Turkey Quinoa Alfredo
Quinoa? Quin-why not! By using these magic seeds, this simple weeknight dinner recipe is savory, creamy, packed with veggies, super filling and STILL under 500 calories per serving!

INGREDIENTS
1 cup dry uncooked quinoa
2 cups reduced-fat Alfredo sauce, divided
1 cup water
½ (12-ounce) bag frozen broccoli, thawed
2 tablespoons minced sweet onion
2 garlic cloves, minced
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
⅓ cup grated Parmesan cheese
¼ teaspoon freshly ground pepper
1 tablespoon chopped fresh parsley

DIRECTIONS
1) Heat oven to 375°F. Prepare a 2½-quart baking dish with non-stick cooking spray. Set aside.
2) In large bowl, stir together quinoa, 1 cup Alfredo sauce, water, broccoli, onion and garlic. Pour half of mixture into prepared dish and spread evenly. Place turkey breast cutlets evenly on top and pour remaining quinoa mixture over turkey. Spread remaining 1 cup Alfredo sauce over turkey and sprinkle with cheese and pepper.
3) Cover with foil. Bake 35 minutes. Remove foil and bake an additional 20 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Garnish with parsley.
*Always cook to an internal temperature of 165°F.

Turkey Mushroom and Barley Soup
This hearty, flavorful soup features lean turkey cutlets, mushrooms, garlic and fresh thyme in a savory broth. It’s under 300 calories.

INGREDIENTS

½ ounce dried mushrooms, preferably porcini
1 cup boiling water
1 tablespoon butter
1 (8-ounce) package sliced mushrooms
½ cup chopped onion
2 cloves garlic, minced
2 (13¾-ounce) cans reduced-sodium beef broth
½ cup quick-cooking pearl barley
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
½ teaspoon freshly ground pepper
¼ teaspoon salt, if desired

DIRECTIONS

1) Soak dried mushrooms in 1 cup boiling water 20 minutes or until softened. Meanwhile, melt butter in large saucepan over medium-high heat. Add sliced mushrooms, onion and garlic; cook 8 minutes, stirring occasionally. Drain soaked mushrooms, reserving liquid. Coarsely chop mushrooms. Add mushrooms, beef broth, barley, thyme and mushroom soaking liquid to saucepan; bring to boil. Reduce heat; cover and simmer 15 to 18 minutes or until barley is tender.
2) Cook cutlets as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Cut into ½ strips and sprinkle with ground pepper and salt, if desired. Stir into soup; simmer 10 minutes.
* Always cook to an internal temperature of 165°F.

Sweet and Sour Chinese Turkey Salad
INGREDIENTS

1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
6 cups torn romaine lettuce
6 slices pineapple, cut crosswise into ½-inch thick slices, then cut in quarters
2 oranges, peeled and cut in slices crosswise
1½ cups sliced cucumber
8 radishes, sliced
4 tablespoons orange juice
4 tablespoons honey
4 teaspoons low-sodium soy sauce
2 teaspoons sesame oil
4 tablespoons chopped roasted cashews

DIRECTIONS
1) Cook the turkey cutlets as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer. Slice turkey crosswise into 1-inch thick slices.
2) On four plates, divide lettuce. Layer turkey, pineapple, oranges, cucumber and radishes on lettuce.
3) In small bowl, whisk orange juice, honey, soy sauce and sesame oil. Pour dressing over salads; sprinkle with cashews.
* Always cook to an internal temperature of 165°F.

Turkey Focaccia Sandwiches
Light, flavorful Italian Focaccia takes this sandwich from ordinary to extraordinary. With layers of fresh veggies, JENNIE-O® Extra Lean Turkey Breast and bold parmesan dressing, you’ll be transported to the Italian countryside in just one bite.

INGREDIENTS
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
8 slices JENNIE-O® Turkey Bacon
1 focaccia (Italian flat bread)
4 pieces leaf lettuce
4 slices of Roma tomatoes, sliced lengthwise
4 slices Swiss cheese
4 tablespoons light parmesan dressing

DIRECTIONS
1) Cook turkey cutlets and turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Cut focaccia horizontally in half then into wedges. Layer lettuce, tomato, cheese, turkey, bacon and parmesan dressing onto each bottom focaccia wedge. Cover with top wedge.
* Always cook to an internal temperature of 165°F.

A Chef’s Salad with all the fixings and none of the guilt? Yes, it exists — and it’s FANTASTIC. Lean turkey breast cutlets, hardboiled eggs and crisp peppers add up to a tasty lunch at under 300 calories per serving!

INGREDIENTS
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets, cut into 1-inch strips

Chef’s Turkey Salad

2 teaspoons Creole, Cajun or Mexican seasonings
1 teaspoon minced fresh garlic
8 cups packed assorted torn salad greens
½ cup low-fat shredded Cheddar cheese
2 hard-cooked coarsely chopped egg whites
1 cup halved cherry tomatoes
½ cup yellow or red bell pepper, cut into strips
¼ cup herb or garlic croutons
⅔ cup fat-free thousand island dressing
freshly ground black pepper, if desired

DIRECTIONS
1) Toss turkey strips with seasoning and garlic. Coat a large non-stick skillet with cooking spray. Heat at medium-high. Add turkey strips. Cook the turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Transfer to a bowl; set aside to cool or refrigerate until serving time.
2) In a large bowl, add salad greens, cheese, hard-cooked egg whites, cherry tomatoes, bell pepper strips and croutons. Add cooled turkey and dressing; toss well. Arrange on 4 chilled serving plates; top with black pepper, if desired.

