Easy Summer Turkey Salad
Make this salad, featuring fresh fruit and Applewood Smoked Turkey, in just 30 minutes.

INGREDIENTS
½ (24-ounce) package JENNIE-O® Applewood Smoke Flavor Turkey Breast Tenderloin
8 cups mixed greens
1 nectarine pitted and sliced
1 cup fresh raspberries
1 cup sweet mini bell pepper slices
½ cup fresh basil leaves, torn

HONEY-LEMON DRESSING
⅓ cup fresh lemon juice
1 tablespoon coarse grain Dijon mustard
2 tablespoons honey
½ teaspoon salt
⅛ teaspoon pepper
⅓ cup olive oil

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Cut on bias into slices.
2) In large bowl, toss mixed greens, nectarine, raspberries, bell pepper and basil. Top with grilled turkey
3) In small bowl, whisk together lemon juice, mustard, honey, salt, pepper and olive oil. Serve with salad.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Roasted Applewood Smoked Turkey Breast Tenderloin w/ Sliced New Potatoes and Cut Italian Green Beans

 

 

For Breakfast this morning I made a Poached Egg and served it on a toasted slice of Aunt Millie’s Light Whole Grain Bread. Not quite as cold this morning! 40 degrees. Sunny and 52 degrees for the day. After Lunch I got the Cart out of the shed and went over and borrowed my neighbor’s Shrub Trimmer. Trimmed down 4 Shrubs around the house for the upcoming Winter. Then got the leaf blower out and cleaned off the deck and driveway areas. For Dinner Tonight, Comfort Food! I prepared a Roasted Applewood Smoked Turkey Breast Tenderloin w/ Sliced New Potatoes, Cut Italian Green Beans, and Baked Garlic Loaf Bread.

 

 

I had purchased the Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer and had it in the freezer. Sat it in fridge to thaw overnight. Meijer is the only store that carries this and most of the other Jennie – O Turkey Products. The Turkey Tenderloin comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat-free. Besides this beautiful Tenderloin all I’ll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley, Blackberry Glaze, and Extra Light Olive Oil. To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon.

 

 

 


First I mixed my Blackberry Glaze and set it aside until ready to use. I left the recipe for this at the end of the post. To prepare the Tenderloin I’ll be baking it. Preheat the oven to 350°F. Next sprayed a shallow baking pan with Pam Non Stick Cooking Spray and add a tablespoon of the Extra Light Olive Oil to it. Then place the Tenderloins in the baking pan. With about 10 minutes of cooking time left I Glazed on of the Tenderloins. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 62 minutes. Remove from the oven, cover and let rest 5-10 minutes before slicing.

 

 


Started slicing it and it’s so very tender and moist. It has a fantastic taste. The Applewood Smoke and combination of Spices it was marinated in was perfect! Good job Jennie- O. For the added Blackberry Glaze , it was perfect! It went with the Turkey perfectly.

 

 

 

 

 


For one side I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable Products, always delicious and store a lot longer than fresh Vegetables. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through.

 

 

 

 

 


For another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans of any kind every day and never get tired of having them.Finally I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. Love this Bread! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

 

 

 

 

Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin

JENNIE-O® Applewood Smoked Turkey Breast Tenderloin is a savory combination of flavor and ease. It comes pre-seasoned so you don’t have to marinate. And it’s 99% fat-free and gluten free. Grill up a turkey breast tenderloin at your next barbeque!

COOKING INSTRUCTIONS

CONSUMER GAS GRILL:TO GRILL:
Preheat grill over medium heat, place tenderloins directly on grate. Grill, turning occasionally, until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 45-50 minutes. Remove from heat, cover and let rest 5-10 minutes before slicing.

CONSUMER OVEN:
TO BAKE:
Preheat oven to 350°F. Place tenderloins in a shallow baking pan. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 60-70 minutes. Remove from oven, cover and let rest 5-10 minutes before slicing.

