Today’s Menu: Crock Pot Ribs w/ Fresh Green Beans and Mashed Potatoes
To start this morning off I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 89 degrees, sunny, and humid outside. Still no word on my Scan results, waiting is the toughest part sometimes. I got my yard work and watering done early. I went around and took in a lot of my neighbor’s garbage cans for them after the garbage ran. I took Mom’s car and filled it with gas and then I had it washed. Later I picked a bag full of different Peppers and took them over to my Cousin’s. For Dinner tonight its Crock Pot Ribs w/ Green Beans and Mashed Potatoes.
I had purchased the Ribs from Meijer the other day. Then Last night before I went to bed I put half racks in a Hefty Gallon Plastic Bag then seasoned it JB’s Fat Boy All Purpose Rub and then covered it in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray and added a 1/4 cup of water. Got the Ribs out of the fridge, discarded the Hefty Bags, and put the racks in the Crock Pot where I let it cook and simmer, on low, for about 7 hours. Long up in the afternoon the aroma of the Ribs and BBQ Sauce start to fill the air!
After 7 hours the ribs are ready and now for the hard part of cooking them, getting them out whole without breaking them up! They’re that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. And as always I would like to send out a big thank you to whom ever invented the Crock Pot Liners! I always use them when using the Crock Pot. Again just flat out delicious Fall off the Bone Ribs! And the JB’s Fat Boy Haug Waush BBQ Sauce and Seasoning is so good on these Pork Ribs!
For a side dish I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Next I heated up a can of Del Monte Cut Green Beans. Then I also baked some slices of New York Bakery Light Texas Toast, It’s fewer calories, carbs, and fat than normal Texas Toast. For a snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a bottle of Diet Lemonade/Tea Snapple to drink.

To start this morning off I Scrambled a couple of Eggs, toasted a Thomas English Light Muffin, and had a cup of Bigelow Decaf Green Tea. 80 degrees and humid out with thunderstorms and heavy winds coming in later. The part to repair Mom’s window in the car came in so I went and picked it up. Back home I watered the plants and cleaned up around outside. For Dinner tonight its Crock Pot Ribs w/ Green Beans and Mashed Potatoes.

To go with my Muffin and Sausage I had a cup of Bigelow Decaf Green Tea. 19 degrees this morning and we had a high of 38 degrees and partly cloudy out. I’m still dealing with a sinus headache, just not quite as bad though. Did a few things around the house and later watched some of the College Basketball games. For Dinner tonight its Crock Pot Ribs w/ Fresh Green Beans and Mashed Potatoes.

They say dry weather and highs in the 50’s and 60’s for the next week or so, hope they are right. After my Tea I went to Walmart to see what they had in Grass Seed and a few other things. Back home It’s finally drying out and I’m able to get some yard work and repairs done. It’s been a rough Winter on the Yard and Deck. I would like to have everything I need when I can really start getting things done outside. But Winter is done yet! For Dinner tonight its Crock Pot Ribs w/ Fresh Green Beans and Mashed Potatoes.

Not much to say today. My computer was down most of the day. Windows tried installing an automatic update and the update hung up while updating. It messed up everything. Today’s Menu: Crock Pot Ribs w/ Fresh Green Beans and Mashed Potatoes
To start this Morning off I made a Breakfast Sandwich using an al fresco Chicken Sausage Patty, 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese, and served on a toasted Thomas Light English Muffin. I also had my morning cup of Bigelow Decaf Green Tea. And that’s a great way to start the day! It rained all last night, just a light steady rain. For the day we had a high of 52 degrees and cloudy. After Breakfast I did a load of laundry. Then cleaned the house, dusted and ran the vacuum. About 2:30 we had a guy come over and measure Mom’s bathroom and he also measured the spare bedroom. Mom has tile in her bathroom and she wants carpet. She picked out the carpet last week. I’ll put new carpet in the bedroom after I get the bathroom paid off. For Dinner tonight its Crock Pot Ribs w/ Fresh Green Beans and Mashed Potatoes.

