Ingredients
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1 – teaspoon dried minced onion
1 – can (15 ounce) black beans, rinsed and drained
3/4 – cup salsa
2 – teaspoons taco seasoning
1/2 – teaspoon curry powder
1 1/2 – cups shredded Mexican cheese blend, divided
10n- taco shells

Shredded lettuce
Sour cream and additional salsa

Directions
1) In a large skillet, cook turkey according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer. Stir in onion, beans, salsa, taco seasoning, and curry powder. Cook 3 to 4 minutes, or until mixture is heated through. Stir in 1 cup cheese.

2) Spoon into taco shells. Sprinkle with remaining cheese; top with lettuce. Serve with sour cream and salsa if desired.

Ingredients
2 – (16-ounce) packages JENNIE-O® Lean Ground Turkey
1/2 – cup minced red onion
1/4 – cup minced green onion
1 – serrano chili, minced
2 – egg whites, whisked
2 – teaspoons chili powder
1 – teaspoon salt
1 – teaspoon pepper
1 – teaspoon oregano
1 – teaspoon ground cumin
1 – tablespoon Worcestershire sauce
12 – soft slider buns, split and toasted
1 – cup finely shredded cheddar cheese
12 – lettuce leaves
12 – slices tomato
1 – cup thinly sliced red onions
1 – avocado, peeled, pitted, and thinly sliced
Suggested condiments: mayonnaise, mustard and ketchup

Directions
1) Preheat grill to medium-high.

2) In a large bowl, combine turkey, red onion, green onion, chilies, egg whites, chili powder, salt, pepper, oregano, cumin, and Worcestershire. Mix thoroughly. Divide the mixture into 12 equal portions. Using your hands, shape them into 12 small burgers, each about 3 and 4 inches wide and 1/2-inch thick.

3) Place the burgers on grill. Cook 6 minutes per side, and until the turkey reaches an internal temperature of 165°F as measured by a meat thermometer. Always cook to well-done.

4) Serve the burgers on slider buns, topped cheese, lettuce, tomato, sliced red onion, and avocado. Serve with suggested condiments.

Ingredients
3 – tablespoons vegetable oil, divided
6 – corn tortillias
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1/2 – cup red onion, sliced in strips
1/2 – cup yellow or green bell pepper, sliced into strips
2 – teaspoons minced garlic
2 – teaspoons ground cumin
3/4 – teaspoon salt, if desired
3/4 – cup salsa, divided
1 – (15-ounce) can refried black beans or refried beans
1 – cup crumbled queso fresco or shredded Monterey jack cheese
1/4 – cup sour cream, if desired
1/4 – cup chopped fresh cilantro or sliced green onions

Directions
1) In large skillet, heat 2 tablespoons oil until hot. Add tortilla to hot oil; cook 1 to 2 minutes per side or until golden brown and crisp. Transfer to paper towels to drain; repeat with remaining 5 tortillas.

2) Add remaining 1 tablespoon oil to skillet. Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

3) Add onion, bell pepper and garlic cook 5 minutes, stirring occasionally. Sprinkle with cumin and salt. Cook 5 minutes, stirring occasionally. Add ½ cup salsa; cook 5 minutes, stirring occasionally.

4) Meanwhile, combine beans and remaining ¼ cup salsa; heat in microwave oven or small saucepan until hot.

5) Spread bean mixture over tortillas; top with turkey mixture, cheese, sour cream, and cilantro.

6) Serve with additional salsa, if desired. Makes 6 servings.

