Easy Turkey Stew
Super simple, super tasty and ready in under 60 minutes, this stew is the one for you. It’s chock full of veggies, too — and with bone-in turkey pot roast, it’s basically the best comfort food ever.

INGREDIENTS

1 tablespoon canola oil
1 cup diced onion
1 cup diced carrot
½ cup diced celery
½ cup diced green pepper
1 cup diced potato
½ teaspoon dried sage
½ teaspoon ground thyme
½ teaspoon freshly ground pepper
1½ cups low-sodium chicken broth
2 ½ pounds JENNIE-O® Bone-in Turkey Pot Roast, cut into pieces
crusty bread, if desired

DIRECTIONS

1) In large saucepan, heat oil over medium-high heat. Add onion, carrot, celery and green pepper. Cook 5 minutes or until softened, stirring occasionally.
2) Add potato, sage, thyme, pepper and broth. Cook 10 to 15 minutes or until potato is cooked.
3) Stir in turkey; cook 5 minutes or until hot. Serve with bread, if desired.

Rustic Roasted Turkey Pot Roast and Vegetables
Who doesn’t love quick, weeknight dinners? This classic comfort food recipe is not only extremely tasty, it’s ready in under 1 hour!

INGREDIENTS

2 sweet potatoes, peeled and cut into 1-inch pieces
1 red onion, cut into 8 wedges2 parsnips, peeled and cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
4 tablespoons olive oil
4 cloves garlic, minced
½ teaspoon salt
⅛ teaspoon freshly ground pepper
½ teaspoon dried basil
1 tablespoon apple cider vinegar
¼ teaspoon Italian seasoning
¼ cup fresh parsley, loosely torn
2 pounds JENNIE-O® Bone-in Turkey Pot Roast, cut into pieces

DIRECTIONS

1) Heat oven to 400°F.
2) In large bowl, combine sweet potatoes, onion, parsnips, bell pepper, olive oil, garlic, salt, pepper, basil, vinegar, Italian seasoning and parsley; mix well. Place vegetable in large baking pan. Bake 20 minutes, stir and add turkey pot roast. Bake 15 to 20 minutes or until vegetables are tender and golden brown.

Roasted Turkey Chilaquiles

Pronounced Chee-lah-KEY-less, this traditional Mexican dish is sure to be a crowd pleaser for your family or get together! It features shredded JENNIE-O® Bone-in Turkey Pot Roast, crumbled queso fresco and corn tortilla chips. Fire up the oven and bring on the festivities!

INGREDIENTS

3 cups salsa
12 ounces JENNIE-O® Bone-in Turkey Pot Roast, cooked and shredded
½ (11-ounce) package corn tortillas chips
¼ cup crumbled queso fresco
garnish with green onion, chopped, if desired
½ cup Mexican crema, crème fraiche or sour cream, if desired
¼ cup chopped fresh cilantro leaves, if desired

DIRECTIONS

1) In large Dutch oven, over medium-high heat, add salsa. Bring to simmer and stir in turkey and tortilla chips. Tossing until coated and heated through.
2) Top tortilla mixture with crumbled queso fresco and garnish with chopped green onion, sour cream and cilantro, if desired. Serve immediately.

2) Place bread slice on plate. Top bread with mashed potatoes and turkey. Spoon gravy over turkey. Sprinkle with parsley, if desired.

Asian Turkey Noodle Soup

Packed with veggies, lean turkey and savory Asian flavors, this soup recipe is a weeknight dinner to be reckoned with. Quick, easy to make and under 300 calories per serving!

INGREDIENTS

1 tablespoon canola oilAsian Turkey Noodle Soup
1 cup chopped onions
4 cloves garlic, minced
2 tablespoons minced ginger
6 cups chicken or turkey broth
12 ounces JENNIE-O® Bone-in Turkey Pot Roast, cubed
¼ cup HOUSE OF TSANG® sodium reduced soy sauce
1 tablespoon seasoned rice wine vinegar
1 teaspoon HOUSE OF TSANG® toasted sesame oil
1 (10-ounce) package frozen stir fry vegetables, thawed
½ (1-pound) box spaghetti, cooked according to package directions

 
DIRECTIONS

1 – In kettle, heat oil over medium-high heat. Add onions and cook 5 minutes or until softened, stirring occasionally. Add garlic and ginger and cook 1 minute or until fragrant.
2 – Add broth. Stir in turkey, soy sauce, vinegar and sesame oil. Bring to a boil. Reduce heat and simmer 10 minutes.
3 – Add vegetables. Bring to boil. Cook 1 to 2 minutes or until vegetables are hot and cooked. Divide noodles between bowls. Ladle soup over spaghetti.

