Zucchini Lasagna Rolls
These Zucchini Lasagna rolls pack all the flavor of the beloved Italian dish, with 500 calories per serving! Ricotta, Mozzarella and Parmesan cheese with Pesto and Marinara are a flavor combination that can’t be beat!
Total Time – 1 Hour
Serving Size – Servings: 6
Ingredients
3 -medium zucchini
Kosher salt
1 – tablespoon olive oil
1/2 – yellow onion, diced
Freshly ground black pepper
1 – (16-ounce) JENNIE-O® Lean Ground Turkey
1 – teaspoon garlic powder
1 – (24-ounce) jar marinara sauce
1 – (16-ounce) container ricotta cheese
1 – cup shredded mozzarella cheese, divided
1/2 – cup shredded parmesan cheese
2 – tablespoons pesto sauce
Directions
1) Heat oven to 375°F.
2) Trim ends of zucchini. With mandolin, cut thin slices of zucchini lengthwise. Arrange slices on a rack. Sprinkle lightly with salt. Let zucchini sit for 5 to 10 minutes to draw out moisture. Blot dry with paper towels.
3) In large saucepan over medium heat, heat olive oil. Add onion. Season to taste with salt and pepper. Cook 3 to 5 minutes, or until translucent.
4) Add turkey and garlic powder. Cook 8 to 10 minutes, or until turkey is cooked through. Add marinara sauce. Reduce heat to simmer. Cook 5 minutes. Remove from heat.
5) In medium bowl, combine ricotta cheese, ½ cup mozzarella, parmesan and pesto.
6) Place 2/3 of the turkey marinara mixture in bottom of 3-quart baking dish. Spread 1 tablespoon cheese mixture onto each zucchini slice and roll up. Arrange roll ups evenly onto sauce mixture. Top with remaining turkey marina mixture. Sprinkle with remaining mozzarella. Bake 25 to 30 minutes, or until cheese is bubbly and browned. Always cook to well-done, 165°F as measured by a meat thermometer.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 (24-ounce) jar prepared spaghetti sauce, divided
1 (8-ounce) can tomato sauce
½ cup chopped red pepper, roasted
¼ teaspoon dried Italian seasoning
½ teaspoon crushed red pepper flakes
1 (15-ounce) container ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
3 cups Italian blend cheese, divided into 3 parts
¼ cup egg substitute or 1 egg, lightly beaten
12 lasagna noodles, cooked, drained
DIRECTIONS
1) Heat oven to 350°F.
2) Mist 13 x 9-inch baking pan with non-stick cooking spray; set aside.
3) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
4) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Stir in half jar spaghetti sauce, tomato sauce, red pepper, Italian seasoning and red pepper flakes. Simmer 5 minutes.
5) In medium bowl, mix ricotta cheese, spinach, 2 cups cheese and egg. Spread ¼ cup ricotta mixture over each lasagna noodle. Top with ⅓ cup sausage mixture. Tightly roll up each lasagna noodle from short end.
6) Place rolls, seam side down, in prepared pan. Pour remaining spaghetti sauce over rolls. Sprinkle with remaining cheese. Cover with foil. Bake 30 minutes.
7) Remove foil and bake 15 minutes or until sauce is bubbly.
* Always cook to an internal temperature of 165°F.

DIRECTIONS
1) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

TURKEY PATTIES

¼ cup egg substitute or 1 egg, beaten
½ cup fine dry breadcrumbs
2 tablespoons sriracha sauce
2 cloves garlic, minced
¼ cup chopped fresh cilantro
1 teaspoon ground cumin
salt and freshly ground pepper, if desired
BURGER FIXINGS
¼ cup low-fat mayonnaise
1 tablespoon Sriracha sauce
1 tablespoon sweet chili sauce
6 whole wheat or grain buns, split and toasted
¼ cup thinly sliced red onion
½ cup thinly sliced cucumber
½ cup grated carrot
DIRECTIONS
1) To make patties, in large bowl, combine turkey, egg, breadcrumbs, 2 tablespoons Sriracha sauce, garlic, cilantro, cumin, salt and pepper, if desired. Cover and chill 30 minutes.
2) Shape mixture into 6 (½-inch thick) patties. Heat non-stick skillet to medium-high heat. Lightly coat with cooking spray. Cook 16 to 18 minutes turning 2 to 3 times.
3) Always cook to well-done, 165°F. as measured by meat thermometer.
4) To make the burger fixings, in small bowl, combine mayonnaise, 1 tablespoon Sriracha sauce and sweet chili sauce.
5) Spread mayonnaise mixture on cut sides of each bun. Top bottom halves of buns with turkey patties, red onion, cucumber and carrot.
6) Replace bun tops.

1/3 – cup honey

Directions
1) In small bowl, combine apple juice, ¼ cup soy sauce, brown sugar, Gochujang, garlic, sesame oil and ginger. In large bowl, mix turkey and half the apple juice mixture until well combined. Cover with plastic wrap. Refrigerate 30 minutes.
2) Spray large skillet with non-stick cooking spray. Over medium-high heat, cook turkey breaking up with a spoon, 25 to 30 minutes adding reserved apple juice mixture as it simmers. Lower heat. Continue simmering 15 minutes or until liquid is reduced and meat is starting to caramelize.
3) In a small saucepan, over medium heat combine remaining ¼ cup soy sauce, honey, garlic powder and pepper. Bring mixture to a boil. Simmer 1 to 2 minutes or until mixture is thickened to a glaze consistency. Remove to small bowl.
4) Serve turkey in lettuce leaves with glaze, onions and sesame seeds.