Turkey and Spinach Chile Relleno with Fresh Tomato Sauce
Grilled Poblano peppers stuffed with seasoned ground turkey and baked with a fresh homemade tomato sauce. Just an epic, easy-to-follow Mexican weeknight dinner recipe that’s under 500 calories per serving!
Total Time – 1 Hour
Serving Size – 4 Servings

INGREDIENTS
TOMATO SAUCE
3 cups cherry tomatoes
2 (4-ounce) cans diced green chilies
1 medium white onion, chopped
1 red pepper, chopped
6 cloves garlic, minced
2 tablespoons flax seeds, if desired
juice of 1 lime
¼ cup fresh cilantro

CHILE RELLENO
8 medium sized poblano peppers
olive oil cooking spray
2 teaspoons extra virgin olive oil
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
2 teaspoons dried oregano
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon cumin
½ teaspoon kosher salt
½ teaspoon cayenne
2 cups fresh spinach, chopped
1 cup low-fat shredded mozzarella cheese
1 cup gluten free breadcrumbs
½ cup fresh cilantro, for garnish

DIRECTIONS
1) Tomato Sauce
2) In a food processor, combine cherry tomatoes, green chilies, onion, red pepper, garlic cloves, flaxseed, if desired, lime juice and cilantro. Blend mixture until a chunky sauce forms.
3) Blend mixture until a chunky sauce forms.
4) POBLANO PEPPERS
5) Move top shelf to under the broiler. Heat oven to broil. Line baking sheet with foil. Place poblano peppers on baking sheet. Cook under high heat until peppers are blackened. Watch carefully. Once one side is burned, turn it over so other side can cook. All side of pepper should be evenly blackened. Place in large bowl and cover bowl tightly with plastic. Reduce oven temperature to 375°F.
6) TURKEY SPINACH FILLING
7) In large Dutch oven or heavy bottomed deep skillet on medium heat, add extra virgin olive oil and ground turkey, breaking it apart with wooden spoon. Add oregano, pepper, garlic powder, cumin, kosher salt and cayenne. Continue to break apart turkey so it is evenly coated with spices. Cook turkey to well-done 14 to 16 minutes or until 165°F as measured by a meat thermometer. Add spinach to turkey mixture. Stir well. Cook 1 to 2 minutes or until spinach is wilted. Add 1 cup tomato sauce to the mixture. Set aside.
8) STUFFED PEPPERS
9) Spray 9 x 13-inch baking dish with olive oil spray. Carefully peel skins off the reserved poblanos. It is ok if a little of the charred skin remains, as it will add flavor, but try to get as much skin off as possible. Carefully slice the tops off the peppers and remove seeds. Be delicate in this process so as to ensure that you can keep the shape of the chile intact. Carefully stuff each pepper with a few spoonfuls of turkey and tomato sauce mixture. Lay stuffed peppers side-by-side in baking dish.
10) BAKE PEPPERS
11) Spoon remaining tomato sauce evenly over peppers and sprinkle top with mozzarella cheese. Spray a large piece of foil with olive oil spray and cover baking dish tightly. Bake peppers 20 minutes. Remove foil and top peppers with breadcrumbs. Leave chiles uncovered and bake 5 minutes or until top is browned. Serve with fresh cilantro, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Enchilada Lasagna

2 – (15-ounce) cans mild enchilada sauce, divided

½ – teaspoon kosher salt

9 – corn tortillas

1 ½ – cups shredded Mexican 4-cheese blend

garnish: chopped fresh cilantro leaves, sliced fresh jalapeños, sliced ripened olives, sour cream

 

Directions

1) Add ground turkey to a nonstick cooking sprayed hot skillet over medium-high heat. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

2) Stir in tomato paste and cook 1 minute.

3) Add beans, tomatoes, 1 can enchilada sauce and salt.

4) Heat oven to broil and place rack 5 inches under broiler.

5) Place tortillas on baking rack and broil 3 to 5 minutes or until slightly charred on each side.

6) Place 3 corn tortillas in bottom of 13 x 9-inch baking dish.

7) Spoon half turkey mixture over tortillas. Repeat layers ending with tortillas. Pour remaining enchilada sauce over tortillas.

8) Cover and bake 30 minutes or until bubbly. Remove foil, sprinkle with cheese, and bake 15 minutes more or until cheese is melted.

9) Garnish, if desired.

