Flatbread Turkey Sausage Pizza
Total Time 40 Minutes
Serving Size 4 Servings
Looking for a quick and easy dinner? Ready in just 30 minutes, these turkey pizzas are exactly what you need. Get your kids in the kitchen to choose their own toppings!

INGREDIENTS

6-ounces JENNIE-O® All Natural Turkey Sausage
½ cup refrigerated pesto
4 mini naan bread pieces
2 cups shredded Mozzarella cheese
1 cup cherry tomatoes, cut in half
½ medium red onion, thinly sliced
1 cup baby arugula

DIRECTIONS
1) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

2) Place ½ inch thick patties in hot skillet. Turn occasionally and cook approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

3) Spread pesto evenly over naan bread. Layer with sausage, cheese, tomatoes and onions.

4) Place on baking sheet and bake 20 minutes or until bubbly. Top with arugula.
* Always cook to an internal temperature of 165°F.

Turkey Empanadas with Maple Apple
Brunch is a special occasion, so why not make something special for it? These flaky little pockets are filled with eggs, cheese and turkey sausage. Turkey Empanadas with Maple Apple are a sweet and savory treat that are sure to start your morning off right. Fewer than 500 calories per serving.
Total Time – 1 Hour
Serving Size – 8 Servings

Ingredients
⅓ cup maple syrup
⅓ cup apple juice
2 tablespoons brown sugar
1 (16-ounce) package JENNIE-O® All Natural* Turkey Sausage
2 cups egg substitute or 8 eggs
2 tablespoons butter
¼ cup finely chopped red onion
¾ cup shredded Monterey Jack cheese
1 (16-ounce) can buttermilk biscuits

Directions
1) Heat oven to 350°F.

2) In small saucepan over medium heat, combine maple syrup, apple juice and brown sugar. Stir until sugar is dissolved; set syrup aside.

3) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Place patties in hot skillet. Turn occasionally and cook approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

4) Crumble sausage into pieces.

5) In large bowl, whisk 8 eggs. Reserve 2 tablespoons egg; set aside. In skillet over medium heat, melt butter. Add eggs and cook, stirring occasionally, 1 minute or until eggs begin to set.

6) Stir in cooked sausage, onion and cheese. Cook 2 minutes, stirring occasionally, until eggs are set.

7) Lightly grease baking sheet. Press or roll biscuits on lightly floured surface to form a 6-inch circle; spoon turkey mixture into center of each biscuit. Fold biscuits in half to enclose filling. Press edge of biscuits together to seal. Place on baking sheet. Brush with remaining egg mixture.

8) Bake 15 to 18 minutes or until golden brown. Serve warm with syrup.

Directions
1) Cook puff pastry shells according to package .

2) Heat oven to 350ºF. Spray large skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Crumble and cook in hot skillet approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

3) In same skillet, pour eggs. Cook until softly scrambled; stir in ¼ cup cheese, reserve sausage and broccoli. Fill each puff pastry shell with turkey sausage mixture. Sprinkle with remaining ½ cup cheese. Place on baking sheet.

4) Bake 10 minutes or until heated through. Sprinkle with fresh chives, if desired.

There’s only so much time in the weekend, so let your oven do the work! This simple comfort food brunch recipe has a 15-minute prep time and boasts lean breakfast sausage, bell peppers and French bread.

INGREDIENTS
1 (16-ounce) package JENNIE-O® All Natural* Turkey Sausage
2 cups egg substitute or 8 eggs
3 cups milk
¼ cup chopped fresh parsley
salt and freshly ground pepper, if desired
8 cups cubed French bread
1 cup chopped red bell pepper
1½ cups shredded low-fat Swiss cheese, divided

DIRECTIONS
1) Heat oven to 350°F. Grease 9 x 13-inch baking pan; set aside. Cook the sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Crumble sausage into pieces.
2) In large bowl, whisk eggs, milk and parsley. Add salt and pepper, if desired. Stir in sausage, bread cubes, red pepper and 1 cup cheese. Pour into baking dish. Sprinkle with remaining cheese. Bake 40 to 45 minutes or until a knife inserted into the center comes out clean. Let stand 10 minutes before cutting into squares to serve.

2 tablespoons olive oil
1 pound Yukon gold potato, cubed
1 small onion, chopped

½ red bell pepper, chopped
½ cup chicken broth
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
chopped green onion, if desired

DIRECTIONS
1) Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add oil and potatoes and cook 5 minutes. Stir in onion and cook 5 minutes. Add sprouts, bell pepper, chicken broth, salt and pepper and cook 3 minutes or until bell pepper is tender. Garnish with chopped green onion, if desired.

1 jalapeño, seeded and sliced
1 teaspoon ground chili powder

1 teaspoon kosher salt, if desired
6 medium eggs, if desired
¼ cup chopped fresh cilantro leaves

DIRECTIONS
1)Heat oven to 400°F.
2) In large cast-iron skillet, heat oil over medium heat. Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer; crumble. Add onion and sweet potato and cook 5 minutes. Stir in bell peppers, jalapeño, chili powder, cumin, paprika and salt, if desired. Make 6 wells and pour eggs into wells, if desired. Remove from heat.
3) Bake 20 minutes or until egg whites are set and yolk is cooked to desired degree of doneness. Sprinkle with cilantro.