Turkey and Vegetable Stir Fry
Crunchy carrots, pea pods and fresh grated ginger join turkey breast cutlets and toasted sesame seeds in this low fat, carb conscious recipe. Under 300 calories per serving!

INGREDIENTS
½ (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
1 tablespoon olive or vegetable oil
½ teaspoon minced garlic
½ teaspoon grated ginger
1 small red onion, cut into wedges
1 medium carrot, sliced diagonally
2 tablespoons chicken broth
1 cup sugar snap peas or pea pods
1 tablespoon HOUSE OF TSANG® less sodium soy sauce
1 tablespoon toasted sesame seeds
carrot and green onion curls, if desired

DIRECTIONS
1) Cook cutlets as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. In skillet, over medium-high heat, heat oil. Add garlic and ginger; stir-fry 1 minute or until fragrant. Add red onion and sliced carrot; stir-fry 1 minute. Stir in chicken broth and cover skillet; steam 2 minutes.
2) Add sugar snap peas and soy sauce. Stir-fry 2 minutes or until vegetables are crisp-tender. Sprinkle with toasted sesame seeds. Serve turkey cutlets with stir-fried vegetables. Garnish with carrot and green onion curls, if desired.

Turkey Schnitzel

INGREDIENTS
2 egg whites
½ cup milk
5 tablespoons flour, divided
2 tablespoons grated Parmesan cheese
⅛ teaspoon ground nutmeg
1 tablespoon butter
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
2 tablespoons fresh lemon juice, if desired
¼ cup chicken broth, if desired

DIRECTIONS
1) Heat oven to 200ºF. In shallow dish or pie plate whisk together egg whites and milk. Add 2 tablespoons flour, cheese, pepper and nutmeg; mix well. Heat a large non-stick skillet over medium heat. Add butter and heat until butter sizzles.
2) Place remaining 3 tablespoons flour in plastic bag. Add 2 turkey cutlets at a time to bag; shake to coat. Dip into milk mixture, turning to coat and letting excess mixture drip off. Add turkey to skillet. Cook cutlets as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Transfer to a heat-proof serving platter; keep warm in oven. Repeat with remaining turkey and butter. After all the turkey is cooked, add fresh lemon juice and chicken broth, if desired to skillet; boil 1 to 2 minutes, stirring constantly and pour over the turkey.
* Always cook to an internal temperature of 165°F.

Chunky Santa Fe Turkey Tacos
Spice up weeknight dinner with the savory flavors of Santa Fe Tex-Mex. This taco recipe takes just 30 minutes to make and features an irresistible combination of sautéed peppers and lean turkey.

INGREDIENTS
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
1 tablespoon chili powder
1 tablespoon vegetable oil
1 diced yellow or green pepper
1 teaspoon ground cumin
2 teaspoons minced garlic
2 tablespoons finely chopped jalapeño
¼ cup picante sauce
1 large tomato, diced
¼ cup chopped fresh cilantro
16 soft flour tortillas
2 cups crumbled queso fresco cheese or shredded Mexican cheese

DIRECTIONS
1) Cut turkey into ½-inch thick strips; toss with chili powder.
2) Heat vegetable oil in skillet over medium-high heat. Add turkey, yellow pepper, cumin, garlic and jalapeño. Cook turkey according to package directions. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Add picante sauce. Cook, 3 minutes, stirring occasionally. Stir in tomato and cilantro. Cook 1 to 2 minutes or until hot. Spoon mixture into tortillas; sprinkle with cheese.
* Always cook to an internal temperature of 165°F.

Lebanese Picnic Salad

This colorful, simple salad recipe is packed with crunchy fresh veggies and distinctive Middle Eastern flavors, including coriander, Bulgar wheat and a zesty lemon-mint dressing.

INGREDIENTS

¾ cup Bulgar wheatLebanese Picnic Salad
1½ cups boiling water
¼ cup lemon juice
2 tablespoons olive oil
2 tablespoons chopped fresh mint
¼ teaspoon ground coriander
salt and pepper, to taste
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
2 medium tomatoes, chopped
1 medium cucumber, unpeeled and chopped
1 small tart green apple, chopped
4 green onions
½ cup chopped fresh parsley
DIRECTIONS

1) In large bowl, soak Bulgar in boiling water 1 hour. Prepare Lemon-Mint dressing. In small bowl, combine lemon juice, oil, mint, coriander and salt and pepper, to taste; set aside.
2) Cook turkey cutlets as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer; cool. Cut across grain of turkey slices creating ½ x 2½-inch strips.
3) Drain Bulgar well. Stir in turkey, tomatoes, cucumber, apple and onions. Add dressing and parsley, mixing well.
* Always cook to an internal temperature of 165°F.