Easy Turkey Enchiladas

Ingredients
1 pound 8 ounces shredded JENNIE-O® Bone-in Turkey Pot RoastEasy Turkey Enchiladas
1 tablespoon ground cumin
1 teaspoon onion powder
5 ounces shredded Cheddar cheese, divided
3 cups enchilada sauce, divided
10 whole grain tortillas
Directions
Heat oven to 350°F.

1 – Mix shredded turkey, cumin, onion powder, 2.5 ounces cheese and ½ cup enchilada sauce together.

2 – Spread ½ cup turkey mixture down middle of each tortilla. Roll up. Spread 1 cup enchilada sauce in bottom of 2-inch deep pan. Lay enchiladas seam side down in pan. Cover enchiladas with remaining 1½ cups sauce. Sprinkle remaining 2.5 ounces cheese over enchiladas.

Bake 30 minutes or until sauce is bubbling and cheese is melted.

Ingredients
⅔ cup chopped onion
⅔ cup shredded carrots
2 teaspoons vegetable oil
2 teaspoons curry powder
¾ teaspoon ground cumin
¼ cup low-sodium chicken broth
3 cups shredded JENNIE-O® Bone-in Turkey Pot Roast
3 cups mashed potatoes, prepared

 
Directions
1 – Heat oven to 350°F. In skillet, sauté onions and carrots in oil until soft. Add curry and cumin powder. Add broth and turkey and stir to combine.

2 – Spread mixture evenly in 9×13-inch baking dish. Divide potatoes evenly on top of turkey and vegetable mixture. Bake 30 minutes or until hot.

Jennie – O Turkey Recipe of the Week – Huevos Rancheros Open-Faced TacoJennie - O Huevos Rancheros Open-Faced Taco

 

Ingredients
6 soft taco-size (6-inch) flour tortillas
1 teaspoon canola oil
2 cups shredded JENNIE-O® Bone-in Turkey Pot Roast, in deli grab-n-go section
1 cup canned black beans, rinsed and drained
1 avocado, sliced
4 eggs, poached or 1½ cups egg substitute, scrambled
½ cup salsa verde
⅓ cup queso fresco
¼ cup cilantro leaves
lime wedges, if desired

 
Directions
Brush both sides of each tortilla with oil. In large skillet or on hot plate, cook tortillas 2 minutes on each side or until golden brown and crisp or cook in 375°F. oven 8 to 12 minutes or until golden brown.

In bowl, combine turkey and beans, stir to combine. Top each tortilla with turkey mixture. Add avocado, egg, salsa, queso fresco and cilantro leaves. Serve with lime wedges, if desired.

Turkey & Corn Salsa Tostada

 

 

 

Jennie - O Turkey & Corn Salsa Tostada
Ingredients
4 cups corn
⅓ cup red peppers, diced
3 tablespoons diced green onions
2 tablespoons finely chopped jalapeño peppers
3 tablespoons chopped cilantro
1¾ tablespoons lime juice
1½ teaspoons honey
3 cups JENNIE-O® Bone-in Turkey Pot Roast
¼ teaspoon chili powder
¼ teaspoon ground cumin
dash granulated garlic
6 tostada shells

 
Directions
In bowl, mix corn, red pepper, onion, jalapeño, cilantro, lemon juice and honey. Refrigerate until ready to serve. Salsa can be made day in advance.

In skillet over medium heat, mix turkey, chili powder, cumin and garlic. Heat 2 minutes.

Add corn mixture to turkey and heat 2 minutes or until hot, stirring occasionally.
Top each tostada shell with turkey salsa mixture.
