INGREDIENTS

6 (6 to 8-inch) tortillas
2 red, green or yellow bell peppers, cut into thin strips
1 red onion, sliced
1 tablespoon olive oil

1 (.78 ounce) packet taco seasoning
1½ cups salsa
1 cup shredded Monterey Jack cheese with jalapeño peppers

DIRECTIONS

1) Heat tortillas according to package directions.
2) In large skillet over medium-high heat, sauté peppers and onion in oil 5 minutes or until peppers are slightly softened.
3) Add turkey, heat 2 minutes or until warmed. Stir in taco seasoning. Evenly divide turkey mixture among tortillas. Top with salsa and cheese.

Greek Turkey Pita Wedges
A fruit and cheese appetizer recipe that’ll get any palate primed for the main course. Greek Turkey Pita Wedges are a brilliant combination of savory, sweet and crispy that’s ready in under 15 minutes.

Serving Size – 8 Servings

Ingredients
6 pita breads, each cut into 6 wedges
¼ cup olive oil
garlic salt, if desired
2 cups chopped JENNIE-O® Extra Lean Oven Roasted Turkey Breast
1 green bell pepper, finely diced
1 tomato, finely diced
¼ cup finely diced red onion
¼ cup PELOPONNESE® pitted kalamata olives, cut into slivers
½ cup feta cheese, crumbled
¼ cup chopped fresh parsley
2 tablespoons chopped fresh mint
2 tablespoons lemon juice

Directions
1) Heat oven to 375°F. Arrange pita bread on baking sheet.

2) Brush with olive oil and sprinkle with garlic salt, if desired. Bake 10 minutes or until crisp.

3) In medium bowl, combine turkey, green bell pepper, tomato, red onion and olives. Gently stir in cheese, parsley, mint and lemon juice. Top pita wedges with turkey mixture.

Take Thanksgiving leftovers from blah to brilliant in less than 15 minutes of prep. Using your leftover stuffing, this fun, kid-friendly savory pie recipe will have the whole family gobble-gobbling all over again.

INGREDIENTS

2½ cups prepared stuffing
1½ cups cubed JENNIE-O® Extra Lean Oven Roasted Turkey Breast
¼ cup chopped onion
1 cup shredded low-fat Swiss cheese
¾ cup milk
1 cup egg substitute or 4 eggs
2 teaspoons mustard
¼ teaspoon pepper
garnish with chopped parsley, if desired

DIRECTIONS

1) Heat oven to 350°F. Spray 9-inch pie plate with cooking spray. Press stuffing in pie plate to form pie crust.

2) Add turkey to crust. Sprinkle with onion and cheese.

3) In small bowl, whisk milk, eggs, mustard and pepper. Pour into pie crust. Bake 35 to 40 minutes or until set.

4) Garnish with chopped parsley, if desired.

INGREDIENTS

2 cups sliced mushrooms
¼ cup butter
6 tablespoons flour
2 chicken flavored instant bouillon cubes
1 cup water
1 (12-ounce) can evaporated milk
4 cups cubed JENNIE-O® Extra Lean Oven Roasted Turkey Breast
1 cup uncooked wild rice
1 (8-ounce) can sliced water chestnuts, drained
½ cup almonds, sliced

DIRECTIONS

1 – Heat oven to 350°F. In skillet, saute mushrooms in butter until tender. Blend in flour, bouillon cubes and water. Stir in evaporated milk. Cook over medium heat, stirring constantly, until mixture comes to boil.
2 – Add cubed turkey, wild rice and water chestnuts. Pour mixture into buttered baking dish. Sprinkle top with almonds. Cover. Bake 30 minutes. Uncover. Bake 30 minutes or longer until hot and bubbly.

Turkey Pasta Salad
Packed with veggies and lean protein, this tasty pasta salad will become your family’s go-to side this summer. And best yet? It clocks in at under 300 calories per serving!

INGREDIENTS
2 cups uncooked rotini pasta
½ pound cubed JENNIE-O® Extra Lean Oven Roasted Turkey Breast
1½ teaspoons lemon juice
1 cup broccoli florets
½ cup fresh or frozen sugar snap peas, thawed
¼ cup yellow cherry tomatoes
2 cups plain low-fat yogurt
½ cup fat-free mayonnaise
1 tablespoon grated Parmesan cheese
1½ teaspoons snipped fresh basil or ½ teaspoon dried basil leaves
1 teaspoon minced garlic
½ teaspoon black pepper
¼ cup chopped walnuts, toasted, if desired

DIRECTIONS
1) Cook pasta according to package directions until tender. Cool under cold running water and drain well.
2) Cut turkey breast into ½-inch cubes and toss with lemon juice. Cut broccoli florets into bite-size pieces. Steam broccoli 1 minute. Cool under cold running water and drain well. In medium bowl, toss turkey, broccoli, sugar snap peas and tomatoes.
3) In small bowl, combine yogurt, mayonnaise, Parmesan cheese, basil, garlic and pepper. Pour dressing over salad mixture and toss to coat. Garnish with toasted chopped walnuts, if desired.

DIRECTIONS

A good minestrone serves as delicious comfort food on chilly days. This lean Italian recipe combines cabbage and green beans with a rich, savory broth that’ll warm both body and soul.

INGREDIENTS

1 to 1½-pounds JENNIE-O® Extra Lean Oven Roasted Turkey Breast, cut into ½-inch pieces
6 cups water
1 (14½-ounce) can Italian-style stewed tomatoes, undrained
1 onion, sliced
2 tablespoons Italian seasoning
2 tablespoons chicken flavored bouillon granules
2 cups brussel sprouts, halved
1 zucchini, sliced
1 (9-ounce) package frozen green beans
1 (15-ounce) can garbanzo beans, drained
1 cup uncooked bow-tie pasta
Parmesan cheese, if desired

DIRECTIONS

1) In Dutch oven, over medium-high heat, stir together turkey, water, tomatoes, onion, seasoning and bouillon. Bring to boil; reduce heat to low. Cook, partially covered, 35 minutes, stirring occasionally.
2) Stir in brussel sprouts, zucchini, beans. Cook, uncovered, 10 minutes stirring occasionally until pasta is tender. Garnish with cheese, if desired.