Ingredients
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
⅓ cup finely chopped cilantro
4 cloves garlic, minced
1 teaspoon freshly ground pepper
1 teaspoon salt, if desired
6 slices garlic toast
1 (15-ounce) can HORMEL® Chili with Beans, heated according to can
¾ cup shredded Cheddar cheese
2 tablespoons fat-free sour cream

Directions
1) In large bowl combine turkey, cilantro, garlic, pepper and salt, if desired. Mix until combined. Divide turkey mixture into 6 (1/2 – inch thick) oval (football) shaped patties.

2) Spray non-stick skillet with cooking spray. Place patties in skillet over medium-high heat. Cover and cook 18 minutes, turning 2 to 3 times and until internal temperature reaches well-done 165°F as measured by a meat thermometer.

3) Heat broiler. Place turkey burger on garlic toast. Top with chili and cheese. Broil 4 to 5 inches from heat source 2 to 3 minutes or until cheese is melted. Top with sour cream.
* Always cook to an internal temperature of 165°F.

4 – tablespoons olive oil, divided
1 – cup finely minced Vidalia onion
1 – cup finely minced button mushrooms
2 – teaspoons thyme leaves
salt and pepper, to taste
1 – clove garlic, minced
18 – small wooden skewers
1/4 – cup chopped fresh parsley
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
9 – party-sized potato rolls, split
4 – slices Provolone cheese
18 – small basil leaves
8 – cherry tomatoes, halved

Directions
1) CREAM CHEESE TOPPING:
2) In small bowl, add minced turkey, cream cheese and feta cheese; mix to combine.
3) Stir in basil, green onion and salt and pepper, if desired.
4) Cover and refrigerate.
5) TURKEY SLIDER:
6) In hot skillet, add 2 tablespoons olive oil and sauté onions, mushrooms, thyme, salt and pepper, to taste.
7) Cook until onions are caramelized and mushrooms are brown. Stir in garlic and parsley. Remove from heat to cool.
8) In medium bowl, add sautéed ingredients to ground turkey mix together not to overwork.
9) Form into small sliders approximately 2 tablespoons each. Press gently into shape. Place burgers on plate covered with plastic wrap and chill in the refrigerator.
10) With a cookie cutter, cut split potato rolls and cheese into 1½-inch circles.
11) In non-stick skillet over medium-high heat, add 2 tablespoons olive oil. Cook turkey patties 2 to 3 minutes on each side or until well-done, 165°F. as measured by a meat thermometer.
12) Toast bread under broiler.
13) Place burger on each piece of toasted cheese bread. Add a small dollop of cream cheese mixture. Take wood skewer, pierce basil leaf, tomato half; press skewer into the slider to serve.

Turkey Bacon Burgers
These “paleo-style” Turkey Bacon Burgers are wrapped in crispy lettuce leaves instead of using buns for a gluten free grilling option! They’re topped with fresh avocado and pickled jalapenos for a satisfying flavor that’s 140 calories per serving. It’s the perfect low prep recipe for a party — or for planning ahead!

Serving Size – 10 Servings

Ingredients

1 – (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1/2 – cup minced onion
1 – tablespoon chopped garlic
1/2 – teaspoon freshly ground black pepper
10 – lettuce leaves
10 – tomato slices
20 – sweet onion slices
avocado slices, if desired
pickled jalapeno slices, if desired
mustard, if desired

Directions

1) In large mixing bowl, combine ground turkey, onion, garlic and pepper*.

2) Form into 10 patties. Ideally, make this mixture at least 8 hours before cooking so that the turkey can marinate with the other ingredients.

3) Freeze any extra formed patties to thaw later.

4) Heat grill to medium-high heat.

5) Grill turkey burgers approximately 14 to 16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer. Layer lettuce, tomato, turkey burger and onion.

6) Top with avocado, pickled jalapeno and mustard, if desired.

7) *JENNIE-O also recommends adding 15 slices of chopped, uncooked JENNIE-O Turkey Bacon to the meat mixture. For ease of chopping, place bacon slices in freezer for 15 minutes. Chop finely while still firm.
