Spicy Turkey Breakfast Skillet
Some mornings need a serious kick-start. This breakfast skillet recipe is just the thing — chopped chipotle peppers, jalapeño jack cheese and lean turkey sausage. Under 300 calories per serving!

INGREDIENTS
2 teaspoons canola oil
½ cup diced onion
½ cup diced red bell pepper
½ cup diced green bell pepper
2 cups southern-style hash browns
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
2 chipotle chilies in adobo sauce, finely chopped
2 cups baby spinach leaves
1 cup shredded jalapeño jack cheese
1 tablespoon lime juice
1 avocado, diced
cilantro leaves

DIRECTIONS
1) In large skillet, heat oil over medium-high heat. Add onion and peppers. Cook 5 minutes or until softened, stirring occasionally; set aside.
2) In same pan, cook hash browns over medium-high heat 10 to 15 minutes or until golden brown, stirring occasionally. Return pepper mixture to skillet.
3) Cook links as specified on the package. Always cook to well-done,165°F. as measured by a meat thermometer. Cut sausage into 1-inch lengths. Add to skillet.
4) Add chipotle chilies and spinach. Stir to combine. Sprinkle with cheese. Stir to combine. Remove from heat. Drizzle lime juice over avocado. Pile avocado in center of skillet. Scatter with cilantro leaves.
* Always cook to an internal temperature of 165°F.

This week’s Jennie – O Turkey Recipe of the Week is – Fiery Chipotle Turkey Burger. Add some heat to those Turkey Burgers! You’ll be using the JENNIE-O® Extra Lean Turkey Burger Patties along with some heat; Low-Fat Mayonnaise, Chipotle Chili in Adobo Sauce, Jalapeños, Jalapeño Jack Cheese, Onions, and Spicy Barbeque Sauce. Mini Mexican Turkey Bacon Burgers
If you love a little heat, you’ll want to add this turkey burger to your weeknight dinner menu. Grilled jalapeño slices, fresh chipotle adobo sauce and jalapeño jack cheese top this lean burger at under 500 calories per serving.

INGREDIENTS
1 chipotle chili in adobo sauce, finely chopped
2 tablespoons low-fat mayonnaise
2 JENNIE-O® Extra Lean Turkey Burger Patties
2 jalapeños
2 hamburger buns, split and toasted
2 lettuce leaves
4 slices tomato
2 slices jalapeño jack cheese
2 tablespoons spicy barbeque sauce
½ cup fried onions
potato wedges and pickles, if desired

DIRECTIONS
1) In small bowl, combine chipotles, 1 tablespoon adobo sauce and mayonnaise; set aside in refrigerator.
2) Grill turkey patties as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Grill jalapenos until softened and grill marks appear; slice.
3) Spread mayonnaise mixture on both cut sides of buns. Top bottom halves of buns with lettuce, tomato, burger, cheese, sauce and fried onions. Replace bun tops. Serve with potato wedges and pickles, if desired.
* Always cook to an internal temperature of 165°F.

Jalapeño Jack Savory Stuffed Turkey Burgers

These spicy turkey burgers are flavored with chunky salsa and delicious jack cheese. Full of flavor, this burger is easy to assemble and ready in under 30 minutes! Make these burgers for a nutritious game-day meal or on the grill during the weekend.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 cup LA VICTORIA® Medium Thick n’ Chunky Salsa, divided or CHI-CHI’S® Medium Thick n’ Chunky Salsa, divided
1 tablespoon olive oil
½ teaspoon salt and freshly ground pepper, if desired
¼ cup plain bread crumbs
4 slices jalapeño jack cheese
¼ cup mayonnaise
1 cup baby spinach leaves
¼ cup sundried tomatoes, drained
½ red onion, thinly sliced
4 hamburger buns, split
DIRECTIONS

1) Combine ground turkey with ½ cup of salsa, olive oil, salt and pepper, and breadcrumbs in a small bowl. Form into 8 thin patties, about 4 inches wide and ½-inch thick. Fold each slice of cheese into quarters and overlap the quarters to create a stack. Place a stack of cheese in the center of 4 patties. Cover with remaining patties, crimp edges closed.
2) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add burger patties to hot skillet. Cook approximately 14 to 16 minutes, flipping 3 times. Always cook to well-done, 165°F as measured by a meat thermometer.
3) Combine remaining salsa and mayonnaise in a small bowl. To assemble burgers, spread salsa mayo on the top and bottom of each bun, add a layer of spinach, a stuffed burger, sundried tomatoes and red onion slices.
* Always cook to an internal temperature of 165°F.