SLOW COOKER:
Peel back and remove packaging. Place tenderloins (two in each packet) in slow cooker, add ½ cup water, and cover with lid. Cook according to chart below AND until internal temperature reaches 165°F. as measured by a meat thermometer. Remove and serve. Slow cookers may vary in cooking performance.* Always cook to an internal temperature of 165°F.

Today’s Menu: Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Garlic Loaf Bread

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. Started off a sunny morning but had rain move in later in the day. 93 degrees and not quite as humid. Not much going on today, took care of a few things around the house. For Dinner tonight I prepared a Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Baked Garlic Loaf Bread.

 


I purchased the Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer yesterday. Meijer is the only store that carries this and most of the other Jennie – O Turkey Products. The Turkey Tenderloin comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat-free. Besides this beautiful Tenderloin all I’ll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley, Blackberry Glaze, and Extra Light Olive Oil. To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon. This is an excellent Glaze for Turkey or Pork!

To go with the Turkey Tenderloin I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

 


I also heated up a can of Del Monte Cut Green Beans. I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Watermelon Feta Turkey Pizza
You’ll never see this on any pizza delivery menu! You take a slightly charred slice of watermelon and top it like a Mediterranean pizza—complete with Feta cheese, Kalamata olives and JENNIE-O® Applewood Smoke Flavor Turkey Breast Tenderloin. With sweet and savory flavors, this nutritious watermelon pizza recipe will have guests’ mouths watering!

INGREDIENTS
½ (24-ounce) package JENNIE-O® Applewood Smoke Flavor Turkey Breast Tenderloin
1 watermelon slice, cut 1-inch thick from center of the widest part
½ cup crumbled Feta cheese
¼ cup Kalamata olives, sliced
¼ cup chopped mint leaves
1 tablespoon balsamic glaze

DIRECTIONS

Served it with a Sunnyside Up fried Egg and 2 slices of toasted Aunt Millie’s Bread (lightly buttered). Also had my morning cup of Bigelow Decaf Green Tea. I would like to thank all of you for your emails and prayers for the passing of my Dad, very much appreciated! Busy day getting everything done, and very sad. I invited a couple of my Cousins over for Dinner tonight. I prepared a Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Stove Top Stuffing.

Rain Showers and 59 degrees. Beats Cold and Snow, I’m just looking for something positive! We have had a lot rain. After Breakfast I started a couple of loads of laundry. Then cleaned the house, dusted and vacuumed. For Dinner tonight I prepared a Roasted Applewood Smoked Turkey Breast Tenderloin w/ Bacon and Ranch Red Potatoes, Mixed Chili Beans, and Baked Garlic Loaf Bread. We took Dad a plate of this for his Dinner at the Retirement Center

To prepare it; In 1 1/2 qt casserole dish, combine potatoes, contents of sauce pouch, 2 Tbsp butter, and 1 3/4 cups boiling water. Next add 3/4 cup milk and stir to combine. Bake uncovered at 425°F for 30 minutes. Sprinkle bacon on top of potatoes. Let stand 5 minutes, then serve! I’ve had these a couple of times now and love them. Good Potato Dish to go with about anything.

 

 

For another side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. These are fairly new and as all the Bush’s Bean Products Delicious! For me you just can’t beat Bush’s Beans. I’ve prepared these a couple of times now and really like them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! Being new they are sort of hard to find. The only store I have found them is Meijer so far. I had also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

SLOW COOKER:
Peel back and remove packaging. Place tenderloins (two in each packet) in slow cooker, add ½ cup water, and cover with lid. Cook according to chart below AND until internal temperature reaches 165°F. as measured by a meat thermometer. Remove and serve. Slow cookers may vary in cooking performance.* Always cook to an internal temperature of 165°F.

