Turkey Sausage and Pasta Toss
Made with fresh veggies, basil pesto, and hardwood smoked turkey sausage, this easy pasta salad recipe is just a quick skillet toss away! Ready in under 30 minutes.

INGREDIENTS
8 ounces penne pasta
1 (14½-ounce) can no-salt added stewed tomatoes, undrained
1 (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Sausage, sliced
2 cups (1-inch pieces) fresh asparagus or broccoli florets
2 tablespoons basil pesto
2 tablespoons freshly grated Parmesan cheese

DIRECTIONS
1) Cook pasta according to package directions, omitting salt. Meanwhile, in medium saucepan, heat tomatoes. Add turkey. Stir in asparagus and pesto; cover and simmer 6 minutes or until asparagus is tender.
2) Drain pasta; toss with tomato mixture. Sprinkle with cheese.

Turkey Sausage and Sourdough Kabobs
Ever tried grilled sourdough before? If not, you’re missing out. Paired with bell peppers and turkey sausage, this kabob recipe will leave everyone begging for more. See for yourself by trying it tonight.

Ingredients
¼ cup sherry wine vinegar
2 teaspoons Dijon mustard
2 garlic cloves, minced
1 tablespoon chopped minced fresh rosemary
½ cup olive oil
1½ cups chopped bell peppers
1 (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Sausage, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1½ cups cubed sourdough bread
baby kale leaves, if desired

Directions
1) Whisk vinegar, mustard, garlic, rosemary and oil in a small bowl. Mix well.

2) Thread bell pepper, sausage, onion and bread cubes on skewers. Brush each skewer with one tablespoon dressing. Grill for 12 minutes, turning often, or until lightly charred.

3) Toss greens in a large bowl with remaining dressing to coat. Divide among four plates. Top with skewers. Brush skewers with more dressing, if desired.

Turkey Sausage and Rice Soup
Simmer smoked turkey sausage, leeks and carrots together with bell peppers, fresh thyme and white rice in this colorful, delicious soup. Ready in under 30 minutes.

INGREDIENTS

2 tablespoons butter
1 large or 2 medium sliced leeks, white and light green parts
2 carrots, thinly sliced
1 (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Sausage
2 cups diced mixed bell peppers, preferably red and yellow
3 (13¾-ounce) cans reduced-sodium chicken broth
¾ cup uncooked quick cooking brown rice
¼ teaspoon freshly ground black pepper
1 tablespoon chopped fresh thyme
chives, if desired

DIRECTIONS

1) In a large saucepan, melt butter over medium heat. Add leeks and carrots; cook 5 minutes, stirring occasionally.
2) Cut sausage into ½-inch slices. Add sausage to saucepan; cook 5 minutes, stirring occasionally.
3) Add bell peppers, chicken broth, rice and pepper; bring to a boil over high heat. Reduce heat; simmer uncovered 15 minutes or until rice is tender.
4) Stir in fresh thyme. Ladle into bowls. Top with chives, if desired.

SMOKED TURKEY SAUSAGE WITH GARLIC GRILLED CORN
The meat-lovers in your family will devour this hearty side.

 

INGREDIENTS
4 tablespoons unsalted butter, room temperatureSmoked Turkey Sausage with Garlic Grilled Corn

½ tablespoon garlic salt

4 ears fresh yellow or white corn

2 tablespoons olive oil

1 (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Sausage

2 tablespoons chopped fresh parsley

 

DIRECTIONS
1 – In small bowl, combine butter and garlic salt. Heat grill to medium. Remove corn husks and silk from the ears. Wash corn and pat dry. Using a pastry brush, lightly coat each ear with olive oil. Grill corn, turning often, 15 to 20 minutes or until corn kernels are slightly charred. When the corn is done, brush each ear with garlic butter. Using serrated knife, remove corn kernels from cob and place kernels in medium bowl.

2 – Place smoked turkey sausage on grill. Cook 5 to 6 minutes turning once until heated through. Remove from grill and cut into coin size pieces. Add to grilled corn and toss to combine.