To start this Saturday Morning off I baked a small container of Pillsbury Flakey Biscuits and made a packet of Pioneer Peppered White Gravy. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links and had my morning cup of Bigelow Decaf Green Tea. 39 degrees, windy and cloudy outside today. After Breakfast I did a load of laundry and it was Kitchen Cleaning day. Wiped everything down with Lysol Disinfecting Wipes. Next I cleaned and straightened the stand up freezer. I also got the Ribs ready for the Crock Pot, it’s Crock Pot Ribs tonight! For Dinner tonight its Crock Pot Ribs w/ Fresh Green Beans and Mashed Potatoes.

Today’s Menu: Crock Pot Ribs w/ Shredded Potato Casserole
For Breakfast I Scrambled a couple of Eggs that I topped with Sargento Off the Block 4 State Cheddar and Ortega Smoky Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, topped with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Partly cloudy and a high of 55 degrees out today. They say that coming in Monday is our first snow fall. I’ve heard predictions of 3-5 inches. But we’ll see. After Breakfast I got the cart out of the shed and covered up the air conditioner with a tarp. And in case it does snow I got the snow shovel and rock salt out of the shed and set it by the ramp. Sat back and caught up on some shows I had recorded the rest of the afternoon. For Dinner tonight its Crock Pot Ribs w/ Baked Shredded Potato Casserole.
Mom wanted some of my Crock Pot Ribs, her favorite, so that’s what we are having for Dinner tonight. I had purchased the Ribs from Meijer yesterday and had them in the freezer. Then Last night before I went to bed I put half racks in a Hefty Gallon Plastic Bag then seasoned it with JB’s Fat Boy All Purpose Rub and then covered it in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray and added a 1/4 cup of water. Got the Ribs out of the fridge, discarded the Hefty Bags, and put the racks in the Crock Pot where I let it cook and simmer, on low, for about 7 hours. Long up in the afternoon the aroma of the Ribs and BBQ Sauce start to fill the air!
After 7 hours the ribs are ready and now for the hard part of cooking them, getting them out whole without breaking them up! They’re that tender and when eating them you need no knife, the bones just slide out. These Ribs were huge, some of the biggest I’ve prepared. The Ribs are so tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. And as always I would like to send out a big thank you to whom ever invented the Crock Pot Liners! I always use them when using the Crock Pot. Again just flat out delicious Fall off the Bone Ribs! And the JB’s Fat Boy Haug Waush BBQ Sauce and Seasoning is so good on these Pork Ribs!
For a side dish we tried something new I came across at Meijer yesterday, RESER’S MAIN STREET BISTRO – BAKED SHREDDED POTATO CASSEROLE. I had seen this before at Meijer and decided to give it a try, and glad I did. It comes in a tray that you can microwave or bake in the oven. As usual I’m going with the Oven Baking way.
Very easy to prepare. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve!
Seasoned with a shake of Salt and Pepper along with a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. This turned out delicious! Came out bubbling hot. Plenty of Potatoes and loaded with flavor! Fantastic Potato item to have in the fridge. I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread for Gumbo. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels along with a Diet Peach Snapple to drink.

I just had a cup of Bigelow Decaf Green Tea for my Breakfast. 93 degrees, humid and mostly sunny out. After Breakfast we had to go pick Mom’s car up at the mechanic’s. She had the starter replaced in her car and it was faulty. So it was replaced for free. Afterward I took Mom’s car up and had it washed, filled it with gas, and stopped at Wendy’s and picked up Breakfast for her. Got the cart out of the shed and did a few things around the yard. I prepared a small kettle of some more of those fresh Green Beans that we picked up in Ross, Ohio last week or so. These Beans are so good! Each Pod is loaded with big Beans. I could have these every day and never tire of them.
For another side dish I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Next I heated up a can of Del Monte Cut Green Beans. Then I also baked some slices of New York Bakery Light Texas Toast, It’s fewer calories, carbs, and fat than normal Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