Today’s Menu: Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Turkey Stuffing

 

 

To start my morning off I prepared a package of Tennessee Pride Turkey Sausage and Biscuit. They come 2 to a package and are frozen. Just microwave the package for 50 seconds and done. they are 200 calories and 26 carbs for the 2 snack size sandwiches. Also had a cup of Bigelow Decaf Green Tea. 58 degrees to start the morning off and had a high of 75 degrees! 2nd day in a row of Spring like weather temperatures. After Breakfast I started a load of laundry and then went to McDonald’s to pick up Breakfast for Mom and Dad. Afterward I went to pick up some Prescriptions at Kroger for Dad. Then on to the Post Office and Bank. Good to be out in this weather! For Dinner tonight I prepared a Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Stove Top Stuffing.

 

I had purchased the Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer and had it in the freezer. Sat it in fridge to thaw overnight. Meijer is the only store that carries this and most of the other Jennie – O Turkey Products. The Turkey Tenderloin comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat free. Besides this beautiful Tenderloin all I’ll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley, Blackberry Glaze, and Extra Light Olive Oil. To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon.

 

 

First I mixed my Blackberry Glaze and set it aside until ready to use. I left the recipe for this at the end of the post. To prepare the Tenderloin I’ll be baking it. Preheat the oven to 350°F. Next sprayed a shallow baking pan with Pam Non Stick Cooking Spray and add a tablespoon of the Extra Light Olive Oil to it. Then place the Tenderloins in the baking pan. With about 10 minutes of cooking time left I Glazed on of the Tenderloins. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 62 minutes. Remove from the oven, cover and let rest 5-10 minutes before slicing.

 

 


Started slicing it and it’s so very tender and moist. It has a fantastic taste. The Applewood Smoke and combination of Spices it was marinated in was perfect! Good job Jennie- O. For the added Blackberry Glaze , it was perfect! It went with the Turkey perfectly.

 

 

 

 

To go with the Turkey Tenderloin I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

 

I also heated up a can of Del Monte Cut Green Beans. Then I also made a box of Kraft Stove Top Lower Sodium Chicken Stuffing. Mom loves Stuffing so I made some for her. For Dessert later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink.

To start my morning off I prepared a Potato and Ham Skillet. I prepared a bag of the Simply Potatoes Steakhouse Seasoned Diced Potatoes. Midway through the cooking time I added a 1/2 bag of Meijer Brand Diced Ham. Also had a cup of Bigelow Decaf Green Tea. Rainy with a few snow flurries mixed in the morning. Had a high of 47 and cloudy all day. I gave the Kitchen a good cleaning today. Cleaned the Fridge and oven then straightened out the Spice Drawer. Then moved to the laundry room, cleaned the dryer and washer and dusted behind them. For Dinner tonight I prepared a Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Baked French Bread.

Grilled Avocado and Applewood Turkey Kale Salad

It’s time to taste for yourself why everyone is talking about kale. Start with this delicious recipe, featuring greens topped with grilled avocados, applewood smoke turkey tenderloin, tomatoes and onions.

1½ cups JENNIE-O® Applewood Smoke Flavor Turkey Breast Tenderloin
3 avocados, pitted and halved
¼ cup olive oil, divided
1 teaspoon kosher salt
¼ cup fresh lime juice, divided
12 cups chopped fresh kale
½ cup toasted pumpkin seeds
2 large heirloom tomatoes, sliced
½ cup thinly sliced red onions
1 cup toasted walnuts halves
kosher salt and pepper to taste

 
DIRECTIONS

1) Cook turkey tenderloin as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Cut into pieces and set aside.
2) Drizzle avocado halves with 2 tablespoons olive oil. Sprinkle with salt. Prepare grill for medium-high heat. Grill avocado 2 to 3 minutes or until slightly charred. Drizzle with 2 tablespoons lime juice; set aside.
3) In large bowl, toss together kale, turkey, pumpkin seeds, tomatoes, onions and walnuts. Whisk together remaining 2 tablespoons olive oil and remaining 2 tablespoons lime juice. Season with salt and pepper to taste. Pour desired amount over salad.
* Always cook to an internal temperature of 165°F.
