turkey.

2) Place a spoonful of turkey mixture into each lettuce leaf. Top with cucumbers and carrots. Drizzle with remaining Gochujang Sauce.

Gochujang Sauce
3) In small bowl, whisk together ingredients until combined.

INGREDIENTS

1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage, casings removed
½ cup fresh breadcrumbs
¼ cup egg substitute or 1 egg
1 cup prepared tomato and basil pasta sauce, divided
1 clove garlic, minced
½ teaspoon freshly ground pepper
¾ teaspoon salt, if desired

DIRECTIONS
1) Heat oven to 350ºF. Spray a 8½ x 4½-inch loaf pan with cooking spray.

2) In large bowl, combine ground turkey, sausage, breadcrumbs, egg, ½ cup pasta sauce, garlic, pepper and salt, if desired; mix well.

3) Put turkey mixture into loaf pan. Spread remaining ½ cup pasta sauce over meatloaf.

4) Bake 1 hour and 45 minutes or until loaf is well-done, 165°F. as measured by a meat thermometer.

5) Let stand at room temperature 10 minutes before slicing.

Ingredients
3 tablespoons – olive oil, divided
1 – yellow onion, sliced
2 cups – thinly sliced button mushrooms
½ – red bell pepper, cut into thin strips
½ – green bell pepper, cut into thin strips

1 – (16-ounce) package JENNIE-O® Lean Ground Turkey, formed into 4 patties
2 cups – shredded mozzarella cheese, divided
½ stick – unsalted butter
8 slices – sourdough bread

Chipotle Aioli:
½ cup – mayonnaise
1 – finely minced chipotle pepper en adobo
1 tablespoon – chopped parsley
1 teaspoon – distilled vinegar
Salt and pepper, to taste

Directions
1) Heat oven to 350°F.

2) In large skillet over high heat, heat 2 oil. Add onions, mushrooms, and peppers. Cook 10 to 15 minutes or until browned. Season to taste with salt and pepper. Remove from pan.

3) Add remaining oil to skillet over medium-high heat. Season turkey patties on each side with salt and pepper to taste. Cook for 2 to 3 minutes per side or until browned and cooked through. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from pan.

4) In same skillet, over medium heat add butter 1 tablespoon at a time to toast bread slices on both sides.

5) To assemble; divide cheese, onions, mushrooms, peppers, turkey patties, and Chipotle Aioli among 4 toasted bread slices. Top with remaining toasted bread slices.

6) Transfer sandwiches back to pan. Bake 5 to 7 minutes or until cheese is melted.

7) Chipotle Aioli: In small bowl, whisk together ingredients. Refrigerate until ready to use.

Turkey Shepherd’s Pie
Shepherd’s pie is a classic and a great way to incorporate more veggies. Add this clean recipe to your weeknight dinner rotation.

Total Time – 50 minutes
Serving Size – Makes 8 Servings

Ingredients
1 – tablespoon olive oil
1 – medium red onion, diced
4 – cloves garlic, minced
1 – cup red wine
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
3 – tablespoons tomato paste
1 – teaspoon Worcestershire sauce
Salt and pepper, to taste
1 1/2 – vegetable broth
2 – carrots, diced
1 – cup frozen peas

Mashed Potato Topping:
2 – pounds Yukon gold potatoes, scrubbed and cut into large chunks
¼ – cup butter
¼ – cup sour cream
¼ – cup milk
½ – teaspoon garlic powder
Salt and pepper, to taste

Directions
1) Heat oven to 350°F. Lightly spray a 2-quart baking dish with non-stick cooking spray.

2) Filling: In large skillet over medium-high heat, heat oil. Add onions and garlic. Cook 3 to 5 minutes or until onions are beginning to brown.

3) Pour in wine. Simmer 5 to 6 minutes or until liquid is reduced by half.

4) Add turkey. Cook, crumbling with back of spoon, 5 to 7 minutes or until turkey is cooked through.

5) Stir in tomato paste and Worcestershire sauce. Season to taste with salt and pepper. Add broth, carrots and peas. Cook 3 to 5 minutes or until vegetables are tender. Set aside.

6) Mashed Potato Topping: In large saucepan add potatoes and enough water to cover them. Bring to a boil over high heat. Cook potatoes 15 to 20 minutes or until tender. Drain. Mash lightly. Add remaining ingredients. Mash until fluffy.

7) Spread Filling into prepared baking dish. Top with Mashed Potato Topping, spreading to edges. Bake 25 to 30 minutes or until filling is bubbly and potatoes are lightly browned.

Directions
1) Preheat air fryer to 400°. In large bowl, combine meatball ingredients. Shape into 1-1/2-in. balls.

2) In batches, arrange meatballs in a single layer on greased tray in air-fryer basket. Cook 12 to 15 minutes or until lightly browned and cooked through. Always cook to well-done, 165°F as measured by a meat thermometer.

3) Meanwhile, in small saucepan, combine sauce ingredients. Cook and stir over low heat until warmed. Prepare cauliflower rice according to package directions.
